The industry people all agree that it’s happened. Boston — once the bastion of the shotand-a-beer combo — is now a cocktail town. Theories as to why differ: Some say it was the dotcom and high-tech boom in Kendall Square in the late 1990s that kicked it off; others say Boston’s gay community was the first to embrace extensive and sophisticated cocktail menus. Still others say the likes of Don Draper and Carrie Bradshaw influenced the scene, while many simply give credit to some guy named Brother
Cleve. Cleve, a cocktail consultant and musician originally from Medford, remembers a simpler time. It was the mid-1990s, and he loved making old cocktails. Selling such drinks behind the bar, however, was initially a challenge. “There was a lot of ‘What the f— is a Sidecar? I’ll have a Bud Light.’ It went like that for a while,” said Cleve, who declined to give his real name. But times changed. A cadre of bars — the now defunct BSide Lounge in Cambridge and Silvertone Bar & Grill and No. 9 Park on the Boston side of the river — began featuring extended cocktail menus in the late 1990s. Others — Eastern Standard and Drink — followed suit. Craft cocktails are now a cottage industry in Boston. “Our first audience was high-tech kids and gay people,”

“In 1990, no one had a cocktail list. You maybe had a margarita list, but no one had a separate menu that they would hand you with dozens of cocktails.” McGuirk
said Cleve. “There was this cool retro thing going on in the gay community, and they really supported it.” With alcohol consumption decreasing, says Joe McGuirk, a bartender for more than 20 years who now works at Highland Kitchen in Somerville, people have become more concerned with quality and sophistication of drinks. Josh Childs — co-owner of Silvertone Bar & Grill, Trina’s Starlite Lounge and Audubon — has similar sentiments. “You had younger people with disposable income not really wanting to drink what their parents drank,” he said. “But they ended up drinking what their grandparents drank. Colorado. Accused Southbridge child rapist wanted for more rapes in Denver Colorado police on Sunday were searching for an accused child rapist from Southbridge who is wanted in a slew of new charges since going on the run in September. Gregory Lewis, 26, is now accused of sexual assault, kidnapping and aggravated
robbery from mid-October in the Denver area. Lewis is wanted in Massachusetts on charges of assault and battery, home invasion, kidnapping and rape of a child. He has been a fugitive since cutting off his court-ordered GPS ankle bracelet on Sept. 15.
Massachusetts police said Lewis returned on Sept. 25 and allegedly attacked a relative and a stole handgun and over 200 rounds of ammunition. Lewis has made homicidal and “suicide by cop” threats and is considered armed and dangerous. MORGAN ROUSSEAU

Hundreds of protesters marched along Newbury Street on Saturday in solidarity with a national demonstration decrying police violence against people of color. Newbury Street Shutdown, organized by Black Lives Matter Boston, unfolded around noon in an effort to disrupt “business as usual” in one of the city’s biggest commerce centers. Organizers said on Facebook that the goal of the event was “to ensure that no one in our city can continue to ignore the crisis of racial profiling and police violence against black and brown people in Boston, Ferguson and across the country.” METRO

Walsh briefly hospitalized with kidney stone Boston Mayor Marty Walsh made a trip to a Massachusetts General Hospital on Sunday to address a kidney stone, a mayor’s office spokesperson said. Sunday night, his office did said the mayor was on his way home and “is completely fine.” The mayor attended an AFL-CIO event with gubernatorial candidate Martha Coakley on Saturday, and the minor health issue is not expected to change his schedule today. Walsh is expected to attend a real estate convention in the Back Bay in the morning, a groundbreaking ceremony for 503 new residences at Avalon North Station in the afternoon and his third “Mondays with Mayor” town hall meeting in Hyde Park in the evening. Boston. Hubway bike share extends cycling season to winter months

Cyclists willing to brave the cold can look forward to a new winter Hubway schedule that extends the bike-sharing season by two months. Hubway systems in Boston, Brookline and Somerville will operate through December, then will reopen in March, according to a report by the Boston Globe. Previously, those cities have closed the systems between Thanksgiving and April. Last year, Cambridge experimented with keeping the stations open through the entire winter. Cambridge is reportedly still in negotiations for winter service this year. Hubway officials have said snow removal is the biggest obstacle to year-round service, but they hope to eventually keep the entire Boston-area system open year-round.
The man who is accused of abducting and killing a South Boston woman and assaulting two others is due in court this week for a status hearing. A pre-trial date for Edwin Alemany, 28, is scheduled for this Thursday. Alemany is charged with abducting and killing Amy Lord, 24, as she left her Dorchester Street apartment around 6 a.m. on July 23, 2013. Police said Lord, a Wil-

