HOLIDAY SEASON T’was The Night Before Christmas

T’was the night before Christmas when all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, while visions of sugarplumbs danced in their heads, and Mamma in her kerchief and I in my cap had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow gave a luster of midday to objects below, When, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! now, Dancer! now, Prancer! and Vixen! On, Comet! on Cupid! on, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!” As dry leaves that before the wild hurricane fly, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they flew with a sleigh full of toys, and St. Nicholas, too. And then in a twinkle, I heard on the roof the prancing and pawing of each little hoof. As I drew in my head, and was turning around, down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot; a bundle of toys he had flung on his back, and he looked like a peddlar just opening his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, his nose like a cherry. His droll little mouth was drawn up like a bow, and the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth, And the smoke, it encircled his head like a wreath. He had a broad face and a little round belly that shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, soon gave me to know I had nothing to dread; he spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, and laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his sleigh, to his team gave a whistle, and away they all flew like the down of a thistle. But I heard him exclaim as he drove out of sight, “Happy Christmas to all and to all a good night.”

Frosty The Snowman

Frosty the snowman was a jolly happy soul, With a corn cob pipe and a button nose And two eyes made out of coal. Frosty the Snowman is a fairy tale, they say, He was made of snow but the children know, How he came to life one day. There must have been some magic In that old silk hat they found, For when they placed it on his head, He began to dance around. O, Frosty the Snowman, was alive as he could be. And the children say he could laugh and play, Just the same as you and me.

Grandma Got Run Over By A Reindeer Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, He’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black and we just can’t help but wonder: Should we open up her gifts, or send them back? Send them back!! Now the goose is on the table and the pudding made of fig and the blue and silver candles that would just have matched the hair on grandma’s wig. I’ve warned all my friends and neighbors better watch out for yourselves, they should never give a license to a man who drives a sleigh and plays with elves.

MATERIALS 3 Ziploc® brand Twist ‘n Loc® small containers Craft scissors Glue Fabric scraps Black and orange construction paper Buttons Mini marshmallows Mini candy canes Hot cocoa mix DIRECTIONS 1 Draw a thin line of glue around the top of the lids of 2 Ziploc® brand Twist ‘n Loc® small containers (pictured above). Place the base of the containers on top to glue in place and let the glue set. 2 Twist these 2 Ziploc® brand Twist ‘n Loc® containers together. Separate the lid and base of the third container and twist onto the top and bottom of stack to complete the tower. 3 Time to decorate! Make a hat using black construction paper – cut out a circle for the brim and a long rectangle, rolled into a cylinder, for the top. An orange construction paper triangle becomes a carrot nose. Buttons and a strip of plaid fabric decorate the body. Glue everything in place and let dry. 4 Fill the bottom Ziploc® brand Twist ‘n Loc® container with hot cocoa mix, the middle container with candy canes and the top container with mini marshmallows. Twist to reassemble and it’s ready to gift!

PLASTIC CUP SNOWMAN MATERIALS A stapler with lots of staples Plastic cups (Around 250 pcs) Start attaching the plastic cups to each other using the stapler until you get a full circle. You should make this on a straight surface as on floor or on a table or your snowman will be uneven in the end. After fisrt circle, make another one placing new cups on top of the previous ones and staple them. The important point during stapling is that you will decide the size of your snowman according to the size of circles.If you are going to make a big one so, the circles should be large ones or vise versa. As you know, a snowman is made from two round parts (head and body) so you need to staple cups in circles until you have two spheres (one bigger than the other). To have that you will need to staple the plastic cups until you get the semi sphere then complete the other part of it to have a full sphere body. You are going to repeat exactly the same steps also for the head but remember that the sphere must be smaller! Then staple the head on the body and cover the joint will a nice scarf! Your snowman from plastic cups is ready for the futher decoration.

To decorate your snowman you can use paper balls or wool pom poms to make the eyes, and the buttons. Use an orange paper cone or a real carrot to make the nose and a nice bonnet to matching with the scarf. You can use hot glue or even the staples to attach the decoration. If you want to do something more with your snowman, you may place a lamp inside it. Your snowman will be more charming during night.

