Developing Story Communal Table The recent trend of food halls is giving hungry foodies worldwide the chance to choose from an array of eateries conveniently located under one roof. New York City alone is opening four this year, and it’s no surprise that the Space City (which may as well be renamed the new “food city”) is following close behind. Houston’s newest food haven, Finn Hall, will be inside The Jones on Main, promising a full spectrum of drinking and dining options along with a swank, art deco lounge. And in the spirit of communal spaces, WeWork, a respected co-working organization, has chosen The Jones on Main for its very first Houston location. The combination will make the building a destination for shared plates and work spaces in downtown.

Recovery Mode Though he says he will “never again” ride out a storm like Harvey, he and the rest of the community are committed to rebuilding. So is Felicia Cumby of the highly-anticipated stylish children’s clothing store Dapper Darlings, which was open only 13 days before taking on water. “It was pretty heartbreaking, but our plan is to try and get back into business as quickly as possible,” she says. “Our goal is to open in midNovember, and we are really excited about that. We actually wish we could open tomorrow, but these things take time.” Like many of the business owners in Kings Harbor, Cumby, who owns the store with her husband, Jonathan,
has taken their business online, selling the same adorable outfits and adding new inventory regularly. Others have launched pop-up shops around town all while working to repair and rebuild. On November 10, the community will rally together to kick off its monthly event schedule with a grand celebration dubbed Turn Kings Harbor Blue, which will honor local first responders who helped protect and evacuate residents during Harvey. “It’s really amazing to be part of this event,” Cumby says. “We are all working together to make sure it’s a great event for the community and the people we are honoring.” — Jeff Balke, Laura Furr Mericas

Hurricane Harvey hit Kings Harbor hard, but the community is bouncing back. Popular Sharky’s Waterfront Grill was one the businesses that took on five feet of water during the unprecedented storm. William Neumann manages the Kings Harbor restaurant, and after riding out the storm was one of the first on the scene, serving as the eyes and ears to the rest of the community. “On Sunday, we waded to the restaurant and finished our preparations knowing it was only getting worse by the minute,” he recalls, adding, “I was relieved once the water stopped rising because I was starting to question my decision to ride this out.”

Modern Spaces Office decor can sometimes be a little dull, but new GreenStreet tenant Spencer Ogden, a global energy recruitment agency, approaches office design quite differently. “We believe in having fun, bright, and nontraditional work spaces,” says Rachel Spreen, office manager for Spencer Ogden’s Houston location. That includes ping-pong tables, footballs and basketballs in place of stress balls, bicycles, and huge windows for picturesque views of downtown. It even extends to the floor. “Because we like to be nontraditional, turf is the ‘carpet’ of choice,” Spreen explains, adding that the unique feel of GreenStreet and its downtown location helped draw the company there. “This space allowed us to be creative and still keep with the office aesthetic that is Spencer Ogden.”
There are plenty of opportunities to get your shop on in CITYCENTRE, and one of the most unique is chic women’s boutique Hemline. The popular New Orleans brand brings its own style to CITYCENTRE, and with good reason, says Hemline’s Shannon O’Shea. “I chose the CITYCENTRE location for the next Hemline because of everything that it has to offer,” she says. “I love all of the fine dining, entertainment, and shopping.” You never know what you might find at Hemline. “We have limited quantities, so our stock is always changing and we are always on trend for the next season ahead,” explains O’Shea. Their fresh collection of clothing, shoes, and accessories brings a fashionforward look to CITYCENTRE.