The White House has voiced concern to the governors of New York and New Jersey about the potential impact of quarantine orders imposed on medical workers returning from West Africa who had contact with Ebola patients, a senior administration official said on Sunday. New York Gov. Andrew Cuomo and New Jersey Gov. Chris Christie made the decisions on Friday after a doctor who treated patients in Guinea came back to New York infected. Illinois and Florida said they were also imposing similar steps. “We have let the governors of New York, New Jersey, and others states know that we have concerns with the unintended consequences of policies not grounded in science may have on efforts to combat Ebola at its source in West Africa,” the Obama administration official said in a statement. “We have also let these
states know that we are working on new guidelines for returning health care workers that will protect the American people against imported cases, while, at the same time, enabling us to continue to tackle this epidemic in West Africa,” the official added. The White House will consult further with states as the guidelines are developed, the official said, “and we expect to have more to say on this in the coming days.” The White House’s concerns were first reported by the New York Times. Dr. Anthony Fauci, director of the National Institute of Allergy and Infectious Diseases, part of the National Institutes of Health, said on CNN’s “State of the Union” program on Sunday that the new steps could deter health care workers from going to West Africa to help fight the epidemic and that the best way to protect Americans is to stop Ebola in Africa. Which flick did Pitt think was the pits?
OK, here’s a fun game. In the latest issue of Details magazine, Brad Pitt is featured in a fancy photo series shot by Mark Seliger, and instead of a full accompanying interview, the magazine dapples the images with some interesting quotes by Pitt. One of them is especially provocative: “I was once talked into a film for ‘career maintenance.’ I have not made that mistake since,” Pitt says. Which begs the question, which film is he talking about? While Pitt has generally been pretty good at picking projects, he’s gotten really careful since shacking up with Angelina Jolie. But that also coincides nicely with his production company, Plan B, getting more clout. So I’m putting my money on 2004’s laughable “Troy,” an uncharacteristically Big Hollywood choice for Pitt — and one that he looks palpably uncomfortable in. There’s also a slight possibility he’s talking about “The Mexican,” but that film’s kind of adorable in its own scruffy way, and Pitt seemed to be having such a good time doing it that I doubt it. I’m still going with the terrible, terrible swords-and-sandals epic misfire.

Another new entry, the action thriller “John Wick” starring Keanu Reeves as a hit man out for revenge, debuted in second, taking in $14.2 million from Friday through Sunday, according to tracking firm Rentrak. “Fury,” a World War II drama about a U.S. Army tank crew, earned $13 million to claim the No. 3 spot, while Ben Affleck’s mystery thriller “Gone Girl” grossed $11.1 million, finishing fourth. Rounding out the Top 5, animated movie “The Book of Life” took in $9.8 million. The film draws on Mexican art and wooden puppets to tell a love story rooted in the Day of the Dead festivities. In limited release, the Edward Snowden documentary “Citizenfour” opened to a very strong $125,172 from only five theaters, for $25,721 per theater. Q&A WILLEM DAFOE A MAN OF ACTION The serious, Oscar-nominated actor also greatly enjoys doing trashy thrillers like “John Wick.” Willem Dafoe is a character actor, which means that he does everything. He’s been a superhero villain (“Spider-Man”), and he’s been Jesus (“The Last Temptation of Christ”). This year alone, he’s been in a Wes Anderson film (“The Grand Budapest Hotel”) and a YA movie (“The Fault in Our Stars”). He also played a famous director in Abel Ferrara’s “Pasolini.” And now there’s “John Wick,” an action movie in which he plays an assassin asked to take out an old colleague (Keanu Reeves) who’s on a revenge rampage. You’re a serious actor — one of the earliest members of the experimental theater company The Wooster Group — but one who has never been above action movies. I like doing action sequences. It’s fun because it’s athletic and requires timing — a correct touch. It’s what I like about performing, which is that you
have a strong action. I often refer to myself as a task-oriented actor. That’s very much where my training in theater comes from. You have a very clear sequence of movements. You have to learn the sequence. You get totally engaged and totally turned on. Your character has known Reeves’ for a very long time. Did you two bother with a backstory? I don’t find backstory very useful. You can’t play backstory. It can guide research. But I don’t like that kind of stuff. I almost find it distracting, showy. I like to play what’s in the scenes, have stuff occur to me. I like to pretend, and when I’m pretending certain things come up. But backstory, no. There’s that Spencer Tracy line: Know your lines and don’t run into the furniture. That’s a little too glib for me. When I talk about the kind

Shop like a Top Chef Even for an experienced home cook, the vegetable world can be daunting — especially at a farmers market. So how do you approach produce shopping without fear and keep healthy eating interesting? “The good thing is when you’re at a decent farmer’s market, you can’t really make a bad choice,” says Richard Blais, the winner of “Top Chef All-Stars” and a judge for the show’s 12th season airing now on Bravo. “Shop in a great place where the farmers are, and then you know it’s in season so you’re not worrying about grabbing that ingredient that’s from South America.” We brought Blais along on a trek to the market for some professional advice. First, we got his game plan:

Be patient: “Give the market a good stroll, give it a good once-over. You know you want strawberries, but they’re going to be a little different at each stall. And most places are going to have samples, so take advantage of that.”

When in doubt, find the common bond: “No matter what the ingredient, use similar ideas. A parsnip kind of looks like a carrot, so they’re going to cook in the same way, just as a pork chop is going to cook similar to a rib chop in beef.”
Blais has a couple of starter ingredients for the newly adventurous. “I like turnips, and usually you can find turnips,” he says. “[And] Kohlrabi, which is something that’s in the turnip family — and the name is fun to say.” For preparation: Roast, boil or steam? “They all have their advantages, but you can coax a little more flavor out of roasting, it’s easier for most people,” he says. “Chopping something up, throwing it on a tray with a little olive oil and some torn herbs is never a bad idea and is always going to work.”

