The subject of the NFL came up at the 2017 Monmouth University Football Media Day, resulting in the smile.

“It’s definitely on my mind,” the senior safety said. “It’s a dream, a goal. My goal right now is this season. My goal is to help us win the Big South Conference, go 1-0 and take it from there. If I go out there and play my game, then everything will fall into place.”

Several former Hawks have made it to the NFL under the tutelage of Callahan, the team’s lone mentor in history as it begins its 25th season. They include wide receiver Chris Hogan, who achieved fame last year with the New England Patriots, and Miles Austin. The latter starred at wide receiver for the Dallas Cowboys.

“Several teams will come through to look at Mike,” Callahan said. “Probably every NFL team will be here to look at him before the season is over. It’s a big deal, but then it is not.

The scouts are discreet. They stay out of the way, but they will want to size him up. They will watch two, three and four years of video of Mike as a college player. Scouts coming here is a regular occurrence.”

Basile has been named to the 2017 STATS Buch Buchanan Award Watch List. The former Mustang was a finalist for the award as a junior, finishing in 24th place. He’s one of eight returning finalists to make the preseason watch list. He’s one of seven defensive backs on the 21-player list.

Honored as an Associated Press second-team All-American as a junior, Basile was recently named to a pair of 2017 firstteam preseason All-America teams and was selected as a preseason All-Big South Conference defensive back. The three-year starter won Big South Rookie of the Year honors and has earned first-team all-conference honors every year.

Last season, the former Mustang registered 110 tackles and led the Big South in blocked kicks and forced fumbles. He made double digit stops in five games and enters this season third in the NCAA for active career tackles with 307 and second in solo tackles per game with 6.03. Basile is third all-time at Monmouth in tackles, needing just 47 to move past former Jackson Memorial player Aaron Edwards for first all-time.

“They are all great accolades and they all mean that my hard work is paying off,” Basile said. “It’s about doing my job and helping the team win. The honors give me a great feeling as they show my hard work is paying off.

Basile is one of the Hawks’ two captains.

“First of all, I go out there and do all I can to help the team,” he said. “I have to help everyone on the field and make sure everyone is doing the right thing. If everyone communicates, we have the chance to make the right play.”

Basile said his work ethic has resulted in success.

“First off, I work real hard,” the 6-foot-1, 200-pounder said. “I want to do my best. I know that nothing will be handed to me. If you work hard, things will fall into place and they will happen the way I want them to.”

Basile said he enjoys playing strong safety.

“I love it,” he said. “I have been there since my freshman year. It’s the best position on the field as you are in charge. You control the outcome. You get interceptions and tackle people. You are all over the ball. That is where you have the most impact. I try to go out there and give the younger guys the advice that helped me play when I was younger.

Guys like Joe Johnson (a former Manchester player) helped me.”

Callahan said Basile’s presence has meant plenty of good things to the Hawks.

“It was very obvious after three days of practice as a freshman that Basile had it,” Callahan said. “It takes some guys two days, a month, a full season. His value and contributions have been significant on the field and they have been much deeper far beyond the field. He is a true leader and a tireless worker. He represents us as well as anyone could hope. He is very competitive and a guy other people want to be like and emulate.

“He plays with such tremendous effort. He puts himself in the position to make plays on a regular basis. He understands how and why things happen and he gets himself into position to make those plays and tackles.”

Toms River’s Berry Returns Back in the Hawks’ lineup is junior cornerback Tymere Berry, a former Toms River South football and basketball standout.

Berry said he was academically ineligible last season.

“I was young and dumb to be honest,” the criminal justice major said. “I am the first person from my family to go to college and I lacked experience and guidance. Coach Callahan and the academic staff pushed me to where I am now. It’s great to be back. I am relishing the grind. I worked real hard to get back. I am taking it step by step and day by day. I am just trying to get better.”

Berry said it was tough to sit out last season.

“It was real hard as I played since I was eight years old,” he said. “I never missed a game. It put me at a low point and made me work even harder.”

Berry played in nine games and started two as a true freshman, finishing the season with 31 total tackles, including 22 solo stops.

He added three pass breakups and made his first career interception against Presbyterian.

He’s a 6-foot-1,175-pounder.

“I want to put Monmouth University football on the map,” he said. “I feel I am in a good position to help the team win games.

Mike Basile has been here four years and he has helped me each day. I am out here to work and get better.”

Berry said he missed out on playing by several credits.

“I was short maybe three credits,” he said.

“He did not take care of what he had to do academically and he found himself short credits,” Callahan said. “If you want to play, you have to take care of business. He appreciates the chance and opportunity to play college football. He has learned that he has to hold up his end of the bargain. The bottom line of it is that he is smart and is doing very well academically. Perhaps the point of the importance of academics was not driven home in the past.”

“Tymere is awesome,” Basile said. “He is one of the most athletic guys I have ever seen. He will be a big, big important factor (Players - See Page 14)

Continued From Page 1 a chemical spray that first responders and school districts have that can cancel the effects of an overdose. According to their figures, this is the status of the opioid epidemic in Ocean County: • 2012: 53 overdoses.

• 2013: 112 overdoses.

• 2014: 101 overdoses. The county began using Narcan in April, and had 129 reversals.

• 2015: 118 overdoses. 272 Narcan reversals.

• 2016: 209 overdoses. 502 Narcan reversals.

The number of overdoses is higher than previously reported, because earlier articles were published before the toxicology investigations were done on some deaths.

• 2017: 84 overdoses. 201 Narcan reversals.

This number is accurate as of August 1. Similarly, this number might go up after toxicology results are in.

It also means that in the first 185 days of the year, there has been approximately one death every two days.

In an effort to get unused medications away from drug dealers and addicts, the county has collected 12 tons of prescriptions since the program began in 2013, Ocean County Prosecutor Joseph Coronato said. For many, the use of heroin starts with the abuse of prescription medications.

The goal is to get these medications off the streets so that they can’t be used or sold, he said during a presentation at the Southern Service Center in Stafford Township.

“It may not seem like a lot,” to drop off medications. However, some medications have a street value of up to $40 a pill.

Several municipalities have drop-off boxes where you can dispose of your medications any day. Call your local government to find out when and where you can drop off your unused prescriptions. Officials have said that dumping them in the toilet or in the garbage is not safe because the chemicals eventually get into the drinking water.

“Law enforcement can’t do this all by itself,” he said.

“It all starts with prescription pills,” he said.

People enter your house for any number of reasons. Either they are there to work as a contractor, or maybe you are selling your house and a realtor brings a potential client in. These people ask to use the bathroom. “They’ll take a few pills from the medicine cabinet and you wouldn’t even know.”

Freeholder Director Joseph Vicari told the group assembled that he knows how they feel.

He’ll get a prescription and hold onto it. “Then six months later I can’t remember what it’s for.”

These pills stay in a home for years, and no one will even know if they go missing, he said.

