aste of Auckland is one of the highpoints of the major events programme and an event I look forward to very much. I cannot think of a more appropriate way to show off Auckland’s rich culinary expertise and celebrated cuisine than at New Zealand’s most glamorous food festival. Major events play a key role in Auckland’s long term economic and social aspirations. In the last three months alone Auckland has hosted the ITU World Triathlon Championships, Adidas Auckland Marathon, New Zealand Fashion Week and Diwali Festival. Transport

It’s easy to get to and from Victoria Park using public transport. From Britomart you can take the red CityLINK bus to Wynyard Quarter, which passes Victoria Park. The green InnerLINK and amber OuterLINK buses also go past Victoria Park. If you live on the North Shore, the Northern Express buses (that travel via the Northern Busway) all pass Victoria Park. CROWNS

Crowns – The currency of Taste of Auckland This year Crowns have gone digital and are stored electronically on Crown Cards. Crowns are the official currency of Taste of Auckland and are used to buy dishes from restaurants and drinks from our various vendors. Two Crowns are worth $2; dishes are priced between 8-12 Crowns each. Please note that restaurants and bars will not accept cash for tasting dishes or for drinks consumed at the event (with the exception of the VIP Lounge). However, if you are purchasing products to be enjoyed at home you can use either Crowns or cash. Where do I get Crown Cards? You can purchase a Crown Card directly from the Taste Bank or watch out for one of our roving Crown Card sellers dressed in hot pink. How are Crown Cards purchased? Crowns are loaded directly onto your Crown Card by our roving Crown sellers or at the Taste Bank. Crowns may be bought with eftpos, credit card or cash. Exhibitors cannot load Crowns onto your Crown Card, they can only deduct. No Refunds What if I have left over Crowns? Crowns cannot be redeemed for cash at the end of the event. Should you have any Crowns left on your Crown Card use these to purchase goods to take home from one of the exhibitors or pass on to friends who may be taking part in another Taste session in 2012. Crowns will not be valid after November 18, 2012. Please treat Crown Cards as you would cash. Lost cards cannot be replaced. Please hand in your used Crown Card on the way out – we’ll make a charitable donation of 35c for each card collected. A note on Alcohol: Drinks for consumption at the festival are sold by the glass only. Please do not open a bottle of alcohol at the festival as this conflicts with our arrangement with the Auckland District Police. You will be required to leave if found with an open bottle.

The Buck Hunter’s Grill Ben McRae

Horopito, kawa kawa & flaxseed rolled venison loin with maori potato chips, kawa kawa beer damper, manuka smoked kumara mash and watercress and piko piko salad. For the venison: 150gm wild red venison loin 1 tablespoon of kawa kawa 1 tablespoon of horopito 1 tablespoon of whole flaxseed Toast the flaxseed in a dry pan until the seeds starting popping, set aside to cool then add the horopito and kawa kawa and blend the mix in a spice grinder. Roll the venison in the mix and then wrap in glad wrap and roll tightly at both ends. Set aside in the fridge for 3-4 hours so the flavours absorb into the meat. For the Mash: 1 large purple kumara 75gm butter Manuka smoke spray to taste ( available from selected suppliers ) Salt & pepper to taste Peel and dice the kumara, place in a pot of water and cook until tender. Drain the kumara, place into a blender with the butter and blend until smooth. Season with salt & pepper and enough smoke spray to taste. For the Kawa Kawa beer damper: 2 ½ cups self raising flour 2 teaspoons castor sugar 1 teaspoon salt 3 tablespoons kawa kawa 60gm diced butter (at room temp) 300ml of Monteith’s Black Beer Sift the flour into a mixing bowl and add the salt, sugar & kawa kawa. Add the butter and rub into the mix until it looks like breadcrumbs. Make a well in the middle of the mix and add the beer, then start to bring the mix together. Place the mix on a floured surface and knead lightly for 1-2 mins until the damper forms a smooth ball. Place on a baking tray and sprinkle with a little olive oil, sea salt & kawa kawa. Bake for 25 mins at 195c. Damper is cooked when you insert a skewer and it comes out clean. For the maori potato chips: 5 small purple maori potatoes salt & horopito to taste Using a mandolin slice the potatoes straight into a deep fryer making sure that they do not stick together as they are cooking. Once crisp empty onto paper towel to drain and season well.

