1 cup sugar 2 tsp cornstarch

Put into top of a double boiler. Beat 5 to 7 minutes until stiff. Add 1 cup dates

3\4 cup walnuts

Drop onto baking sheet and bake 10 minutes

Prize Oatmeal Cookies Margaret Taylor 1 cup white sugar 1 cup brown sugar 1 cup margarine 2 eggs 2½ cup flour 1½ cup oatmeal 1tsp baking soda

¼ tsp salt 1tsp vanilla May add nuts, raisins, chocolate chips or coconut.

Cream sugar and margarine. Mix in eggs. Add dry ingredients and vanilla. Any additional ingredients are added last. Drop small balls on greased cookie sheet. Bake at 375 until lightly browned. Makes 6 doz. medium sized cookies.

Pfefferneuses Cookies Dorothy Knechtel 5½ cups sugar 4 cups molasses 2½ cup lard Boil and cool above ingredients. Mix 2 tbsp baking soda in ¼ cup hot water. Add to cooling mixture. Beat 6 eggs and add to cooled mixture. To 18 cups flour add ¼ oz cloves, 3 tsp pepper, 3 tsp cinnamon, 3 tsp allspice, 3 tsp salt. Add spiced flour mixture to cooled mixture. Mix well. Let rest overnight, covered. To bake, roll out and cut into diamond shapes. Bake at 350 degrees for 10- 15 minutes on ungreased cookie sheet. A8

~ Desserts ~ Pheffenusse’s Libbie via grandma Neumann Start with a very large pan for when the soda is added the mixture will rise quickly and overflow if the pan is not large enough. I use the bottom of a turkey roasting pan or a large kettle with that same capacity.

In the pan mix together: 4 cups molasses

1 ¼ lbs butter (4 ½ cubes) 5 ½ cups sugar

Bring this to a boil and add 2 tablespoons of soda dissolved in ½ cup of water. Keep stirring and then remove from heat when it stops rising in the pan. Let cool somewhat and add 6 lightly beaten eggs and start stirring in about 16 cups of flour. In some of the flour mix the following spices and add to the dough. 2 ½ teaspoons cloves 5 teaspoons cinnamon 5 teaspoons ginger 1 ½ teaspoons pepper 2 teaspoons salt Let set overnight and roll out the next day. Add flour if needed to keep from sticking to the counLunch for the crew at the Coleman’s (Bill and Judy) Michael Coleman, Ty Moore, Chad Coleman, Dashall Moore, Cory Coleman, Chris Coleman, Billy Coleman. Summer of 1982 ter. Cut in shapes and place on a greased cookie sheet or spray sheet with non-stick baking spray. Bake at 350 degrees for 10 to 15 minutes. I sometimes bake a small pan so I can judge how long to bake for the desired texture. The longer you bake, the harder they become and some like it that way so they can be dunked in milk or coffee! Suit yourself!

Snicker Doodles Libbie Coleman 1 cup shortening 1½ cup sugar 2 eggs 2 cup flour

2 tsp cream of tartar ½ tsp salt 1tsp soda

Cream together the shortening, sugar and eggs. Add dry ingredients and mix well. Place on cookie sheet 2 inches apart and sprinkle with sugar and cinnamon. Bake in a 400 degree oven.

~ Desserts ~ 7 Layer Cookies Pat Lyons 1½-2 cups graham cracker crumbs and

1 stick melted butter.

Mix together and press into a greased cookie sheet or 9x13 pan. 1 small package of each, chocolate chips, butterscotch chips, white chocolate chips,

1 cup favorite nuts, 1 cup shredded coconut. Drizzle over top one large can of sweetened condensed milk (6to8 oz).

Layer on top. Bake at 350 degrees for 20 -25 minutes or until chips have started to melt. Don’t over cook.

Pat’s Rolled- out Frosted Christmas Cookies Pat Lyons 1 egg 1 cup sugar 1 cup margarine 3 cups flour 1 tsp soda

1 tsp baking soda ¼ tsp salt 1 tsp vanilla A shake of nutmeg Cream margarine and sugar, beat in eggs and vanilla. Add dry ingredients and mix well. Chill 1 hour or overnight. Roll out the dough and cut into shapes. Bake at 350 degrees for 10 minutes. Cool. Make frosting 3 cups powdered sugar 1/3 cup margarine ½ tsp vanilla

2 tbsp milk Food coloring

Frost and add sprinkles or any other decorations.

Sunshine Cake Libbie Coleman 6 egg yolks 4 tbs water 1 cup sugar

Amarillo, Texas, 1946. Road trip, Joe Hudspeth.

1 cup flour 1 tsp cream of tater 6 egg whites

Beat the yolks and water until very stiff. Add the sugar slowly then flour and cream of tarter. Fold in the stiffly beaten egg whites. Bake in an angel food cake pan for 1 hour at 350 degrees.

4 cups sugar 2 cup lard (margarine) 10 eggs

2 tsp hearts horn (optional- used to bleach cookies ) 2 to3 tsp anise extract

Alternate adding 1 cup boiling water to about 14 cups flour Roll out and cut. Bake at 350 degrees 10 min frost with boiled frosting.

Boiled Frosting 2 cup sugar 2 tbs karo syrup 2/3 cup milk Boil to soft ball sage add 1 tsp anise

Chocolate Chip Cookies Dorothy Knechtel 1 cup flour ½ tsp soda ½ tsp salt ¼ cup brown sugar 1 egg beaten well

1-6 oz package chocolate chips 1/3 to ½ cup butter or margarind½ cup white sugar 1 tsp vanilla ½ cup nuts

Cream butter and sugar. Add beaten egg and mix well. Add flour, soda and salt, mix well. Add chips and vanilla. Drop onto ungreased baking sheet. Bake at 375 for 10-12 minutes. If desired add ½ cup raisins, chopped dates or shredded coconut.

