The staple Kerala cuisine which revolves around coconut and coconut oil has become a favourite for many, both for its taste and healthy-factor. Malayali’s obsession with good food is immortal and the capital city is abundant with a plethora of restaurants, dine outs or special cafes that cater to special food items. Many hangout spots have sprouted in the city over the last decade. Trivandrum is blessed with a number of franchises that boast of a proud legacy of years of service. ver the years the food preferences of Thiruvananthapuram city residents have undergone a rapid transformation, in line with the process of the city’s face changing into that of a cosmopolitan city. The city now has no dearth of good restaurants, including multicuisine ones. Rare and distinct amongst them is The Gourmet House at Pattom Junction. TGH, in

a short span of about 11 months, has acquainted the food lovers of our capital city with new culinary experiences. The Gourmet House provides a wide variety and unique mix of food from different culinary worlds - Japanese Grill to Chinese, Thai delights to Mexican, Pan Asian to Mediterranean, TexMex to Continental. It is this multi-cuisine model that has made the restaurant


a much preferred food joint in the city in a very short time. A guest can enjoy flavors of different cuisines and cultures with each visit at The Gourmet House. A distinguishing feature of The Gourmet House is its wide range of Pan Asian cuisine. “Thiruvanthapuram has hardly any regular food joint that provides authentic Pan Asian food, barring perhaps, restaurants of five star

hotels. Our effort is to fill that space. We are also introducing the concept of having a five-course meal amongst our customers,” says Mr.Mauzzam Nathani, Partner, Gourmet House. There are many reasons behind the success of this restaurant. “We attach first priority to hygiene and give special care and attention to each aspect of hygienic maintenance of the kitchen as well as the dining March 2020

space,“ says Mr.Jeeth Mathew Vallakalil, partner at TGH. “Equal importance is given to quality, authenticity and taste of the different cuisines. We make sure that authenticity of the various food items doesn’t vanish into thin air. At each and every stage of preparation, utmost care is given with the supervision of cuisine specialists hailing from different parts of the Sub Continent”, according to Mr.Nathani. The Menu is curated by a Michelin trained Chef who worked with Raymond Blanc for many years. He makes periodical visits and impart training to the cooks. “A band of carefully selected, extremely polite and polished staff, dedicated to rendering a unique experience to

the customers, is our hallmark”, says Mr.Nathani. The Gourmet House is open from 12PM to 11PM. They serve quick casual bites such as Burgers, Hot Dogs, Sandwiches etc, along with freshly brewed coffee and Milkshakes from 3pm-7pm. Another speciality of the restaurant is the hand churned Icecreams. They have flavours varying from seasonal fruits to unique flavours (Jackfruit, Sitaphal, Fresh Strawberry, Mangoes to Caramel Popcorn, Mixed berries, Dark chocolate cookies etc)While the eatery offers Sunday brunch, they plan to introduce daily lunch shortly. They have tied up with the major online food delivery agents like Swiggy and Zomato.

s the capital city of God’s Own Country is getting crowded, restaurants tend to be indoor setups and concrete establishments. omments from patrons of Paul’s Creamery goes like – Yummy, manna, comfort zone, great hospitality, excellent….. So what makes Paul’s Creamery so good? What else? It’s the delicious ice creams, waffles and desserts served by energetic staff that make this ice cream café so appealing to customers. And the entrepreneur behind Paul’s Creamery is John Mathai Paul, who has started this new venture based on his passion for ice creams and his dream of running his own business. Emboldened by the rave reviews he got for ice-creams made with a small ice-cream making machine at home, he quit his regular job and went in pursuit of icecream making lessons. He travelled across Belgium, Italy and London to learn craft. Once he was convinced that he has got the hang of what works to create the best ice creams he returned to his native place and started up Paul’s Creamery. Not limiting to learning the craft from Europe, machineries for the café too were imported from abroad. Hotel Rahmaniya

