Grab and Go TOOLKIT Innovative tools and resources to help you capture additional revenue by adding Grab and Go offerings for your consumers.

The opportunity to offer an assortment of portable, prepackaged, Grab and Go items can be a profitable solution to navigate the current shift in foodservice operations. Customers increasingly desire the portability and convenience of Grab and Go foods. That's why more restaurants, especially limited-service brands, are investing in Grab and Go food options to complement their regular menus. Some companies are putting refrigeration units in their existing restaurants, while others are installing vending machines and kiosks in nontraditional locations like airports and schools. No matter the delivery, the food industry is taking note of a growing band of consumers who want delicious, fresh, exciting—but prepackaged—food. As many operators deal with staff changes, you'll find these labor-saving Grab and Go items easy to incorporate into your business. TIP: Even with Grab and Go, consumers will choose with their eyes. Select attention-grabbing containers that showcase the product.

Please review federal, state and local regulations to ensure your compliance with the law. For safety and sanitation, stay up to date and check the latest information on CDC.gov. Consult your legal advisors regarding any risks associated with starting a new venture or implementing any recommendations.

In our current state, innovation and adaptability to the changing environment are critical. On-the-go meals from consumer's favorite places are excellent options for those with little time and/or are reluctant to dine in.

WHAT IS GRAB AND GO Pre-make your signature dishes and offer meals ready with Grab and Go solutions. Shelf-stable items can be set up near the host station, while a cooler can be used for refrigerated items. Customers can quickly grab their selection, check out, and enjoy their items offsite. Incorporate Grab and Go items in your curbside pickup program to bolster more convenience for your consumers.

Grab and Go meals are a great way to increase volume and prepare for an influx of takeout. This format is simple to execute, requires minimal labor, and ultimately reduces operational costs. Cater to on-the-go individuals and smaller groups looking for a quick solution without compromising quality or taste. Be sure to offer drinks, side dishes, and single portion desserts. You can cut down costs and be more environmentally sustainable by asking if a customer needs plastic cutlery instead of giving it to them outright.

TIP: Adapt your menu to the new normal. When facing a shortage of labor, consider pairing down your menu and concentrating on the best items possible. Your brand is unique to your customers, and now is the time to lean into that. Pick one or two menu items that capture your restaurant's essence and focus on making those feature items. Find ways to simplify your recipes without compromising flavor. Some of your menu items, like fried food, may need to be adapted for off-premise dining either by finding the right to-go container or switching to more forgiving batter types.

4

PRE-ORDER DAYS Expanding your footprint could include preparing pre-ordered meals. This is when customers would call or order through an online platform and pick-up on a designated day. Estimate the labor and inventory based on the pre-orders for the volume you would have. This allows your customer the freedom of choice to order fanfavorite dishes as Grab and Go versus the traditional sandwiches and wraps.

INDIVIDUAL MEALS

• Stock up on Sysco supplies to keep your space clean and staff protected. • Use contactless or disposable menus. • Require guests to wear masks while walking around the Grab and Go area. TIP: Always refer to the CDC guidelines and your local Restaurant Association guidelines for current safety procedures and standards.

Your staff is your operation’s greatest asset. Learn how to leverage your team’s strengths to accommodate the changes in your staffing.

STAFF SCHEDULING OPTIONS:

INVENTORY

A way to address a loss of labor is to restructure your team temporarily. Sometimes you can find hidden gems in unlikely places. Please take a moment to listen to your available staff and find new ways to use their strengths and skills. Restaurants have repurposed their food-handling certified wait staff into master prep-cooks. (cross-training)

Keeping up with your inventory is no small feat. Do you see a trend? Ensure you are stocked based on your demand. Consistency builds trust with your customers. Keep in mind higher-margin, low labor products while reviewing sales and inventory.

A repurposed team can also help with pick up or sanitation procedures. Have staff actively sanitize Grab and Go stations regularly. If you have enough staff and increased demand, you may choose to implement curbside or drive-in options to create additional ways to patronize your restaurant. Doing so may allow you to keep critical staff employed and develop a sense of comradery and unity amongst your staff and customers.