The impact of a drug addiction spreads beyond just the addict, he said. Friends, families, co-workers, and others in that person’s circle of influence are affected.

“Drugs don’t have an impact on one person but the whole family,” he said.

Stafford Mayor John Spodofora continued on that idea. While the number of deaths attributed to overdoses is staggering, there are other figures that are not as well known. Injuries, suicides, and robberies to fuel a drug habit are hard to count.

“This is a war. This is an actual war,” he said.

“If you see something wrong, if something looks suspicious, feel free to contact the police department.”

He thanked seniors for turning in their medications, and urged them to tell their friends and family to do so, as well. He asked that they not get flushed or thrown in the garbage, because then the chemicals will find their way back to the drinking water supply. Stafford town hall on Bay Avenue has a drop off location.

Stafford Police Chief Thomas Dellane said it was rewarding to see all the medications come in, because it means that there’s less out there for people to steal. He also noted that on occasion the police come out to communities to make collections.

The police have changed their tactics over the years, he said. A lot has changed since the “war on drugs” in the 1980s. “We thought we could arrest people and throw them into jail and thought it could end the supply chain,” he said, noting that it does not work that way.

Enforcement and arrests remain a key principle, but there are two more elements that are just as important, he said. The first is education – going into schools and other places and letting people know how dangerous this is.

While education aims to stop people from starting, treatment – the third principle – is designed to help people who are already addicted.

Having a licensed social worker available to the police to make referrals for people to go into special programs has helped a lot of people, he said. It does more than just arresting someone who was doing something wrong. It breaks up the cycle of behavior that would cause that person to continue to commit crimes. It has also saved an estimated 400 hours of police work in responding to repeat offenders.

“It’s better than putting a Band-Aid on it,” he said.

Continued From Page 1 Ct., the site of the East Regional Tournament. The survivor will advance to the Little League World Series in Williamsport, Pa. The originator of the slogan was Nevin Mann, a former coach of the Holbrook AllStars, which is located in Jackson.

“The slogan means a lot of things,” Holbrook manager Rob Grano said. “It means such things as thinking about getting a good read on a ball and thinking about what you should be doing during your at-bat. We try to stay in the moment as much as we can.”

The shirts were distributed to the players at the start of the tournament season. The team has taken the slogan to heart as it has won 17 of 18 games, capturing the 2017 Joe Graziano New Jersey Little League state championship, the Section III crown and the District 18 title.

“We talk about the slogan a lot,” Grano said. “Last year, we had T-shirts that said, ‘Team First,’ meaning it only matters if what you did helped your team win the game.”

Grano said a team must win five games in the double-elimination event to make it to the Little League World Series. The championship game is winner take all. The tournament will run through Aug. 12.

Does Grano feel Holbrook can wind up in Williamsport?

“Yes, I do,” he said. “We have been playing our best ball all year. We have been hitting the ball really well. Our defense is good.

Our pitching is in a groove. We are a tough out. We smack the heck out of the ball. If we continue to play like this, we have as good of a chance as anyone to get to the next level.”

Grano said Holbrook is the lone team in New Jersey history to win the state title with its players being 10, 11 and 12 years of age.

“It’s one element that is unique,” he said.

“We have a lot of internal pressure to keep going. They are very, very excited but we as a coaching staff try to keep them grounded as there are a lot of distractions.

It is all about practicing for two hours and getting better during those two hours. That is the biggest thing, keeping away those distractions and being focused, passionate and driven. I have managed these kids since they were eight years old in all-star competition.”

There was a two-hour sendoff party for the team before they headed off to Bristol for the tournament. Team members posed with New York Yankees third baseman Todd Frazier prior to a game against the Detroit Tigers at Yankee Stadium. Frazier starred on the Toms River East American team, the winner of the Little League World Series in 1998.

“I am not surprised that this team has done so well,” Grano said. “We have gotten bigger, stronger and faster, but our opponents have also gotten bigger, stronger and faster.

Most of this team has been together since the boys were eight years old. I am very lucky to be managing a bunch of boys who are this talented.”

Garrett Drew, Tai Mann, Christopher Cartnick and R.J. Vashey homered. Mann and Drew supplied the pitching. Drew stroked two hits in three at-bats, notched one walk, drove in two runs and scored three runs.

Courtnick, who was 3-for-4, plated three runs and scored two. Mann, who was 2-for3, scored two runs and drew one walk.

“We have hit more than 60 homers in 18 games,” Grano said. “We practice our hitting probably six to seven days per week.

All of our boys also play travel team ball.

We have had games where our number eight and number nine hitters have hit two homers apiece. Our boys have practiced hitting the curveball for two years. Some of the pitchers we have faced have been very good, but if you make a mistake, we have boys who will make you pay for it and in big spots, too.”

Make no mistake about it. There is talent up and down the roster.

Drew, a right-hander, has excelled on the mound and in the lead off slot.

“He has a really great curve,” Grano said.

“His fastball has real good movement. He throws hard. He is what I call a bulldog. He does not get nervous. He does not get flustered. He loves to get the ball on the mound.

He has hit at least four lead off homers. He is strong and fast and he has a quick swing.”

Mann, a left-hander, is a top pitcher who also plays first base and center field.

“He’s our co-ace with Drew,” Grano said.

“He is one of the best first basemen I have ever seen. He has a tremendous arm. Since the age of 10, he has thrown kids out at the plate on the fly. He can beat you in so many ways. He is one of those special kids.”

Cartnick bats third and plays shortstop.

In a District 18 Tournament game against Manchester, he erupted for three homers and eight runs batted in.

“He is probably the best hitter I have ever seen,” Grano said. “He would have more homers if he did not hit the ball so hard on a line. He will also steal second base.”

Vashey is a large target at first base.

“He weighs nearly 170 pounds,” Grano said. “He is good on defense and helps us with his reach. He drives the ball a long way and can hit it out of any stadium at any time.

He also gets a lot of base hits. It’s tough to get a curveball by him. He is a big, strong kid who has a lot of power.”

Charles Meglio plays second base.

“He probably has the smoothest hands and the quickest release of any infielder we have,” Grano said. “He hits homers and hits for average. He is very good on defense for someone who is as big as he is.”

Third baseman Chris Andrews answers to the nickname of Smooth because of his fielding prowess.

“He has a strong arm and is probably our number three pitcher,” Grano said. “He throws a good curve and a great fastball. He will throw curve for a strike on a 3-2 count.

He is also a very good hitter.”

Anthony Abbonizio gives Holbrook a versatile player.

“He can hit anywhere in the order,” Grano said. “On any other team, he would be a starter. He makes the play on any ball

he gets to and is good at third base when Andrews pitches.”

Dean Daddio closed the team’s semifinal win over Swedesboro in the state tournament in relief.

