Each campaign season brings its sign swindlers. But San Jose City Council candidate JENNY HIGGINS BRADANINI had to deal with that and then some. The District 10 contender walked out of her Almaden Valley home Saturday morning to find her white 2013 Range Rover SUV missing—and all the “Vote Jenny” lawn signs and banners stored therein. “It’s crazy,” she says. “I was looking around going, ‘Wait, did I let someone borrow my car? Did I park it somewhere and don’t remember?’” Turns out, whoever jacked her car went on some kind of gang-related crime spree, according to San Jose police. She says a detective told her that SJPD fielded reports of her car driving erratically and getting involved in a hit-and-run. “So, if you happen to see ‘Vote Jenny’ fliers scattered across the freeway or an 8-foot ‘Vote Jenny for San Jose’ [banner], be sure to let me know,” she posted on Facebook over the weekend.

In a phone call with Fly Tuesday, Higgins Bradanini says police seemed flabbergasted about the incident, saying the suspects targeted a safe neighborhood and a vehicle make and model rarely targeted in auto thefts. How the thieves pulled it off remains a bit of a mystery, too, she says. Police told her they believed the crooks hijacked her SUV’s signal because her key fob, which was in her purse upstairs by a window at the front of the house, was close enough to the car to start the engine. “Apparently, the law hasn’t kept up with the technology,” Higgins Bradanini says. Though SJPD found her car by Tuesday, it remains in impound because whoever took it used it to commit some other offense. For now, Higgins Bradaini says she’s getting around in a Ford Escort as she deals with her insurance company, which for some reason only covered $10 a day for a rental and nothing since police found her car—even though she can’t use it because it’s on lockdown.
WASTE NOT A new Bay Area-based business called Canna Cycle hopes to make the cannabis industry more sustainable.
PACKAGE DEAL Canna Cycle aims to reduce waste in the burgeoning world of legal weed BY TOM GOGOLA
W
HEN JJ KAPLAN was a supervisor for the Bay Area–based cannabis collective SPARC, he saw a lot of trash headed for the garbage bin. “I would see boxes of plastic and waste everywhere,” he recalls in a recent interview. He talked about it with his friend Sam Penny, a garbage truck driver who had also noticed the weed-waste problem, and together they decided to launch a new business, Canna Cycle, to reduce waste in the world of weed. “People forget our industry was built on oldschool hippies and growers who were sustainable on all aspects,” Kaplan says.
Based in the uppermost reaches of NorCal, Canna Cycle launched at the beginning of the year and now has recycling bins in more than a dozen locations throughout the region. Locally, their 23-gallon bins at the five Bay Area SPARC locations collect cannabis packaging—glass jars, so-called plastic “doob tubes” and all the other childproof packaging that’s part of the California Bureau of Cannabis Control’s regulations. How does it work? The bins are open to the public and easily identifiable via the Canna Cycle logo. Kaplan says the biggest waste product they see are the “doob tubes,” and glass jars. But they don’t—they can’t— accept everything, especially discarded
cartridges from vape pens. That’s a recycling story for another day, or another legislative session. Kaplan plans to repurpose much of the glass they collect back to the industry, and say that the plastic preroll tubes can be turned into things like filament for 3-D printers. The company launched at a time when recycling is in crisis due to rising costs and shrinking returns on investment. Businessmen like Kaplan are jumping into the fray to slow the flow of consumer waste, while companies such as the Montereybased Galicia put their attention to commercially produced waste. And, it comes at a time when Sacramento is starting to tune in to environmental consequences brought on by legalization—if slowly. The state Senate recently passed SB 424, which is targeted mainly at banning single-use e-cigarettes but also includes single-use cannabis vape pens in its scope. The advent of Prop. 64, which legalized recreational cannabis sales, came with a lot of built-in ground rules but none of them around cannabis waste disposal. Indeed, there are none this year besides SB 424. But 424 would only
post-Prop 64. During the medicinal era of California cannabis, the industry was not as heavily regulated, allowing dispensaries leeway in efforts like reusing old jars. They could also collect, clean and reuse vape pens. Now the cannabis recyclers are split between commercial and consumer focus. Whereas Canna Cycle serves dispensaries, Galicia in Monterey takes care of waste on the producers’ end, servicing hundreds of growers and product cultivators throughout the state. Galicia co-founder Garrett Rodewald says the company is also spearheading a recycling campaign for vaping. For the time being, Kaplan’s bins are clearly marked to let people know that they don’t accept vape cartridges. “That’s been a tough one,” he says. “We’ve been instructed by the state to stay away from it. That’s the one gray area in all of the packaging issues.” For commercial outfits, it’s pricey for pot businesses to dispose of their own organic waste. Businesses have the option to compost on-site or self-haul cannabis to our transfer station, which incurs a minimum $400 charge for it being considered special waste. For its part, Canna Cycle has teamed up with Humboldt County growers to launch a separate company, Sugar Hill, last month. Its first item, the Sugar Stick blunt, comes rolled in hemp wraps with a wooden, biodegradable tip to reduce heat on the user’s lips, and comes in a fully biodegradable, hemp-plastic tube. “The cost of using biodegradable plastic can be two to three times more expensive,” Kaplan says. “But if these become popular, hopefully other brands will follow suit.” Kaplan highlights what some may view as an absurdity when it comes to the well-intentioned child-proofing that comes with cannabis. A parent himself, he appreciates the rationale behind childproof pot products, but observes that “if you have cannabis, it shouldn’t be anywhere near your child in the first place. I, as a parent, shouldn’t have to worry about you and your kid.” He envisions a future where California cannabis consumers would have a choice between “doob tubes” and so-called “loosies.” “The biggest change we could make is to give people the option,” he says. “Do you want it in a ‘doob tube,’ or do you just want it in your hand. If I could go buy three pre-rolls like that, if I know that I’m saving the Earth? That would be beautiful.”

