CULINARY ATTRACTIONS

Flower Child Flower Child is a “healthy food for a happy world” fast-casual concept from Sam Fox that prides itself on freshness and on buying from ranchers who “love their animals.” An orderat-counter setup, it was named by Nation’s Restaurant News as one of the top restaurant debuts of 2014.

Our vicinity preserves history as a hub of restaurant diversity BY MIKE SAUCIER

His company, which is also behind the Central Avenue restaurants Federal Pizza, Joyride Taco House and Windsor, set the stage for community-focused restaurants in the Arcadia area. DeMarco says the Arcadia dining scene has changed “dramatically” since the opening of Postino, which was a trailblazer of the new Arcadia wave, with its adaptive reuse of space before “adaptive reuse” was a household term. “When I was looking at that site [Postino], I must’ve taken

dining experience. Postino, a wine café that opened in the historic Arcadia Post Office building in 2001, is recognized as one of the trailblazers for the Arcadia restaurant boom. Craig DeMarco, who co-owns Postino and its umbrella company Upward Projects, has witnessed the full evolution of the dining scene. What once was largely strip malls and chain restaurants has transformed into dynamic concepts forged by creative restaurateurs for a dining public that has become more sophisticated via the explosion of reality cooking shows and websites obsessing over food.

over 100 people to see it and I could not get anyone to think it was a good idea,” DeMarco relates. “I’m thrilled to see all the talent and creativity making its way into this area,” says Sam Fox, nationally recognized founder of Fox Restaurant Concepts, which currently has 16 different concepts in operation. “There’s been some great restaurant openings . . . that are sure to become Arcadia staples, like the cool hole-in-the-wall Pig’s Meow, the original Postino, and Sip Coffee & Beer on Indian School and 36th Street.” One of Fox’s newer concepts is Flower Child, which emphasizes healthy eating. That concept co-exists and thrives alongside the other many Fox themes in the area, some older, some new. “We really consider our guest’s lifestyle when developing our restaurants in Arcadia. Flower Child provides a great convenience factor. You can sit and stay for a quick lunch or pick up dinner to go,” shares Fox. “Our most multifaceted location is The Henry, a full-service restaurant serving breakfast, lunch, happy hour, dinner and weekend brunch with a coffee bar, and tons of seating for people working on their laptops. Plus, we also have a test kitchen on-site and some great private space for larger meetings. We consider North Italia as the go-to spot for a romantic date night on the patio and great place to share a bottle of wine. “We get totally inspired by the Arcadia neighborhood and all the really unique buildings and spaces,” Fox says. “There’s tons of history here, like the old-school hand car wash on 40th Street. We opened North Italia there and were able to preserve that building by turning it into a neighborhood dining destination. Our cold-pressed juice shop, Juby True, is also in a great spot — a small lot off of 39th Street. It’s right in the heart of Arcadia and great to pop in and out of.” History is what attracted DeMarco’s partner, Lauren Bailey, to one of Postino’s other vicinity location — on Scottsdale Road just north of Camelback. The building was designed by notable architect Frank Henry and was Valley National Bank’s 100th location, and it stayed on their radar. “We were excited about it for six years. Then there was a change in ownership and it became available,” relates DeMarco. “The architecture is beautiful, and we got to go in there and create an experience for people.”

Operating independently, these two fine jewelers — Molina an iconic presence in the Valley and Black, Starr & Frost now having brought to Arizona its storied history of 205-plus years — now share the landmark chateau on Camelback at 32nd Street. “Jewelry is trying to be very wearable right now,” says Scott Gauthier, the creative force as well as the owner of Jewelry by Gauthier. Although specific stones may rise and fall in popularity, Gauthier believes jewelry is more of a long-term fashion statement than the seasonal variation of clothing designs. “In jewelry, the great thing is that nothing’s

ever out of style,” he says. “It’s more of a personal fashion statement.” Cornelis Hollander, award-winning jewelry designer and owner of Cornelis Hollander Designs, makes the same point. Although seeing interest in lighter earrings, mostly white metals, as well as casual bracelets and light-hearted necklaces, he sees jewelry as “long-term fashion” that will last 15 to 20 years, unlike clothing fashion, which changes every half-year. “If you buy an amethyst, it’s for the next 10 years; it’s not like next season you change your amethyst to pink.” Noting that his main business is engagement and wedding rings, Hollander shares that many clients come to him when, having been married many years, they want to upscale their ring to a larger diamond. “Most of the time, they keep the little diamond from the past,” he says. Common choices are mounting the smaller diamond in a necklace or incorporating it into the next ring. Addressing the choice of metal, Al Molina, owner of the exclusive Molina Fine Jewelers, notes the “best color” depends on whether you want to call attention to the metal design or to the stone in the setting. If the former, you want to contrast with the skin — platinum or white gold on olive or darker skin; yellow gold on fair. “But,” he continues, “if you concentrate on the stone, you want the mounting to disappear.” So the colors are reversed: yellow gold on darker skin and platinum on fair.

The prominence of diamonds as the epitome of fine gems owes much to the state of the art of photography. Early photography could not suitably capture the brilliance and shimmer of color in rubies, emeralds and the other colored gems, so diamonds were the gem of choice for pictorial promotions.

