Beef Strip Loin with Brandied Tarragon-Mustard Sauce Yield: 12 portions 3 1 2 2 1 2 ¾ 14 ½ 1½ 1½ e 1½

garlic cloves, minced tablespoon ARREZZIO olive oil teaspoons salt teaspoons ground black pepper boneless beef strip loin (about 5 pounds) large shallots, finely chopped (about ½ cup) cup brandy ounces less-sodium beef broth cup WHLFARM heavy cream tablespoons cold water tablespoons SYS CLS cornstarch cup country Dijon or coarse ground mustard tablespoons chopped fresh tarragon leaves

1. Preheat oven to 450°. In small bowl, combine garlic, oil, salt and pepper. In large shallow roasting pan, place roast fat side up. Rub all sides of beef with garlic mixture. Roast beef 30 minutes. Reduce temperature to 350° and roast 30 to 35 minutes longer

or until internal temperature reaches 130° for medium-rare. Transfer roast to cutting board and loosely cover with foil. Let stand 20 minutes before slicing.

2. Meanwhile, remove and discard excess fat from roasting pan.

Add shallots to drippings in roasting pan and cook over mediumlow heat 2 minutes, stirring frequently. Add brandy and heat to boiling. Cook 3 to 4 minutes or until most liquid has evaporated, stirring to loosen browned bits from bottom of pan. Add broth and cream, and heat to boiling. Reduce heat to medium and simmer 8 minutes. In small bowl, combine water and cornstarch. Add cornstarch mixture to simmering liquid; heat to boiling and remove from heat. Whisk in mustard and tarragon. Slice beef across the grain and serve with sauce.

ounces SYS CLS frozen cranberries (6 cups) cups SYS IMP granulated sugar cups fresh orange juice teaspoons orange zest teaspoon salt cup cold water cup SYS CLS cornstarch cups SYS CLS chopped walnuts cup unbleached all-purpose flour cup packed light brown sugar pound cold WHLFARM unsalted butter, cut into small pieces 9 inch frozen pie crusts

1. In large saucepot, heat cranberries, granulated sugar, orange

juice, orange zest and salt to boiling over medium-high heat. Boil 8 to 10 minutes or until most cranberries burst and mixture thickens slightly, stirring occasionally. In small bowl, whisk together water and cornstarch. Gradually stir cornstarch mixture into cranberry

mixture; heat to boiling. Boil 1 minute or until mixture thickens, stirring constantly. Remove saucepot from heat.

2. In medium bowl, combine nuts, flour and brown sugar.

With fingertips, work in butter until pea-sized crumbs form.

3. Divide cranberry filling into pie crusts; sprinkle topping evenly

over filling. Bake pies on foil-lined sheet tray on lowest oven rack at 375° for 35 to 40 minutes or until topping is golden brown. Cool pies on wire rack 1 hour, then cover refrigerate ver and refr re frig ger erate aatt least 4 hours or up to overnight. TOMATO SOUP with BROILED PARMESAN CHEESE Yield: 1 serving Tomato Soup 14 oz Chopped Tomatoes ¾ cup Extra Virgin Olive Oil Kosher Salt, to taste Fresh Ground Black Pepper, to taste 1 stalk Celery, diced 1 Carrot, diced 1 small Sweet Onion, diced 2 cloves Fresh Garlic 1 cup Chicken Stock 1 Bay Leaf 2 tablespoons Unsalted Butter ¼ cup Fresh Basil ½ cup Heavy Cream Parmesan Crouton 1 loaf Ciabatta bread, cut into round slices 1 cup Parmesan Cheese

1. Preheat oven to 450°F. 2. Strain the chopped tomatoes, reserving the juices and spread onto a baking sheet, seasoning with salt and pepper to taste. Drizzle with ¼ cup of the oil and roast until caramelized, about 15 minutes. 3. Meanwhile, in a saucepan over medium heat add celery, carrot, onion and garlic. Cook until softened and then add the roasted tomatoes, reserved juices, chicken broth, bay leaf and butter. Simmer for 15-20 minutes until vegetables are very tender. 4. Add basil and cream, then purée with a handheld immersion blender until smooth. 5. Place appropriate amount of soup in a soup cup, leaving ¼" of space for the crouton. 6. Float the crouton on top of the soup and top with an even level of Parmesan Cheese. u nti t l go ti g old lden e b rown ro rown w 7. Place under broiler un until golden brown and crisp. 8. Holiday Brie in Puff Pastry Prep: 15 minutes plus freezing and standing Bake: 25 minutes • Serves: 10 e 3 3 1 1 1

cup shelled SYS CLS pecans cup packed dark brown sugar tablespoons heavy cream All-purpose flour for dusting sheet frozen puff pastry, thawed as label directs wheel (15 to 16 ounces) Brie cheese large egg yolk

1. In large skillet, toast pecans over medium heat 5 to 6 minutes or until fragrant and lightly browned, stirring occasionally; transfer to plate to cool. In medium bowl, toss brown sugar, 1 tablespoon cream and pecans. 2. Line rimmed baking pan with nonstick foil or parchment paper. Lightly flour work surface. Unfold

puff pastry sheet on floured surface, and with rolling pin, roll out pastry into 12-inch square. Spoon pecan mixture onto center of pastry sheet and spread mixture to about a 5-inch circle. Place cheese wheel on top of pecan mixture; fold pastry up and over cheese to enclose cheese wheel. Place cheese, seam side down, on prepared rimmed baking pan. 3. In small bowl, whisk egg yolk and remaining 2 tablespoons cream. With small brush, evenly brush pastry with egg mixture. Freeze 30 minutes. 4. Preheat oven to 400°. Bake brie 25 to 30 minutes or until pastry is golden brown. Let stand 20 minutes before serving. Serve with crackers, apple and pear slices, or veggies.