“He throws an assortment of pitches,” Grano said. “He can fall out of bed in the morning and still throw strikes. He keeps the ball down and also plays second and third and all three outfield positions.”

John Grano, whose father is the manager, gunned down a runner from right field at fi rst base against Wayne. He also plays center, left, second and third.

“He is fast and has a strong arm,” manager Grano said.

Ryan Kinsman is best known for his speed.

“We always use him to pinch run,” manager Grano said. “He is very fast. He hits lead off when Garrett is not hitting lead off. He has never seen a fastball that he has not liked.”

Kinsman also pitches and plays shortstop, second and third.

“He throws curves, changeups and sliders,” manager Grano said. “He’s my little junkballer.”

Mike Arent made a huge play in the first round of the state tournament, cutting down a runner at the plate with Holbrook trailing 3-0.

“He plays all three outfield positions and is probably our fastest and most athletic player,” manager Grano said. “He has a terrific arm. He makes more unbelievable plays in practice than I have ever seen and he transfers that to our games. He is also very tough.”

Another tough player is catcher J.R. Osmond.

“He is a good defensive catcher with a very strong arm,” manager Grano said. “He is one of our best hitters. He probably hits the curveball better than anyone. He bats in the middle of our lineup.”

“He gets more two-strike hits than anyone I have ever seen,” manager Grano said. “He hits lefty and sprays line drives all over the field. He can miss every ball in batting practice, but in the games, he gives me three line drives. He is a terrific hitter.”

The team’s assistant coaches are Gene Daddio and Jim Osmond.

“Gene coaches third base and handles a lot of the drills for our outfielders,” manager Grano said. “Jim and Gene always throw batting practice. Jim and I split the third base coaching duties.”

Manager Grano made it clear that he and his coaches are a team.

“We have a democracy,” he said. “This is not a dictatorship. I call most of the pitches.

I usually sit on a bucket next to the cage so that I can get the signs to our catchers.”

Manager Grano said the team is a pleasure to work with.

“We have such great kids,” he said. “They are the nicest kids you would ever want to be around. I have known them since they were little kids. They are not arrogant.

They are fun loving and respectful. They learn and want to learn. They are intense and passionate. When practice is over, they moan as they want to keep practicing. They love to play baseball.”

Hobrook, which is one of two Little League organizations in Jackson, is the fourth straight Shore team to win the state title, joining Freehold Township (2016), Jackson (2015) and Toms River (2014). Three of those teams - Jackson, Toms River and Holbrook - are from District 18.

“We are obviously there to win,” manager Mano said. “We ask our boys to give their maximum and best efforts at all times. That is all they can do. If you give your maximum effort and do your best, it does not matter if you win or lose as you will go home with your heads held high.”

Jackson V.F.W. To Host Annual Picnic

JACKSON – The Jackson V.F.W. #4703 will host their annual picnic on Saturday, August 19 from 12 to 5 p.m. at 54 Magnolia Drive.

Governor Signs Dancer Bill Helping New Jersey Racetracks

NEW JERSEY – Governor Chris Christie signed legislation sponsored by Assemblyman Ron Dancer allowing New Jersey thoroughbred tracks to better compete with out-of-state venues.

Under the new law, the number of annual thorough-

bred live racing dates together at Monmouth Park and the Meadowlands Racetrack shall be no fewer than 50 days, provided that the New Jersey Thoroughbred Horsemen’s Association grants written consent.

The new law lowers the minimum number of to 50

from 71 as mutually agreed upon by the racetrack operator and the horsemen’s association.

“Racetracks depend on trainers to bring their horses and the incentive for the trainers is the amount of prize or purse money being offered by the racetrack

for the races,” said Dancer (R-Monmouth). “In other states, tracks benefiting from additional gaming revenue, such as slots and casinos, are offering higher purses.

By providing the racetrack operator and the horsemen’s association with greater flexibility and options to adjust

the number of racing days, tracks can increase purse money for the trainers and revenue for the racetrack.”

New Jersey’s primary thoroughbred racetrack is Monmouth Park.

“Competition from neighboring states that are supplementing the purse money

at racetracks with revenue from slots and casinos has placed the New Jersey horse racing industry at a significant disadvantage and the industry needs help to level the playing field,” said Dancer.

County Waiving Tire Recycling Fees To Combat Mosquitos

TOMS RIVER – Ocean County will temporarily waive its tire recycling fee in order to encourage old tire recycling and assist in the effort to curtail mosquito breeding grounds.

“This is a program that is brought about by a partnership with the Ocean County Mosquito Extermination Commission and the Ocean County Department of Solid Waste Management,” said Ocean County Freeholder John P. Kelly, who serves as liaison to the Mosquito Commission. “This will be particularly helpful now and throughout the summer as we move into the height of mosquito season in Ocean County.”

The County, under an

agreement with the Ocean County Mosquito Extermination Commission, will use $23,082 in funding from the 2017 Center for Disease Control ELC Capacity Building Efforts federal grant distributed through the state Department of Environmental Protection, Office of Mosquito Control Coordination, to waive the $2 tire recycling fee.

The free tire recycling program will begin August 1 and will continue until the funds are depleted.

Ocean County Freeholder Gerry P. Little, who serves as liaison to the county’s recycling program, said residents can drop off old tires at either of the county’s regional recycling centers.

Tires can be brought to the Ocean County Northern Recycling Center, New Hampshire Avenue in Lakewood, or the Ocean County Southern Recycling Center, Recovery Road in Stafford Township, from 7:30 a.m. to 3 p.m., Monday through Saturday. Residents will be limited to dropping off no more than five tires per day.

“This program will help our efforts to be good environmental stewards and to reduce the risks of mosquito vectors known to transmit the Zika virus,” said Little, who also serves as liaison to the Ocean County Board of Health. “We need to be vigilant especially this time of year and raise awareness to help control the mosquito

population for the health and safety of our residents.”

The Ocean County Mosquito Extermination Commission was awarded the grant to support its activities in identifying and controlling mosquitoes with a particular emphasis on activities designed to monitor for and control any identified populations of exotic invasive mosquito vectors known to transmit Zika virus.

“We are hopeful this program will help encourage our residents to clear their property of old tires and bring them to our recycling centers where they will be discarded properly, said Ocean County Freeholder Director Joseph H. Vicari.

Ocean County collects about 3,000 tires a year for recycling and anticipates that number to increase with the waiving of the fee.

“The Ocean County Mosquito Extermination Commission maintains vigilance year-round in order to keep down the mosquito population,” said Freeholder Kelly, Director of Law and Public Safety. “Successful mosquito extermination comes from a combined effort on the part of the County and also its citizens.”

The Mosquito Extermination Commission employs an extensive surveillance program using light traps and landing rate counts that are collected around the County daily during the mosquito season which typically runs through September 30.

Once locations are identified, there are several mea-

sures that can be used to control the mosquito population, depending upon the situation.

The method is known as Integrated Pest Management.

