Pulled Stout Braised Pork Rib Sandwich & Triple-S Slaw (Sweet, Sour & Spicy)
Ingredients for Cooking Ribs ¼ Cup Regular Table Mustard ½ Cup BBQ Sauce (your favorite) ¼ Cup Ketchup 2 Tablespoons Soy Sauce 1 Cup Guinness Stout (any other brand is fine) 1 Slab Pork Spare Ribs or Baby Back Ribs ½ Yellow Onion Sliced Mix the first ingredients well in a bowl. Preheat oven to 250 Degrees Fahrenheit. Season the ribs with salt and pepper or your favorite seasoning. Place the ribs in a roasting pan, cover with foil and bake for about 4-‐5 hours or until the meat is falling off the bone. While the meat is cooking make the slaw. When the meat is ready remove the leftover liquid, throw away as much fat as you can and reserve the liquid for later use . Remove all the meat from the bones and chop or shred.
Ingredients for BBQ Sauce 2 Cups BBQ Sauce (your favorite) 1 cup stout Liquid Leftover from Cooked Ribs Place these ingredients in a pot and simmer for about 15 minutes or until the BBQ sauce starts to look kind of thick again. Remove from the heat and add some to the chopped rib meat until it is moist. If there is BBQ Sauce left over serve it on the side. Your Meat is Ready!
Ingredients for Slaw ¼ Cup Plain Yellow Mustard ¼ Cup Whole Grain Mustard ¼ Cup Honey ¼ Cup finely chopped Pickles ¼ Cup finely chopped Sweet Jalapeno’s (available in pickle section) ¼ cup Hard Apple Cider (such as Stella Cidre) 1 bag of pre-‐packaged Cole Slaw mix (available at the grocery store with the packaged lettuces) Mix the first six ingredients well in a bowl then add the close slaw mix and mix very well. Let it sit for about 4 hours and mix it every half hour to make sure it marinates well. To assemble put the meat on a sandwich and top with slaw and extra BBQ Sauce! Enjoy!