cover single-use cannabis vape pens; single-use cannabis joints aren’t within its purview. Enter Kaplan and his new program to collect those “doob tubes” containing single joints. As for the vape pens, they’ve presented a disposal challenge for Santa Clara County, given their legal status in light of the ongoing federal ban on cannabis, say county officials. It’s not just about cannabis but that facet of American consumerism that equates individual liberty with the pursuit of personalized products. So why all this waste? Safety regulations are forcing cannabis businesses to create packaging that’s designed to dissuade children from opening it. There’s currently no effort underway in the state to figure out how much waste the industry is generating both at the consumer and production level. But it’s a lot, if those bins are any indication. Craig Pursell, SPARC’s assistant dispensary manager, says that in the few short months since the bins arrived, they’re “filling up at an exponential rate.” Localities are taking note, and doing what they can to stem the tide of pot-related commercial detritus from landfills—with a general eye toward doing what they can at the consumer end to stem the tide of hyperpersonalized products. The flower, or bud, is what most people think of when they think about ingesting cannabis, and those 3.5 grams of dried product, when purchased at a local dispensary, come in plastic or glass jars that can weigh up to 184 grams. A 1-gram joint comes in a plastic tube weighing 40.5 grams. Edibles come in packaging up to 22 times heavier than the weight of the product. The sticking point in sustainable cannabis is vaping. The devices come with heavily toxic lithium batteries and vape cartridges made of metal and glass, plus combustible heating filaments. While each of these items are theoretically recyclable on their own, when combined they are not. There’s also some leftover THC residue inside the cartridge, making it a hazardous material by law and leaving individual e-cigarettes in a sort of afterlife limbo. At present, the disposal of e-cigs and cannabis vape pens is left to the consumer and, by extension, the locality that picks up the trash. The issue has come to the fore

Panic Spreads Amid Rumored ICE Raids
STAR POWER Rapper Jay-Z is the latest celebrity to join forces with San Jose’s Caliva.
Jay-Z Partners with Caliva Dispensary BY KAEL B. AUSTRIA Hip-hop’s first billionaire is making his way into the local cannabis industry. Shawn Carter, better known as Jay-Z—rapper, producer, businessman, philanthropist and husband to Queen Bey—announced last week that he’ll be teaming up with Caliva, a burgeoning San Jose-based company that grows, harvests and sells its own cannabis products. The musician joins another high-profile backer: former NFL quarterback Joe Montana, who became a Caliva investor earlier this year. Founded in 2015, Caliva boasts a 150,000-square-foot facility that features a cultivation site and retail storefront. The dispensary employs more than 600 statewide, including budtenders, delivery drivers and gardeners. Earlier this year, Caliva raised $75 million from a group of investors that, in addition to Montana, included former Yahoo CEO Carol Bartz. According to recent press
announcements, Jay-Z will adopt the title of “chief brand specialist” for the company, a position that emphasizes marketing, advertising and branding. As part of the new partnership, Caliva and Jay-Z promised to promote the cannabis equity movement. The company said it will aim its advocacy on minorities who were criminalized before legalization and now struggle to reap the benefits of the newly sanctioned industry. “Anything I do, I want to do correctly and at the highest level,” Jay-Z said in a news release. “With all the potential in the cannabis industry, Caliva’s expertise and ethos make them the best partners for this endeavor. We want to create something amazing, have fun in the process, do good and bring people along the way.” This isn’t the first time Jay-Z has trained his attention on social justice. In 2017, he linked up with fellow
hip-hop artist Meek Mills to create the Reform Alliance after the latter’s re-imprisonment. One of Carter’s goals with Caliva is to give former inmates access to job training, as well as raise awareness and advocate for equity within the cannabis movement. William Armaline, a member of San Jose’s Cannabis Equity Working Group, said he appreciates Jay-Z’s dedication to equity for historically marginalized populations such as people of color, women and the queer and trans community. “We absolutely welcome the support,” said Armaline, who teaches sociology at San Jose State University. “We’re an inclusive group in terms of membership and who we work with, so we’re happy to have support from anyone who offers it. We want to do the right thing, and it’s clear that [Jay-Z and Caliva] are very much interested in doing the right thing as well.”
Panic gripped Silicon Valley amid reports of a pending nationwide crackdown on 2,000 undocumented immigrants. But the week started without apparent incident, according to activists who braced for U.S. Immigration and Customs Enforcement (ICE) sweeps to commence Sunday. ICE has declined to share information with local reporters about its planned operations. In an interview on Fox News Sunday, ICE Acting Director Matthew Albence said the agency would conduct “targeted enforcement” on “specific individuals.” That offers little reassurance for local immigrant communities, which have experienced a massive uptick in collateral ICE arrests since President Trump took office. South Bay leaders condemned the federal government’s tactics as not only inhumane but deliberately fear-mongering. “San Jose rejects the Trump administration’s politics of fear and exclusion,” Mayor Sam Liccardo pronounced in a statement as word about the raids began circulating. Though the expected raids have yet to transpire, the anxiety experienced by immigrant families is palpable. “All the service agencies have received panicked calls tying up the phone lines,” said Father Jon Pedigo, head of advocacy for Catholic Charities of Santa Clara County. Issac Sanchez, a local janitor, said several people he knows have stopped reporting workplace abuses over fears that any attention from authorities would make them vulnerable to immigration raids. At a recent antiICE rally outside San Jose City Hall, he joined some of his co-workers to denounce policies that scare people into silence. “We will keep struggling and fighting back,” he said.—Nicholas Chan