According to Michael Romanowski, commission superintendent, chemical application is one method with the main concentration on larvicide applications to control the pre-adult mosquito.

There also are biological controls, such as mosquito predaceous fish or the use of copepods. Another possibility is source reduction whereby the habitat can be altered to prevent future mosquito production, he said.

The commission uses its ground spray trucks, each equipped with power sprayers to apply larvicides. If the areas are very large, the commission has two helicopters to treat the areas aerially.

However, most of the aerial applications are made on the county’s extensive salt marshes.

“Ocean County has long been known for its large numbers of salt marsh mosquitoes,” Romanowski said.

“Through a process known as Open Marsh Water Management, the problematic salt marsh areas can be managed through the use of amphibious equipment, to eliminate the mosquito production without the use of pesticides.

Once completed, the areas become more useful to other members of the tidal food web, and remain in that state indefinitely.”

While Ocean County looks at the bigger picture in controlling the mosquito popula-

tion, the Freeholders strongly urge residents to get involved with helping to reduce the population especially by eliminating areas that can act as breeding grounds on private property.

“Since many breeds of mosquitoes use containers like discarded tires that are commonly found around populated areas, eliminating the sources of water is often the best approach to controlling this mosquito population,” said Kelly, who also serves as a commissioner on the Mosquito Extermination Commission. “Extermination commission workers often pickup tires as they treat areas for mosquitoes.

These mosquitoes can often be found in water amounts as small as that of a bottle cap.”

Other common problematic areas are planter bases, tarps, garbage pails, and the many other water containers found around the home or business.

“Most of our residents do not realize just how extensive our mosquito extermination program is,” said Kelly. “We take this threat very seriously and work to make certain our residents and visitors are safe from mosquitoes and the ongoing threat they may pose.”

Free Health Screenings During National Health Center Week

LAKEWOOD – In recognition of National Health Center Week, CHEMED (The Center for Health Education, Medicine and Dentistry), a federally qualified health care center located at 1771 Madison Avenue, is inviting the public to participate in two events on August 16 and 17.

Rain Barrel Building Workshop

LAKEWOOD – A free Build a Rain Barrel Workshop will be held at the Ocean County Park Pavilion, 659 Ocean Avenue (Route 88), on Saturday, August 26 from 9 a.m. to 12 p.m.

In this free workshop, participants will learn how to build their own rain barrel and how to set it up at home. All tools and materials needed for the workshop will be provided at no cost.

A rain barrel is used to collect rainwater from a roof, and is usually placed under a gutter’s downspout next to a home. They can hold around 50 gallons of water that can be used to landscape a garden. Collecting rainwater helps conserve water, prevents basement flooding and reduces pollution in rivers, lakes and streams in our communities.

The project lines up with Brick Utilities’ efforts to carry out the Metedeconk River Watershed Protection and Restoration Plan, which aims to preserve the Metedeconk River as a vital water supply for the region, protect the Barnegat Bay inlet and improve water quality. Stormwater runoff has been identified as the main threat to the Metedeconk River, as it picks up pollutants from roads, parking lots, lawns and other areas in its path to local waterways.

The Metedeconk River is also the primary water source for Brick Utilities, which provides drinking water to more than 10,000 residents in Brick, Howell, Lakewood, Point Pleasant Borough and Point Pleasant Beach Borough.

JACKSON – The following is a sample of incidents that Jackson Patrol Officers recently responded to or were involved with. This does not represent all of the calls for service that were responded to during this time period.

July 29 CDS ARREST: At 12:05 a.m. Police Officer Keith French was on patrol when he conducted a motor vehicle stop with a 2000 Toyota on West Countyline Road for observed motor vehicle violations. During the course of the stop, the officer detected the odor of marijuana coming from inside the vehicle, which contained a female driver, an 18-year-old male rear seat passenger and an infant who was not properly secured in a child seat. A search yielded a bag of suspected marijuana that was located inside a diaper bag in the vehicle, and the male was placed under arrest as it was also discovered that there were multiple outstanding warrants for his arrest. The male was processed and charged with possession of marijuana and was later lodged in the Ocean County Jail. The female was issued motor vehicle summons and DCPP was contacted to follow up on the incident. Police Officers Thomason and Minissale assisted.

CDS ARREST: At 10:30 a.m., Police Officers Shane Davis and Stephen Cilento were assigned to a detail at Six Flags Great Adventure when they responded to a report of a male attempting to enter the park with what was later identified as MDMA (Ecstasy). A 28-year-old male was placed under arrest and charged with possession of CDS and being under the influence of a controlled dangerous substance.

He was later released on summons pending a court appearance.

SHOPLIFTING: At 3:12 p.m., employees of the Calvin Klein outlet store at the Jackson Premium Outlets reported a shoplifting of $500 of merchandise.

HARASSMENT ARREST: At 5:19 p.m., Police Officers Tristan Bennett and John Roth responded to a residence on Heritage Terrace on the report of a dispute. During the investigation, a 31-year-old male was placed under arrest for harassment. He was processed and released on summons pending a court appearance.

FIRST AID: At 6:08 a.m., Police Officers John Roth and Stephen Cilento responded to a residence on Palomino Drive on the report of a drowning. The officers arrived on scene and

observed that guests attending a party were performing CPR on an 8-year-old girl who had been pulled out of the pool after being submerged for several minutes. The officers performed CPR until arrival by Jackson First Aid and Medics who transported the girl to an area hospital. The victim later passed away.

On this date, officers also responded to 3 reportable motor vehicle crashes in the township, arrested 1 person on an outstanding warrant and conducted a death investigation (non-suspicious).

July 30 ATTEMPTED BURGLARY: At 9:38 a.m., a resident of the Prospect Pointe Apartments on South New Prospect Road reported that unknown suspect(s) attempted to gain entry to the residence and caused damage to a screen window.

CDS ARREST: At 1 p.m., Police Officer Derek Gorski was conducting a directed enforcement detail in the area of Louisiana Parkway and South New Prospect Road when he conducted a motor vehicle stop after observing a 2004 Ford disregard a stop sign when traveling from West Countyline Road onto South New Prospect Road. While speaking with the driver, the odor of marijuana was detected coming from inside the vehicle and a search resulted in the seizure of suspected marijuana.

The 29-year-old male driver was placed under arrest and charged with possession of marijuana and motor vehicle violations. He was released on summons pending a court appearance.

CDS ARREST: At 8:08 p.m., SPO Thomas Parise responded to South New Prospect Road to assist Police Officer Cherrick Daniels, who had conducted a motor vehicle stop with a 2000 Cadillac for a speeding violation. During the stop, the odor of marijuana was detected coming from inside the vehicle. A search resulted in the seizure of marijuana and the 18-year-old male driver was placed under arrest. The driver was processed and charged with possession of marijuana, possession of CDS while operating a motor vehicle and motor vehicle violations.