Merge Boutique
175 Century Square Dr., 979-571-7275, facebook.com/mergeboutique When owners Dani Jana and Tara Miller first opened their College Station-based boutique in 2010, they vowed to offer fashionistas chic contemporary finds for a price tag no higher than $50. Now, with seven years under their belts and a recent relocation to the new Century Square development, they have stuck by their word, providing budget-friendly clothing, shoes, and accessories for hip shoppers.
756 Houston St., 888-992-4443, 12thman.com The colossal home to Texas A&M’s football team, Kyle Field is an attraction even when the Aggies aren’t playing—but when they are, A&M’s football attendance is huge, ranking third in the nation last season (behind Michigan and Ohio State) and averaging 101,917 fans. Whether you go for the tailgating shenanigans or the crowd’s ballistic spirit, each game is a must-have experience. Catch the Aggies when they play Alabama on Saturday, October 7—maybe you’ll witness a repeat of the unforgettable 2012 game, when the Aggies blindsided the vaunted Crimson Tide with a 29-24 win.
GGIE FANS live up to the prideful slogan: Everything is bigger in Texas. The football team’s following boasts a deep roster of traditions that date back to the 1890s, many of which are must-dos for fall visitors to Bryan-College Station. The most renowned ritual is the classic Midnight Yell Practice, at which both the young and the young at heart gather at Kyle Field at midnight before game day to practice yells that’ll be used during the game. The practice got its start in 1931, when a group of students decided to take to the campus’ YMCA Building to rehearse synchronized roars that could be used to vex opponents; since then, it has evolved to incorporate “yell leaders” to conduct the recitals for over 25,000 fans. Most Aggie supporters also call themselves the “12th Man,” a term coined in 1922 when former team member E. King Gill was asked to suit up for a match against undefeated Centre College in case he would need to sub in due to injuries. Though Gill was never called into the game, his readiness and enthusiasm to support his school stayed with fans. Those who pledge allegiance to their alma mater today offer the same level of support for the 11 players on the field. If fans are not standing by the Aggies at Kyle Field, you can find them walking around the Bonfire Memorial, a monument that honors the lives of students who passed in the tragic collapse of the ’99 Bonfire. Visitors can explore the Memorial’s three sections—The Tradition Plaza, the History Walk and the Spirit Ring—as a way to pay homage to the lost souls, all while showing their respect and dedication to all Texas A&M former students.
The Canteen
Piada Italian Street Food
1025 University Dr., Ste. 109, mypiada.com Chefs at Piada (named after an authentic, thin Italian flatbread) are out to prove to foodies that a plate of basil pesto pasta can be made fresh, fast, and any way you like. Yes, that means you can get creative with your order, adding an array of meats (Italian sausage, meatballs, grilled chicken, and salmon), sauces, and veggies for a personal touch. Choose from pasta, sandwiches, and tossed salads, but don’t leave without trying the Ohio-based café’s “cannoli chips”: crispy cookies topped with powdered sugar and chocolate cream icing.
The Canteen
200 Century Ct., 979-485-5586, cavalrycourt.com/canteen-bar.htm Prepare to be transported to the ’60s at this military-themed bar, which pays tribute to nearby Texas A&M University and its alumni who served during World Wars I and II. The Canteen serves up hand-shaken cocktails and Texas-inspired dishes—think pecan pie, pork belly sliders, and smoked duck breasts—for families, whiskey lovers, and, of course, Aggie fans. For a smooth libation to sip on during games, try the Ruby Red Martini, made of Deep Eddy Ruby Red Vodka, grapefruit juice, and Chambord, a favorite among visitors.

HEN THERE ARE a number of awe-inspiring monuments in front of you, sometimes a brief mental snapshot isn’t enough to do it justice. Take a memorable photo, and share the creativity—because if it’s not on social media, did it really happen? We’ve listed five hot spots downtown where a picture is definitely worth a thousand words. Get a boost of motivation at BUFFALO BAYOU PARK, where several sculptures spell out words we should all be reminded of— Explore, Reflect, Listen, Emerge, and Pause. Wander around the park’s 160 acres to locate these art installations, which may (or may not) be right in front of your eyes. While a popular location for the best Fourth of July fireworks show, ELEANOR TINSLEY PARK also provides the most compelling views of the city skyline (without a crowd)—certain to get you a lot of Facebook likes.
Another location that can elicit Houston pride online is MOUNT RUSH HOUR: large statue heads of George Washington, Abraham Lincoln, Sam Houston, and Stephen F. Austin, situated off of I-10 E, which garners attention from tourists but can be overlooked by locals. DISCOVERY GREEN further proves that Houston has no shortage of photo ops, thanks to sculptures like the Synchronicity of Color Rubik’s Cube-esque piece and a large bronze heart, where amateur and professional photographers put their Instagram accounts on the map. When all is said and done, though, GREENSTREET may lead the pack for buzzworthy photos. Amid the urban greenspaces, visitors can spot faux sheep perusing the open-air levels. Snap a pic with these furry friends and share with #GrazeTheRoof for a post your followers will go wild for.