Common Threads New exhibit at Montalvo Arts Center uses fiber art to explore human connection BY GARY SINGH

HIS FRIDAY EVENING, Montalvo Arts Center will launch an exhibit of textile and fiber art installations, “Threads: Weaving Humanity,” to kick off its annual outdoor summer program, “Art on the Grounds,” embroidering a powerful array of social and global themes, both literally and metaphorically.
In most cases, works of textile art are sensitive to the elements, so they tend to be presented indoors, in highly controlled environments rather than
be subjected to the weather outside, but with “Threads,” this is not the case. Each international artist designed his or her work to interact with Montalvo’s natural surroundings. The works weave, stitch, mend, braid and embroider the threads of our collective humanity, highlighting the practices of compassion, empathy, forgiveness and self-reflection. “We had been wanting to do some work in textiles for a long time, on the grounds, and each year we look to take on a theme that feels close, and near and dear, particularly to our resident artists,” said Kelly Sicat, director of Montalvo’s Artists Residency Program. “And this question of humanity, this
question of cultural understanding, feels top-of-mind for people. So it was an opportunity to look metaphorically at textiles, at threads, at their fragility as well as their resilience, and think about humanity in that kind of way.” To that end, Bangladesh-based visual and performance artist Yasmin Jahan Nupur will embroider a large-scale multi-panel fiber installation on the front lawn, incorporating jamdani, a centuries-old weaving technique. In the Montalvo gardens, Sudnya Shroff of Los Altos, an international artist who works with the global refugee community, will create a rainbow-like environment comprised of hundreds of feet of yarn and 6,000 flowers crocheted by refugees. Guatemalan textile artist Hellen Ascoli will create a caravan of flowers comprised of saddlebags handwoven from threads of recycled clothing and draped over pieces of furniture. San Jose’s own Modesto Covarrubias is one half of RoCoCo, a duo that will install a sculpture on an empty pedestal at the base of Montalvo’s lawn to replace a work long since lost. The practice of weaving and the
use of embroidery as metaphors for humanity brings back some wonderful dimensions of history and context. The Dada artist Jean Arp and his wife, Sophie Taeuber collaborated on a series of experimental crossstitching projects to represent their lives together, as artists and partners. They weaved their journeys into works of art. Their past weaved into their present, so to speak. In the opposite sense, because the fiber works at Montalvo will exist outside, they are created with the understanding that a natural and ultra-gradual process of decay will unfold, due to the passing of time, and due to the sun, rain or whichever element of the weather pervades, exemplifying the impermanence of everything. Buddhist prayer flags function in the same way. The opening festival Friday evening, from 6-9pm, will feature not just a chance for viewer/participants to experience the textile installations, but also an opportunity to see collaborative performances and interactive events orchestrated by Sangam Arts, a nonprofit connection machine providing a platform for ethnic arts groups to collaborate with each other. For Montalvo, Sangam has curated several ensembles including San Jose Taiko, Calpulli Tonalehqueh Aztec Dancers, Xpressions Indian Folk Dance, Yang Yang Chinese Dancers and NewGround Theatre Dance Company. However, this is not just one more multicultural survey of arts groups just for the sake of being multicultural. Viewer/participants will be able to interact with most of the ensembles and with the textile artists, turning the whole event into a powernetworking art-community soiree of sorts, demonstrating how art resonates across cultural divides, encourages others and extends insights to people of global cultures as an expression of our common identity. At the end of the evening, all the ensembles will join together in a 14-minute grand finale. “The process of bringing all these people together for an extended period of time, we’re hopeful that—and we’ve seen this happen before—we create connections between these groups that will go on and grow fruit in the future,” said Sangam Arts President Usha Srisnivasan. “That’s the whole idea behind it: so people can identify very discernible threads that run through all of the different cultures.”

Scientific knowhow and technological prowess are rewarded on Silicon Valley's craft beer scene BY NICK VERONIN
S
CIENCE HAS ALWAYS made its greatest strides when spurred by powerful forces. Capitalism and global trade pushed the innovations of the Industrial Revolution. Global war efforts have led to advancements in food storage, aviation and communications systems. As it turns out, there are fewer forces greater than humanity’s thirst for beer.
By way of example, Danish brewing company Carlsberg first established a laboratory in 1876 in order to advance the science of beer. One of the lab’s first major breakthroughs came in the development of a purified yeast that is still used by many industrial brewers to this day. Another scientific breakthrough—the development of the pH scale—has found applications that stretch far beyond the brewing world. Carlsberg continues its tradition
of pairing science and brewing to this day. One of the most recent efforts of the Carlsberg Research Laboratory involves using Microsoft artificial intelligence software to predict the success of beers in development. They call it the Beer Fingerprinting Project. The intent is not to take human expertise out of the brewing process. Rather, like many AI projects, the aim is to foster innovation. The sensors and software examine hundreds of micro samples of beer, looking at factors such as the viability of yeast strains and the types of flavors different combinations of ingredients would produce. The system can differentiate between pilsners and lagers, and predict with a great deal of accuracy how various fermentation scenarios would change the beers in question. “The goal is to map a flavor fingerprint for each sample and reduce the time it takes to research taste combinations and processes by
up to a third, to help the company get more distinct beers to market faster,” according to a post on “Transform,” an official Microsoft blog. Of course, the Carlsberg Group is one of the world’s largest beer producers—with 140 brands distributed in 150 countries. But smaller breweries and taprooms are harnessing science and technology with the same focus and precision. Silicon Valley’s rapidly expanding craft beer scene is propelled by an army of brainy brewers, early adopters and those who favor experimentation over the status quo. This year’s Silicon Valley Beer Week issue seeks to highlight the mad scientists of local beer. Read on to learn about the math behind the malt, brewers’ obsession with water, a trio of tart entrepreneurs and the automated taprooms giving customers high-tech control over every pour.