~ Desserts ~ Molasses Cookies Libbie Coleman 3 1\4 cup flour 4 tsp baking soda 2 tsp cinnamon 1 tsp salt

½ cup margarine 2 cup sugar 2 eggs ½ cup molasses

Cream margarine add sugar mix till fluffy. Beat in eggs and molasses. Add dry ingredients blend well. Form into small balls and roll in sugar. Place 2 inches apart on an ungreased sheet. Bake at 350 degrees for 12-15 minutes.

Pfeffernusse Chris Buchanan version 4 cup sugar 2 cup margarine

2 cup molasses

Boil 5 minutes in large heavy pot. Cool about 5 minutes 2 tsp soda

1 cup hot water

Dissolve Soda in water, Let cool for 10 minutes 4 eggs Beat in the eggs with above mixture. Stir constantly, 7 cup flour 2 tsp cinnamon 2 tbs cloves

Let rest about 20 minutes before rolling out. Cut in traditional diamond shape or use cookie cutters. Bake 350 degrees for 8 minutes

Aunt Becky’s Cottage Cheese Cookies Pat Lyons 1½ cup shortening 3½ cup sugar 4 eggs 4 tsp vanilla 1 tsp soda

16 oz sm. Curd cottage cheese 5½ cup flour 1 cup cocoa 2tsp baking powder 1 pkg chocolate chips

Blend sugar, shortening, vanilla, eggs and cottage cheese. Mix dry ingredients. Add to shortening mixture. Stir in chips. Chill overnight. Drop by spoonfuls into powdered sugar. Roll into balls and bake at 350 degrees for 10-20 minutes. Interesting Fact: The cider press was made in 1849 brought to Fruitland in 1900 and is used in the annual cider pressing get together every fall

~ Desserts ~ Chocolate Nut Bars Chris and Judy We found this recipe in the paper. Very good but rich Crust 1½ cup flour 1 cup packed brown sugar

½ cup cold butter 1 cup chopped nuts

Mix together in a food processor all ingredients except the nuts press firmly in a 9x13 greased pan. Scatter nuts over the top of the crust. Bake in 350 degree oven. Carmel and Chocolate ¾ cup butter

½ cup brown sugar 1½ cup semisweet chocolate pieces

Melt butter and add sugar. Stir till smooth and bubbly. Pour over the crust and spread evenly. Bake 18 to 20 more minutes or until caramel is bubbly. Remove for the oven let stand 1 minute and sprinkle chocolate chips over top wait 2 or 3 minutes till melted then spread chocolate add nuts on top if desired. Refrigerate 30 minutes to set bars.

Chris’s Sugar Cookies Chris Buchanan 2 sticks butter 1/3 cup shortening 1 cup sugar ¼ tsp salt

1 egg 3 tbs milk 1 tsp vanilla ½ tsp lemon juice

Mix all together till creamy and add 3½ cup flour 1 tsp soda

1 tsp cream of tarter

Chill and roll out and use cookie cutter if desired. Bake at 350 degrees.

Yellow Whipped Cream Cake Jennie Hudspeth 2¼ cup flour 3 tsp baking powder ½ tsp salt 1½ cup sugar

3 eggs 1½ cup whipped cream 1½ tsp vanilla

Mix flour, baking powder and salt. Set aside. Beat eggs until light. In a separate bowl, whip cream until it just begins to stiffen. Fold beaten eggs and vanilla into whipped cream. Blend flour mixture into batter. Pour into two 9 inch round greased layer pans; bake in 375 degree oven for 25 to 30 minutes.

Interesting Fact: Did you know Chad and Libbie Coleman met and dined with the emperor of Ethiopia, Haile

Salassie? In 1971/1972 Chad directed the clinical surgery department of a veterinarian college in Debra Zeit, Ethiopia. The college was of special interest to the emperor, who traveled from the capitol each year to attend the graduating ceremonies and participate in the celebratory dinner.

~ Desserts ~ Raisin Cake Libbie Coleman 1½ cups sugar ½ cup margarine 2 eggs 2½ cups raisins 3 cups flour Salt 1 tsp cinnamon

½ tsp cloves ½ tsp nutmeg 2 tsp soda 1 cup raisin juice

Cook raisins slowly in water for 15 minutes. Cool. Have 1 cup of raisin juice to add to cake. Cream margarine, sugar and eggs. Add soda to raisin juice. Add liquid and dry ingredients alternately. Bake at 350 degrees for about 1 hour.

Texas Sheet cake Rons Aunt recipe Bring to boil 2 sticks margarine 1 cup water

4 tbs cocoa

Remove from heat and add 1 box powered sugar 1 tbs vanilla 1 cup nuts

Ice cake as soon as it’s out of the oven

Interesting Fact: Did you know that Captain Robert Schimanski (son of Augusta Nuemann Schimanski) was

credited with the destruction of 10 German planes during WWII. As a squadron leader, he never lost a man under him and his group was awarded a presidential unit for destroying 571/2 German planes against a loss of two. He flew 70 missions in his P-51 Mustang and never took a flak hit or a scratch on his plane from enemy fighter fire. “I was exceptionally lucky,” he was quoted as saying.

