Coffee Stains on The Publisher's Desk By Steven Prevost Welcome! Pull up a chair & grab your cup of coffee. I'm so excited to have you here I'm almost without words, but I'll give a stir and add some sugar to see what happens. If your holding this in your hands, then my dream has come true. An actual physical magazine about Coffee & West Michigan Coffeehouses or “Coffee shops”, whichever your prefer. My hope is that you will enjoy reading the stories, reviews & recipes and have your life enriched because of it. But it doesn't end there, that is only the beginning. It is also my hope that you will join the conversation about, and the exploration of coffee and all that is and can be. Don't worry, I won't bore you will endless babel about a specific bean from a particular hill on the shady side of some mountain you'll never see much-less heard of; I'll leave that sort of thing up to the experts, or as I like to call them (with the utmost respect) “coffee snobs”, that's not my style. However that's not to say you may not find the occasional story about that sort of thing in here, but I assure you it won't be written by me.

Coffee Addiction is more about living than coffee. Since way back in the day when the first coffee tree was discovered, the human race has never been the same. Have you ever thought of that? Okay, maybe you have. But I wold bet a nickle (I'm poor & can't afford to bet more.) the average coffee drinker hasn't. They care more about getting out of bed & getting that first sip so they can feel human and avoid biting the heads off of their loved ones, and strangers they might run across in the coarse of the day. My hope for this little publication is to draw people together in real life, with just a couple goals in mind. Goal Number One: Disconnect from your electronics for bit, sit down with a friend and enjoy each others company over your favorite coffee drink. And along the way maybe learn something you didn't know, scheme a little scheme or dream a little dream, heck, you don't think Dr. King just got up one morning & marched on Washington do you? Oh, you really did? I hope you didn't just think “who's Dr King?”, if you did, you're in worse shape than I thought! My point is, spending your time face to face with someone you care about or even someone you just met at the coffeehouse is time much better spent than on your twit-face-space online world. Goal Number Two: Take a look through the pages and notice the sponsor's ads. Look for one you haven't been to before or at least haven't been to in a long time. These are all local companies, our neighbors & friends. Make it a point to patronize their business, keep your money here in West Michigan. I know there are millions of people poring money into the deep pockets of the big Coffee Incorporated's, don't be a lemming. They don't need your money. I used to be one myself, but then I “saw the light” you might say. Yes, I know there is an argument to be had, “but their consistent from place to place...” blah blah blah. I say consistency shmistency (yikes, that wasn't easy). I used to give somewhere between $20 & $50 a week to that uppity place with the white paper cups & the green logo, yeah them. I left and never looked back and they're doing just fine without me. I always look for the local place to get my fix even when traveling out of town. I believe in small business, the underdog so-tospeak. I better get off my soap box now, I'm running out of space. Once again, Welcome. Come on back & lets spend some time together. Until then, I'll be scouring the Net & talking with peeps to bring you the latest & greatest from coffee shops around the West Coast of Michigan. Cheers!

Artie's Filling Station Artie’s Filling Station’s number one goal is to bring the best specialty coffee possible to Lansing. We refuse to compromise the quality of our raw ingredients, our finished product, or the amount of care and attention to detail that goes into every single beverage. Our historic, renovated location offers convenient drive-through access in Old Town, Lansing. We are currently open Monday through Friday, 7:00 am - 3:30 pm.

Ad space It was a sunny morning on April 29th and I had left a little earlier than usual for work. I decided that I would start my day off relaxed and take Willow instead of my usual hustle and bustle route so that I could enjoy the beautiful spring morning with my windows down cruising through Old Town. I turned right on Capital and came to a stop at Grand River. This was the first time I saw Dale Schrader’s crew working on the old filling station. I immediately picked up my phone and called my mom and my fiancée and told them that I was going to open a specialty coffee shop in Old Town. They were completely blown away at my new idea because I had never really talked about doing anything like it (although I had been dreaming about it for several years now).

