Aiming for a successful MP Off Season Rotation Program The MP Off-Season Rotation Program, which was launched in 2018 represents an opportunity for off-season team members to temporary work in a receiving MP company or hotel different to where they are already working in; to provide support to other MP destinations/hotels and to further develop certain skills which will improve their competencies and help them once they return to their original position.

Sharing inspiring MP experiences How did you start as a Trainer? I was part of the H.R team in InterContinental, my direct supervisor left and after a short while he contacted me to join one of the biggest training company ”AMIDEAST” as a trainer and I remember him saying “I know that you’ve never worked in training but I see a trainer in you”, I went to the interview just not to embarrass him but the interviewer said the same thing about being a natural trainer, so I joined. What was your most unforgettable training and why? My first induction as a new entry staff in the hospitality, it was made by one of the best trainer and persons I’ve ever met in the industry ”Ms. Ama Khaleel”, Why? Her passion for the hospitality encouraged me to decide that Hospitality will be my career. What are some of your best tips/ “Do’s” as a Trainer? • • •
One of the most important keys is establishing rapport and a nice learning atmosphere and environment. Self Confidence comes from many things but one of the most important is Well Preparation “there is no bad luck there is low preparation” Learning is a journey and our job is to be the a good helpful companion in everyone’s journey.

Compliment from the Kitchen TUNA STEAK For 10 persons 2 kg of fresh tuna in 4 cm high slices Form 10 servings and place in a baking dish
SLICED STEAK WITH SUNFLOWER SEEDS AND TROPEA RED ONION TART
Ingredients: For marinating 150 gr olive oil 4 crushed garlic cloves 50 gr of chopped chives lightly salt Add the marinating to the tuna and leave to rest for an hour Ingredients: For the tart 10 pcs Aluminum container 400 gr Stewed red onions 30 pcs Fresh Red onion rings Olive oil to taste 4 Whole eggs 100 gr Breadcrumbs 70 gr grated Parmesan cheese Salt to taste Brush the containers with oil internally and pass with breadcrumbs to form an inner layer. In a bowl add the eggs with the onion, the grated cheese, mix well, add salt and divide into 10 containers. Bake at 135 degrees for about 30 minutes. Once ready, keep warm.

Compliment from the Kitchen TUNA STEAK Ingredients: For the chips 500 gr Fresh Gold Potatoes 1 lt frying oil Cut the chips and leave in running water for an hour. Drain and fry in hot oil at 160 degrees. Set aside. Ingredients: For the sauce 20 gr Soy sauce 1 teaspoon Mustard 100 gr Olive oil Mix the mustard with the soy and whip with a whisk adding the oil.
To complete the plate
Brown the tuna in a pan for about 2 minutes per side and keep warm on a plate. On a warm and large enough plate, whip up the tart and the potato chips and the red onion slices. Cut the tuna in three pieces and place on the plate. Garnish with the soy sauce and some chive.