Uova d’Isanna – Isanna’s Free-range Eggs Julie Biuso

Ready in 12-15 minutes, Serves 4-6 6 medium (size 6) free-range eggs (at room temp) Sea salt 2 Tbsp coarsely chopped flat-leaf parsley 1 Tbsp finely chopped fresh garlic Freshly ground black pepper to taste Smoked paprika Tiny black Ligurian olives (optional) Extra virgin olive oil, for drizzling Prick the rounded ends of the eggs with a dressmaking pin, carefully lower them into a pan of gently boiling water and cook gently for 7 minutes. Drain off the water, then let the cold tap run over the eggs for 5 minutes to cool them quickly. Shell carefully (they will be fragile), pat dry then cut in half and arrange on a plate. Sprinkle the eggs with sea salt, parsley and garlic. Grind over some black pepper then sieve over a little paprika. Garnish with olives. Drizzle with oil and serve immediately with good crusty bread.

Raukumara Red Venison and Beetroot Tartar Mark Southon

Tartar 60g venison finely diced 15g roasted beetroot, finely diced 5g shallots finely diced 5g sweet gherkins finely diced 20g truffle mayo 5g worcestershire sauce 2/3 drops tabasco sauce 2g parsley & chives Mix all ingredients together and season with salt and pepper Garnish Mini kumara crisps soft boiled quail eggs, garlic croutons, horse radish mayo, poached plums, smoked baby beetroots, chive oil, baby cress. Spoon the tartar into a 7cm ring then arrange all the garnish in a line down one side of the tartar, garnish with the baby cress and drizzle a little chive oil around. Raukumara Sour 45ml Venison fat washed Willets Rye whiskey 30ml fresh lemon juice 15ml manuka smoked beetroot & plum cordial 20ml quail egg white Shake with ice and strain into a chilled cocktail glass and spray the air above the drink with a horseradish atomizer. Caitlin Smith Smith has sung in a multitude of settings, residencies and 11.00-2.00pm festivals with her highly acclaimed Jazz/lounge trio The Fondue Set and more recently with The Caitlin Smith Trio. Meet the Chefs Over the next few pages we pay homage to the restaurants and chefs of the festival – and tell you a little about them... ANNABEL WHITE KENWOOD

Annabelle White is synonymous with great food and fun times cooking in the kitchen. The popular television and radio cooking personality believes in keeping food simple and easy. Annabelle will demonstrate her delicious recipes and, as always, mix in with the ingredients lashings of quips and tips!

CHEF – ANTON LEYLAND KERMADEC FINE

Beginning his career at the Hyatt Regency, working his way through each kitchen, including the fine dining restaurant; Top of The Town, Anton’s career began with a focus on more formal and fine dining restaurants. From One Tree Grill Anton has come to Kermadec looking forward to continuing the restaurants successful legacy and bringing with him his unique take on Pacific and Asian flavour parings.

CHEF – ANTONIO CRISCI PODERI CRISCI

Antonio learnt to cook with his grandmother in his mother’s kitchen in Napoli and was 19 when he opened his first restaurant in Italy. He is a renowned Auckland restaurateur, opening the hugely successful Toto restaurant, Il Forno Café in Ponsonby, modern Italian bistro NSP and his latest venture and passion Poderi Crisci on Waiheke Island.

CHEF – AL BROWN DEPOT

Al Brown can be counted on to find and share great New Zealand cuisine – delivering the real stuff. Showing passion and respect for local produce, Al’s dishes deliver uncomplicated excellence. His new restaurant, Depot, opened in Auckland, New Zealand in 2011 and has been an unprecedented success, winning the 2012 Metro Supreme Restaurant of the Year. Depot reflects Al’s attitude to food perfectly: in season, beautifully cooked, to be enjoyed with friends.

CHEF – BEN BAYLY THE GROVE

Following jobs in Michelin starred restaurants in Europe Ben returned to New Zealand and joined Michael Dearth at the Grove. Bayly has experienced an illustrious career to date, giving him the confidence to not only carry on the esteemed reputation of The Grove, but to stamp his own unique food signature on its menu, picking up Metro’s Restaurant of the Year Award two years running (2010 – 2011).