That morning was torture! I couldn’t wait to get on the phone at lunch time and call Brittney at the OTCA to find out if the building was still available. When I was finally able to make the call, Brittney told me that the building was still available and that she could put me in contact with the owner, Dale Schrader. Brittney provided me with Dale’s phone number and also sent Dale an email introducing me to him. As soon as I hung up the phone with Brittney, I called Dale. Unfortunately, he didn’t answer. I left a voice mail and waited anxiously all day for his call back. That Friday, I spent the entire evening running numbers to see if a drive in was going to be a realistic investment for my fiancée and myself. I wanted to make sure that we could do it right! The numbers made sense, so we were ready to commit! On Saturday, Dale’s call back never came and I started to loose my mind! I was incredibly excited about the opportunity and I couldn’t wait to meet with Dale so that I could lay claim to the filling station. Early Sunday morning, I got an email that was forwarded by Brittney to myself. It turns out that Dale had left his phone up in Ithaca and wasn’t getting calls. I emailed Dale and we set up a meeting for that afternoon. Right away, I realized that Dale was a stand up guy and that he had the same vision for the filling station. After a short talk about the building and my vision for it, we shook hands and I committed on the spot! Coffee Addiction 4

Madcap Coffee

FUN FACTS 1. 65 countries in the world grow coffee. They are all along the equator, within the tropics. 2. Coffee is not grown anywhere in the United States except Puerto Rico and Hawaii. 3. In 1675 Charles II, King of England issued a proclamation banning Coffee Houses. He said that they were places where people met to plot against him. 4. 30% of coffee drinkers in US added a sweetener of some kind to their coffee, compared with 57% in UK. 5. October 1st is official “Coffee Day in Japan.

Story The Madcap is nestled nicely in a old building in the heart of down town Grand

Rapids, opposite the Art Museum. The large windows hide nothing, basically saying don't be afraid, come in and warm up. If your a fan of old architecture, your going to feel good just walking in the door. Upon entering you're greeted by a wide open space with stark white walls. A huge exposed brick wall behind the service counter fits in nicely with the tall ceiling with exposed ventilation. This being my first visit to Madcap, I was slightly apprehensive about going, since what I heard about the place, it sounded a little uppity for my tastes. But since I'm on a mission, I had to go. Before I went I did a little checking online. I found some reviews and perused their website. The message I took away from that was they're obsessive relationship with coffee and the coffee farmer. While that is very respectable, thinking about all the hubbub over their relationship with the coffee farmers, it left me wondering about their relationship with their customers. My questions regarding that began to be answered when I and my coffee seeking companion approached the counter to place our order. I was surprised by the simplicity of their menu, echoing their obsession with coffee. Choosing my drink from the simple black panel with white lettering that listed only a handful of drinks was refreshing. The message here is they take their coffee seriously, you can still dress up your coffee any way you like, but they don't spread that all over the menu. We were greeted pleasantly by the young lady behind the counter and she quickly answered our questions over cup sizes, and within mere moments, we were watching another barista pouring creamy steamed milk into a perfectly pulled espresso. Madcap's obsession with quality coffee comes through without question with the first sip. My drink was equally satisfying from beginning to end. The velvety texture and gently sweet mocha combined perfectly in a hot cup of coffee goodness. The large open space combined with two separate entrances and stone top tables, did very little to combat the chill of winter. Every time someone came or went, I felt a bitter chill on the back of my neck even though we were in the center of the seating area. The Men's restroom was nice and clean however, the Lady's room was seemingly hidden. I recall seeing a couple women looking lost when approaching the Men's room only to realize the Ladies room wasn't there. Overall, my visit was satisfactory. As far a regular hang out for me, I'm not so sure. But for an unquestionably good cup of Joe, absolutely.

