They are not breaking it down in small parts.” To avoid falling down that all-toofamiliar path, it’s important to be around others who are willing to put in the time to reach their goals. A support system that picks each other up when they may

And that’s where Kent comes in.

A life-changing decision Kent has been active in the fitness and health industry since 1989, first working as an instructor at the YMCA. In the early 1990s, she was diagnosed with fibromyalgia, a condition that causes widespread musculoskeletal pain.

“I couldn’t move,” she said, adding that she was training for a marathon at the time. “I was in a lot of pain. I just decided I needed to do something different instead of what I was doing. “I knew I had to stop taking all the medicine I was taking. It was just not working for me.” Kent found a yoga class in San Jose with Sherry Han, and two years later, she was a yoga instructor herself. “It totally changed my life,” she said. backgrounds such as Vinyasa, Iyengar, Ashtanga and Anusara yoga. She graduated from Bauman College with a Clinical Nutrition Degree in 1998. She owns The Healing Space at 503 Vineyard Town Center in Morgan Hill, where she not only runs her yoga practice, but various classes and groups that cover nutrition, meditation and other healthy living topics.

Self-preservation Most working Americans would agree that they get so caught up in the daily 9-5 grind (or sometimes more) that life tends to pass them by. Kent calls that being in “autopilot all their life,” where the work-life balance is so heavily skewed in one direction. That’s also an unfortunate reality of societal norms. People are so worried about living up to what others expect of them that they forget about their own needs. “We are so programmed mentally by our society that you have to be a performer and achieve a certain level,” Kent said. Instead, slow it down, she advised. Find a system that works for you. Take the time to plan your life and how you want to live. “Slowing down will always make us more conscientious about how we behave,” Kent said. Just as important, don’t give in to societal pressures. “I think people need to know that caring for themselves is not selfindulgence,” she said. “It is really selfpreservation.” Ups and downs are inevitable. But finding ways to minimize the downs and maximize the ups are critical. “People need to ride the wave and never give up,” Kent said.

Healthy options Kent’s offerings for those wanting to live a healthy lifestyle are plentiful: She leads plant-based cooking classes and potlucks,

detoxification workshops, group hikes, life-assessing workshops and more, all in addition to private yoga sessions. “There’s a whole bunch of different activities to encourage people to be the best they can be,” she said. Among her classes, Kent will be presenting the “I Matter Detoxification Seminar” on April 27 from 7:30-10pm at The Healing Space. Participants will take part in a 10-day or 14-day detoxification plan that includes fasting from unhealthy foods. “Fasting is a time-honored spiritual practice that can help you let go of unwanted habits and achieve a greater sense of balance and vitality,” the seminar description reads. “Designed to cleanse the body, mind and spirit, you will have the opportunity to explore your issues around food, self care and personal growth in a safe and supportive environment. Peel off layers of stress. Reclaim your center and say hello to your healthy self.”

She offers a holistic approach, she said, of helping her clients pinpoint their needs and designing a program to address those needs. In her experience, commitment is often a product of serious of purpose. “People who stick with things are often people who feel they have hit rock bottom,” Kent said. “They feel horrible about themselves and they want to change and move forward.” She is also a facilitator for the HealingStrong group in Morgan Hill. The support group connects people who are healing naturally from cancer and other conditions. Originally founded in Georgia, HealingStrong groups are now located across the world. “It gives me pleasure when people find ways to live a life where they can thrive,” she said.

uch has been written about reducing one’s environmental footprint. According to a 2018 Oxford University study published in the journal Science, eating a vegan diet could be the “single biggest way” to reduce your environmental impact on the earth. Eliminating meat and dairy products from your diet could reduce your food carbon footprint by more than 70 percent. > 12 >

Making the vegan decision “A lot of people tell me they want to go to a plant-based diet to lose weight,” Thérèse said. “I ask them, ‘Why do you want to lose weight?’ You really have to know your motivation. What do you like to eat? Do you eat out? How often? If you want a healthier lifestyle, it’s beyond food. You need to have a sound spiritual life, good, nourishing relationships. What brings you joy? We want to incorporate plants for health reasons.” It’s far easier to commit to a plantbased diet if you grow at least some of your own food. “A garden is key,” she said. “Even if it’s just a pot of herbs, you have something to flavor your food. And it’s yours.” Acknowledging that it isn’t easy to go this route, Thérèse suggests beginning with one vegetarian meal per week. “Start with a soup. Vegetable broth and beans for protein and fiber. Or throw in some faro. There are so many easy soups. You can make your own stock from vegetable scraps or buy good plant-based stocks at better grocery stores. Read the labels, though, to avoid excess sodium.” She uses a mirepoix of basil, celery, carrots, garlic and onion as the basis