YOUR GUIDE TO HOUSTON’S ULTIMATE MAC AND CHEESE

There’s nothing quite as satisfying as digging into some ooey, gooey mac and cheese. But with so many options out there, how do you find the best? This fall, DISTRICT has done the (ever-so-hard) research so that you don’t have to. From classic Gouda to gluten-free to chef’d-up lobster, here are five takes on mac and cheese that will help you get your comfort on.
STOVETOP OR OVEN?
“We cook our sauce in a double boiler so no cheese hits the flame. The heat coming off the water helps really blend the cheese, and then you pour the sauce over the pasta.” —Jonathan Levine, Jonathan’s The Rub chef/owner
Smokey Mac and Cheese with Bacon
Jonathan’s The Rub, Memorial Green 12601 Memorial Dr, 713-4650-8200, jonathanstherub.com
For a tried-and-true classic, look no further than chef Jonathan Levine’s smoky mac and cheese with bacon. A staple on his menu for more than eight years, it’s his top-selling side dish of all time. Though he won’t give away all of his secrets, Levine offers, “We use a five-cheese blend of smoked Gouda, Parmesan, pecorino, and a couple of other cheeses.” The mix is blended with cream and butter on the stovetop and added to cavatappi pasta, with crispy bacon on top. Creamy, dreamy, and with bacon? Seconds, please. DISTRICT FALL / WINTER 2017 25

Quinoa Mac and Cheese Bellagreen, CITYCENTRE 801 Town & Country Blvd., 713-464-5557, bellagreen.com
The quinoa mac and cheese at Bellagreen may be gluten-free, but it’s certainly not guilt-free, as you’ll still be digging your fork into loads of cheesy goodness. The mac has enough flavor and texture to make you forget that it’s completely free of wheat. Made with quinoa and corn elbow pasta from Ancient Harvest, it’s served in a bowl big enough for two. The kitchen also adds extra mozzarella for a velvety texture, along with Parmesan and cheddar to balance the flavors. You’ll come back to this mac time and again.

BEST CHEESE?
“For the best ooey-gooey creaminess, a mixture of aged cheddar and low-moisture mozzarella is best because of the fat content. Some cheeses, when melted, tend to separate and get granular. When you combine these two, you get more creaminess.” —Sam Beier, Raffa’s Waterfront Grill executive chef
Gouda Mac and Cheese
Raffa’s Waterfront Grill, Kings Harbor 1660 W Lake Houston Pkwy, Ste 103, 281-360-1436, raffas.net Chef Sam Beier’s Gouda mac may sound simple, but this is the kind of mac-tastic dish you order when only a top-notch version will do. Made of a four-cheese blend of smoked Gouda, whole milk mozzarella, Parmigiano-Reggiano, and mild cheddar, the sauce cooks in a double boiler until ultra-smooth. Prepared ahead of time, it is added to ridged elbow pasta just before serving, so you won’t want to stand on ceremony when it comes to the table: dive right in for maximum creamy impact.

Lobster Mac and Cheese

III Forks, GreenStreet 1201 Fannin St, Ste 129, 713-658-9457 3forks.com/houston While a lot of people think visiting a steak house is all about the steak, true foodies know that it’s as much about the sides. At III Forks, the small plate that looms largest is the signature lobster mac and cheese. Executive chef Billy Caruso combines sautéed onions, shallots, and garlic with smooth béchamel, melted Gruyère, and mascarpone, pours it all over orecchiette, then tops it off with chunks of lobster tail and bread crumbs for a decadent, delicious delight.
FRIED CHICKEN OR FRIED FISH?
“Fried chicken is the best entrée to accompany a side of mac. The salty, crunchy crust of the fried chicken and the soft and creamy mac and cheese work perfectly and complement each other so well.” —Billy Caruso, III Forks executive chef/proprietor

Shrimp and Andouille Mac and Cheese McCormick & Schmick’s at GreenStreet 1201 Fannin St, 713-658-8100, www.mccormickandschmicks.com
McCormick & Schmick’s gives its shrimp and andouille sausage mac and cheese the treatment it deserves: as a standalone entrée. Only available during lunch hours, the hearty plate features a sauce of Parmesan, white cheddar, fontina, and Gruyère, which is mixed with rigatoni and topped with a generous amount of baby shrimp and andouille sausage. Bread crumbs are added as the finishing touch, and the entire dish gets baked in the oven for a crispy flourish to a creamy coup de cuisine.
YES OR NO TO BREAD CRUMBS?
“I prefer bread crumbs. When you bake it (as we do in our kitchen), it creates this crispy crust on top, which provides a nice contrast with the gooey cheese inside.” —John Umanzor, McCormick & Schmick’s sous chef

Big and beautiful, the double-bone smoked chop at The Foundation Room is a sight to behold. Served with a Parmesan potato stack, roasted pepper BBQ, apple fennel slaw, and blood orange emulsion, it’s the ideal main act to follow an opener of truffle mac and cheese.
Broiled with jumbo lump crab, avocado, cilantro, and red chiles, Eddie V’s swordfish steak is already a wonderful meal. When you want to feast, however, do what any food-loving Texan would do: add a side of their delectable mac and cheese for a taste of childhood dinners.