To keep his craft beer consistent, Felipe Bravo puts faith in the numbers BY NICK VERONIN
DO THE MATH San Jose native Felipe Bravo has climbed the ranks in the local brewing industry by crunching the numbers.
A
SK FELIPE BRAVO how he got into brewing, and he’ll tell you it’s really quite simple.
“Well, I studied electrical engineering,” he says matter-offactly—the inflection of his voice suggesting that, at least to him, the answer is painfully obvious. After Bravo earned his bachelor’s from Cal Poly he dilly-dallied for a few years, working on satellite technology at a Palo Alto company. But then he did the sensible thing. He went back to San Luis Obispo for his master’s, worked his way through most of his thesis project—
designing the software and building the sensors for an automated homebrewing rig—and then dropped out to work at a brewery, where he earned his stripes washing kegs for $10 an hour. Today the San Jose native is production manager of research and development for the Fort Point Beer Company in San Francisco. He spends much of his free time working on what he calls the “Fox Tale Fermentation Project”—in a garage just north of downtown San Jose. There, he and his fiancé, Wendy Neff, cook up their own beer recipes. In 2018, the couple took first place
in the Silicon Valley Homebrew Competition hosted by Hapa’s Brewing Company. Hapa’s rewarded them by producing a batch of their Sonic Bloom West Coast IPA and serving it at their taproom on Lincoln Avenue. Looking back, Bravo says it really does make sense. “It’s funny,” he says. “I’ve been a brewer longer than I’ve been an engineer. But if it wasn’t for engineering, I would have never been a brewer.” Bravo says he fell in love with brewing because it satisfied his creative needs while incorporating his scientific side. “It was something I could control,”
he explains. “It was something that I could visualize and design and have a product that was truly mine.” One could say that visualization is the cornerstone of Bravo’s job. It is his responsibility to ensure the consistency of Fort Point’s beer. Consumers may take it for granted, but it is no small feat for a brewery to reliably churn out a product that possesses the same flavor profile and alcohol content month after month, year after year. To accomplish this, Bravo puts his faith in the data. On a recent afternoon, chatting over sandwiches near St. James Park, he whips out his phone and pulls up

‘You have to be a really good scientist to be a brewer.’ —FELIPE BRAVO Take, for example, the most straightforward of the four: water. The Fort Point brewery is located in the Presidio in San Francisco. Like most of the city, Fort Point gets water from the Hetch Hetchy Reservoir. However, in the Presidio, Lobos Creek is also a large source of potable water. And even if Fort Point could rely on 100 percent Hetch Hetchy water 100 percent of the time, there would still be fluctuations in minerality. “Beer is mostly water, so it contributes to all the flavors down the line,” Bravo explains. “You don’t always know when the water is going to be changing on you.” Fort Point uses a charcoal filtration system in order to ensure a certain level of consistency in the water it uses for brewing, but that can’t guarantee a completely neutral Ph of 7. For that, they would need a reverse osmosis filtration system, like the one used by Camino Brewing, Floodcraft Brewing Company and other breweries in San Jose (see page 22). However, since minerals add flavors and characteristics that are
often desirable, those same breweries will frequently reintroduce the very elements they have first eliminated later in the brewing process. Bravo and his crew are constantly testing the water’s Ph levels and plugging the readings they get into his formulas to make adjustments. A similar process is applied to the yeast. “Even if it is technically the same yeast strain, yeast can degrade over time if you don’t keep it healthy,” Bravo says. “Understanding yeast health is a major factor.” It is also important to know how much yeast is in a given brew—that is to say how many individual cells of yeast are swimming around in the mash, eating sugars and producing alcohol. There was a time, not long ago, when breweries would perform “live cell counts” of yeast—literally putting a single milliliter of dyed, yeast-filled solution onto a specialized microscope slide called a hemocytometer. The slide, first developed to count blood cells, allows the observer to count microscopic elements in a defined area in order to come away with a representative sample. There are now specialized, software-powered sensors that can perform this task, so brewers don’t have to crane their necks over a microscope to get a yeast count. But reliable yeast counts are still essential to the process of calibrating each batch of beer. “Brewing beers at scale is all about consistency,” he says. “When you’re brewing at the scale that we brew at, that’s pretty hard. It looks a bit like a periodic table—a jigsaw puzzle of rectangular cells, each populated by numbers, decimal points, percentage symbols and terminology ripped from the glossary of a chemistry textbook. It’s an English major’s worst nightmare. Bravo uses this spreadsheet to track the four basic elements of beer: water, yeast, grain and hops. Taken at face value, this quartet of ingredients may seem simple enough. However, once they begin to interact, the potential outcomes multiply exponentially, splintering into a multiverse of possibility.