2 large eggs 1 tsp pure vanilla extract

Blend altogether with mixer for 1 minute on low scrape sides. Beat 2 more minutes on medium speed. Pour batter into a greased 9x13 pan. Bake at 350 degrees for 30 to 35 min. Glaze 1 cup sugar 1/3 cup butter

1/3 cup milk 1 package semisweet chocolate chips

Mincemeat Coffeecake Libbie Coleman ½ cup margarine 1 cup sugar 2 eggs 2 cup flour2 tsp baking powder ¼ tsp salt 1 tsp lemon extract 7/8 cup milk 1 cup mincemeat

¼ cup chopped nuts Topping 2 tbs melted butter 2 tbs brown sugar 1tsp cinnamon

Cream margarine and sugar, stir in well beaten eggs. Add lemon extract into milk and stir mixture. Alternately add milk mixture with dry ingredients to margarine mixture. Combine mincemeat with nuts. Spread 2/3 of batter in greased pan then dot with 2/3 of mincemeat by teaspoonfuls. Cover with rest of batter and mincemeat. Add topping. Bake at 350 for 45 min. Serve hot.

Interesting Fact: Did you know that Chad Coleman was the navigator on B-25’s during WWII? On one of his

missions his aircraft was shot down and landed behind enemy lines north of Italy. There, he and his crew mates were hidden and escorted by Tito partisans to the Italian border. American officers had been instructed to give their arms to the underground when such an opportunity presented itself, so Chad gave one of the men his colt 45. The man then presented Chad with a switchblade, which is still in the family.

~ Desserts ~ Sis’s Red Devil Food Cake Libbie Coleman 1 cup sugar ¼ cup margarine 2 eggs 2 oz baking chocolate ½ cup sour milk

½ cup boiling water 1½ cup flour 1 tsp soda 1 tsp vanilla ½ tsp salt

Cream the margarine, sugar and eggs beat hard. Add the sour milk and flour and salt mixture alternately. Add the chocolate to the boiling water stir quickly, add the soda while mixture is boiling hot. Stir until thickened and add to the cake mixture. Add the vanilla, beat hard, pour into a deep square pan and bake 40 minutes at 350 degrees.

Fudge Cake Ron Buchanans Mom ¾ cup butter 2¼ cup sugar 1½ tsp vanilla 3 eggs 3 (1 oz) square unsweetened chocolate (melted) 3 cup sifted cake flour

1½ baking soda ¾ tsp salt 1½ cup ice water

Cream butter, sugar and vanilla with mixer. Add eggs beating until light and fluffy. Add the melted chocolate and blend well. Sift together the dry ingredients add alternating with the water to the chocolate mixture. Pour the batter into 3 8 inch layer pans which have been greased and lined with waxed paper. Bake in a moderate oven 300 degrees 30 to 35 minutes. Cool. Put layers together with Date Cream Filling. Date Cream Filling 1 cup milk ½ cup chopped dates 1 tbs flour

¼ cup sugar 1 egg beaten ½ cup chopped nuts 1 tsp vanilla

Combine milk and dates in double boiler. Combine flour and sugar and add beaten egg blend until smooth. Add to hot milk mixture cook stirring, until thick. Cool Fudge Frosting 2 cup sugar

1 cup light cream

2 (1oz) squares unsweetened chocolate grated. Boil over high heat 3 minutes without stirring. Reduce heat and continue cooking until it reaches the soft ball stage. Cool. Beat and add more cream if to thick.

Interesting Fact: Did you know that Guy and Maggie’s Centurion T-210 suffered a catastrophic engine failure

while climbing out of Ensenada, Mexico on Thanksgiving day in 1999? Guy landed the plane with no power, gear up, over a barbered wire fence and under electric lines in a field of oats. Guy, Maggie, all the children plus the family dog were unharmed, and gave the already cooked Thanksgiving dinner to the farmer’s family for use of their field!

~ Desserts ~ Sour Cream Coffee Cake Jennie Hudspeth 1 ¾ cup sour cream 2 eggs 1 cup sugar 1 ¾ cup flour

1 tsp soda 5 tbs cocoa 1 tsp vanilla

Beat together sour cream and eggs. Add sugar, flour, cocoa to eggs then mix soda in just enough water to dissolve, about 1\4 cup, add to mixture. Bake at 350 degrees.

Pumpkin Layer Cheesecake Chris Buchanan 8 oz soft cream cheese 1 tbs milk 1 tbs sugar 1½ cup whipped topping thawed 1 ready made graham cracker pie crust 1 cup cold milk 1 package vanilla instant pudding 16 oz can pumpkin 1 tsp cinnamon ½ tsp ginger ¼ tsp cloves Mix cream cheese, 1 tbs milk and sugar in large bowl with a wire whisk until smooth stir in whipped topping. Spread cream cheese mixture over graham cracker crust. Pour remaining milk and pudding mix in another bowl and mix until well blended mixture will be thick. Stir in pumpkin and spices. Garnish with whipped topping and serve.

Mom’s Fudge Libbie Coleman 2 cups sugar 2 tbs corn syrup 2 squares chocolate

2 tbs butter ¼ tsp salt 1 tsp vanilla2/3 cup nuts

Combine sugar, syrup, milk and chocolate. Stir until it boils; boil until it makes a soft ball in cold water. Then take it off and add your butter, nuts and vanilla and let cool a while. Beat till it loses its shine. Pour into a buttered pan.

Interesting Fact: Did you know that Dorothy Knechtel graduated from high school in Montana at age 16, worked

for board and room in Spokane while she attended Kinman Business School? As the first “wage earner” of the family (her folks being self-employed farmers) she spent her extra earnings sending home gifts for her siblings and parents.

