The TIP – The International Program an MPI & FTI Collaboration On June 21st, the MPI Talent Acquisition Team introduced & launched the “The TIP – The International Program” to 36 FTI Apprentices.
The TIP is a major attempt to maintain the knowledge and talent within the FTI Group while giving the FTI Apprentices the opportunity to go abroad to one of the MP Destinations and hotels. Many destinations have a high demand of German speakers. For this initiative MPI HR will work very closely with FTI’s Apprenticeship Department and in some cases giving FTI’s apprentices the opportunity to put their knowledge of the destination & FTI Group into practice by going abroad and work directly in the destination. FTI Apprentices have been successfully trained in various departments: • Product Management (Including basic knowledge of Yield & Revenue Mgmt.) • Aviation • Administration • Reception • Accounting The TIP seeks to offer FTI Apprentices: • MP Career Path after the University or an Apprenticeship Program in FTI • A way to guarantee readiness for a successful attractive international working experience in MP Destinations & hotels • Putting acquired knowledge into practice • Keep young talent and develop it

The TIP – The International Program an MPI & FTI Collaboration Other Sources for TIP-Candidates are local German universities. As part of the university requirements, students have to successfully complete a 6 months internship. These highly motivated students have experience within the tourism sector and have a specialty in Tourism & Hospitality Management as well as Online and Offline Tourism Marketing. MPI TA Team is in touch with local MP HR Managers to assess their staff needs and see how we can implement this program locally. From the candidate’s side the duration can range between 2 to 6 months. In some other cases candidates might even be interested in a full time position.

Sharing inspiring MP experiences Can you share with us a your experience in MP so far? I started as a representative in 2003 with Meeting Point Calabria, and 1 year later I moved into the office at the traffic and excursion department. In the beginning we only had the guests of FTI-Group but year after year other Tour operators were added. After growing in the traffic and excursion department I became Head of Operation Calabria. Which represented a new challenge to coordinate the team of representatives and offer a good service to the guests. In the meantime Meeting Point Calabria changed into Meeting Point Italy under the head of Meeting Point International and we opened local offices in Catania, Olbia and Rome. Since January 2019 I’m COO of Meeting Point Italy. It was amazing to see how our little Meeting Point Calabria was growing every year and starting with a staff of about 5 people ….we now became a “Big Meeting Point Italy Family” of about 60 employees. How would you define your MP experience in one word? And why? Thrilling!!! Once I said: “Office is nothing for me – I’ll never take a job where I have to sit behind a PC”. And here I’m, sitting behind a PC. I found out that also in the back office there is a lot of variety and it never gets boring, for sure not if you have to do with operation. Every day is different and you never know what will happen. Furthermore you have to deal with a lot of issues at the same time. In my new role, I became more aware about how big we really are as a company and how important but also how difficult it is to make all team members aware of this. Sharing inspiring MP experiences Which do you consider the biggest challenges for MP in your region? Our challenge as operation department is to develop new excursions beside the traditional ones, more experiences and individual excursions. Create them is not so difficult but make them work, sell them to the guests this is the biggest challenge because we have a lot of guests arriving and they are already sure about what they want to visit so we have to be very persuasive to make them change their mind.
Can you share the most inspiring employee success story you have experience in MP? There are a lot. It is always nice to see if employees grow within the company, changing department etc. And luckily we have a lot of these cases. Personally I was really happy that some of the employees starting in the operation with me, now have important roles not only in the DMC but also in MPH Labranda Rocca Nettuno. Chicken Yassa Ingredients 3 chicken leg quarters (leg and thigh) 3 chicken breast halves (bone-in) 5 onions (about 2 pounds) peeled, halved, and thinly sliced 1 habanero or scotch bonnet pepper Marinade 1/2 cup fresh lemon juice 1/4 cup canola oil or olive oil 2 tablespoons dijon mustard 4 medium garlic cloves, crushed 1/2 teaspoon salt For Browning and Braising the Chicken Kosher salt Freshly ground black pepper 1 tablespoon cooking oil (olive, canola, or grape seed) 1 1/2 cups low-salt chicken broth (I recommend Swanson’s) Garnish 1 cup pitted green olives, sliced F&B The Gambia Human Resources Newsletter – June 2019

Chicken Yassa Instructions Marinate the Chicken: Put the chicken and onions into a large glass bowl. Cut a few slits in the habanero pepper and add it to the bowl. Whisk the marinade ingredients in a small bowl and pour on top. Toss to coat. Cover the bowl with plastic wrap and put the marinate in the fridge for at least 3 hours or, preferably, overnight. Brown the Chicken: Preheat the oven to 350ºF. Heat 1 tablespoon oil over medium-high heat in a large heavy pot or dutch oven. Remove the chicken from the marinade and sprinkle pieces with a few pinches of salt and a few grinds of pepper, to taste. Put the brown chicken on both sides in batches, three pieces at a time, about 5 minutes per batch. Then transfer it to a plate and set aside. Spoon out some of the chicken fat from the pot, leaving about one tablespoon. Caramelize the Onions: Set the hot pepper aside and scrape the onions and all the marinade into the pot over medium-high heat. Cook, stirring, for about 5 minutes to get the onions hot and cooked. Cover the pot and turn the heat to medium-low. Let the onions cook, stirring occasionally, for about 10 minutes more, until they are soft and starting to caramelize. Regulate the heat so they don’t burn. Use a spatula or wooden spoon to move onions aside, as you lay chicken pieces into the bottom of the pot, and then mound the onions on top of the chicken pieces. Place the hot pepper in the middle of the pot. Pour in chicken broth. Turn the heat to medium high and bring the broth to a simmer. Cover the pot and put it in the oven and cook for 1 hour and 20 minutes. Serve with fluffy white rice and sliced green olives.