In fact, it’s become a lifestyle: one that allows them to thrive, feel connected to the land, and enjoy health benefits far beyond what they had originally envisioned. When they embarked on their vegan mission seven years ago, each had a slightly different goal. For Thérèse, it was turning 50 and wanting to live an active lifestyle until she was 100. For Dan, it was to lower cholesterol and blood pressure without resorting to statins and other non-natural medicines.

of most of her dishes, adding fresh vegetables from their huge onsite garden that sports 21 raised beds. She cans vegetables from the enormous bounty, and always has jarred tomatoes from among the four varieties she grows annually, as well as frozen peppers on hand. “I love seasonal eating,” Thérèse said. “Right now, I am craving winter greens, like kale and chard, but I also love the new squashes like Koginut.” It’s one of the butternut squash family, round and super sweet. She suggests shopping for fresh veggies at the Morgan Hill Farmer’s Markets on Saturdays. “I almost never buy grocery store vegetables. I strictly grow my own or shop the Farmers Markets.” For mushrooms, she’s very fond of Far West Fungi in Santa Cruz. She encourages people to not be afraid of their spice cabinets. “I love five spice, cumin, coriander.” She does, however, caution against buying prepared vegetarian food. “If it’s processed, it’s just not going to

be as healthful as freshly prepared whole food,” Thérèse said. “Don’t rely on it.” At this point, she’s eating 100 percent vegan, with no dairy and no eggs. Giving up dairy (and cheese) was hard, but there are plenty of nut-based alternatives.

Sharing their knowledge To help get their club members started on the path to natural plant-based health, Thérèse and Dan offer special tastings in their own kitchen, where guests get to enjoy a wine paired meal consisting of four courses, featuring their “Soulmate” series of wines, which the couple crafts together. “We invite people to sit at our table and open their minds,” Thérèse said. “Our goal is to show you that wine can be part of a healthy lifestyle. And more importantly, we want to show how wine can pair with food beyond meat and cheese.” A typical meal might feature seasonal > 14 salad paired with their Soulmate

Thérèse spends a lot of time reading and researching. “I’m constantly learning something new about flavors,” she said. “There are just so many ways to use vegetables.” She recommends “Blue Zones Kitchen” by Dan Buettner and “Forks Over Knives: The Cookbook,” by Del Sroufe. Avoiding meat, seafood and dairy, along with eggs, refined sugar, white flour, oils and white rice, is the first step. The “Forks Over Knives” documentary advocates a whole food diet that includes healthy fruits such as blueberries, bananas, oranges and strawberries, veggies like broccoli, kale, carrots, cauliflower and lettuce, tubers, and starchy veggies like peas, potatoes, corn, winter squash and sweet potatoes. Add to that whole grains like brown rice, barley, millet, oats, quinoa and wheat berries, and legumes like black beans, chickpeas, lentils, kidney and pinto beans, and you’re bound to see a change in your energy levels. Thérèse is particularly bullish on beans and is grateful for the recent gift of an InstaPot from her niece. It’s the secret to making great beans in no time. She stocks Rancho Gordo brand beans and encourages you to try their enormous Corona white beans in a simple vegetable broth. Her husband, Dan, particularly loves their cranberry beans. For flavoring beans, she particularly loves fennel and is very fond of basil and rosemary salt from Jacobsen Salt Company (OR). For Thérèse, her day begins with a

smoothie of kale, frozen berries, almond or oat milk and protein powder, along with tea. Meanwhile, her husband, Dan, roasts his own coffee and makes a mean cup. In the afternoon, she switches to the herbal stuff and is particularly fond of dandelion tea, which is a known liver cleanser. She also favors chamomilelavender and green tea. Thérèse also bakes her own bread using a sourdough starter that came from yeast in their vineyard. The loaves are works of art. For those interested in a quick immersion into the plant-based lifestyle, Thérèse and Dan invite them to join

them on a culinary adventure. They believe good food, good company and great wines are the perfect recipe, and welcome you to their table, by advance reservation for Club Members only. Eight guests are hosted at each seating, of which there are two, at 12:30pm and 3:00pm, on the first and third Saturday of the month. Residents who have traveled to China in the 14 days before their symptoms started or have been in close contact with someone ill who has been there are advised to contact their doctor. Health officials advise residents to protect themselves by doing the following:

Get your flu shot to protect against flu, which can produce symptoms similar to novel coronavirus.

Wash your hands with liquid soap and water, rub for at least 20 seconds.

Cover your cough or sneeze with a tissue, sleeve or arm. Do not use your hands.

Avoid touching your face, especially your eyes, nose and mouth.

Stay home if you are sick with any respiratory symptoms, such as fever, cough, shortness of breath and are feeling tired.