~ Desserts ~ Irish Soda Bread Libbie Coleman 4 cups flour 1 tsp salt 3 tsp baking powder 1 tsp soda ¼ cup sugar

1/8 tsp coriander (optional) ¼ cup margarine 1 egg 1¾ cups buttermilk

Combine in a large bowl the flour, salt, baking powder, soda, sugar, and spice. Add the butter or margarine and cut in with a pastry blender or two knives until crumbly. Beat egg slightly and mix with buttermilk add to dry ingredients and stir until blended. Turn out on a floured board and knead until smooth. Divide dough in half and shape each into a round loaf place each loaf in an 8 inch cake pan. Press down until dough fills pans. With a sharp knife cut crosses on tops of loaves about ½ inch deep in the middle. Bake at 375 for 35 to 40 minutes.

Oatmeal Carmelitas Chris Buchanan 50 (14 oz package) light candy caramels ½ cup evaporated milk 2 cup flour 2 cup quick oats 1½ cup firmly packed brown sugar 1 tsp soda ½ tsp salt

1 cup butter melted 1 cup semi-sweet chocolate chips 1 cup pecans

Melt caramels in milk in a heavy sauce pan. Cook slightly set aside. Combine remaining ingredients (except chocolate and pecans) in large bowl. Press half of the crumbs into the bottom of a greased pan, bake for 10 min. Remove from the oven sprinkle with chocolate and pecans spread with caramel mixture sprinkle with the rest of the crumbs. Bake 15 to 21 minutes longer or till golden brown. Chill 2 hours and cut into bars.

Interesting Fact: Did you know that Maggie and Guy were evacuated out of Iran during the rebellion of 1979?

Maggie was 6 months pregnant with Trevor and carried Jerome in a front pack - she was on the last “official” flight out and it was so crowded she sat on the stairs to first class on a 747. Guy stayed behind to bring their belongings and was taken hostage for 10 days before his company negotiated a release for him.

~ Desserts ~ Vanilla Fudge -

or alter to create mint or orange fudge

Chris Buchanan 2 cup sugar ½ tsp salt 1 cup milk

1 tbs butter 1 tsp vanilla ½ cup marshmallow cream

In a 3 quart glass bowl combine sugar, salt milk; microwave 12 to 14 minutes at 100 % power, stirring every 4 minutes until syrup reaches the soft ball stage (234 degrees). Stir in butter. Cool to lukewarm without stirring. Add vanilla and marshmallow crème, stir until fudge becomes very thick and loses its gloss. Spread in a buttered 8x8 inch pan. Cool. Cut into squares.

No Fail Fudge Chris Buchanan 3 cup sugar ¾ cup butter 2/3 cup evaporated milk 1 package semi sweet chocolate pieces

1 jar (7 oz.) marshmallow crème 1 cup walnuts 1 tsp vanilla

In a 3 quart glass bowl buttered combine sugar, butter and milk, microwave 8 to 9 minutes at 100 % power, stirring occasionally. Stir in chocolate until melted. Stir in marshmallow, nuts and vanilla, mix well. Pour into a buttered 9x13 inch pan. Cool cut into 95 pieces

Peanut Butter Fudge Chris Buchanan

2 cup sugar 1 cup milk ½ cup margarine 1½ cup chunky peanut butter 1 tsp vanilla 1 (10 ounce) jar marshmallow cream In a 3 quart glass bowl combine sugar, milk, and margarine; microwave 8 to 9 minutes at 100 % power. Stirring occasionally. Stir in peanut butter and vanilla; stir until smooth. Pour into a buttered 9x9 inch pan. Cool Cut into 72 pieces

~ Desserts ~ Pumpkin Pie Jennie Hudspeth - Her own recipe 1 cup sugar ½ tsp ginger 1 tsp cinnamon ½ tsp cloves 1½ cups cooked strained pumpkin ½ tsp nutmeg ¼ tsp salt 1½ cup milk Mix ingredients and pour into deep unbaked pie crust. Bake 10 min in hot oven lower fire and bake in moderately slow oven 50 min.

Chocolate Passion Bowl Chris Buchanan 3 cup cold milk 2 pkg (4 serving size) Jello chocolate pudding 1 tub cool whip thawed, divided

Brownies cut into 1 inch cubes 1 pt raspberries

Pour milk into large bowl add dry pudding mix beat with a whisk 2 minutes or until well blended. Gently stir in 1 cup of the whipped topping. Place 1\2 of the brownie cubes in a 2 quart serving bowl top with half of the pudding mixture and half the raspberries and half the whipped cream. Repeat all layers. Refrigerate at least 1 hour. Makes 16 servings.

Dorothy’s Peanut Brittle Pat Lyons 2 cup sugar 1 cup white corn syrup ½ cup water 3 cups raw peanuts

3 tsp soda 1 tbsp butter 1 tsp vanilla

Boil sugar, syrup, and water until it spins a thread (almost hard crack). Add peanuts and boil until golden brown. Remove from heat. Add soda, butter and vanilla. Pour onto well buttered cookie sheet and allow to cool. Break into pieces and store.

Margaret’s Gingerbread Margaret Taylor ½ cup sugar 2 tbs shortening 1 egg 1 cup buttermilk 1 cup molasses 2½ cup flour ½ tsp nutmeg

Mix altogether top with brown sugar and nuts before baking. Bake at 350 degrees for 50 minutes.