Tip: Areas to consider while evaluating inventory: • Shelf life for your Grab and Go items • Items that are higher in the margin such as chicken breast • Labor-saving items like precut fruits and vegetables

Efficiently prepping can reduce chaos during rush hours. Scheduling your team four hours to prep a few days a week can significantly reduce overhead costs, allowing you to minimize staff and focus on front-line sales and consumer experience.

Some foods retain their flavor and texture better than others during the takeout or delivery timeframe. Sandwiches, salads and wrap platters are all excellent examples of family-style takeout or delivery meals that are popular in times like these. Short pastas, such as cavatappi and penne, retain their quality during transport. Fried foods can lose their crisp; however, Sysco has developed several distinctive fried products that hold up better over time. For example, Sysco Imperial Ultimate Crisp Heavy Battered French Fries, which are coated in an extra-thick batter to ensure a crisp outside and buttery interior. Selecting your menu items and takeout containers with travel in mind will increase customer satisfaction and likely result in an uptick of re-ordering.

LONGTERM SUSTAINABILITY It is uncertain how long the current pandemic will last, Therefore, it is essential to position your restaurant as safe, delicious, and unique for the long term. Operators who do this well will see a spike in repeat customers that could last well beyond this current crisis. Thriving in this situation will mean finding the right balance between offering easy, consistent meals that provide a good perceived value. Regardless of how long social distancing lasts, having these systems in place and being adaptable will set operators up for success long term

LUNCH IN A BOX Consumers are busy balancing the current situation of working from home and aiding their school-aged children with distanced learning. Lunch in a Box is a new revenue stream that can prove to be lucrative if implemented in a subscription-based model. Lunches that are meant to be eaten cold or reheated are viable options in the current marketplace.

WRAPS -

A perfect option for

Grab and Go due to their portability and ease of eating. Consider upselling your salad options by offering them as a wrap so you can drive your profitability. For Grab and Go, simply serve the dressing in a portion cup instead of mixing together with your wrap filling to prevent sogginess.

FRESH FRUIT & VEGGIES Promote healthy eating throughout the day. Consumers are snacking more than ever and are looking for healthy alternatives to help them get to their next meal period. Consider bundling fresh fruits and veggies with mixed nuts, cheese, and/or charcuterie to create a meal replacement for Grab and Go segment.

GRANOLA AND NUTS Provide complex carbohydrates, protein, and healthy fats.

GRAB AND GO TOOLKIT

SOUPS - Either hot or cold soups are a great option for Grab and Go, as your customers can eat now or reheat later. Offering bundles with wraps or sandwiches will help grow your profitability and move inventory.

BITE-SIZED DESSERTS Options such as macaroons, cookies, and mini donuts help to reduce portion size and promote sharing, which can lead to multiple orders as consumers will want to try each item. Consider offering pre-built bundles that include a variety of mini offerings that your customers can easily add to their order.

VEGETABLES -

Steamed or grilled

firm textured vegetables like carrots, broccoli and fresh green beans should be prepared al dente, so they don’t overcook when reheated. Canned vegetables can give you more of a country-style appeal and are great as a side to meat-based entrees.

11

GRILLED MEATS -

Grilled meats

reheat easily and maintain their integrity in Grab and Go.

PIZZA AND FLATBREAD These Grab and Go staples can be prepared ahead of time, allowing for shorter ticket times and support increased demand.

CASSEROLES & POT PIES A hearty choice with extended hold capabilities. Pot pies and other casserole dishes may also be prepared in disposable foil pans for easy cleanup and leftover storage.

PASTA DISHES -

Baked pasta

dishes such as lasagna and baked ziti can be prepared ahead of time and in bulk for ease of service and reheating.

SANDWICHES AND WRAPS Convenient, extremely portable and suitable as a meal or snack at any time of the day. Pair with Grab and Go items for a complete meal.

SALADS -

For the unforeseen future, we will need to continue to exercise social distancing of at least 6’ between us in all environments. Given most restaurants are operating at or below 50% to maintain the required social distancing guidelines. Be sure to check your local guidelines; depending on where you are located, there may be different restrictions. As a general rule continue to check local and national guidelines to ensure you are aware of any new practices at all times. In addition to masks and sanitation, there is a second tier of equipment you may need to consider. Check out the products below.