OR A CERTAIN kind of adventurous beer drinker, places like River Rock Taproom in Sunnyvale represent a great leap forward for humankind. Finally, they can follow their curiosity up and down a beer menu, try something unusual, take a drinking buddy’s recommendation, even—if they’re willing to face the disapproval of the entire beer-nerd
universe—mix a splash of triple IPA with, say, a swallow of chardonnay. There’s no waiting for a server or committing to a pint they might be uncertain about. What came to gas stations and buffet restaurants decades ago has finally come to brewpubs: self-service. River Rock, located on Murphy Avenue in downtown Sunnyvale, is part of the latest trend in beer-craft technology, allowing patrons to serve themselves from 40 taps displayed at

With no bar or bartender, beer lovers pay by the ounce and may sample as much, or as little, as they want from a dizzying variety of brews—from light to dark, sour to porter. There’s a beer with more than 11 percent alcohol by volume, and another that comes in at about 4 percent. There’s even red and white wine, cider and a single tap of kombucha. Here’s how it works: Customers show a valid ID and credit card and get a wristband in return. The bracelet serves as a running tab. Each tap contains information about each particular beer. The customer can then wave the wrist band near the sensor beside every tap and then pour a pint, a half pint or just a taste. Drinkers are charged by however much they pour. The concept lends itself to adventure, which means, at least at River Rock, there aren’t many familiar brand names. Those who love their Sierra Nevada or Blue Moon or Goose Island would probably be happier elsewhere. “I don’t have those kinds of beers here,” says River Rock’s owner, Venkaiah C. Jetti. “They are available everywhere else. My customer wants something new, something different.” River Rock’s tap list reads like a curated tour of small, indie brewers, many from the Bay Area and several from other spots across the U.S. They have San Jose’s Umunhum Brewing as well as beers from Dogfish Head Craft Brewery out of Milton, Delaware. The tap list is always subject to change, but on a recent visit, the offerings included a grapefruit shandy (a citrus-beer mixture), a sour designed to evoke a gin cocktail with cucumber and mint, a chocolatey porter named after a Hitchcock movie, and a stout that features milk sugar. Jetti says that a drinking tab will run on average $8 to $10 per pint, though it could go higher. The taproom also serves food, including appetizers, burgers, sandwiches and salads. It opens mid-afternoon on weekdays and at noon to serve lunch on Friday, Saturday and Sunday. River Rock Taproom opened its
doors in December 2017. At that point, it had a little educating to do about the concept and the technology. Today, Jetti says, the business has developed a clientele of regulars, but he is still occasionally called on to explain how self-pouring works. Self-serve taps are still rare in the Bay Area; others include the Hops & Sessions taproom in Livermore, the Brew Coop in San Francisco, Thirsty Bay Tap ‘n Pour in Dublin and the Pour Taproom in Santa Cruz. Blast & Brew, located in North San Jose, also has a self-pouring system. There, customers are given a swipeable card instead of a wristband. The technology gives the proprietor the ability to monitor a customer’s drinking via a dashboard, and allows businesses to engage in the traditional bartender’s duty of telling a customer when they’ve had too much. At a certain point, the customer will be prompted to check in with the house before they can continue pouring. Even so, Jetti says, self-pouring is a technology with which millenials feel comfortable. “The older people,” he laughs, “they just never come in.” After a year and a half in business, he’s learned that people often come in after dinner for a light, maybe fruity brew or cider. With 40 taps, he said, there’s almost never any waiting. “I certainly can’t hire 40 people to serve beer.” Jetti must also make every effort to keep up with trends in local brewing, including new products and seasonal brews. The tap list will require constant tinkering to reflect emerging beers and brewers. He can’t fall back on old dependable brands. His business plan is based on novelty and change. “People want to try everything,” he says. “That’s the beauty of this concept.”

HARD TIMES Silicon Valley’s ion-rich water is a problem for brewers—fortunately there’s filtration for that.

S
OME OF THIS country’s cheapest and least flavorful domestic beers make a lot of noise about water. There’s the iconic, grizzled drawl of actor Sam Elliott pronouncing that for Coors Brewing Company, “it’s rocky mountain water or nothing.” Hamm’s tells its drinkers that it is “born in the land of sky blue waters.” Olympia keeps things even simpler: “It’s the water” is their slogan.
Turns out it’s more than just marketing-speak. “It’s one of the most underrated components of beer,” says Elliot Hoffman, assistant brewer at Camino Brewing. “Historically, it’s actually been one of the most defining factors for styles.” Pilsners, which originated in the Czech Republic in the mid-1800s, were at first brewed with what we’d call “soft” water, low in free ions such as calcium and magnesium. This relatively soft water was instrumental in creating the signature flavor profile of a classic pilsner.
Without water filtration, brewing in San Jose would be near impossible As for the water in Silicon Valley… well, Hoffman says, it leaves something to be desired from a brewing standpoint. “Santa Clara County is absolutely notorious for having awful water for brewing beer,” he says. It’s a problem anyone without a water softener built into their home can understand. Brewing equipment is just as prone to calcification as the faucet or showerhead. But there’s more to it than that. The water is also rather alkaline, which negatively impacts yeast. “The majority of successful brewers in the South Bay and Santa Clara County end up having to use reverse osmosis water filtration,” also known as a water softener, he explains. In fact, the technology is also essential to maintaining the longterm health of espresso machines and in producing craft cocktails, as tainted ice can interfere with the delicate flavor balance mixologists seek to create.
Reverse osmosis filtration works by capturing the free calcium and magnesium ions floating in a given water supply. In fact, the highestquality reverse osmosis systems should be able to bring any water to a near neutral pH of 7. Camino’s filter tends to spit out water that scores about 6.5 on the Carlsberg Laboratory-developed scale and manages to eliminate almost all of the calcium. “Our city water, in terms of calcium hardness, can be upwards of 160 parts per million,” he says. “The reverse osmosis water is, like, five.” However, as Hoffman noted in pointing out Burton-on-Trent’s famed IPAs, an entirely neutral water source isn’t always what he and his team are looking for. And so they blend their almost pure water with city water and other “brewing salts”—essentially isolated minerals and other components— to produce a water profile that is most conducive for the type of beer they are creating. When brewing IPAs, they will add sulfates to aid in hop extraction. But with their pilsners, they add very little city water to the mix, as they are attempting to replicate the ultrasoft Czech water that first gave birth to the pils. While water softening systems are nothing new, their importance in the modern craft beer movement cannot be overstated. Without the ability to strip water of its naturally occurring ions and then strategically add select elements back, no brewer anywhere would be able to produce the range of beers that modern beer makers can. Without this filtration technology, which first came into mainstream use in the 1970s, “brewing in San Jose would be near impossible, unless you just made porters or stouts,” Hoffman says, noting that before reverse osmosis, brewers had to rely on the unique profile of the water in their municipal systems. Today, breweries all over Silicon Valley—and all over the world—are producing beers that are dark and malty, light and crisp, cloudy and hoppy. We’ll drink to that.

