Apple Pie

Serves 8 Delicately spiced, this old-fashioned apple pie is an all-time classic dessert with minimum fuss!

Ingredients

1 egg yolk

2 1/2 cups (375g) plain flour

1 egg white, lightly whisked

1 tsp baking powder

1.25kg apples, peeled, thinly sliced

Pinch salt

1 tbs fresh lemon juice

2 tbs caster sugar

1/2 cup (115g) caster sugar

2/3 cup (160ml) olive oil

1 tsp ground cinnamon

Method

Step 1 : Combine the flour, baking powder, salt and sugar. Combine the oil, egg

yolk and 1/2 cup (125ml) of iced water. Stir into dry ingredients until com

bined. Knead until smooth. Divide into two portions, cover and refrigerate

for 30 minutes. Preheat oven to 180째C.

Step 2 : Roll out one portion of pastry to line a 25cm round pie dish. Brush with

egg white. Toss the apples in lemon juice. Combine the sugar and cinnamon.

Chicken and Roast vegetable Salad

Serves 8-10 Lunch or dinner is on the table in minutes with this easy summer salad using barbecue chicken and roast vegetables.

Ingredients

4 potatoes, cut into 3cm cubes

2 carrots, peeled, cut lengthways

1 red capsicum, quartered

2 tablespoons olive oil

3 cups of shredded cooked chicken

4 green onions, finely sliced

100g baby spinach 1/3 cup whole egg mayonnaise 2 teaspoons wholegrain mustard 2 tablespoons of apricot nectar

Method

Step 1 : Pre-heat oven to 220 degrees Celsius. Place potato in the microwave and

microwave on high for 2 minutes or until hot to touch, then drain.

Step 2 : Cut carrot and capsicum into 3cm pieces. Arrange in a single layer with

the potato in a roasting pan and drizzle with olive oil. Season with salt and

pepper and turn to coat.

Step 3 :Roast the vegetables for 20 -25 minutes or until golden and tender.

Transfer to a large bowl. Allow to cool for 10 minutes. Add the chicken,

onion and spinach.

Step 4 : For the dressing, combine the mayonnaise, apricot nectar, wholegrain

mustard and salt and pepper in a screw top jar. Shake to combine. Pour

over salad and toss to combine. Season with pepper and serve.