He was released on summons pending a court appearance.

CRISIS INTERVENTION: At 10:52 p.m., officers responded to a residence in the township on the report of a teenaged female who had attempted to cut her own throat. The officers discovered the teen with a superficial laceration to her throat. She was treated by Jackson First Aid and later transported to an area hospital for further treatment.

Free Health Screenings For Uninsured Women

TOMS RIVER – Community Medical Center’s Community Health Services, a RWJ Barnabas Health facility, through a grant provided by the New Jersey Department of Health and Senior Services, coordinates the New Jersey Cancer Education and Early Detection program in Ocean County. Currently, free clinical health screenings are available to uninsured women in Ocean County.

The program provides free clinical breast examinations, mammograms, cervical exams and pap smears to uninsured women between the ages of 40 and 64. To qualify for the pro-

gram, participants must meet specific income requirements.

A clinic will be held at the Ocean County Health Department, 175 Sunset Avenue in Toms River, on Friday, August 25 from 1 to 2:30 pm.

An additional clinic will be held at the Family Planning Center in Lakewood, 290 River Avenue, on Tuesday, August 29 from 12 to 2:30 pm.

LAKEWOOD – Orientation for the 104th Basic Course for Police Officers has begun.

Smithsonian Poster Exhibits At Jackson Branch Library

JACKSON – Visit the Jackson Branch library during August and September 2017 to view two poster exhibits, Bittersweet Harvest and Journey Stories, produced by the Smithsonian Institution Traveling Exhibition Service (SITES).

Bittersweet Harvest: The Bracero Program, 1942-1964, showcases a colorful set of six bilingual posters with images and interviews by documentary photographer Leonard Nadel.

This exhibit explores the little-known story of the Bracero Program, the largest guest worker program in U.S. history. Between 1942 and 1964, millions of Mexican men came to the U.S. on short-term labor contracts. The poster exhibition not only tells a story of exploitation but also one of opportunity.

The Journey Stories exhibit consists of seven posters and includes important chapters in American history such as Western expansion and Native American displacement, African American migration from the Deep South, and important developments in transportation technology. No matter the country of origin

or reason for coming here, from our earliest days, Americans have been intensely mobile, and we still are. Travel over roads, rails, rivers, and trails – even the skies – have shaped our cultural and economic landscape. In many ways, our Journey Stories define us.

SITES has been sharing the wealth of Smithsonian collections and research programs with millions of people outside Washington, D.C., for 60 years. SITES connects Americans to their shared cultural heritage through a wide range of exhibitions about art, science and history.

Jackson’s Castronuova Prominent Former Jackson Memorial player Matt Castronuova, a junior, plans to play a large role this season at wide receiver.

“Right now, I am starting at wide receiver,” the 5-foot-9,175-pounder said. “Everything feels good. It’s my job to lose and it’s real nice to be in that position. I have a good work ethic and I work hard each day. I am competitive with my teammates and I let my ability speak for itself.”

He played in all 11 of the Hawks’ games at wide receiver and on special teams last season, making nine tackles.

“I have some speed,” he said. “I make guys miss when they try to tackle me. I am not the tallest guy, but I can make the plays.”

More Local Stars Other local players hoping to make names for themselves for the Hawks this season are senior wide receiver Vinny Grasso (Donovan Catholic), senior linebacker Jimmy Cleveland (Donovan), sophomore defensive lineman Adam Kakar (Toms River North, Milford Academy) and freshman offensive lineman Justin Szuba (Brick Memorial).

Grasso, a 5-foot-7,175-pounder, competed in each of Monmouth’s 11 games as a sophomore, making one catch and adding one tackle on special teams. Cleveland is a 6-foot-2,239-pounder.

The 6-foot-3,320-pound Kakar played in 11 games for the Hawks as a freshman, making one solo tackle and four assisted stops. Szuba is a 6-foot-7,260-pounder.

New Stadium The Hawks will open their regular season Saturday, September 2 at 3 p.m. (ESPN3) when they host Lafayette College at the brand new $16 million Henni Kantor Kessler & John H. Kessler Stadium in West Long Branch.

It will house more than half of the Hawks’ athletes, including lacrosse and track and field. The Kesslers were members of the original Touchdown Club, which helped bring football to the school in 1992. Henni and John, former Monmouth students, pledged the first gift to get the original Kessler Field built and saw more than 350,000 fans support 109 football games over the past 24 years.

Henni captained the cheerleading team while John played baseball for the Hawks.

Henn is a former trustee and a member of the school’s Society of Trustees while John is a trustee emeritus.

The couple has been giving back to the school since the tenure of president emeritus Samuel Megill, including the Henni Kessler Endowed Cheerleading Scholarship and a significant gift to construct the OceanFirst Bank Center, home of the Henni Kantor Kessler Varsity Club.

Construction began on Kessler Stadium prior to the start of last season with the old structure being removed days after the Hawks’ final home game of the season October 29. The new stadium features more

than 4,200 seats, including 800 chair-back seats, and stretches from end zone to end zone.

“A new videoboard at the cost of nearly $1 million will be built,” Callahan said. “It will be funded by our alumni group. Several hundred alumni will be there for the opener.

It will be a great feeling to see the stadium filled. I am happy that these guys will get the chance to play in that type of venue and in the same type of environment they play in on the road.”

The facility includes a full concourse with concession stands and bathrooms, a state of the art press box, multimedia booths, coaches’ booths and a ticket office.

Fans are invited to a free ribbon cutting ceremony at 12:30 p.m. on September 2.

Children May Develop High Blood Pressure

NEW JERSEY – Despite popular belief, teens, children and even babies can have high blood pressure, also called HBP or hypertension. It’s not just a disease for the middle-aged and elderly.

As with adults, early diagnosis and treatment can reduce or prevent the harmful consequences of this disease, including heart and kidney disease. This May, National High Blood Pressure Awareness Month and American Stroke Month, the American Stroke Association wants you to check your child’s health.

When it comes to blood pressure in children, “normal” is relative. It depends on three factors: gender, age and height. Your child’s doctor can tell you what’s right for your child, because “normal” is a complicated calculation based on these factors.

What leads to HBP in children? There may be many factors that can include: Diseases including heart and kidney disease Some medications Family history Excess weight or obesity

Race, particularly African-Americans are at an increased risk Visiting your pediatrician to discuss treatment options is vital in controlling HBP. As in adults, HBP in children is typically managed with lifestyle changes, including: Enjoying a heart-healthy diet Participating in regular physical activity Managing weight The doctor may also prescribe medication if an appropriate diet and regular physical activity don’t bring the high blood pressure under control.

Children and teens should also be taught the dangers of tobacco use and protected from secondhand smoke. While cigarettes aren’t directly related to high blood pressure, they do cause a number of health risks. Parents should set a good example by not smoking and educating their children about the hazards of smoking.