Chocolate Chip Cream Cheese Bars Margaret Taylor 1 package fudge cake mix 2 eggs 1/3 cup vegetable oil

1 cup chocolate chips 1-8oz pkg. cream cheese-softened 1/3 cup sugar

Mix dry cake mix, 1 egg and oil until crumbly. Set aside 1 cup for topping. Pat remaining crumb mixture into ungreased 9x13 pan. Bake 15 minutes at 350. Beat cheese, sugar and 1 egg until light and smooth. Stir in chocolate chips. Spread over baked layer. Sprinkle with crumb mixture. Bake 15 minutes longer. Cool before cutting. Makes 3 dozen bars.

~ Desserts ~ Soft Peanut Brittle Libbie Coleman 2 to 2½ cup peanut butter 2 cup salted peanuts 1 tsp vanilla

Mix the above and set aside In a heavy saucepan combine 2 c sugar and ¼ cup water. Bring to a boil over high heat. Spoon hot sugar syrup up the sides of the pan to wash down sugar crystals thoroughly. Stir in 1½ cup light corn syrup lower heat to simmer and cook to 300 to 310 degrees. Remove the syrup from the heat. Immediately stir in peanut butter mixture and 1½ tsp baking soda. Quickly pour onto a greased cookie sheet and spread with a fork (helpful to have a 2nd person doing the spreading while you do the pouring). Yields about 3 pounds

In a 3 quart buttered glass bowl combine sugar, syrup and salt microwave 8 to 9 minutes stirring half way through. Stir in peanuts microwave5 to 7 minutes stirring every 2 minutes until syrup and peanuts are a light brown, stir in butter until melted. Stir in baking soda until light and foamy. Stir in peanut butter. Pour into greased metal baking sheet. Cool then break into pieces.

~ Desserts ~ Almond Toffee Crunch Chris Buchanan ½ cup butter 11/3 cup sugar 2 tbs water 1 tbs light corn syrup 1 cup blanched almonds coarsely chopped

1 cup blanched almonds finely chopped 1 8 to 10 oz package semi sweet chocolate chips

In a 2 quart casserole microwave butter 1 minute to melt. Swirl the butter around to coat all sides. Add sugar, water and corn syrup, stir, microwave 10 to 12 minutes stirring every 4 minutes to hard-crack stage (300). Stir in the coarsely chopped almonds. Pour into a well greased metal baking sheet. Sprinkle with ½ the chocolate chips let stand 2 minutes Spread chocolate over toffee. Let cool thoroughly turn onto waxed paper. Microwave remaining chocolate at 50% power stirring every minute till smooth. Spread evenly over the unfrosted side of the toffee sprinkle with the finely chopped almonds. Chill until firm then break into pieces.

Potato Pancakes Libbie Coleman 3 large potatoes 1 small onion 2 eggs

½ cup flour salt and pepper to taste oil for frying

Grate potatoes and onion together. Add unbeaten eggs, stir add flour, salt and pepper. Pour oil in pan and when very hot spoon in potato mixture about ¼ cup for each pancake. Pat lightly with a spoon to spread to desired thickness. Fry on both sides until golden brown. Drain on a paper towel lined plate.

Green Beans and Tomatoes Libbie Coleman 2 tbs olive oil ½ small onion thinly sliced 1 clove garlic 2 large ripe tomatoes chopped

Salt and pepper to taste 1 tbs chopped fresh oregano 2 lbs thin early fresh green beans

Prepare the beans by removing top and tails, steam about 8 minutes, drain and immediately plunge in cold water drain again and set aside. Heat oil in a heavy saucepan over low heat. Cook the onion until just translucent 5 or 6 minutes stir in garlic. Cook gently 1 minute. Stir in the tomatoes and season with salt and pepper and oregano. Cook until tomatoes are wilted about 4 minutes. Stir in the green beans and heat through.

Carla Coleman & Maggie Shelton 1 medium sized onion, chopped 3 Tbl. olive oil 1 ½ pounds lean ground beef 1 clove garlic, minced 2 cans (8 oz. ea.) tomato sauce 1 can (6 oz.) tomato paste ½ c. each dry red wine & water (or 1 c. water if you accidentally drink all the wine) 1 tsp. each salt and oregano ½ tsp. each pepper and sugar 12 oz. lasagna noodles

Boiling, salted water 1 pound (2 c.) ricotta cheese or small-curd cottage cheese ½ pound mozzarella cheese, thinly sliced . . . or grated ½ c. grated parmesan chees

In a large frying pan that has a cover, sauté onion in oil until soft; add beef and garlic, and cook, stirring, until meat is brown and crumbly. Stir in tomato sauce, tomato paste, wine and water. Add salt, oregano, pepper and sugar stirring until mixed. Cover pan and simmer slowly about 1 ½ hours. Meanwhile, cook noodles in boiling, salted water as directed on the package, until tender, about 15 minutes. Drain thoroughly, rinse with cold water, and drain again. Arrange about 1/3 of the noodles in the bottom of a 9 by 13-inch shallow casserole dish. (Lay one layer of noodles lengthwise in the dish and next layer crosswise. Alternate this way as you continue to arrange the dish.) Spread 1/3 of the tomato sauce over the noodles; top with 1/3 of the ricotta and mozzarella cheese. Repeat this layering two more times. Top with the Parmesan. Bake uncovered in a 350 degree oven for 30 minutes. Makes 6 to 8 servings. Spicy Lasagna Variation: Substitute ½ pound Italian sausage for ½ pound of ground beef. Remove the sausage casing, and brown with the beef.

~ Dishes ~ Hash Brown Quiche Martha Dickinson 1 24 oz pkg frozen shredded hash browns thawed 1/3 cup butter , melted 1 cup shredded jalapeno cheese 1 cup shredded jack cheese 1 cup diced cooked ham

2 large eggs ½ cup milk ¼ tsp seasoned salt

Press hash browns into greased 9” pie pan to form crust. Brush with melted butter. Bake 25 minutes at 425. Reduce heat to 350. Fill crust with cheese and ham. Whisk together eggs, milk and salt. Pour into pan and bake 30-40 minutes or until knife inserted in center comes out clean.