CHEF – BEN McRAE SALE STREET BISTRO

A well-experienced and travelled chef, Ben McRae has worked at some of Australasia’s top eateries. In recent times he was executive chef at Auckland’s ‘Iguaçu’, and currently heads up renowned Auckland bar and bistro, ‘Sale St’. His resume also features numerous awards, including the top spot in the 2008 Monteith’s Wild Food Challenge, a contest in which he was once again a national finalist this year with Sale St’s entry, ‘The Buck Hunters Grill’.

SHOW CHEFS CHEF – DES HARRIS CLOONEY

Des Harris is widely regarded as one of New Zealand’s most prominent and highly profiled chefs. His career has developed through the influence of other great chefs such as Rex Morgan and Al Brown. Joining Clooney as head chef in 2008 allowed Des to formulate his own expression of style, emphasized within an award winning dining room.

CHEF – EUGENE HAMILTON EURO

At age 15, Eugene Hamilton started working for Simon Gault and ever since has never been far from his side. He trained under Gault for four years before working in his kitchens in between stints in Japan. Hamilton now runs Gault’s growing empire, as the Nourish Group’s Kitchen Operations Manager and head chef of Euro.

CHEF –JAVIER CARMONA MEXICO Spanish born and Sydney raised, Javier Carmona has been working as a chef for more than 25 years. An early fascination with the arts led him into cooking; a creative outlet he quickly figured out he was pretty good at. Javier draws inspiration from his Spanish heritage and his extensive international cooking experience to create dishes which are aromatic, subtle, and packed full of colour and flavour, reflecting what is seasonal and sourced locally.

CHEF –JONNY SCHWASS GORILLA EATERIES

Jonny Schwass takes a no-nonsense approach to cooking which has made him a bighit in the world of cuisine, overseas and at home. During his 20 years of working in the hospitality industry, Jonny has cooked in various different restaurants and hotels in Australia and New Zealand. He has also spent two summers’ as a private chef in America. The uniqueness of Jonny’s cooking comes from his firm belief in well-chosen ingredients and simply prepared food

CHEF – JOSH EMETT BMW Brought up on a farm in Hamilton, Josh discovered his passion for cooking as a child. He spent much of his time working on the farm and began cooking out of necessity. After much hard work Josh joined Gordon Ramsey in the three Michelin starred Restaurant Gordon Ramsay in Chelsea, he then spent the next 10 years working side-by-side with the world famous celebrity chef. Emett is now well known to most New Zealanders as judge on Masterchef New Zealand alongside Simon Gault and Ray McVinnie.

CHEF – JUAN BALSANI KERMADEC FINE

Growing up in Buenos Aires, Juan spent a lot of time with his grandmothers who spent their days baking and cooking. Their passion for baking inspired Juan to take the skills they had taught him and use them to become a successful Pastry Chef. Once in New Zealand he was employed by the respected Peter Thornley and joined the Kermadec team.

CHEF – JULIE BIUSO FOOD WRITER

Julie has had a long and successful career in food journalism, and on radio and television, including being a regular guest on breakfast television for 5 years and having her own television series on Italian cuisine. She is the author of 14 food books, most of which have scooped prestigious awards in this country and overseas. She is currently Food Editor of Taste and Your Home & Garden magazines.

SHOW CHEFS CHEF – KYLE STREET DEPOT

Kyle Street, Head Chef of Al Brown’s Depot Eatery and Oyster Bar, started his career at Logan Brown in 2004. After stints in Chicago & London, Kyle was appointed Head Chef of Depot on its opening last year. Depot is a perfect reflection of Kyle’s attitude toward food and as he states, “it’s all about provenance, flavour and respecting your ingredients”.

CHEF – LUCA VILARI CHEF, FOOD WRITER, TV PRESENTER Luca has had a passion for cooking from a very young age, something inherited through growing up in his parents’ Italian restaurant. After being with Auckland’s Cin Cin for 7 years Luca made his way to Melbourne then Italy, working his way through fine dining restaurants. Since returning to New Zealand he has been busy juggling his time as a food consultant, a food writer for Taste Magazine, a caterer and, most recently, a presenter on The Shopping Channel.