Appetizers Tzatziki Shrimp Cucumber Rounds Ingredients 1/4 cup reduced-fat plain yogurt 2 tablespoons finely chopped peeled cucumber 1/8 teaspoon garlic salt 1/8 teaspoon dill weed 6 bacon strips 24 uncooked shrimp (31-40 per pound), peeled and deveined 1 to 2 tablespoons canola oil 2 medium cucumbers, cut into 1/4-in. slices Directions In a small bowl, combine the yogurt, chopped cucumber, garlic salt and dill; set aside. Cut each bacon strip in half widthwise and then lengthwise. Wrap a piece of bacon around each shrimp. Secure with toothpicks. In a large nonstick skillet, heat oil over medium heat; cook shrimp in batches for 3-4 minutes on each side or until bacon is crisp. Spoon a rounded 1/2 teaspoon yogurt sauce onto each cucumber slice; top with shrimp.

Rich Hot Chocolate 2/3 cup heavy whipping cream 1 cup 2% milk 4 ounces dark chocolate candy bar, chopped 3 tablespoons sugar Vanilla rum, optional Sweetened heavy whipping cream, whipped Directions In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into a mug; top with sweetened whipped cream. Pumpkin-Spiced Cocoa: Heat 2/3 cup heavy cream, 1 cup milk, 1/2 cup white baking chips, 2 tablespoons canned pumpkin and 1 teaspoon pumpkin pie spice over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir in until smooth. If desired, add 3 ounces Rumchata liqueur. Ingredients 4 tubes small refrigerated flaky biscuits (5 count) 1/4 cup stone-ground mustard 1/2 cup butter, softened 1/4 cup chopped green onions 1/2 cup stone-ground mustard 1/4 cup mayonnaise 1/4 cup honey 10 thick slices deli ham, quartered 10 slices Swiss cheese, quartered 2-1/2 cups shredded romaine 20 pitted ripe olives, drained and patted dry 20 pimiento-stuffed olives, drained & patted dry 40 frilled toothpicks Directions Preheat oven to 400°. Cut biscuits in half to make half-circles; place 2 in. apart on ungreased baking sheets. Spread mustard over tops. Bake until golden brown, 8-10 minutes. Cool completely on wire racks. Mix butter and green onions. In another bowl, mix mustard, mayonnaise and honey. Split each biscuit into two layers. Spread biscuit bottoms with butter mixture; top with ham, cheese, romaine and biscuit tops. Spoon mustard mixture over tops. Thread one olive onto each toothpick; insert into stacks. Serve immediately.

Apple Walnut Stuffed Pork Roast 5 tablespoons butter 1 apple - peeled, cored, and chopped 1 small onion, chopped 1 celery stalk, diced 1/2 cup chopped walnuts 1 cup unsweetened applesauce 1 1/2 cups water 5 cups coarse dry breadcrumbs 1/2 teaspoon ground cinnamon 1/2 teaspoon kosher salt 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger Kosher salt and fresh ground pepper to taste 1 (3 pound) boneless rolled pork loin roast Preheat oven to 325 degrees F (165 degrees C). Melt the butter in a medium saucepan over medium heat. Stir in the apple, onion, celery, and walnuts, and cook 5 minutes, until vegetables are tender. Mix in the applesauce, water, and breadcrumbs. Cook and stir until the breadcrumbs have absorbed the liquid. Season with cinnamon, kosher salt, cloves, nutmeg, and ginger. Unroll the pork roast, and place in a baking dish. Season with salt and pepper to taste. Spoon the stuffing mixture over the roast. Arrange any excess stuffing around the roast. Roll the roast so that the fatty side is on top, and tie with kitchen twine. Bake 45 to 50 minutes in the preheated oven, to an internal temperature of 145 degrees F (63 degrees C).

The holidays can be a busy time of year — there’s no getting around it. But a few smart moves will help get your holiday feast on the table in record time. Assemble Salads in Advance Try a salad that uses heartier greens — escarole and frisee, for example, won’t wilt into a soggy mess. Or try this pro trick that doesn’t require assembling a salad a la minute: Start by adding some dressing to the bottom of the salad bowl, then top with the heartiest ingredients that aren’t prone to soaking up dressing, like cucumbers and tomatoes. Layer the fragile ingredients on top, such as the lettuce or herbs, and top that layer with garnishes like cheese or croutons. The salad will keep for a few hours without wilting or soaking up any dressing; at the table, toss the salad and season it with salt and more dressing, as needed.