Tostado Casserole Becky Knechtel 1½- 2 pounds ground beef 1-15 oz can tomato sauce 1 can whole kernel corn 1 package taco seasoning 1 package corn tortilla chips 1 small Velvetta cheese

1 small Monterey jack cheese with jalapeno 1 can refried beans

Brown the hamburger and drain grease. Add taco seasoning and ½ of the tomato sauce. In a bowl add the other ½ tomato sauce, refried beans and corn together and stir well. Layer crushed chips on the bottom of a 9x13 pan. Spoon on the hamburger, cheese, layer the refried beans mixture over the top. Don’t use all the cheese and crushed chips. Cook for 25 minutes at 350. Remove from oven and layer more cheese and chips on top. Cook for about 5 minutes more or until cheese is melted.

~ Dishes ~ Chicken Breasts with Curry Chutney Butter Carla Coleman 1 cup very thinly sliced carrots 1 cup very thinly sliced zucchini 4 tsp cold water 4 skinned boneless chicken breasts ½ tsp salt ¼ tsp pepper ½ cup chutney

2 tbs butter 1 tbs curry powder¼ cup chopped peanuts 4 tbs flaked coconut

Preheat oven to 500. Tear off four 14 x 12 sheets of aluminum foil. Lightly butter center of lower half of each sheet. Place ¼ of the carrot and zucchini on buttered part. Sprinkle with tsp of water. Lay chicken breast on top and add salt and pepper. Mix chutney, butter and curry in small bowl. Spoon over the chicken divided equally. Sprinkle each with peanuts and coconut. Seal pocket tightly. Place on cookie sheet preheated in oven for 2 minutes. Bake pocket on hot sheet for 10 minutes.

Meat Loaf Libbie Coleman 2 lbs ground chuck 1 envelope Lipton Onion Soup Mix 2 eggs beaten

¼ to 1/3 cup catsup 2 slices bread torn up ¾ cup warm water

Preheat oven to 350. In medium bowl lightly mix together meat with soup mix, eggs, catsup, bread and water. Shape into loaf, place in a shallow baking pan or loaf pan. Bake 1 hour.

8 oz cream cheese softened 6 green onions chopped Other 1-12 oz curly noodles ½ cup grated cheddar cheese

Preheat the oven to 350 degrees. Brown the meat along with the garlic, salt and pepper. Drain the meat. Add the tomato sauce and simmer for 15 to 20 minutes. Blend together the cheese mixture and onions set aside. Cook the noodles drain and set aside. In a 9 x 13 pan layer half of each of the ingredients in the following order then repeat: noodles, cheese mixture, meat mixture. Top with grated cheese. Place in a preheated oven for 35 minutes or until heated through.

Zucchini Bread Dorothy Knechtel 3 eggs 1 cup oil 1 cup sugar 1 cup brown sugar 2 cups grated raw zucchini 1 tsp soda 1 tsp cinnamon

1 tsp vanilla 3 cups flour ½ tsp salt ¾ tsp allspice ½ cup walnuts

Mix all ingredients and bake in a 350 degree oven for 1- 1\2 hours or until test done with tooth pick comes out clean.

Banana Bread Judy Coleman 1 cup butter 2 cup sugar 4 eggs ¼ tsp salt

2 tsp soda 4 cup flour 6 large bananas 1 cup walnuts

Cream butter and sugar add eggs on at a time mix well. Add dry ingredients stir in bananas and walnuts. Pour into 2 greases loaf pans and bake at 325 degrees for 1 hour 15 minutes or until test with toothpick comes out clean.

Tamale Pie Angie Buchanan 1 lb ground beef 1 chopped onion 1 (16 oz) can tomatoes 1 can corn drained 1 tbs sugar 2 to 3 tsp chili powder 1 cup chopped green pepper

1 clove garlic minced 1 (6 oz) can tomato paste 1 can sliced ripe olives 1 tsp salt and a dash of pepper 1½ cup cheese

Put it all in a crock pot, top with corn bread and cook on low all day or high for 4 to 5 hours.

Mexican Beef and Bean Angie Buchanan 6 corn or flour tortillas 1 can beans 1 can cream of mushroom soup 1 can cream of chicken soup

1 can rotel tomatoes with juice 1 lb ground beef 1½ cup cheese

Mix all the ingredients together except tortillas. Layer the tortillas then mixture in several layers. Cook in crock pot low 6 to 8 hours high 3 to 4 hours.

Crabbies Carla Coleman ¼ cup butter 2tbs mayonnaise ¼ tsp garlic salt 1 6½ to 7 oz. can crabmeat

1-5 oz jar Old English sharp cheddar ½ tsp seasoned salt 6 English muffins

Mix all ingredients except muffins in a bowl. Spread mixture on the 12 muffin halves and cut into fourths. Arrange on cookie sheet and broil until they puff, bubble and brown. Serve hot.

Old Fashioned Sweet and Sour Cole Slaw Libbie Coleman 1½ lb shredded green cabbage 1 tsp salt 2/3 cup sugar

1/3 cup cider vinegar 1 cup whipped cream or half and half

Place shredded cabbage in a covered dish in refrigerator for several hours. Mix ingredients in order given 30 minutes before serving. Chill and serve.

