SONGS OF THE

HOLIDAY SEASON T’was The Night Before Christmas

T’was the night before Christmas when all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, while visions of sugarplumbs danced in their heads, and Mamma in her kerchief and I in my cap had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow gave a luster of midday to objects below, When, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! now, Dancer! now, Prancer! and Vixen! On, Comet! on Cupid! on, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!” As dry leaves that before the wild hurricane fly, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they flew with a sleigh full of toys, and St. Nicholas, too. And then in a twinkle, I heard on the roof the prancing and pawing of each little hoof. As I drew in my head, and was turning around, down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot; a bundle of toys he had flung on his back, and he looked like a peddlar just opening his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, his nose like a cherry. His droll little mouth was drawn up like a bow, and the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth, And the smoke, it encircled his head like a wreath. He had a broad face and a little round belly that shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, soon gave me to know I had nothing to dread; he spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, and laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his sleigh, to his team gave a whistle, and away they all flew like the down of a thistle. But I heard him exclaim as he drove out of sight, “Happy Christmas to all and to all a good night.”

Frosty The Snowman

Frosty the snowman was a jolly happy soul, With a corn cob pipe and a button nose And two eyes made out of coal. Frosty the Snowman is a fairy tale, they say, He was made of snow but the children know, How he came to life one day. There must have been some magic In that old silk hat they found, For when they placed it on his head, He began to dance around. O, Frosty the Snowman, was alive as he could be. And the children say he could laugh and play, Just the same as you and me.

Grandma Got Run Over By A Reindeer Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, He’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black and we just can’t help but wonder: Should we open up her gifts, or send them back? Send them back!! Now the goose is on the table and the pudding made of fig and the blue and silver candles that would just have matched the hair on grandma’s wig. I’ve warned all my friends and neighbors better watch out for yourselves, they should never give a license to a man who drives a sleigh and plays with elves.

Every body Pauses and stares at me These two teeth are gone as you can see I don’t know just who to blame for this catastrophe! But my one wish on Christmas Eve is as plain as it can be! All I want for Christmas is my two front teeth, my two front teeth, see my two front teeth! Gee, if I could only have my two front teeth, then I could wish you “Merry Christmas.”

SAUCE: 1 can (14 ounces) whole-berry cranberry sauce 3/4 cup ketchup 1/2 cup beef broth 3 tablespoons brown sugar 3 tablespoons finely chopped onion 2 teaspoons cider vinegar

Appetizers Christmas Meatballs

Ingredients 2 large eggs, lightly beaten 1 envelope onion soup mix 1/2 cup seasoned bread crumbs 1/4 cup chopped dried cranberries 2 tablespoons minced fresh parsley 1-1/2 pounds lean ground beef (90% lean)

Directions In a large bowl, combine first five ingredients. Add beef; mix lightly but thoroughly. Shape into 1-in. balls. Place a third of the meatballs on a microwavesafe plate. Cover with waxed paper; microwave on high until cooked through, 2-3 minutes. Drain on paper towels. Repeat twice with remaining meatballs. In a 2-qt. microwave-safe dish, mix sauce ingredients. Microwave, covered, on high until heated through, 3-4 minutes, stirring halfway. Gently stir in meatballs. Microwave, covered, on high until heated through, 1-2 minutes.

Ingredients: 2 tubes (8 ounces each) refrigerated seamless crescent dough sheet 1-1/2 teaspoons taco seasoning, divided 20 pretzel sticks, broken in half 4 ounces cream cheese, softened 1 cup guacamole 2 medium sweet yellow peppers 1 medium sweet red pepper 1 medium green pepper Chopped fresh cilantro, optional Directions: Preheat oven to 375°. On an ungreased baking sheet, unroll one tube of crescent dough and press into a 13x8-in. rectangle. Prick with a fork; sprinkle with 3/4 teaspoon taco seasoning. Repeat with remaining dough and seasoning. Bake until golden brown, 10-12 minutes. Transfer to wire racks to cool completely. Cut each rectangle crosswise to make 4 strips (about 8x4-in.). For trees, cut each strip into 5 triangles, reserving scraps at each end for another use. For trunks, insert a pretzel piece into the base of each triangle. Beat cream cheese and guacamole until smooth; spread over trees. Halve and seed peppers. Cut 40 stars from yellow peppers using a 3/4-in. star-shaped cookie cutter. Dice and julienne remaining peppers for tree decorations. Decorate trees with pepper pieces and, if desired, cilantro. Refrigerate until serving.

EntrÊes Pressure Cooker Italian Turkey Breast Ingredients 1 pound carrots, cut into 2-inch pieces 2 medium onions, cut into wedges 3 celery ribs, cut into 2-inch pieces 1 can (14-1/2 ounces) chicken broth 1 bone-in turkey breast (6 to 7 pounds), thawed and skin removed 2 tablespoons olive oil 1-1/2 teaspoons seasoned salt 1 teaspoon Italian seasoning 1/2 teaspoon pepper Directions Place vegetables and broth in a 6-qt. electric pressure cooker. Brush turkey with oil; sprinkle with seasonings. Place over vegetables. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 25 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. A thermometer inserted in turkey breast should read at least 170°. Remove turkey from pressure cooker; tent with foil. Let stand 10 minutes before slicing.