Turkey Stew

Sweet Leek & Smoky Bacon Biscuit Dumplings DUMPLINGS 2 rashers of bacon olive oil 25 g maize flour , or polenta ½ tsp baking soda 125 ml buttermilk

2 small leeks 125 g plain flour 1½ tsp baking powder 30 g unsalted butter (cold) 1 large egg

STEW 3 onions 3 sticks of celery 2 sprigs of fresh rosemary 3 sprigs of fresh thyme 3 fresh bay leaves 2 tsp English mustard 2 tbp plain flour 1.5 litres organic veg stock 150 g leftover stuffing 500 g leftover cooked turkey or chicken meat

To start the dumplings, roughly chop the bacon and place in a large frying pan on a medium-low heat to crisp up while you wash, trim and finely slice the leeks. Stir them into the pan with 1 tablespoon of oil, then cook for 15 minutes, or until soft and sweet, stirring occasionally. Remove from the heat and leave to cool. Meanwhile, for the stew, peel the onions, trim the celery, then roughly chop both and place in a large, wide casserole pan on a medium heat with 2 tablespoons of oil (or even better, use turkey dripping to intensify the flavours). Add the herb sprigs and bay, and cook for 15 minutes, or until soft but not coloured, stirring regularly. Stir in the mustard and flour for 2 minutes, then gradually stir in the stock to make a nice thick sauce. Crumble in the leftover stuffing and turn the heat off. Scoop out and discard the herb sprigs and bay leaves, then shred the turkey or chicken meat, stir it into your stew, taste, and season to perfection. Preheat the oven to 200°C/400°F Place the flours, baking powder and bicarb in a large bowl. Dice and add the butter, then use your thumbs and forefingers to rub the butter into the flour until it resembles breadcrumbs. Make a well in the middle, pour in the buttermilk, then gradually mix into the crumbs, bringing them in from the outside. Stir in the cooled leeks and bacon until just combined, but don’t overwork it – we want the dough as light as possible. Gently roll it out on a clean flour-dusted surface until 2cm thick, then use a 5cm fluted cutter to stamp out as many round dumplings as you can, re-rolling and using up any offcuts – you should get at least 12 from this amount. Brush the dumplings with beaten egg, then sit them on top of the stew. Bake for 25 to 30 minutes, or until the dumplings are risen and golden and the stew is bubbling away nicely

Christmas carbonara

You can use spaghetti or penne for this simple supper dish. Mushrooms aren’t traditional in a carbonara, but we love them here. Ingredients 400 g pasta 150 g mushrooms 1 clove of garlic 1 tablespoon olive oil 50 g Parmesan cheese , plus extra to serve 3 sprigs of fresh flat-leaf parsley 6 fresh chives 2 large egg yolks 100 g sour cream 80 g cooked ham Cook the pasta in a large pan of boiling salted water, according to the packet instructions. Slice the mushrooms, peel and finely chop the garlic, then add to a frying pan over a medium heat with the oil. Sauté for 5 minutes until softened. Finely grate the Parmesan (if using) into a bowl, then finely chop and add the parsley leaves and chives. Beat in the egg yolks and sour cream and season well with black pepper. Add the fried mushrooms, shred and add the ham, then stir to combine. Drain the pasta, saving a cupful of the cooking water, then return it to the pan. Off the heat, pour the sauce over the pasta and stir to coat. Add some cooking water to loosen it up if needs be. Serve with an extra grating of Parmesan, if you like.

Pretty Duchess Potatoes Ingredients 2 pounds russet potatoes, peeled and quartered 3 egg yolks 3 tablespoons fat-free milk 2 tablespoons butter 1 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground nutmeg 1 egg, lightly beaten Directions Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until tender. Drain. Over very low heat, stir potatoes 1-2 minutes or until steam has evaporated. Remove from heat. Preheat oven to 400°. Press through a potato ricer or strainer into a large bowl. Stir in the egg yolks, milk, butter, salt, pepper and nutmeg. Using a pastry bag or heavy-duty resealable plastic bag and a large star tip, pipe potatoes into six mounds on a parchment paper-lined baking sheet. Brush with beaten egg. Bake 20-25 minutes or until golden brown.