Kethel’s Chicken A Journey from humble beginnings to setting up hotels across the State

uhammed Abdul Khader – the enterpriser selling tea from his kettle was fondly called ‘Kethel(Kettle) Sahib’ by the folks attending meetings and processions at Putharikandam grounds in the heart of Thiruvananthapuram during the 1940s. Over time, Sahib sold some snack items with the tea. One of which was the unique ‘Fried Chicken.’ It became a hit with the crowd. It should be noted, the city was conservative during those days and chicken dishes were rarely available. The popularity of the chicken dish led to Kethel Sahib establishing a food joint in the nearby Chalai Market. As time went by, the recipe and taste of the dish was maintained and this enabled the food joint to gain a huge clientele –

most of them regulars, while there were foodies coming in from far and wide too to enjoy this culinary delicacy. Feeding others the special dish was Sahib’s pride. So much so that he did not let go of his quirks all the while he ran the restaurant. Well, these legendary quirks were obviously good for foodies – he scorned poor eaters and those wasting food were scolded in his own language. Lemon juice used to be given free and in abundance. He was delighted to serve those who ate more and would even give discounts. Becoming an iconic food joint in a capital city with a simple dish and such quirks would have been only possible if the dish was that unique. ‘It Was’ and ‘It Is’. Though they changed the name of this hotel to Rahmaniya, the catch phrase is still ‘Kethel’s Fried Chicken.’ Over 70 years, the fame of Kethel’s Chicken has grown to such an extent that the current owners has established hotels across the state. The group now has 8 outlets across Kerala. The 3 in Thiruvananthapuram includes the first one set up in a bylane of


Chalai, and those at Attakulangara and Plammoodu in Pattom. The Pattom restaurant is established as a multi-cuisine dine-out. They have one in Kollam and two each in Kochi and Kozhikode. The legacy of Muhammed Abdul Khader (Kethel Sahib) and the uniqueness of Kethel’s Chicken is carried forward with the same principles and commitment by his son Maheen. One wonders what is so special about Kethel’s Chicken – the answer is taste, quality, preparation in a traditional format, ….. well, the list goes on. Kethel’s Chicken and Ghee Rice along with Lime Juice and Pickle makes an excellent combination. Chapathis are offered too. Live chicks bred with natural feeds are sourced from regular suppliers and prepared in the Halal way for cooking in a natural format. Tender chicken pieces are marinated in an unadulterated natural spice mix and deep fried to a golden brown color. Masala crumbs that is served along just adds to the foodies’ delight. Yet another dish to be tried here is the Chicken Liver Fry made of small chicken portions with thick gravy curry.

Kethel’s has even made it into the biographies of several leading personalities due to their long patronage to this restaurant. Kethel’s Chicken would have spread worldwide, if this totally family-owned business had accepted the requests for franchisees or outlets from outside the family. The international level of acceptance has made the proprietors to think on setting up outlets outside India too. Questions arise why Kethel’s Chicken does not become a chain as it stands equal or taller than major chicken-specialized chain restaurants. The proprietors point to their unwavering commitment to provide good food and believe the authenticity of the dish has to be retained with the same flavor and consistency. Hotel Rahmaniya Kethel’s Chicken has not just retained its patronage, but is growing among the young bunch of foodies too. March 2020

here has been a plethora of baking and confectionery shops opening up over the last few years. Ever wonder where they source the essentials such as decorating tools, ingredients and supplies for baking? In Thiruvananthapuram, Stanes Trading Company has been selling baking and cooking products for the last 20 years. Attakulangara-Bypass Road in Chalai, Thiruvananthapuram is chocka-block with shops selling various commodities. Like a hidden gem, you find Stanes Trading Company right in the middle of it. KUPPI A MILKSHAKE JOINT THAT’S

uppi... living up to its name, the shop offers milkshakes only in a Kuppi or bottle. Whether you have it there or take it home, the bottle remains with you. No Plastic – yes, you read it right, no plastic – whether it is the serving bottle or the straw. Kuppi, the milkshake joint is run by Allen Dipu and his wife Deepthi. The entrepreneur mindset of Deepthi went against becoming a franchise to leading players; the thought was more towards developing a new concept – that turned out to be Kuppi. Allen had been associated with the diamond jewellery industry in various capacities, before embarking on this venture, while Deepthi is an optometrist. Starting an environmentally-conscious business has been in their minds for quite some time. The floods of 2018 made them realize the threat of plastic to the environment. They decided their new venture would take a stand against plastic. Giving the striking name ‘Kuppi’ and using Kuppi (bottle) to serve the milkshakes clearly reflects the concept. The erstwhile charm of the milk bottles of 80s is brought back by the bottles at Kuppi. To instill conscientiousness in their customers the spiral straws provided with the milkshakes are paper-made. Allen says, ‘I won’t give any plastic from my joint.’ Well, the customers do find it catchy. These airtight bottles coming in 300 ml and 500 ml sizes, are handy and reusable.
