the tank wine story at the heart of our wine list is the principle that every bottle is there for a reason. it may be to match with one of alastair’s dishes, for a celebration or to simply enjoy by the glass at lunch. whether you want crisp, rich, dry or off-dry, we are sure you will find it. our list is unashamedly french. we have chosen those wines that exhibit restraint, elegance and focus, in particular wines from champagne, burgundy, bordeaux, loire and alsace. we believe these wines partner superbly with the japanese referenced dishes. we also value brand recognition and varietal expression which is reflected in our broad selection of iconic australian producers represented. furthermore, we offer a number of queensland wines that reflects our advocacy of the very best local wineries. as a further option, you can experience sake or perhaps a japanese wine that is grown and made in the foothills of mount fuji. one final word - the use of sustainable practices such as organic and bio-dynamic production has been a key deliberation in the creation of the list. this ethic of sustainability has long been a motivator whether we are choosing wine or seafood. sustainability is about the capacity to endure – how biological systems remain diverse and productive over time. sustainability is the potential for long-term maintenance of well being which has environmental, economic and social dimensions. believing in this fact we have made note of all organic and biodynamic vinified wines. please enjoy our company brendan mcfarlane & simon mckenzie-smith