Spotlight on Service: Casa de Esperanza
This local nonprofit has worked hard for over three decades to provide safe homes for Houston children. b y L AY N E LY N C H
F
OUNDED IN 1982 IN HOUSTON by Kathy Foster, a nun and social worker, and Bill Jones, a child life specialist, Casa de Esperanza de los Niños has become a transformative charitable organization that aids children and families affected by unstable and dangerous living conditions, including poverty, abuse, hunger, HIV/AIDS, and more. The local organization is a lifeline for many, providing safe housing to children in need and helping family members address the problems at hand so that they may possibly be reunited with children later down the road—provided such a reunion is both safe and healthy. The organization offers assistance free of charge, never collecting funds related to the care of a child in need. “I’ve been a part of Casa de Esperanza for over 20 years now, and it’s a hands-on organization dedicated to the protection of children and their families,” says Tom Koch, a veteran ABC13 morning news anchor
and Casa de Esperanza master of ceremonies and auctioneer. “I fell in love with the people behind Casa de Esperanza, and so many volunteers latch onto it because of those incredible individuals.” Brenda Koch, Tom’s wife and fellow Casa volunteer, says that the group’s genuine investment in the community is what has kept her, her two daughters, and her husband around as volunteers all these years. “It’s the kind of place that makes you look at your own family and realize how truly blessed you are,” she says. “This group works together so children are receiving the things that many of us take advantage of every day, like clothes to wear, dinner at the table, a place to sleep at night...” On Feb. 10, 2018, the Casa Young Professionals will host their annual Chili Cook-off at Kirby Ice House. With team registration opening up in November 2017 at casahope.org, the group is hoping to top the $70,000 they raised last year to help even more families in need.

STStyle YL EStatement STATE MENT Pretty Little Things owner Nikole Davis
A passion for fashion celebrates five years in the Kingwood community.
A
local Texas girl, Nikole Davis always knew she was business-minded, but wasn’t quite sure where that drive would take her. She received a degree in education from University of Houston; but during a retail summer internship, Davis realized she wanted to open a boutique of her own. After months of searching for the perfect store location, she and her mother took a “pity party lunch” at Sharky’s in Kings Harbor when she noticed the empty storefront across the street. “We saw it and thought, what about this space?” Davis recalls, “and so we called and it all fell together!” In August 2012, Pretty Little Things opened its doors to the Kingwood community. As a boutique owner, Nikole spends a lot of time getting to know her customers so she can personalize orders. “It’s hands on. When I’m there I know who I’m shopping for to give that individual touch,” says Davis. “It’s fun to feed off the community.” For example, she can shop for certain colors of the local high schools to ensure her items make a statement. When buying pieces for the store, Davis does her best to ensure that everyone can find something unique. “When I was in high school, I didn’t want to wear what other people were wearing. Clothing is a way to express your personality,” emphasizes Davis. “I try to carry that into the store because we’re in a community.” A typical order at Pretty Little Things contains only six to twelve items of each style. Each day there’s at least three to four new styles added to the racks. And once the item sells out, Davis rarely orders it again. “It’s great because people can come in weekly and not see

the same items or be afraid to match everyone at the event they’re going to,” says Davis. Inside the store you can find, well, lots of pretty things! By buying in small quantities, Davis can stay atop of the fashion trends. Right now, she’s loving bold earrings (especially those with tassels!), jumpsuits, dainty necklaces, and unique sleeves with ruffles or a statement bell shape. This fall, you can expect to see plenty of bright tees and distressed jeans on the racks, as well as two-piece matching shirt and short or skirt combos. One of the most popular Pretty Little Thing items is a graphic ballcap for a casual look. A few days after Pretty Little Things celebrated its fifth birthday, Hurricane Harvey hit and Lake Houston flooded the Kings Harbor complex with over five feet of water. Quickly rebounding from the shock of losing nearly all her inventory, her fixtures and her store, Davis relocated Pretty Little Things to a temporary popup location in Humble, where it will remain until the Kings Harbor storefront reopens. “Although everything has changed, opening the popup allows people to get a piece of normal back,” says Davis, who still maintains a full staff of eight on payroll. “Everyone wants to support and give back. Neighbors are always just stopping in to see us.” Davis continues to drive her business forward while planning her annual fall party and prepping for Black Friday, Shop Small Saturday and the upcoming holiday seasons. “Kings Harbor has been so good to us,” says Davis, looking forward to her return. Future goals for the store include expanding its presence online, maintaining sales growth and throwing a big grand reopening party with the other local business owners in Kings Harbor.