Apricot Ginger MustardGlazed Ham Ingredients 1 fully cooked bone-in ham (7 to 9 pounds) 1/2 cup apricot halves, drained 1/2 cup stone-ground mustard 1/3 cup packed brown sugar 2 tablespoons grated fresh gingerroot 1 tablespoon whole peppercorns 1/2 teaspoon sea salt 1/2 teaspoon coarsely ground pepper Directions: Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Cover and bake 1-3/4 to 2-1/4 hours or until a thermometer reads 130°. Meanwhile, place remaining ingredients in a food processor; process until blended. Remove

ham from oven. Increase oven setting to 425°. Spread apricot mixture over ham. Bake ham, uncovered, 15-20 minutes longer or until a thermometer reads 140°. If desired, increase oven setting to broil; broil 2-4 minutes or until golden brown.

Sesame, Sunflower and Carrot Salad Ingredients 6 medium carrots 1/2 cup sesame seeds, toasted 1/2 cup sunflower kernels, toasted 1/2 cup sliced almonds, toasted 1/2 cup golden raisins DRESSING: 1/4 cup reduced-fat mayonnaise 1/4 cup lemon juice 1/4 cup olive oil 2 tablespoons honey mustard 1/2 teaspoon salt Directions Shred carrots with a hand grater or in a food processor fitted with grating attachment. Place carrots in a large bowl with next 4 ingredients. In a small bowl, whisk dressing ingredients until blended. Pour dressing over the carrot mixture; toss to coat. Cover and refrigerate for at least 1 hour before serving.

Hasselback Sweet Potatoes Ingredients 6 medium sweet potatoes 1/2 cup unsalted butter, melted 2 tablespoons brown sugar 2 tablespoons orange juice 2 teaspoons grated orange zest 1/2 teaspoon kosher salt 1/2 teaspoon coarsely ground pepper 6 ounces cream cheese, softened 12 pitted dates, chopped 12 fresh sage leaves, chopped 1/2 cup chopped pecans Fresh sage, chopped, optional Directions Preheat oven to 425°. Cut thin slices lengthwise from bottom of sweet potatoes to allow them to lie flat; discard slices. Place potatoes flat side down; cut crosswise into 1/8-in. slices, leaving them intact at the bottom. Arrange sweet potatoes in a greased 13x9-in. baking pan. In a small bowl, whisk together butter, brown sugar, orange juice and orange zest. Spoon half the butter mixture evenly over sweet potatoes; sprinkle with salt and pepper. Combine cream cheese, dates and sage; spread between potato slices.

Ingredients 1 package (8 ounces) cream cheese, softened 2 teaspoons grated lemon zest 1 jar (10 ounces) lemon curd 2 cups heavy whipping cream 2 packages (5-1/4 ounces each) thin ginger cookies 2 tablespoons chopped crystallized ginger Directions In a large bowl, beat cream cheese and lemon zest until creamy. Beat in lemon curd until smooth. Gradually add cream, beating on medium-high speed until soft peaks form. Cranberry-Walnut Cake with Butter Sauce Ingredients 3 tablespoons butter, softened 1 cup sugar 1/2 cup water 2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon salt 1/2 cup evaporated milk 1 package (12 ounces) fresh or frozen cranberries 1 cup chopped walnuts SAUCE: 2 cups sugar 1 cup butter, cubed 1/4 cup evaporated milk 1 teaspoon vanilla extract Directions: Preheat oven to 375°. Grease a 13x9-in. baking pan. In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Gradually beat in water. In another bowl, whisk flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. Fold in cranberries and walnuts (batter will be thick). Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack. Meanwhile, in a small saucepan, combine sauce ingredients; bring to a boil over medium heat, stirring constantly to dissolve sugar. Serve cake with warm sauce.

Cookies No-Bake Cookie Butter Blossoms Ingredients 1 cup Biscoff creamy cookie spread 1/2 cup corn syrup 3 cups Rice Krispies 32 milk chocolate kisses In a large saucepan, combine cookie spread and corn syrup. Cook and stir over low heat until blended. Remove from heat; stir in Rice Krispies until coated. Shape level tablespoons of mixture into balls; place onto waxed paper. Immediately press a kiss into center of each cookie. Let stand until set.

Coconut Joys Ingredients 1-1/2 cups sweetened shredded coconut 1 cup confectioners’ sugar 1/4 cup butter, melted 1 ounce milk chocolate, melted 2 tablespoons chopped pecans Directions I n a large bowl, combine the coconut, confectioners’ sugar and butter. Form into 1-in. balls. Using the end of a wooden spoon handle, make an indentation in the center of each ball. Fill with chocolate. Sprinkle with pecans. Place on a waxed paper-lined baking sheet. Chill until chocolate is firm. Store in the refrigerator.

KIDS CRAFT 3D Noodle Christmas Trees Make some fun 3D pasta christmas trees with your kids this Christmas! Just roll a piece of cardboard into a cone then hot glue it together.
