INTRODUCTION Just as the name suggests, the dehydrated vegetable is a method of storing vegetables for a prolonged period with minimum effort by removing the moisture, thereby dehydrating them.

VEGETABLES THAT ARE SUITABLE FOR DEHYDRATION Almost all vegetables can be dehydrated by adopting different techniques depending on their size and shape. As in onions have to be chopped and tomatoes have to blanch before dehydration. Some of the most common vegetables that are suitable for this process are carrots, cucumbers, beans, corn, garlic, broccoli, peas, eggplant, potato, squash, and zucchini among others.

PROCESS OF DEHYDRATION OF VEGETABLES: Basically, there are two factors that are to be taken into account while the vegetables are being dehydrated. They are optimum heat to remove the moisture from the vegetables, in addition to it, there must be proper air flow without allowing dampness to settle in as it may lead to spoilage. The most common methods which are used for vegetable dehydration are: • • • •