But that doesn’t mean ion-free water is ideal for all styles of beer. “The higher sulfate count you have in your water, the better the water will isomerize alpha acids, or create bitterness,” Hoffman explains, pointing to the English town of Burton-on-Trent, which is known among British IPA lovers for making some of the best bitter brew in the country. “They were making hoppy beers because they liked the way they tasted, but also because they were able to get flavors no one else could produce because their water was so high in sulfates.”

T
HE TAPROOM AT at Lazy Duck Brewing is hard to find—it’s a small windowless space tucked in an otherwise unremarkable industrial area in north San Jose.
But the brewers here aren’t after any awards for ambiance. Local beer lovers seek out Lazy Duck because of their ever-changing, often experimental brew list heavy on fruity sour ales with an IPA or two thrown in for the sake of tradition. During Silicon Valley Beer Week, the beer lovers behind Lazy Duck Brewing will participate in a Meet the Brewers event at Nom Burger in Sunnyvale on Wednesday, July 24. Four days later, they’ll play host at
their garage-size taproom for the latest in the series Summer Sunday Sours. Lazy Duck first opened its doors to the public in April 2018 after a soft launch for friends and family. The brewers—Jon Chin, Mike Rayzman and Nick Fodor—set out to explore the emerging world of sour ales, which depend largely on bacterial cultures to produce a distinctively tarty taste. Since then, Lazy Duck has established a handful of signature sours, each to highlight the flavor profiles of particular fruits: Raspberry Quack, Strawberry Quack and Blackberry Quack. In the competitive Bay Area market, Lazy Duck is looking at fruitbased sours as their lane to success. “What we’re after is the essence of the fruit in beer form, basically,” said
Rayzman, who characterizes himself and his partners as “beer nerds.” Though fruity sours form the backbone of the new brand, Lazy Duck is also a kind of a lab for experimental flavors. In recent weeks, it has been offering such eye-opening brews as Cake For Breakfast (coconut, cacao nibs and vanilla) and an Horchata sour, based on the popular Mexican treat. Sour ales aren’t new, but they are enjoying a moment of interest for both brewers and drinkers, partly because they represent a change-up from standard hoppy IPAs and because sours have proven to be adaptable and versatile enough to seduce the more adventurous beer lover. Sours usually take a longer time to brew than standard beers. Those aged in oak barrels can take a year or more to mature. Lazy Duck sours take about a month from start to finish. “We do a quick sour method,” says Rayzman. “You make a brew just like with any beer, and instead of putting yeast in it, we put in a souring agent—a wild culture that we keep alive over time, kind of like a sourdough starter.” The culture—made up of bacteria, mostly lactobacillus, brettanomyces, pediococcus or other organisms and wild yeasts—technically can change according to factors such as weather, time and location, which potentially adds an element of volatility to brewing. “Our starter is a wild starter,” says Rayzman, “open to the air and the elements a little bit. So, it’s a wild fermentation process. But we’re pretty consistent” from batch to batch. Sour beers may be trendy today, but they harken back to a time when the scientific method had not so thoroughly integrated with the world of brewing. Before widespread pasteurization, almost all beer was sour beer, subject to fermentation by any number of microorganisms. In the late 19th century, pasteurization allowed brewers to exercise control over how their brews fermented, and the unpredictable nature of the effect of “wild” organisms in beer was all but eliminated. Belgians pioneered the modern sours with their method of using open fermenters, allowing whatever microorganisms that happen to be in the air to affect the fermentation. Ideally, this means that the taste of a particular sour beer is as unique as the place where it is brewed. Some breweries, like Yeast of Eden in
Carmel, market their sours as a unique taste of a certain region—what vintners would call terroir. At the Nom Burger event, the Lazy Duck brewers will bring many of their signature sours, some of which are bottled and sold at the Lazy Duck taproom. But at its July 28 Summer Sours party, the brewery will be more experimental, offering up some of their most adventurous ideas. “We’ll have five brand-new sours that we’re piloting,” Rayzman says. “It’s how we do R&D. We make a big batch of beer, separate it into kegs of these pilot batches and see how they turn out.” Some of the things they’ll be trying out have to do with tropical flavors: passionfruit, mango, guava, apricot, white peach, cherry lime. “We’re also working on a stout that we’re calling ‘Vanilla Cuppa Jose,’” Rayzman says. “It’s a coffee stout.” After a year and a half in business, Lazy Duck is still very much a grassroots startup—three partners, no employees, selling their brews to a limited number of local bars and at their tiny taproom, and currently open to the public only on Fridays, Saturdays and Sundays. Rayzman sees a viable path to success in the Bay Area, which he says is not as brewer-centric as places like Portland, San Diego and Denver, despite the bigger population. “It’s getting more and more crowded, for sure. I think in San Jose, we’ve gotten 10 or 12 [new breweries] coming just recently. But there are still not as many as in other cities. There’s still room to expand. But right now, as a startup brewery, we’re going to focus on the beer. If that proves itself, then we’ll talk about expanding.”