Let's change things up a little and be a bit less formal here! I stopped at this particular coffee shop for two reasons. First of all, I've seen quite a few commercials lately touting Biggby's Butter Bear, a creamy latte made with both caramel and butterscotch syrup. My daddy loved butterscotch in any form - pudding, coffee, candy, etcetera, so I wanted to give it a try. The second reason was practicality - I was out running another round of errands and I desperately needed a coffee! The Biggby shop was across the street from my dry cleaner's and Family Fare! I hit the drive thru since the weather was wet and cold, ordered a tall Butter Bear, then I pulled into a parking slot and tasted my brew. It was sweet, which I'd normally find offensive, but I was hungry so I didn't find the sugary taste unpleasant at all. Hints of both caramel and butterscotch were easily discernible in the beverage, and the combo worked well together. It was topped with whipped cream which added a third level of richness to the mix. The Butter Bear was totally yummy! Sweet, but yummy. It's only deficiency was that I didn't detect a strong, underlying flavor of espresso in the beverage. I like coffee beverages to have a rich, strong coffee taste. That taste should serve as a base for any/all of the other flavors used in the drink. I thought that, possibly, the added flavors had masked the espresso finish. So I decided to sample another beverage before resuming my errands. I ordered a grande' breve latte with an extra shot expecting that it would be packed with rich espresso flavor. I was disappointed! The breve latte wasn't terrible, just weak. With an extra espresso shot it still tasted weak! I can only conclude that Biggby beverages are much too mild for my tastes. I want to be totally fair at this point and say that my opinion is completely subjective, based upon my love of strong, aromatic coffee. If you favor a weaker brew, Biggby might be right up your alley.

Did you know? Every BIGGBY cafĂŠ is locally owned and operated; there are no corporate stores. Biggby Coffee (pronounced Big-Bee) is a privately owned coffee franchise business based in East Lansing, Michigan. Founded March 1995 as Beaner's by Bob Fish and Mary Roszel, the first location opened its doors in East Lansing near the campus of Michigan State University on March 15, 1995, in a former Arby's. The company changed its name to Biggby Coffee in late 2007.

Fun Quote Nancy Astor (to Winston Churchill): "If I were your wife, I would put poison in your coffee." Winston Churchill (in reply): "And if I were your husband, I would drink it."

About Linda Coffee has been an important part of my life for 47 years! My first cup, espresso mixed equally with half and half, was served to me by my greatgrandmother's neighbors when I was six years old. The elderly couple loved coffee, and they often had me and my great-grandma over to visit. While we sat around the kitchen table sipping the strong, fragrant brew, they told me awesome stories about living in Poland during the Nazi occupation, about surviving the concentration camps, and about coming to the United States and starting a new life after the war. My great-grandma told wonderful stories about her childhood, and living through the great Depression. Through their stories I learned to love history. Those afternoons spent clutching a coffee cup are some of my most treasured memories. To this day, I associate coffee with warmth, good conversation, and love because of those wonderful memories.

The Kava House is located in a red brick building near the corner of Lake Drive and Genessee in the eclectic Eastown neighborhood. I absolutely love the area, so I was pleased when Steven picked this delightful coffeehouse as our destination last Saturday. It was my first visit to The Kava House, and I was impressed the moment I walked in the door. The coffeehouse was filled with the wonderful aroma of COFFEE! Sounds like a no-brainer, right? But you'd be suprised at the number of coffeehouses that smell like bleach (at least they're clean!) or grease.

Comfort Level: Funky, eclectic, unpretentious Drink: Triple Shot Breve Latte Treat: Zucchini Nut Bread Price: $4.60, plus $2.50 for the snack Location: 1445 Lake Drive S. E. Web site: www.thekavahouse.com

The decor of The Kava House is what I would call "early rummage sale" because there's a bit of everything inside the place. My favorite touch was an old wood door mounted to the wall to make a really unique table. And while there weren't any soft, padded chairs to support my sore old bones, I found that I didn't mind so much. The decor somehow worked beautifully with the location.

Elevator Humor I met someone in an elevator, who was drinking coffee and complaining about how coffee made him nervous. I said “Why don’t you quit drinking coffee?” He said,“Because if I didn’t have the shakes,I wouldn’t get any exercise at all!”