What Color Do You Pee?

By Suzy Cohen, R. Ph. It’s one of those things you don’t even pay attention to, until it changes color. The yellow ‘pee’ pigment is called “urochrome” and if it’s concentrated, you’re urine is darker yellow. When well hydrated, the urochrome is dilute. A variety of surprising foods, candy, medications and disorders impacts urine color. Here are causes for the strange colors: Red or Pink If you pee red, it’s frightening because your brain immediately thinks “Blood!”

But shots or high oral doses of Vitamin B12 can cause it. Beetroot supplements and eating beets (or drinking beet juice) can also make you see pink in the potty.

If you just had two slices of rhubarb pie, or a dozen blackberries, you’ll see pink.

Bladder or kidney infections, and prostate cancer are rare causes, so get it checked out if it persists beyond the beets.

Orange or Amber The popular UTI (urinary tract infection) treatment called “phenazopyridine,” will tint your urine orange. The prescription blood thinner “Coumadin” (warfarin) can do it but usually it’s because you just drank a lot of carrot juice or took some vitamin C. If you see reddish brown urine, that could be rhabdomyolysis which is associated with some popular medications. If you’re on a cholesterol drug, and see tinged urine, see a doctor immediately.

Yellow or Brown Yellow is normal, but bright neon yellow is not. Still, it is harmless. Supplements that contain riboflavin will make you pee in neon yellow! You’re not dying, don’t freak out.

Amber urine could be a sign of dehydration. Go drink more water and see what

happens, your urine should go back to yellow right away. However, dark urine that is unusual, or in excess could indicate liver disease. Methocarbamol, nitrofurantoin and laxatives (cascara or senna) can temporary do it too.

Green Did you eat a bag of black licorice? It will make you pee green. Maybe you have a UTI? Honestly, vivid green urine is highly unusual. It happens sometimes on the day (or day after) you’ve been sedated for surgery or a procedure. It’s from the propofol (aka the Michael Jackson drug).

This is a popular short-acting sedative that anesthesiologists frequently use, and it can tinge pee green. Cimetidine (Tagamet) sold over-the-counter for acid reflux can do it sometimes too.

Blue This one would alarm me personally, even though a number of medications produce blue urine including Elavil (amitriptyline) and Indocin (indomethacin).

Purple Purple urine is almost always associated with people who have catheters and then get a UTI. If you visit a loved one in the nursing home and see this, all they need to do to cure it is a treatment of antibiotics and a catheter change.

White Two of the most frequent causes are kidney stones or high calcium excretion (hypercalcuria) or high phosphorus in the urine (phosphaturia). You might also have a very bad kidney or bladder infection.

Black Black is sometimes associated with melanoma. It can occur red blood cells being destroyed at a dangerous rapid pace and is considered an emergency.

Ocean County Schedules Free Document Shredding Days

OCEAN COUNTY – The Ocean County Board of Chosen Freeholders is offering residents 22 different opportunities to get rid of their residential documents in a secure and safe way.

“Ocean County’s Residential Document Shredding Program kicked off on April 8 at the Berkeley Township Recycling Center in Berkeley Township,” said Ocean County Freeholder Gerry P. Little, who serves

as liaison to the county’s award-winning recycling program. “That is the first of 22 different dates for the popular program that is held throughout the County. We have added four more dates this year.

“This program provides a great service to our residents by shredding personal documents and information that otherwise may wind up in regular trash,” Little said. “With identity theft on the rise, this offers security

to our residents and also keeps all of this paper out of the Ocean County Landfill.

It’s a win, win.”

In 2016, a total of 102 tons or 204,000 pounds of documents were collected and shredded during the 18 collection dates.

The amount collected is up 16,000 pounds.

“Ocean County is a large county and we make every effort to make this program easily accessible to all our citizens,” said

Freeholder Director Joseph H. Vicari. “This program has been embraced by all of our residents who want to rid their homes of personal papers without worrying about them falling into the hands of people who may use it for the wrong reasons.”

“This program was first started in 2008 and has grown in popularity,” Little said.

The work is being performed by Autoshred of Toms River.

Residents are not required to register for this free program and can bring six boxes or bags each day. The program is for all paper documents and paper forms. Paperclips and staples do not have to be removed.

Little noted the shredding unit features an automatic feeding and dumping system, eliminating the need for human contact with a resident’s documents. Events will run their complete scheduled time or until the truck is full. The truck capacity is 8,000 pounds.

Little said that for residents who prefer to shred their documents at home, Ocean County offers drop-off boxes at both County recycling centers for shredded office papers.

“Shredded office paper should not be placed with curbside recyclables and instead should be brought to the drop-off boxes at the county recycling centers,” Little said. “The shredded paper cannot be effectively sorted by the County’s recyclable materials processing facility. I encourage our residents to recycle it separately which allows us to produce a viable, marketable commodity.”

Drop-off boxes can be accessed by Building 105 at the Ocean County Southern Recycling Center, 379 Haywood Road, Stafford Township or Building 68 at the Ocean County Northern Recycling Center at 601 New Hampshire Ave., Lakewood.

Little also suggested residents contact their municipal recycling centers to learn whether there is a local drop-off box for shredded office papers.

Shea And Associates The very necessary but intensive part of your quest to close on your new home will be providing your mortgage representative with all of the financial records and additional information they require. Equally, during a re-finance of your existing home, many of the financial records will be required. In either of these situations, the process is started by the application process and moves through the underwriting process until the loan is clear to close. During this time period which may span from 30 days to several months, depending on the complexity of the loan program, there are several things to remember as to not hinder a smooth closing, which your Attorney can assist with.

First, as an applicant, you never want to open new credit cards, switch credit card balances to new credit cards, or make large purchases on existing credit cards. Even the smallest of purchases on a new card may open up a much larger available line of credit. This is important to remember when you are paying for movers or looking to purchase new appliances and/or furniture for your new home. All of these actions can disrupt your income to debt ratio which can be a major obstacle in getting to that clear to close position. Make sure prior to utilizing any credit that it is discussed with your Attorney and mortgage representative to avoid delays in obtaining clearance to close your loan.

Second, in a situation where you may be re-financing your existing home or purchasing a home that requires repairs prior to closing, make sure all home improvements/ repairs that may be on going are complete prior to the appraisal being performed. One of the steps of any loan is to have a formal

appraisal completed. To Dina M. Vicari Esq. avoid a delay, make sure you properly plan the timing of your appraisal.

Timing of the appraisal should be discussed with your Attorney and mortgage representative to ensure that there are no on-going improvements within the property that would require a re-appraisal that will cost an additional fee.

Third, it is important to make sure you are prepared for closing and have enough money saved to bring to the closing table. At the time of closing there are lender costs and third party costs, such as payments to insurance companies, surveyors, title companies, home owner associations, tax office, municipal utilities, and many more, which must be paid at closing. It is important to communicate with your Attorney and mortgage lender to review all of your closing costs that you will be responsible for at the time of closing.