TALKIN’ ’BOUT LOVE In ‘The Language Archive,’ a linguist struggles to speak his own truth.

EORGE AND MARY know that their marriage is about to end. In the opening scene of Julia Cho’s The Language Archive, George (Jomar Tagatac) asks his wife why she can’t stop crying—a bad sign for both parties.
At first, Mary (Elena Wright) avoids the topic with a deadpan silence. She’s in the middle of tidying up the house and isn’t going to pause for a domestic confrontation.
Mary is defensive and reticent with her husband. Then, more aggressively, she simply ends the conversation by walking out of the room. George and Mary aren’t a couple for very long on stage. The play isn’t an in-depth examination of what’s gone wrong between them. The Language Archive instead charts the aftermath of George’s sorrow about being left. Cho’s dramatic subject is banal— what makes for an enduring love— but she’s invented an engaging framework that refreshes an overly
familiar narrative trope. George is a linguist who, ironically, can’t speak a language of love that his wife can recognize. In her exasperation, Mary exclaims that she has never understood what he’s been trying to tell her. However, his assistant at the language archive wants nothing more than to meet him halfway. Emma (Adrienne Kaori Walters) is taking Esperanto lessons because George is fluent in this constructed language whose name means “one who hopes.” Appropriately, Emma is the character in this play with the greatest amount of hope. Her teacher (Emily Kuroda, in one of several roles) sees how heartsick she is, pointing out to her pupil that nobody learns a new language unless it’s for the sake of love. At the same time that Mary leaves George, he and Emma are in the midst of a new project. They’re recording Resten (Francis Jue) and Alta (Kuroda), the last speakers of
a dying language. But things don’t go according to plan. Resten and Alta, a long-married couple, start arguing in English. Their marriage mirrors George’s back to him, except for that their disagreement is temporary. Alta tells Emma that in her native language, the words “I love you” don’t exist. What people in love say to one another is, “Don’t leave me.” Kuroda expresses this thought in such a way that it modifies both phrases. “Don’t leave me” becomes a tender endearment while the inherent need in saying, “I love you,” is suddenly laid bare. Cho spends the most time in George’s orbit. In his portrayal of a brokenhearted man, Tagatac quietly conveys George’s wounds, bringing out his character’s dignity. George does indulge in self-pity, but only up to a reasonable stopping point. The audience can see that he’s hopelessly in love with Mary despite his inability to speak in a way that will satisfy her (she’s not interested in his mastery of Esperanto). But the playwright is too polite to bring their sex life into the couple’s dialogues. Instead of directly addressing that topic, Cho and Tagatac imply that George is repressed. He may be a cunning linguist at the office, but not at home. In theory, this might also explain why he can’t see, let alone respond to, Emma’s desire for him. Cho sacrifices some amount of mystery when she resolves most characters’ plot lines right before the curtain call. Restin and Alta’s has a tidy ending, and Mary’s landed on her feet and found a sense of purpose (hint: she’s transformed her needs into kneads). Emma takes a more interesting journey, embarking on a surreal train ride that brings her face to face with Ludwik Zamenhof (1858–1917), the Polish physician who invented Esperanto. Unlike Mary, her journey isn’t toward independence but understanding the man she loves, even if he’s unable to understand her way of saying, “I love you.”

Since the 1970s, Thompson has worked with blues visionaries like John Lee Hooker, Etta James, and Big Mama Thornton, as well as helming his own group, the Resisters. Pianist Sid Morris takes part of a long lineage of Bay Area bluesmen—mentored by SF blues piano pioneer and original James Cotton Blues Band member Alberto Gianquinto, Morris has been performing since the ’70s and continues to be an active member of the local music community.

��� CRITICAL LENS ‘What She Said,’ a documentary on film critic Pauline Kael, plays at the San Francisco Jewish Film Festival in Palo Alto.
Jewish Film Fest SIX DAYS OF eclectic documentaries, biopics, comedy and drama: The Palo Alto leg of the S.F. Jewish Film Festival features more than two dozen films. Take the Israeli-made Golda, the kind of honest discussion of Israeli history rarely permitted in American media. Golda Meir was the Kiev-born, Milwaukee-raised woman who served as prime minister of Israel from 1969-74. The documentary shows not just Meir’s toughness but the suspiciousness and intractability that permitted both international assassinations and a questionably prosecuted war. She also refused to do much for the North African Jews known as the San Francisco Jewish Mizrahi. By the time Meir died, a political relic, she’d Film Festival set the stage for the ineffable Benjamin Netenyahu, the subject of the unpreviewed King Bibi. Jul 20-28 Politics aside, this year’s fest seems particularly big on CinĂŠArts, Palo Alto the subject of show business, the Jews’ “Empire of Their sfjff.org Own,â€? as historian Neil Gabler put it. Curtiz dramatizes the life of Michael Curtiz, the workhorse director of Casablanca, who made 86 films from the silent era to the age of Elvis. Carl Lamelle concerns the founding president of Universal Studios, and during WWII, a rescuer of European jews from the Holocaust. It Must Schwing!, exec-produced by Wim Wenders, concerns the history of the Blue Note record label. The partners in it were a pair of German Jewish emigres whose names must have made callow jazz musicians nervous: Mr. (Alfred) Lion and Mr. (Francis) Wolff. But the jazz greats interviewed here, including Quincy Jones, remember the predatorily named pair as men who lived for the music. A few weeks ago, it was the centennial of the birth of a beloved and highly influential film critic. Through interviews and archival footage, Rob Garver’s What She Said: The Art of Pauline Kael revives Kael’s force, her wisdom and her feuds. Kael was very much a Westerner, raised in Petaluma and educated at Berkeley. In the late 1960s, she began a long stint as the most important film critic in America at The New Yorker. There’s a better sense of Kael here as she was on TV than one gets from the 2009 documentary For the Love of the Movies; the clips Garver has here erase an impression I had that television wasn’t Kael’s friend. Here she has more room for relaxation and some candid self-deprecation. One also gets more than a whiff of the smelly sexism Kael faced her entire career. —Richard von Busack