Chiles Rellenos Casserole Libbie Coleman 1 lb cheddar cheese grated 1 lb jack cheese grated 2 -4 oz cans whole green chiles seeded and drained

3½ cups milk 4 eggs ¾ cup flour 1½ tsp salt

Place ½ cheese in bottom of rectangular baking pan(9x13). Split chiles open, remove seeds and drain on a paper towel. Place on top of cheese in pan. Beat milk with eggs, flour, and salt until smooth. Place remaining cheese on top of the chiles and pour egg and milk mixture over the top. Bake at 350 degrees for 1 hour or until set.

Roasted veggies Macky Neumann 1 cup mayonnaise 2 tbs horseradish sauce 2 tbs Pest sauce or 1/3 cup chopped basil ½ cup olive oil

4 tbs cider vinegar 2 tsp minced garlic 1 tsp salt and pepper

In a 9x13 pan arrange a variety of veggies cut into sizes that will bake in approximately the same time. Any vegetable will do. Arrange in separate groups in the pan. Drizzle ½ of the dressing over the veggies and bake at 450 for 35 minutes or until done. Warm remaining dressing and serve at the table for extra sauce.

~ Dishes ~ Spaghetti Maggie Shelton Most of the main meals I’ve cooked over the years I do without a recipe. What I put in them, including this one, varied, depending on what I had on hand at the time and how much time I had to make it. I’m a great believer in filling the house with good smells, so the longer something is bubbling in the pot, oven, or crock-pot, the better. My first choice for ingredients are always the fresh ones, followed by dry, canned or frozen. Fortunately, I’ve never been a perfectionist concerning my cooking. Getting three meals a day on the table for six people no matter where you are, and with whatever budget you’re working with, does not allow for perfectionism! That’s not to say my meals were without a great deal of heart – in fact, if I were to find fault with any of my cooking it would be that I always put too much love into the meals – any rejection of it I took personally, as my family knows! When we lived in Tustin, California, we had a good friend who lived a block down the street from us. We called her Mrs. Santy, shortened from Mrs. Santiago to make it easier for Skyler and Lizzy to say as toddlers. She was an elderly woman from Sicily, plump and silver-haired with a delightful Italian accent. She was part of our family-scape while the kids were growing up, and I miss her still to this day. She was a fabulous cook, and always had this to say about Italian cooking; “Everything must begin with olive oil, onion, and garlic. Without that, it isn’t Italian.” I hear her words every time I start an Italian dish. Sauté until brown in olive oil;

1 or 2 onions, chopped 1-5 cloves of garlic, minced Brown separately or together; 1 to 3 pounds of ground beef

1 to 2 packages of fresh Italian sausage, any flavor, or, kielbasa sausage, any flavor.

Chose from the following and combine in whatever way you wish for the sauce. If you are going to simmer it for several hours, it will thicken some. Either start with a thinner sauce or plan on watching it and adding liquid as you go. Chopped tomatoes, I prefer romaine if I have them Canned chopped tomatoes

Chose from the following to season the sauce, keeping in mind that as it simmers, the flavor changes, so start on the conservative side. Fresh basil and/or oregano, chopped fine Dried basil, oregano, or Italian seasonings

Combine the onion, garlic, meats, and tomato sauce. Simmer it from 30 minutes to all day in a crock pot. At some point you can add any of the following, remember some like squash should go in toward the end to avoid being over-cooked. Mushrooms, fresh or canned (You can sauté the fresh ones with the onion and garlic) Bell peppers

Corn, fresh or canned

Serve over pasta, top with “stinky cheese” (parmesan cheese in the green container) or fresh grated parmesan cheese. Side dishes, hot buttered Italian bread and Caesar salad.

~ Dishes ~ Curry Libbie Coleman 4½ lbs boneless chicken breasts cut in chunks 1 large onion 8 cloves garlic minced 6 jalapeño peppers chopped 1 green pepper chopped

Salt to taste 4 tbs curry powder 4-14 oz fat free chicken broth cans

Saute onion, green pepper and jalapeño add minced garlic near end of sautéing. Remove from the pan, add oil and brown chicken. When browned add curry powder. Add veggies and broth and simmer until done. If necessary thicken the broth with flour water mixture. Serve over rice.

Fall Apart Meat Maggie Shelton 2 pounds of beef cubed steak 1 26 oz can of cream of mushroom soup

1 package of Lipton onion soup mix Milk or water to thin.

Mix together in a bowl the mushroom soup and onion soup mix. Add the milk until you get the consistency you would desire for a gravy. In a 9 x 12 pan spread a thin layer of gravy on the bottom, then place the meat on top. (It usually comes in a 1 pound package of four separate pieces). Spread the gravy on top of the meat, and then lay down the rest of the meat, and cover all with the remaining gravy. Cover with tin foil and cook at 350 degrees for two hours. Take the foil off and cook for another hour, for a total of three hours. This works well in a crock pot also, basically cook it all day. Serve with mashed potatoes and peas.

Dorothy’s Laundry Soap Margaret Taylor 1 gal grease 2 cans lye dissolved in 2 quarts water

4 tbs borax powder (20 mule team) 2 cup ammonia

Heat grease and lye to lukewarm add dissolved borax the ammonia. This cuts the grease better with the ammonia and borax. Just before it sets it can be crumbed up to make soap powder or set to harden then cut into bars.

Green Peppers Tomatos Salsa

Crack 2 eggs into a Ziploc bag shake to combine. Put out a variety of ingredients such as cheese, ham, onions, green pepper, tomato, hash browns, salsa, etc. Have each guest add ingredients of their choice to the bag. Make sure all the air is out of the bag and zip it up. Place the bags into rolling, boiling water fir exactly 13 minutes. Open the bag and the omelet will roll out easily.