JACKSON – While most high schoolers in Ocean County are spending their last, precious month of summer at the beach, 186 students at Jackson Memorial High School are preparing for a cold winter’s night.

The Jaguar Marching Band, led by Band Director Jason Diaz and Assistant Band Director Eric Ficarra, are taking part in their annual, two-week band camp this August to prepare for their 2017 program, “A Cold Winter’s Night.”

Band season is here. But the reality is that the season almost never ends, with some sections of the band preparing for it since last winter, only a few short months after the last season ended.

For these dedicated students, marching band isn’t just something they do, it’s something they live, breathe and love. It’s about a passion for music, striving to be the best they can be, creating something special – and it’s about family.

Each season holds a different meaning for each class. For the newbies, the freshmen class, it’s about learning to be a part of a big family by listening and learning from the upper classmen and finally experiencing all that they heard marching band has to offer. For the sophomore class, they are no longer the rookies, but now veterans of a great freshman year, as they look forward to the excitement of the next three seasons. For the junior class it’s time to start being leaders. They know that come next year everyone will be looking up to them for guidance and leadership. For the senior class, it means everything, as it’s their final season and they will go through so many emotions. While schoolwork is the top priority, many will tell you that marching band is what has meant the most to them over their four years at Jackson Memorial.

This year will bring great joy to them, but at the same time, it is bound to be somewhat bittersweet.

The JMHS Marching Band will give its first performance, as always, on the last day of band camp, which this year is on Thursday, August 17 at 7 p.m. At this “parent performance” they show their family, friends and alumni a preview of what

their upcoming show will look like. It’s always a night filled with great pride, joy and emotion.

The band’s season officially kicks off on Friday, September 8 with a half-time performance at the football team’s home game against crosstown rival Jackson Liberty, and ends on Saturday, November 4 as the Jags compete for the U.S. Bands National Championship in Allentown, Pennsylvania.

The Jaguars will also be marching in the annual Miss America “Show Us Your Shoes” Parade in Atlantic City on September 9, as well as competing at Met Life Stadium for the Yamaha Cup on Saturday, October 14, and for the NJ State Championship at Rutgers University’s High Point Stadium on Saturday, October 28.

In addition to five other competitions, the band will host its annual home competition, “A Showcase of Champions” on Saturday, October 7 at Jack Munley Field on the campus of Jackson Memorial High School.

A public hearing was held on May 9 at Jackson Memorial High School, where many residents of the Fairways community showed up to voice their opposition to the proposed development. A denial letter dated Aug. 3, from the New Jersey Department of Environmental Protection (NJDEP) Division of Land Use Regulation was sent to Mordechai Sternstein of GDMS Holdings of Lakewood, citing various missing, incorrect and incomplete information within his initial application. That application was received by the NJDEP on February 15.

“The DEP’s rejection of the CAFRA and Wetlands permits for 1,800 homes at Eagle R idge is a victor y for the environment. Instead of siding with developers, DEP decided to stand up for sound planning, clean water, and environmental protection. With this proposal, GDMS Holdings wanted to build massive suburban development on top of wetlands and a landfill. This project would be an environmental disaster because the residents would experience f looding and pollution runoff into the Barnegat Bay,” said Jeff Tittel, Director of the New Jersey Sierra Club.

Traffic congestion, endangering the state threatened red-headed woodpecker and inaccu rate stor mwater maps were primary findings outlined in the letter. The DEP also felt that extending sewer lines west from the existing New Jersey American Water pump station

along Cross Street would encourage f ut ure development of the land and endanger critical wildlife habitats.

Another major issue seemed to be tree preservation. Coastal Fringe Planning Areas require 70 percent tree preservation in forested areas and 5 percent tree preservation or tree planting in forested areas. The applicant had attempted to set aside a parcel of land in Manchester Township known as Block 79, Lot 41.01 to preser ve trees, which is 10 miles from the proposed development site and inside the Pinelands National Reserve.

The problem is, that patch of land is beyond the regulated CAFRA jurisdictional area and was found to have no “ecological nexus” to the project site, so the applicant can’t use it to satisfy that portion of the application.

The applicant also proposed $776,755 for roadway and traff ic upgrades to promote the f low of traff ic, but the New Jersey Department of Transportation identified a missing traffic study at the intersection of Route 9 and Prospect Street, as well as an intersection at Chestnut Street and New Hampshire Avenue that would no longer function without a traffic signal.

Although an agent of GDMS Holdings did submit an updated application on July 21 with a revised project plan, there was no documentation showing that the updates were sent to the municipal clerk or to individuals that were determined to be affected by the revised application. Because of that, the NJDEP has not evaluated that revised application.

The denial letter states that the revised design reduced the number of residential units, a commercial building and parking, reconf igured proposed roadways and site access, and provided additional stormwater management facilities. A revised Stormwater Management report and Traffic Impact Study were also included.

I can give them the source of the seed and I know exactly how it was grown. That matters a lot,” Irene adds. “People tell me our string beans taste like a bean. They’ve been eating food that has no taste because big corporate farms don’t plow their ground. They just keep planting on it over and over again.

There’s nothing left in the soil, no nutrients. They have a machine that pulls the plant out of the ground and shakes it to death so beans fall off, go into a hopper, into a bin, get broken and get brown. They’re beat up. Ours are hand-picked and beautiful.”

In addition, varieties of squash, eggplant, “Jersey tomatoes” and Irene reveals, “the star of the show,” Gregory’s corn, which is always kept on ice, is grown on I&G’s neighboring acreage. The corn is grown in various “blocks,” and staggering the planting time results in corn (hopefully) until the end of October. The corn is white and bi-color (cross between white and yellow) and is picked daily, as needed, all day long.

“We always have fresh corn, all super sweet,” Irene exclaims. “In my dreams, if someone told me people would go crazy over corn, I would never have believed it.

Jackson Police Nab Heroin Haul

By Chris Lundy JACKSON – Police announced that they took 50 decks of heroin off the streets and arrested three suspects.

On Aug. 1, police received information about suspects who were delivering heroin to a location in Jackson. The information warned that one of the suspects might be armed.

A group of officers spotted the suspected vehicle, a 2006 Lexus, on Hyson Road near Jackson Mills Road at around 5:30 p.m.

It was pulled over and the three suspects were arrested without incident. As it turns out, there was no weapon in the vehicle.

Police did fi nd 50 decks of suspected heroin.

Arrested were Genuine Baines, 18, of Trenton, Isaiah Porter, 21, of Trenton, and Lindsay Robson, 28, of Mercerville. All three suspects were charged with: posses-

sion of a controlled dangerous substance (heroin), possession with intent to distribute a controlled dangerous substance and conspiracy to distribute a controlled dangerous substance. They were processed and lodged in the Ocean County Jail. The Lexus used was seized for potential forfeiture proceedings.