After scoping out the menu on the wall, and drooling over the display case full of tempting treats, I ordered a triple shot breve latte and a large slice of zucchini bread with nuts. The breve latte was honestly the best one I've ever had, and the zucchini bread was better than the bread I make at home - and I'm a very good cook! The barista was friendly and efficient. People were actually conversing at some of the tables, and a few even looked up and smiled as we passed by. Did I mention that the breve latte was awesome? Steven liked the coffeehouse, too, and his carrot cake looked wonderful. While I admit that I favor jewel tones, natural woodwork, and deep, padded furniture - and The Kava House had none of these touches - I must say that I loved the place! The heavenly aroma of freshly ground coffee, the delicious baked goods, friendly patrons, pleasant staff, and a dear friend to chat with..........ahhh, perfection. I would definitely give The Kava House four cups. Take a break and check it out for yourself, then let us know whether or not you agree with our opinion of The Kava House. Coffee May Lower Risk Of Deadliest Prostate Cancer

news

Reported on NPR By Richard Knox May 18th 2011

For a long time scientists have wondered whether coffee might lower the risk of prostate cancer. Previous studies have been relatively small and have shown mixed results. But now we have results from a Harvard study that followed almost 50,000 male health professionals for more than two decades. A lot of them drank a lot of coffee, which seems to have helped. More than 5,000 of them got prostate cancer 642 of them the most lethal form. "For the men who drank the most coffee, their risk of getting this bad form of prostate cancer was about 60 percent lower compared to the men who drank almost no coffee at all," says Lorelei Mucci, an epidemiologist at the Harvard School of Public Health and an author of the study. When they saw the results, Mucci says, she and her colleagues said, "Wow, that's a lot!" "Among risk factors that people have studied for lethal prostate cancer, this is one of the strongest," she told Shots. The same group reported about a 50 percent reduced risk of dying from prostate cancer among men who exercised regularly two or three brisk walks a week was enough.

The new study shows that getting a 60 percent reduction in risk of aggressive prostate cancer requires a lot of coffee, at least six cups a day. However, men who drank three cups a day had a 30 percent lower chance of getting a lethal prostate cancer, and that's not bad. Only about one in 10 prostate cancers diagnosed these days is deadly. Most men get a less dangerous and curable kind. The study found no link between coffee drinking and overall risk of prostate cancer. Presumably previous studies didn't uncover the lowered risk of aggressive cancers because they didn't have enough of these cases. Mucci says coffee drinkers got the benefit without getting buzzed on caffeine. "Whether they drank regular coffee or only decaffeinated coffee, there was the same lower risk of lethal prostate cancer," she says. "It's really the coffee; it's not the caffeine." Another good thing is that it doesn't require decades of heavy coffee drinking to get the benefit. What mattered was how much they drank in the previous eight years. Neil Martin, a cancer doctor at Dana-Farber Cancer

Institute in Boston, was impressed with the new findings. "Results like these are very appealing for people," he says. "It supports things that they do. ... And I guess I don't really see the downside of that. I think people should feel empowered about being able to change their risk of diseases." And yes, in this case it is "diseases" plural. Earlier research suggests coffee reduces the risk of diabetes, liver disease and Parkinson's disease possibly because of its insulin-lowering effects, its anti-oxidant qualities and other properties, including some yet to be discovered. And just last week, Swedish researchers reported that women who drink at least five cups of coffee a day have nearly a 60 percent lower risk of a particularly aggressive breast cancer that doesn't respond to estrogen. Mucci says more research is needed before officially urging people to drink coffee for its health benefits. Meanwhile, she says, "there's no reason not to start drinking coffee." And no, she does not take money from the coffee industry.

