Mother Nature A long time ago, if you had asked me if I liked Nature in Autumn, I would have said no, because Autumn is the season when all the trees and flowers die and are pretty much dormant until Spring comes again. However, now I've come to love seeing little red and orange leaves everywhere, it's so pretty. In addition to that, I think that it's poetic in a way. The mantra of the company I worked for was top to bottom, left to right. This way you could easily walk into any room and know exactly where to get started. The work was divided into"wet rooms" (bathrooms and kitchens) and "dry rooms" (living room, dining room, bedrooms). If we were lucky and weren't understaffed, we'd go out with a partner and one person would do the "wet rooms" and the other person would do the "dry rooms". This season our house chef has been looking for some simple recipes and techniques to try this holiday season. The following meals are quick, easy and most important, very tasty!


Cooking From The Heart It’s all in the technique Don’t let cooking, especially during the holidays, intimidate you. This can actually be a good time to unwind while being creative at the same time. Food is also a great way to express any emotion while showing what you can do at the same time. Here are a few kitchen techniques that will make you look like a pro... Try these for flavor and texture...




Home Chefs' Say: use the food network to learn more Red Wine Risotto with Peas Recipe courtesy Giada De Laurentiis Ingredients 3 1/2 cups canned low-salt chicken broth 3 tablespoons unsalted butter 1 cup finely chopped onion Prep Time:10 min 2 garlic cloves, minced Cook Time:40 min 1 cup arborio rice, or medium-grain white rice Level: Easy 1/2 cup dry red wine Serves:4 servings 1/3 cup frozen peas, defrosted, optional 1/4 cup chopped fresh Italian parsley leaves 1/2 cup grated Parmesan, plus additional for garnish Salt and freshly ground black pepper Directions Bring the broth to a simmer over medium-high heat. Cover the broth and keep it warm over very low heat. Melt the butter in a heavy large saucepan over medium heat. Add the onion and saute until translucent, about 8 minutes. Stir in the garlic and saute for 30 seconds. Stir in the rice and cook for about 2 minutes until the rice is toasted. Add the wine and stir until it is absorbed, about 1 minute. Add 3/4 cup of hot broth; simmer over medium-low heat until the liquid is absorbed, stirring often, about 6 minutes. Repeat, adding 3/4 cup of hot broth 2 more times, stirring often, about 12 minutes longer. At this point, the risotto can be made 4 hours ahead. Refrigerate the risotto (the rice will still be firm) and remaining broth, uncovered, until cool, then cover and keep them refrigerated until ready to proceed. Bring the remaining broth to a simmer, then cover and keep it warm over very low heat. Stir 3/4 cup of hot broth into the partially cooked risotto over medium heat until the broth is absorbed and the risotto is hot, about 3 minutes. Add the remaining broth and simmer until the rice is just tender and the mixture is creamy, about 5 minutes longer. Stir in the peas and parsley. Add the 1/2 cup of Parmesan. Season, to taste, with salt and pepper. Spoon the risotto into bowls. Sprinkle additional cheese over and serve. Read more

Sunny's Easy Holiday Spiral Ham Recipe courtesy Sunny Anderson Ingredients 1/2 cup dark brown sugar 1/4 cup honey Zest and juice of 1 orange 2 teaspoons pumpkin pie spice 6 to 8 scrapes of fresh nutmeg, using a rasp 1 (6 to 7-pound) bone-in half spiral ham 10 to 12 sprigs fresh thyme Kosher salt and freshly ground black pepper Directions Heat the oven to 325 degrees F.

Prep Time:10 min Inactive Prep Time: 20 min Cook Time:2 hr 30 min Level: Easy Serves: 8 to 10 servings

In a bowl, mix together the brown sugar, honey, orange zest, 1/4 cup orange juice, pumpkin pie spice, and nutmeg. Season with salt. Roll out enough aluminum foil to surround the ham and place the ham in the center of the foil. Peel back the layers of the ham and place a sprig of thyme between every other layer of the spirals. Pour half of the glaze over the ham allowing it to sink into the slices. Tightly wrap the ham in the foil and place on a rack in a roasting pan. Fill the pan with an inch of water and roast in the oven until the internal temperature reaches 140 degrees F, about 20 minutes per pound. Pour the remaining half of the glaze in a small saucepot on medium heat and bring to a simmer. Whisk until small bubbles appear all over, then turn off the heat. The glaze will thicken as it rests. Raise the oven temperature to 400 degrees F. Remove the ham from the oven. Using caution and tongs to help, peel back the aluminum foil from the top, leaving the aluminum foil on the sides and underneath the ham to catch the glaze and juices. Slather the remaining glaze all over the top of the ham and place back in the oven uncovered for 15 more minutes. Remove and let rest before slicing. Read more

A couple of friends started off helping each other out by "taking everyone's order" before going out to shop since there was only one car. After getting married and becoming parents, they began to do the same for neighbors and friends. ​ After a while it was noticeable that everyone had a few moments to relax or catch up during their day. Now this family wants to lend the same hand to the families and students in the community. Take the time to just catch your breath while your errands are done just the way you would do them.