The three people in the car were all charged with possession of a controlled dangerous substance, possession with intent to distribute, and conspiracy to distribute. They were placed in Ocean County Jail.

The Lexus they were driving in was seized by police for possible future forfeiture.

Jackson police worked with the Ocean County Prosecutor’s Office Special Operations Group, the Ocean County Sheriff’s Department K-9 and Ocean County Regional SWAT Team.

wolfgang puck’s kitchen Midsummer Mania: It’s Time For The Eggplant’s Turn In The Spotlight

By Wolfgang Puck Among summertime’s signature vegetables, eggplant sometimes seems like it doesn’t get its fair share of attention. Tomatoes are the seasonal superstars, filling farmers’ market stalls with all their many-shaped, multicolored variety. Zucchini can dominate through sheer numbers, especially if you grow them yourself. And then there’s sweet corn, the outdoor favorite at picnics and barbecues.

But eggplant? With its glossy, purple-black skin and a texture and flavor that are unpalatable when raw, it seems to hang back while its more popular summer companions make friends so easily. Eggplant needs more coaxing to showcase how wonderful it can actually be. When sauteed, grilled, roasted or broiled, its flavor turns amazingly rich and satisfying, almost meaty, and the texture becomes luxuriously soft, smooth and silky.

There are so many ways to showcase those delicious qualities: -Combine eggplant with chunks of tomato, zucchini and onion, along with garlic and fresh herbs in the signature French vegetable stew called ratatouille.

-Slice the eggplant, slick with oil, and grill it as an easy side for summertime cookouts.

-Grill or broil eggplant whole until the skin blackens and the inside turns tender; then, scoop out the smoky-tasting pulp and whip it with tahini (sesame paste), garlic, lemon juice, olive oil, garlic, cumin, salt and parsley to make the superb Middle Eastern dip known as baba ganoush.

-Give the vegetable a try in a Southeast Asian main dish like my sauteed shrimp with Thai-spiced eggplant and Thai red curry sauce.

Having originated in Asia, eggplant is a staple in Thai kitchens, and in the following recipe it’s combined with aromatic seasonings to form a luxurious backdrop for quickly cooked seafood.

With the widespread popularity of Thai cooking today, you may be surprised by how easy it is to find all the ingredients. Many produce departments now include fresh lemongrass, Thai basil, kaffir lime leaves, and galangal - a cousin to ginger; and Asian food aisles often feature bottles of Thai red curry paste and the salty, fermented seasoning called fish sauce. Even more conveniently, you can also buy them all online.

Once you’ve assembled all the ingredients, the recipe proceeds very quickly, with each of the three main elements - the sauce, the eggplant and the sauteed shrimp - fairly simple to prepare.

Since the shrimp cooks the quickest of all the ingredients, I save their preparation until the very end. You could also substitute another protein of your choice; pork tenderloins or boneless and skinless chicken breasts, quickly grilled or sauteed and then cut diagonally into strips, would work beautifully with the other ingredients.

Whichever of these combinations sounds good to you, I encourage you to give my recipe a try soon - and let eggplant finally win its share of the spotlight.

SAUTEED SHRIMP WITH THAI SPICED EGGPLANT AND THAI RED CURRY SAUCE Serves 4 For the sauce: 2 tablespoons peanut oil 4-inch (10-cm) piece ginger root, sliced and smashed 4-inch (10-cm) piece lemongrass, white part only, smashed, or zest of 1/2 lemon, cut into strips 2-inch (5-cm) piece galangal, or a little extra ginger, peeled and chopped 2 dried red Thai chiles or other small dried chiles 2 teaspoons cumin powder 1 teaspoon sweet paprika 2 teaspoons bottled Thai red curry paste

1/4 cup (60 mL) peeled, seeded and diced fresh tomato 2 cups (500 mL) canned unsweetened coconut milk 2 to 3 tablespoons fresh lime juice 2 to 3 tablespoons fish sauce, or 1 tablespoon anchovy paste 1/2 cup (125 mL) Kaffir lime leaves, or 2 tablespoons shredded lime zest 1 cup (250 mL) loosely packed Thai basil leaves, or regular basil leaves Kosher salt Sugar For the eggplant mixture: 1 large globe eggplant, or 4 Chinese eggplants 2 tablespoons peanut oil 1 tablespoon unsalted butter 1 teaspoon minced jalapeno 1 tablespoon minced garlic 1 tablespoon minced ginger 1 tablespoon minced white onion 1/2 cup (60 mL) peeled, seeded and diced fresh tomato 1 teaspoon sugar 1/2 tablespoon cumin powder 1/2 tablespoon coriander powder Kosher salt Freshly ground black pepper 1 tablespoon minced fresh cilantro leaves 1 tablespoon Thai basil leaves, or regular basil leaves, cut crosswise into thin strips For the shrimp: 2 tablespoons vegetable oil 2 tablespoons unsalted butter 12 large shrimp, peeled and deveined Kosher salt Freshly ground black pepper Fresh basil leaves, cut crosswise into thin strips, for garnish First, make the sauce: In a medium saucepan over high heat, heat the oil. Add the ginger, lemongrass and galangal; stir-fry until aromatic, about 2 minutes. Add the chiles and stir-fry another 30 seconds. Add the cumin, paprika, curry paste and tomato. Cook, stirring constantly, for 2 minutes. Add the coconut milk and bring to a boil, stirring and scraping to deglaze the pan deposits.

Reduce the heat; stir in the lime juice, fish sauce, lime leaves and basil. Simmer gently for 10 minutes. Season to taste with salt and sugar. Remove from the heat and leave to steep for 20 minutes.

Meanwhile, prepare the eggplant: Preheat a grill or broiler. With a fork, poke the eggplant several times all over. Rub with 1 tablespoon peanut oil. Grill or broil, turning regularly, until completely tender. Remove from the heat and set aside until cool enough to handle.

Cut in half and scoop out the pulp onto a cutting board; coarsely chop the pulp, transferring to a bowl, and discard the skin.

In a medium saute pan, heat the remaining peanut oil and the butter over medium heat; saute the jalapeno, garlic, ginger and onion until aromatic, about 2 minutes.

Stir in the eggplant, tomato, sugar, cumin and coriander.

Season to taste with salt and pepper. Cook over low heat, stirring occasionally, for 15 minutes. Taste and adjust the seasonings with salt and pepper. Turn off the heat and stir in the cilantro and basil. Cover and keep warm.

Strain the sauce and gently rewarm it over medium heat.

For the shrimp, in a large saute pan over high heat, combine the oil and butter. Saute the shrimp until just pink, 3 to 4 minutes; season with salt and pepper.

To serve, divide the eggplant among four serving plates.

Arrange the shrimp on top and drizzle with the sauce.

Garnish with basil and serve immediately.