Holland’s Simpatico Coffee Co. jumps into exclusive low-acid coffee market

Holland Michigan — A Holland-based coffee brand always has been simpatico for the stomach, but now a group of product testers at Michigan State University and the U.S. Food and Drug Administration agree. Holland’s Simpatico Coffee Co. recently celebrated three of its roasts being certified as low-acid coffees — a designation that four other manufacturers in the U.S. can claim. Low-acid coffee is the newest category since decaffeinated, said Simpatico owner Alex Fink.

“The beauty of the alliance is to grow and promote locallygrown businesses,” said alliance Director Michele Lonergan. “We help small business members just starting out make connections with more experienced independently owned businesses.” Hoping to get more national attention, Fink also has reached out to Coffee Review Magazine, suggesting it write a review of low-acid coffees. “It’s a risk. They could say we’re the worst,” he said. “We’re taking a stab out there. We believe in our product.”

Fink and other manufacturers avoid making claims about its health benefits for legal reasons, but wisdom across the Web is low-acid coffee prevents an increase of gastric acid in the stomach and can help coffee-drinkers who get indigestion from regular coffee. The process for producing the low-acid coffee is tricky, Fink said — one of the reasons not many companies manufacture it. Folgers’ “Smooth” roast and Starbucks’ “Blonde” roast represent an attempt at a lighter-bodied beverage but don’t meet the specifications for low-acid coffee, Fink said. “You have to find the right kind of bean,” he said. “You have to find farmers that prepare it a certain way.” And, he added, it has to be roasted a certain way. Fink has known the coffee was easy on his stomach ever since he discovered the beans on a trip to Mexico years ago. But to prove it he turned to the Michigan State University Product Development Center and the Michigan State University Food Science Department. The coffee passed the university’s tests in July and, in recent months, Fink filed paperwork with the FDA to allow him to market the coffee as low-acid. Right now, the coffee may be purchased on Simpatico’s website, drinknicecoffee.com, and at the Shaker Messenger, 210 S. River Ave.; Nature’s Market, 1013 S. Washington Ave., and the Way Cup Cafe, 501 W. 17th St. Fink is working on plans to distribute the coffee more broadly in the Holland area starting in January. He has made some connections with other local business owners and potential distributors through the Lakeshore Independent Business Alliance.

recipes Coffee – Pistachio – Toffee Source: NPR - by NICOLE SPIRIDAKIS www.npr.org

Putting Weird Things In Coffee By Steven Prevost Does a Bacon Latte sound good? Or maybe Haggis Cappuccino? How about an Iced Trout Frappe? I know, “who the bleep would want something like that” you might say. In my never ending search for all things coffee, (and my continuing mission to bring this vast and amazing knowledge to my readers) I came across a Blog that really got my attention. I thought at first it was a joke, but I was wrong. Now, you coffee puritans who think its abhorrent to add even sugar to your precious black brew, you may want to skip this story or at least keep your barf bucket close by. So with that said, lets get this done... my stomach is turning already. There is a guy who got bored with the everyday coffee so he began to experiment a little by adding things to coffee that most sane people would never consider. On second thought, my judgment of placing this story on the Recipes Page may be deficient...oops to late. Anyway, recipe loosely defined, is Mixology. And according to Merriam-Webster's dictionary which dates the term Mixology to 1948 defines it as: "the art or skill of preparing mixed drinks", my logic works.

Makes about 2 pounds 2 cups shelled pistachio nuts 1 cup sugar 1/3 cup packed brown sugar 2 teaspoons instant espresso powder 1/2 teaspoons ground cinnamon 1/3 cup water 1 tablespoon dark unsulfured molasses 1 cup (2 sticks) unsalted butter 4 1/2 ounces bittersweet chocolate, finely chopped 4 1/2 ounces milk chocolate, finely chopped

“Putting Weird Things In Coffee” is a blog by student and (by the a-for stated definition) Mixologist, named Phronk that will turn your ideas of what mixes with coffee on its head.

Preheat oven to 325 degrees.