We gave a Blais a couple of market ingredients that the average cook would find challenging and asked him what to do with them.
Dandelion greens “Use your instincts like you would for any other leafy vegetable. I’ll cook kale or spinach, and dandelion greens are probably somewhere in between those two,” Blais says of the bitter, vitamin-rich plant. “Treat it like broccoli rabe; serve it with a piece of grilled meat. But just barely
cook it: a little olive oil, butter, lemon, chili, that’s a good classic for me with any sort of wilty green. Or get creative with it: Throw it in a blender. Make a chimichurri out it, make a pesto out of it, and then all of a sudden you’re modern. Then you’re winning a ‘Top Chef’ Quickfire Challenge.”

Persimmons “Persimmons are pretty cool, and they’re just in season,” Blais says. “To me, they’ve always had that kind of tomatolike quality. They have a little bit of caramelized sweetness, but they’re not super-sweet. So I like to treat them like tomatoes. My first go-to is caprese salad — replace the tomato with persimmon, add mozzarella or burrata, and that’s a pretty fun dish. It’s a pretty tough fruit, but put them in a bag and they’ll ripen up.”

Is a ‘gap year’ after high school for you? Alternative education. Taking a break before college is increasingly popular. It’s a familiar script that millions of students follow each year: graduate high school and then immediately start college. But more students are embracing the “gap year� — a year of volunteering and working before heading to campus. “In the beginning of senior year I was really stressed out with homework and extracurricular activities and everything that goes along with it in high school,� says Elizabeth Campbell, a 19-year-old from Little Rock, Arkansas. “And I decided, ‘Hey, maybe I want to take
some time off and travel and learn another language.’� Campbell decided to defer her admission to Furman University for a year and moved to Seville, Spain, as part of a gap year program with the Council on International Educational Exchange and spent a year tutoring children. In many ways, Campbell’s story is typical, says Jay Bacrania, the CEO of Signet Education in Cambridge. With the average high school student applying to five or six schools, application and test score fees start to add up. We’ve compiled some ways students and parents can save some money during a stressful and expensive time of year. Applying online can be less expensive. Paper applications are timeconsuming for all involved: Students have to organize and mail everything, and colleges have to employ staff members to manually enter all of the data into their systems. That’s why many colleges don’t
charge for online applications — or they charge less. (And some don’t have application fees at all, says the Huffington Post, naming Smith College, Colby College and Carleton College as three examples.) Ask about fee waivers. Don’t be afraid to ask if fee waivers or reductions are available. Admissions officers are used to being asked, and having your fee waived won’t be held against you when decision time comes around.
Find out if any schools that you’re applying to consider SAT scores optional. Many colleges say that submitting standardized test scores is optional. It may be worth it to opt out of sending your score in order to save on the processing fee. HOW TO GET A JOB THROUGH A REFERRAL Online retailer Zappos made news earlier this year when it announced it would be zapping job postings. That’s right, they’ve been nixed, and hopeful job seekers have to find another way in the door. According to industry buzz, they want to get to know applicants rather than having them apply to the giant black hole known as the applicant tracking system. Prompting job seekers to become “insiders,� their site includes ambassadors’ Twitter handles and LinkedIn profiles for each team and essentially details ways that job seekers can connect to recruiters via social media and through referrals. They’re on to something. According to a study by the Federal Reserve Bank of New York, referred candidates are twice as likely to get interviews as non-referred candidates. Referred candidates also have a 40 percent better chance of getting hired than other applicants. Armed with this data, job seekers should rely on referrals for the highest rate of return on their time and energy investment in a job search. Here are a few tips on how to get started.

Streaking Pats make quick work of Bears NFL. Tom Brady threw five touchdown passes Sunday as the Patriots ripped the Bears, 51-23, at Gillette.
The Tom Brady to Rob Gronkowski connection once again looks like one of the top combinations in football and the Patriots offense as a whole looks plenty prepared for its showdown with 6-1 Denver next week in Foxboro. The Pats (6-2) rang up their highest point total of the season Sunday, obliterating Chicago, 51-23, as they won their fourth straight game. The 51 points was New England’s highest output since its 55-31 win over the Steelers last November. Brady was superb, completing 30-of-35 passes for 354 yards and five touchdowns. Three of Brady’s touchdown passes were caught by Gronkowski, who had a monster afternoon with nine catches for 149 yards. It was Gronkowski’s first three-touchdown day since he worked a trifecta against the Broncos in the 2011 playoffs. When Brady wasn’t going to his tight end, he was looking in the direction of Brandon LaFell, who caught a team-

Philadelphia and Seattle are also said to be highly interested in landing Jackson before the NFL trade deadline on Tuesday at 4 p.m. The 31-year-old Jackson is a three-time Pro Bowler and has 25 receptions for 344 yards and two touchdowns in 2014.