This newly formed local alternative rock outfit displays their polished and multilayered songcraft on their recently released debut album, Aurora. “Rock ’n’ Roll Queen” and “Chasing Ghosts” recall timeless traces of the Foo Fighters, QOTSA and Soundgarden. Incorporating a nuanced blend of spacey keys, atmospheric synths and catchy guitar riffs, the band’s sound draws from the unapologetic rough edges of their hard rock influences while seamlessly blending honest soulfulness with their lyrics and melodies. Rebecca Roudman makes her living as a cellist in the Oakland Symphony and the Santa Rosa Symphony. But when she’s not performing the work of the masters, she is using her instrument to conjure up blues, bluegrass and rock & roll melodies. It would seem that Roudman and the rest of her quartet—a guitarist, bassist and drummer— don’t get much downtime. They’ve put out two albums this year and are maintaining a packed touring schedule, which brings them to Rosita Park in Los Altos this week as part of that city’s Summer Concert Series. (MS)

This West Coast all-star band is composed of established jazz heavyweights currently working the LA scene. Many of them are internationally acclaimed Grammywinners. The band features worldfamous ska musicians, such as Angelo Moore of Fishbone and Korey “Kingston” Horn of the Aggrolites. At 23, indie R&B singer-songwriter Ian Santillano is shining with artistic potential. Santillano hails from Hayward but is quickly gaining traction within San Jose’s DIY music scene. A self-taught multiinstrumentalist, Santillano’s lush guitar harmonies and bouncy bass lines complement his understated vocals with a waviness reminiscent of contemporary R&B acts like Daniel Caesar and The Internet. Santillano’s debut EP, 1856, dropped last Friday and will be celebrated with a performance at the Art Boutiki featuring his band, the Housewarmers. Sharing the date are local surf rock band Swells and the Lünatics, and the Sacramento neo-soul group Basi Vibe. (MP)
San Jose alt-pop rock band Frantic Romantic has released six music videos since October in a concerted effort to build buzz for their new full-length album, Celestina, which comes out this Saturday. Their visually striking music videos for songs such as “Among the Stars,” “At Night” and “Rocketship,” showcase their original take on the ’90s rock aesthetic. The sextet of hard-hitting musicians channels a vigorous sound driven by soaring synth lines, distorted guitars, moody keys and powerful vocals from their lead singer, Mr. Kerosene. (MP)

This iconic classic rock band got its start playing in the nightclubs of late ’60s Chicago, ultimately taking the city’s name for its own. At a time when most rock groups stuck to the classic four-piece arrangement of two guitars, bass and drums, Chicago challenged conventions by incorporating the diverse musical traditions of their hometown—gaining an international following by merging rock & roll with a killer horn section that drew inspiration from jazz, funk and R&B. Postmodern Jukebox, founded by arranger and pianist Scott Bradlee in 2011, is a music collective that covers popular tunes from the modern age—but with a twist. More than 100 musicians and vocalists have rotated through the project, which has more than 20 albums since 2013. Best Shots Decades after her debut, Pat Benatar proves she is still a heartbreaker BY BILL KOPP
A
RGUABLY THE QUEEN of 1980s rock, Pat Benatar has achieved a singular mix of success, both critically and commercially. With record sales of more than 30 million units to her credit, Benatar is among the most successful—and undeniably talented—artists of the modern rock era.
Six of the diminutive singer’s albums have gone platinum in the United States, and she found
significant success in Europe and Australia as well. Her striking good looks and powerful voice made Benatar a darling of the nascent MTV when it launched in 1981, and she would remain a fixture of the channel’s music programming through the 1980s. In the days before the internet, instant retrieval of biographical information wasn’t possible. But word got around that Benatar was no pop tart; she was a vocalist with gravitas, one who had initially pursued a career as an opera singer.
And that degree of talent, finesse and power was evident in both her singing and the highly charged, borderline grandiose arrangements of her hit singles. Songs like her cover of the Young Rascals’ “You Better Run,” as well as “Shadows of the Night,” “We Belong” and “Love is a Battlefield” had all of the melodrama of Meat Loaf ’s work with Jim Steinman, but with a more versatile singer out front. Though Benatar isn’t known primarily as a songwriter, she has been astute in her choice of material. A key to her success all along has been her longtime guitarist, collaborator and (since 1982) husband, Neil Giraldo. Giraldo built his reputation as a producer who figured out how best to present Benatar’s talents on record, and he soon parlayed those skills into effective production work for a host of other artists as well. Benatar’s gifts and ambitions have always been too expansive to remain inside the confines of hard rock; her
1991 release, True Love, found her working in the pre-rock & roll jump blues idiom. Since that time, she has focused less on releasing studio albums: three more in the ‘90s, Go in 2003 and none since then. But she has remained active, recording and releasing occasional singles including “Shine” in 2017 to support the Women’s March in Washington D.C. Yet as a live performer, Benatar (with Giraldo) has never slowed down; she’s mounted a tour every single year since 1991; the current run of dates celebrates the 40th anniversary of her debut album, In the Heat of the Night and the tour in support of that record.