Personally, I think anything beyond some sugar, steamed milk and a little chocolate and your in dangerous territory. However, a hundred years ago, when I was merely 18 years old, I remember being introduced to Coffee & Bailey's Irish Cream, and I thought that was weird. So maybe in another hundred years some of the things in Phronk's blog will appeal to me... or not. Now, take your beautiful, freshly brewed, delicious coffee and add bacon or peanut butter or salmon and eggs! That's right, maybe not at the same time, but these are just a few of the strange items this blog talks about putting into your coffee. Have a look for yourself; I'll spare you any photos at this time, it may put you off coffee for life or it may even make you think of some new possibilities of what coffee can be. Let your imagination be your guide. Until then, pass me a piece of that Coffee – Pistachio – Toffee! You can find all of Phronk's expiremnts on his website: www.puttingweirdthingsincoffee.com

Spread pistachios on a cookie sheet and toast in the oven until fragrant, 5 to 10 minutes, making sure they don't burn. Cool for 10 minutes, then coarsely chop. Put in a bowl. In a medium bowl, combine sugars, espresso powder and cinnamon. In another small bowl or measuring cup, combine water and molasses. Butter a cookie sheet or jelly roll pan. Melt butter in a heavy 2 1/2-quart saucepan over low heat. Add the mixture of sugars, espresso powder and cinnamon, and the mixture of water and molasses, and stir until sugar dissolves. Increase heat to medium and, using a candy thermometer, cook until thermometer registers 290 degrees, stirring occasionally and scraping bottom of pan for about 15 minutes. Remove pan from heat, and quickly stir in 1 1/2 cups chopped nuts. Immediately pour mixture onto prepared pan. With a spatula, spread toffee to 1/4-inch thickness. Sprinkle chocolate by generous tablespoonfuls atop toffee, alternating bittersweet and milk chocolates. Let stand for 1 minute to melt the chocolate. Using the back of a spoon or spatula, spread chocolate slightly to coat the toffee. Sprinkle with the remaining 1/2 cup chopped nuts. Refrigerate until toffee is firm, about 1 hour. With a sharp knife, slice the toffee evenly, or break into pieces. Enjoy!

Bring On The Coffee MojiJOE! By Steven Prevost

Now that Summer has past & Winter is quickly approaching, now is the time to think of those blustery winter days when you need to warm your insides. But, sometimes plain coffee isn't enough, we want something with a bit of a kick. How about a Mint Coffee MojiJOE? Pronounced (Mo – Hee - Joe) I thought since I may have grossed you out with the thought of things like Trout coffee & Bacon Latte's I would share one of Phronk's more successful recipes. Similar to his other concoctions this is not for the timid or lazy, this will require some effort, but its a heck of a lot more tasty! This recipe isn't a paint by numbers sort of drink, it will depend on your tastes & creativity, you may need to adjust accordingly. But just like any art form, beauty & quality is subjective. This recipe is based on the summer drink Mojito. PSA: (with tongue firmly implanted in cheek) You must be 21 or over to purchase or consume alcohol depending on the laws in your area. If you are an Alcoholic, please disregard this recipe. Do not consume alcohol if you are, or think you may be pregnant. Or just plain don't like booze. Thank you.

Mint Coffee MojiJoe First, get all your ingredients: Sugar – 2 Tablespoons Fresh Mint Leaves 4 – 5 Dash of Lemon Juice Rum - (Light or Dark according to taste) 1.5 oz Coffee – your brew, Light to Dark Roast While your coffee is brewing, combine Sugar, Mint, Lemon juice & Mint Leaves. Mash together with Muddler (or a strong spoon) to extract the mint oils from the leaves & mix flavors. Ad Rum & combine. Add Coffee into mixture & stir. Strain & enjoy!* Mmm, now I just need a roaring fire to go along with it. *If you are brave enough to attempt this, please tell us about it, send your story to steveningr@gmail.com I put this recipe together based on the information provided by Phronk in his blog at www.puttingweirdthingsincoffee.com Photos by Phronk