Art, Light and Water Converge at the Canal Four-day event is entertainment for all six senses

Artwork provided by Scottsdale Public Art

BY MIKE HUNTER

It’s back — the annual celebration from Scottsdale Public Art that brings interactive, contemporary art installations by local and international artists to the Scottsdale Waterfront for a one-of-a-kind, immersive art event. During Canal Convergence 2017, visitors will experience four days of eight large-scale, contemporary public art installations positioned in the Arizona Canal, along its banks and soaring in the skies above. Visitors can look forward to artist-guided mural painting, installation-themed workshops, all-level dance workshops, an outdoor dance performance at dusk and, new for 2017, a series of intimate artist talks that will take place at the beginning of each evening at the Scottsdale Waterfront, so when the talk is finished, the audience can step outside and see the artist’s work in person. Live music from local bands will be featured each night at Soleri Plaza, and Friday, Saturday and Sunday evenings will feature a beer and wine garden with beer by Two Brothers Brewing of Scottsdale. Returning to Canal Convergence will be the critically acclaimed NYC-based dance troupe RIOULT Dance NY,

which will give another specially choreographed twilight performance at the Soleri Bridge and Plaza. Do you want to get out there and dance, yourself? French dance collective The 7 Fingers will host a series of free, all-level dance workshops for two days at the Soleri Plaza. With an expected attendance of over 50,000, Canal Convergence 2017 will take place at the Scottsdale Waterfront between Soleri Bridge and Goldwater Boulevard over four days: Thursday, February 23 through Sunday, February 26, with new evening hours from 4 to 10 p.m. CANALCONVERGENCE.COM facebook.com/CanalConvergence

IMPULSE, a collaborative creation of designers Lateral Office, CS Design, EGP and Group Mitchell Akiyama Parts of the Scottsdale Waterfront will be transformed into a lightup playground with IMPLUSE: an installation of 15 illuminated seesaws. When IMPULSE is activated by the motion of the seesaw-rider, each seesaw will produce a unique sequence of light and sound. When the seesaws are not in use, they return to a horizontal position with a subtle glow, waiting for the next set of visitors to climb on. Put Wine in Its Place

A good bottle of wine deserves to be well-kept BY RAEANNE MARSH

The muted glimmer of light, reflected in orderly rows; the bottles themselves — perfectly smooth, sensuous shapes — offering the promise of good times: Wine cellars are the very essence of romance. However, developing that wine cellar aura requires more than just lining a room with shelves and laying in the bottles. Whether the wine cellar is for storage only or will also be an entertainment area (albeit at a chilly less-than-70-degrees), certain elements are common to both. A slate floor is de rigueur, for the look as well as its property of insulation. Stone walls, or heavily textured walls that look like stone, combine with the floor to give the sense of being underground that is so much a part of the traditional wine cellar ambiance. Amenities will include a decanting area, incorporated into the design of shelving and racks. Racks will likely be the largest part of the storage plan. Storing bottles of wine individually, on rails rather than shelves, is the preferred method since the chilled air can circulate evenly around the bottle. However, not all bottles are the same size, and other storage spaces are needed. Cubes and bins, in which several bottles can be laid together, can accommodate sizes such as 1.5 liter, magnum and jeroboam (3 liter). Adjustable shelves will hold wooden cases of wine as well as the glassware that you will want to keep on hand nicely chilled. Redwood is favored because of both its aesthetic beauty and the fact that it doesn’t warp or mildew. A tasting table large enough to also put out a plate of cheese or other go-withs, either built into the cabinets or free-standing, is usually included even in wine cellars intended to be first and foremost for wine storage. However, actually dining in the room may not be a good idea, as strong smells can seep through the cork into the wine. This is also the reason the racks should not be treated with any oil-based stain. Wine, in fact, is sensitive to a number of influences. In addition to odor, these include vibration, light and temperature variance. Good lighting for the wine cellar, then, is rope lighting and dimly lit chandeliers. Canned lighting may allow some seepage of air, which could affect the temperature of the room, and if there are windows, it’s best to have the glass tinted.

The Herb Box – Convergence of Flavors

Dishes highlight out-of-the-box combinations of taste and nutrition BY MIKE HUNTER

Founded by catering guru Susan Smederovac-Wilcox in 1995 as a catering company, The Herb Box filled a niche in its original location in central Scottsdale that quickly became all the rage. This eatery has evolved to include restaurant and market as well as catering. With innovative menus and now spirits and other libations, The Herb Box is known for a great neighborhood urban experience that is second to none. Patio seating affords a great view for peoplewatching at the bustling Waterfront/South Bridge convergence point — and is a great

vantage to enjoy Scottsdale Public Art’s special event Canal Convergence this month (see the Arts feature on page 9). But the truest reason for going is clearly the food. Do not miss the great starters. Order a few. The Kale, Corn and Sweet Onion Pakora with serrano glaze and vegan yellow pepper aioli will be the first to go at the table. Its crisp and crunchy texture is surprisingly light and so flavorful. Another favorite is the Korean Fried Cauliflower, which is crisp cauliflower over quinoa and a Korean hot pepper sauce topped with sesame, sugar snap peas and pea shoots — perhaps one of the best dishes in the Valley. Other incredible individual dishes include the Butternut Squash and Corn Enchiladas with kale ensalada, organic arugula, baby kale, avocado, edamame, sweet dried corn, pickled red onion and candied pepitas topped with queso. A more traditional meal may include the Char-Grilled Kobe Burger with bacon, brie, apple-jicama-watercress slaw, smashed fingerlings, crisp-fried sage and smoky blue cheese. The food and drinks are made with mindboggling combinations of quality ingredients, and each is more flavorful than the last. Sit and relax and enjoy the impeccable service. Or … The Herb Box restaurant here in Old Town Scottsdale is the only one of its three locations with a market, offering more options for those who live in our vicinity.