Desserts Fandrich Family Trifle Brittany Fandrich Ingredients 9 oz pkg chocolate cake mix or you can make it from scratch 1 pkg instant chocolate pudding ¼ cup rum or brandy 1 medium Cool Whip 1 can cherry pie filling Bake cake and cut into cubes. Prepare pudding as directed. Arrange ½ cake cubes in glass trifle bowl. Sprinkle ½ rum. Layer ½ pudding, then ½ cherry pie filling, then ½ Cool Whip. Repeat layering in order given. Chill for 3 hours before serving.

Eggnog Pie Ingredients 1 tablespoon unflavored gelatin 1/4 cup cold water 1/3 cup sugar 2 tablespoons cornstarch 1/4 teaspoon salt 2 cups eggnog 1 teaspoon vanilla extract 1 teaspoon rum extract 1 cup heavy whipping cream, whipped 1 pastry shell (9 inches), baked Ground cinnamon, optional Directions In a small bowl, sprinkle gelatin over water; let stand 1 minute. In a saucepan, combine the sugar, cornstarch and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature.

Three-Chip English Toffee

Ingredients 1/2 teaspoon plus 2 cups butter, divided 2 cups sugar 1 cup slivered almonds 1 cup milk chocolate chips 1 cup chopped walnuts 1/2 cup semisweet chocolate chips 1/2 cup white baking chips 1-1/2 teaspoons shortening Directions Butter a 15x10x1-in. pan with 1/2 teaspoon butter. In a heavy saucepan over medium-low heat, bring sugar and remaining butter to a boil, stirring constantly. Cover and cook for 2-3 minutes. Uncover; add almonds. Cook and stir with a clean spoon until a candy thermometer reads 300° (hard-crack stage) and mixture is golden brown. Pour into prepared pan (do not scrape sides of saucepan). Surface will be buttery. Cool for 1-2 minutes. Sprinkle with milk chocolate chips. Let stand for 1-2 minutes; spread chocolate over the top. Sprinkle with walnuts; press down gently with the back of a spoon. Chill for 10 minutes. In a microwave, melt semisweet chips; stir until smooth. Drizzle over walnuts. Refrigerate for 10 minutes. Melt vanilla chips and shortening; stir until smooth. Drizzle over walnuts. Cover and refrigerate for 1-2 hours. Break into pieces.

Peppermint Meltaways

Ingredients 1 cup butter, softened 1/2 cup confectioners’ sugar 1/2 teaspoon peppermint extract 1-1/4 cups all-purpose flour 1/2 cup cornstarch FROSTING: 2 tablespoons butter, softened 2 tablespoons 2% milk 1/4 teaspoon peppermint extract 2 to 3 drops red food coloring, optional 1-1/2 cups confectioners’ sugar 1/2 cup crushed peppermint candies Directions In a small bowl, cream butter and confectioners’ sugar until light and fluffy. Beat in extract. In another bowl, whisk flour and cornstarch; gradually beat into creamed mixture. Refrigerate, covered, 30 minutes or until firm enough to handle. Preheat oven to 350°. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake 9-11 minutes or until bottoms are light brown. Remove from pans to wire racks to cool completely.

In a small bowl, beat butter until creamy. Beat in milk, extract and, if desired, food coloring. Gradually beat in confectioners’ sugar until smooth. Spread over cookies; sprinkle with crushed candies. Store in an airtight container. These also would taste great with almond or vanilla extract instead of peppermint, and topped with toasted nuts.

Stacked Snowman Cookies

meringue powder, 1/3 cup water and, if desired, extract; beat on low speed just until combined. Beat on high 4-5 minutes or until stiff peaks form. Add enough remaining water until icing no longer holds a peak. Keep unused icing covered at all times with a damp cloth. Using a pastry bag and #2 round tip, pipe icing over cookies. Let stand at least 5 minutes before gently stacking cookies to create snowmen. Let stand at room temperature several hours or until frosting is dry and firm. Using a new paintbrush, decorate snowmen as desired with food coloring.

Beat in eggs and vanilla. In another bowl, whisk flour, cocoa, baking powder and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll. Preheat oven to 350°. On a lightly floured surface, roll one portion of dough to 1/4-in. thickness. With a 2-in. round cookie cutter, cut out 18 circles. Repeat with 1-1/2-in. and 1-in. round cookie cutters. Place 1 in. apart on parchment paper-lined baking sheets. Repeat with remaining dough. Bake 7-10 minutes or until edges are set. Cool completely on wire racks. Meanwhile, in a small bowl, combine confectioner’s sugar,