“Flu and the flu season are predictably unpredictable,” said Santa Clara County Health Officer and Director of the Public Health Department Dr. Sara Cody. “Getting vaccinated is still the best protection. I get my flu shot to protect myself and others, like my elderly mother. I don’t always enjoy getting my flu shot. Who does? I do it because it could be lifesaving.”

During the last flu season (20182019), eight flu-associated deaths in people under 65 years were reported in Santa Clara County. For the 2017-2018 season, the most recent national figures available, the Centers for Disease Control and Prevention estimated that 80,000 people of all ages in the United States died of the flu and its complications. During that flu season, about 80 percent of those who died were unvaccinated. While flu vaccine is recommended for everyone six months and older, it is especially important for pregnant women, children younger than 5, adults 65 and older, and those with chronic medical conditions, such as heart disease, asthma and diabetes. Flu is a contagious respiratory illness caused by influenza viruses. Symptoms of the flu may be similar to those of the common cold, but are usually more severe. It takes about two weeks for the flu vaccine to become effective.

“The severity of the flu season is always unpredictable,” said San Benito County Health Officer Dr. Marty Fenstersheib. “Therefore, getting vaccinated is still the best protection. I always get a flu shot to protect myself and others, like those around me who are elderly or the very young. The flu shot is safe and effective and can be lifesaving. A flu shot can’t give you flu, but could cause some mild soreness or a slight fever for a day or so.” San Benito County Public Health Services provides free flu shots. Cannabidiol, or CBD, is a component of the cannabis plant lacking the “high” associated with marijuana, and right now products claiming to contain CBD are everywhere—from gummies to cocktails, ice cream to hand cream, and more. An estimated 64 million consumers, according to a January 2019 Consumer Reports survey, have

tried products containing CBD in the past two years alone. With widespread marketing that is largely unregulated, CBD purchased online or at stores is often promoted as a one-stop product for a range of potential health benefits, such as relieving stress, soothing aches and pains, reducing > 26 inflammation or improving sleep.

< 24 Interest in—and access to— CBD increased with the passage of the Farm Bill which removed CBD derived from hemp (a variety of cannabis that contains very low levels of tetrahydrocannabinol or THC) from the list of controlled substances. Although CBD products are now available online or in many stores, health or medical claims made by the product manufacturers are still subject to regulation by the FDA to ensure consumer safety. Through all the current interest surrounding CBD one critical question remains: Are widely available CBD products safe and effective?

Separating fact from fiction The contents and dosage of CBD products sold in retail stores or online are often unknown and not consistently, if at all, regulated. To navigate the current environment, consumers first need to understand that not all CBD products are equal: • FDA-approved drugs have been studied in a rigorous scientific process, including clinical trials to understand their safety profile and effectiveness for specific medical conditions. NonFDA approved CBD products are not studied this way and there is no credible scientific evidence backing any medical claims made about these products. • To ensure consistency and quality, FDA-approved medications are tested and manufactured to meet strict federal regulations. Testing standards for non-FDA approved CBD products vary by state, with some requiring no testing. Because of the lack of testing standards, these products may not contain what their labels say. • Many believe that CBD is natural and therefore safe for general use—this is untrue. As demonstrated in controlled clinical trials, CBD can interact with

other medicines or cause side effects. The use of CBD products should be monitored by a health care provider, such as your doctor. • Only FDA-approved CBD medicines are dispensed by pharmacies and covered by health insurance. So, what’s the bottom line for the millions of people currently using CBD products? As the saying goes, the smart consumer is the wise consumer. The FDA approval process is considered by many to be the gold standard in the medical field and was put in place to protect patients. Taking unregulated CBD products that lack scientific evidence can pose health risks, particularly for very sick patients who may be looking for hope in these products, in part, because of unproven health claims.

Know what you’re taking It can be difficult to know if CBD products actually contain what they claim. A 2017 study published in the Journal of the

American Medical Association found that almost 70 percent of all CBD products sold online did not contain the amount of CBD stated on the label—42 percent contained a higher concentration of CBD than the label claimed, and 26 percent of the products contained less. Twenty percent included enough unlabeled THC to cause intoxication, especially in children. The FDA also evaluated some of these products and found that they did not contain the levels of CBD that they claimed. More studies and regulations are needed to ensure these products are safe for consumer use. An important moment in the evolution of CBD occurred in June 2018 when the FDA approved Epidiolex (cannabidiol) oral solution CV, the first prescription CBD medicine. Because it is a prescription, available in pharmacies just like any other FDA-approved medicine, it is legal throughout the entire U.S. when prescribed by a licensed healthcare professional. It is the only FDA-approved CBD product currently available.
