Mining the mixology of Cocktail Hour BY MIKE SAUCIER
It’s five on a Friday and the glug-glug sound of liquid into glass is on the brain and pulling you to the nearest superb place to escape for a cocktail. Waiting there will be a bartender, or mixologist, or drink artist, or whatever you want to call the person charged with doing the important work of assembling flavorings and spirits in combinations we like to call cocktails. You needn’t look far to find this person. The thriving restaurant scene that has enlivened Arcadia, Biltmore, Scottsdale and Paradise Valley over the last decade has also birthed a busy cocktail bar landscape. Within this growing cocktail world, patterns emerge. Shifts can occur in preferences for sweet or sour, dirty or straight or bitter. Or maybe atmosphere is more valued than before. In looking at some of the trends dominating cocktail bars right now, answers largely depend on whom you ask. It’s fluid … But some indisputable commonalities exist. Whether you seek a balm for your sorrows, a release from work stress, or a place with a comforting glow in which to commune with your smartphone, one thing is for sure: The Happy Hour crowd has gone back to the basics with a taste for the simple components of tried-andtrue cocktails that date back decades. Newfangled showoff drinks get consumed, for sure, but the classics still reign, according to those who would know. Eddie Garcia, manager of Jade Bar, the cozy Paradise Valley retreat at Sanctuary Camelback Mountain Resort, says

although Jade offers new and exciting cocktails, “the classics never go out of style.” At Jade Bar, he says, they pride themselves on having a command of the classics, important because, he notes, “Really, there are no new cocktails, just variations of the classics.” There are still plenty of Old Fashioned and Manhattan drinkers, he says. “Even our own classics such as the Fiery Mandarin and Grapefruit Basil are common. Simple is often the order of the day, although our classic Tiki selection has been received well. In the end, fashions may go out of style but style never goes out of fashion.” For those who want to have that right touch at home, he and Jade Bar mixologist Michael Testa offer mixology classes every Saturday on a variety of spirits. Fellowship, whether with friends, bar strangers or restaurant staff, also has its place in cocktail culture. In fact, there’s no doubt you can’t have a good cocktail experience without the top-flight customer service. A visit to the bar can serve to soothe the anxiety of the day, but the human contact that takes place in that setting is what brings customers back. Whisky also helps. Brian Goodwin, beverage director at The Gladly in Phoenix and Citizen Public House in downtown Scottsdale, says the whisky explosion, which was just getting started when The Gladly opened in 2013, is still going strong. “We’re a huge whisky bar here,” Goodwin says. “There doesn’t really seem to be much of a burst in the bubble on

the whisky side coming up anytime soon … The trend just keeps going,” he says. “Younger people are taking part in it, women are taking part in it — so that in itself is huge; it’s awesome.” The Gladly trains bartenders to learn 50 classic cocktails in 90 days. “It’s a good broad scope for them to build on,” Goodwin says. After the bartenders have a firm grasp of the classics, they can start getting creative. As for the future, it will be besotted with mescal (“I think it’s going to surge here,” says Goodwin) and tiki cocktails and rum are making a cool resurgence, he says (a view echoed by some of the other mixologists). Fading fast from the bright lights behind the bar are flavored vodkas, or, as Goodwin calls them, “onetrick ponies.”

The days of washing your own car seem to be gone in world where a clean, shiny vehicle is a must — and all the more valued in a dusty, dry domain like the Valley. Plant for color and texture, and watch out for frost BY RAEANNE MARSH
Of two distinct landscape styles — traditional style, green and lush with foundation shrubs, or quasi-desert, with low water use — the former is the style most favored in our vicinity. The best look requires appropriate layering and mix of texture and color, explains Melinda Walton, co-owner of Berridge Nurseries on Camelback Road. Roses are popular as a hedge, especially the Iceberg Rose. This rose, which produces white flowers, blooms
the beds ready — turning over the soil and adding fertilizer. Berridge offers free Little rose classes Ollie every weekend in January to help you get the best results. Other special care for your garden
frequently throughout the year — except for what Walton refers to as a forced dormancy in December and January — although somewhat slower during the hot months of summer. Also popular in our vicinity is Little Ollie, a dwarf olive bush with silver-grey foliage. Those are two of numerous options homeowners have for low shrubbery; there are fewer available for ground cover. Trailing varieties of lantana — with white, purple or yellow flowers — are easy to control and maintain. If you want a more lush appearance, go for the wedelia. And then there’s myoporum, which Walton describes as “like a green carpet that just hugs the ground” as she notes that most people don’t want to see any dirt or any of the decorative granite commonly used to cover landscape beds. Spring will be the time to plant bare-root roses, but now is Myoporum a great time to get

Most vines are frosttender, notes Walton, also naming lantana, hibiscus, geraniums — in fact, most flowers — and desert plants, too, which are popular here as accents for the garden. There is a special frost cloth available that’s breathable, “so you can leave it on for several days” and not suffer the inconvenience of repeatedly Iceberg putting the Rose cover on and off during extended frosts, says Walton, explaining household staples such as sheets are serviceable but become heavy when wet and are better not left on too long. And burlap sacks and other heavy materials are best avoided altogether.

Making the first meal of the day the choice also for the second is becoming a very popular way to do lunch, and breakfast places are opening up all around the Valley. Here are some of our picks for great midday morning fare.

Inspired by the town of Montauk at the tip of Long Island, this open and airy eatery is a favored hot spot for lunch and dinner. The beach-y look and the coastalinspired menu make this a unique addition to the local scene. The menu offers a selection from light to satisfying, and includes sandwiches, salads and traditional dishes. Start with the Clam Chowder made fresh with thyme and cream, or the Tuna Tartare Guacamole made with cava orange, cilantro and Serrano chile. The Grilled Lobster Wedge is a real treat with egg, bleu cheese, bacon, beets, tomato and crispy shallots doused with blue cheese dressing. Another popular salad is the Avocado and Pink Grapefruit Salad with jalapeno, feta cheese, pumpkin seeds and cilantro tossed in a jalapeno vinaigrette. Delicious and made with top ingredients are the sandwiches. The Italian Turkey Pastrami is layered with a confit of peppers, havarti cheese and house pickles.
A refreshing alternative to the original is the Montauk’s version of Chicken Reuben, which is made with caramelized cabbage, Thousand Island dressing and Swiss cheese on rye. For a main dish, the New York Strip takes a unique twist on the traditional with its pineapple-miso glaze accompanied by oyster mushrooms, edamame and whipped potatoes. In the old location of Bungalow on Scottsdale Road in Old Town, this “hideaway” is surrounded by patios and is bright and very open. The décor, like the menu, is very coastal, with woods and nautical patterns that give it a very appealing atmosphere. The service is quick and very professional. It does get busy for weekday lunches, so allow for