CHEF – MANDY LUSK VIVACE

Mandy opened Vivace in 1992 with Alisdair Gribben then 4 years later they started La Vendemia so they could import Italian wines direct. In 2005 Mandy was one of the creators of La Zeppa, and that year won Lewisham Hospitality Personality of the Year, followed 2 years later by “Outstanding Restaurateur”. Mandy’s latest venture is the creator of Ragu Kitchen & Wine Bar in Point Chevalier, and celebrating Vivaces’s 20th birthday.

CHEF – MARK SOUTHON THE FOOD STORE Mark is already a star of three TV shows. You can see him on Food TV’s The Foodstore Chefs, the Best of NZ Food and the recent TV One hit “Monteith’s Wild Food Challenge” (If you missed it, Food TV will be screening it again in January). Mark has a genuine love for good food and always wanted to be a chef. He enjoys a laugh, even going so far as saying Lenny Henry’s TV show “Chef” was also an influence on him getting into the business.

CHEF – MICHAEL MEREDITH MEREDITHS Michael Meredith worked in some of Auckland’s most esteemed kitchens – Antoine’s, Vinnie’s and The Grove before opening his own establishment, Meredith’s, on Dominion Rd. Meredith’s is now constantly referred to as one of the top NZ fine dining restaurants where every detail is performed under the top chef’s guidance.

CHEF – NADIA LIM NZ MASTERCHEF Cooking has always come naturally for Nadia and is where she loves to show her creativity. She is a registered dietician. Since winning NZ’s Masterchef she has written her first cook book Nadia's Kitchen, as well as appearing around the country at demonstrations and charity events.

CHEF – NICK HONEYMAN THE COMMONS South African born, Honeyman spent several years in Paris working under great chefs Alain Passard at L’Arpege (three Michelin star) and Pascal Barbot at L’Astrance (also three Michelin star), and in Tokyo at Iron chef Sakai Hirotia’s restaurant La Rochelle. Honeyman now heads up hugely popular Takapuna restaurant, The Commons, his New Zealand resume also includes time at the French Café and as a guest chef on Masterchef.

SHOW CHEFS CHEF – PAUL JOBIN SKY CITY Although Japanese trained, over the years Paul Jobin has entertained us with creative food ideas inspired by global cuisines, throwing in a touch of kiwi ingenuity with a quirky and fun approach to food. Currently Paul’s role is overseeing the kitchen operations at SKYCITY with their branded restaurants including dine by Peter Gordon, Bellota Tapas Bar and Depot Eatery and Oyster Bar.

CHEF – ROBERT RICHARDSON MOLTEN

Robert took over the stoves at Molten from Michael Van De Elzen at the beginning of the year. He has worked in a number of leading NZ restaurants including Icon @ Te Papa with Peter Thornley, The Hunting Lodge with Geoff Scott, Martin Bosley’s, and Kermadec to name a few. He is a big believer of using seasonal produce sourced directly from the grower and allowing the produce to star.

CHEF – SACHIE NOMURA SACHIE’S KITCHEN Culinary rising star Sachie Nomura is originally from Aichi, Japan, but since arriving as a university student in the mid 1990’s now calls New Zealand home. Drawing from a variety of sources including traditional family recipes handed through the generations, Sachie adds her own unique style to her recipes, ensuring healthy and tasty Asian food is accessible to everyone. She will soon feature in her own travel TV programme on Prime.

CHEF – SERGIO MAGLIONE TOTO’ Sergio arrived in New Zealand 15 years ago with a background cooking in seafood and pizza restaurants in Naples, Italy. Sergio bought Toto Italian Restaurant from his uncle in 2006. Sergio continues to collect awards at Toto while still finding time to cook for Team New Zealand in Venice and Naples for the AC45 races.

CHEF – SHANE YARDLEY FISH

Shane considers himself a passionate chef who works hard to achieve perfection. Shane trained at Bay of Plenty Polytechnic and started his career in the early 90’s as a commie chef at Gault’s Quay, where celebrity chef Simon Gault suddenly identified him as a chef with high potential.

CHEF – SIMON GAULT EURO

Simon Gault is one of the leading lights in New Zealand’s exciting culinary scene. He has proved himself to be an innovator, a pioneer and a leader over many years and has worked both here and internationally at a vast array of venues ranging from the unassailable bastion of Auckland fine dining, Antoine’s and Michelin starred establishments in the UK.