Bacon and Maple Syrup Turkey Mike and Lesli Coleman 10-15 lb Turkey 2 lb Bacon (sliced) 3 Cups REAL Maple Syrup 1 Onion 3 Apples Salt

Cracked Pepper Rosemary Sage ½ cup Appricots ½ cup Walnuts

Preheat oven to 400 degrees. Wash turkey well under cold running water. Pat dry. Remove excess fat from cavity. Tuck wings underneath body. Season skin and cavity of turkey generously with salt, cracked pepper, rosemary and sage. Cut the apples and onions into quarters and place insde the cavity of the turkey. Whatever does not fit place inside the pan along the side of the turkey. Cover the turkey with one cup of syrup. Use a brush if necisssary. Place bacon strips ontop of turkey. Make sure no turkey skin shows through. If you have extra bacon start to double wrap the bacon around the breast and thighs as the bacon will shrink once cooked. After all the bacon use another cup of syrup and cover all the bacon. Place turkey in oven and reduce heat to 350. Cook for 3 to 4 hours. Baste turkey every half hour with all the syrup and juices. Half hour before the turkey is done remove all the bacon, baste turkey and place back in oven. The bacon is great for snacks, or BLTs, save it.

~ Stories ~ Excerpt from My Family Memoirs Marie Louise (Billie) Neumann Berry talking about her grandparents Adolf Von Neumann and Caroline Louise Augusta Wien Neumann My father, Werner Ludwig Marten Neumann was born December 18 1862 in Wolzegarten, near Waren in the State of Mecklenberg, Germany. He was the son of Adolf Von Neumann and Caroline Louise Augusta Wien Neumann. His ancestry dates back as far as May 1710 when his great, great grandfather Daniel Mathias Von Neumann was born in Gustrow, Germany and died on July 10, 1775. His son Johann Andreas Von Neumann born in 1748 in Gustrow was a Barrister and became my fathers great-grandfather. He died in 1817. He had a son George Carl Daniel Von Neumann, born in 1780 (my fathers grandfather) who married Elizabeth Catherine Stuve. Their son, Adolf Von Neumann was born January 10, 1818 married Caroline Louise Augusta Wien and became the parents of my father and his 6 brothers and three sisters. On my fathers mothers side Caroline Wien was the daughter of Charlotte Passow and Freidrich Wien who married in 1822. She was the granddaughter of Freidrich Wilhelm Passow who was born on August 3, 1764 He married Johanna Susemihl in 1796. Freidrich was the son of Detloff Freidrich Passowborn in 1724. He married Christine Ave in 1758. My fathers first home was a lovely and massive home situated on a huge estate where if one stood in the front of the house could see five lakes. It was in this house that his brothers and sisters were born. The property was leased and when the lease ran out the owner wanted it for himself. The family had to leave the home where all the children were born, where they swam in the lakes in the summer and skated in the winter. They looked back on it now as “Paradise lost�. The family moved to Gustrow for a year and eventually found their new home called Wulfshagen which became their new found Paradise. It was leased for ninety-nine years in 1868, with two thousand acres of land situated not on, but near the Baltic Sea. My Grandfather Adolf, was the administrator and had many hired helpers who lived with their families in separate brown houses situated almost like little villages within the estate. In the home, Grandmother Caroline managed the servants who consisted of a cook, first maid, plus girl servants who helped with the food preparation, cleaning and waiting on tables. The dining room, furnished in fine mahogany, could seat thirty. There was also a very large kitchen and pantry and adjoining was a room with a big bake stove where all the bread was baked for the family as well as the workers. No bread was ever purchased . My Grandmother was wonderfully kind to her help and was dearly loved. They were all furnished with the same colors of dress alternating years, wearing red, blue or green with white aprons. When she died they all wore black for a whole year to show their love and respect for her. The cemetery is still located on the estate where my grandparents, aunts and uncles (including Uncle George who came to America in 1884, but died while visiting Wolfshagen in 1935) are all buried. When my father was 21 was doing Army duty, which he detested, he decided to ship out in order to follow his two brothers, George and Hans, who had already departed for America. Dad met up with his two brothers in Milwaukee and with the three thousand dollars each on them had been given used the money to start a cheese factory. Unfortunately in a few months it mysteriously burned down. Fortunately they had insurance. Having heard of the fabulous hunting and fishing grounds in Washington State, set out for the West. Neither of his brothers married but what changed the whole picture for my Dad was when in 1891 he was

sent word the Dorothea Techlenburg and her two daughter and a son from Gustrow were on their way. The Techlenbergs and the Neumann families knew each other and the two mothers were close friends. They had arranged for one of the Techlenberg girls , Augusta, and young Werner Neumann to meet and before he left Germany, they had an understanding. In other words, they were betrothed! So because on this bethrothal, she packed up her family and boarded a ship (Normannia June 1, 1891) for New York. Young Werner and his fiance were married and in one year on August 28, a son named Adolf came and just two months less that a year later on June 17, a daughter Augusta named for her mother, was born. Sadly , the mother died giving her birth. Younger daughter Elizabeth, seventeen years of age, lived with a family with young children in Bossburg across the Columbia River. The grandmother stayed to help with the two babies but eventualy she became very ill and Elizabeth was sent for. Her mother Dorothea soon joined her oldest daughter in death. So... it was on December 6, 1894 she and her brother-in-law Werner, With the two babies in the rear of the wagon covered with a featherbed to keep them warm. set out for Davenport to be married. Not quite a year later on October 20, 1895, sister Martha was born,. On October 23, 1896, Jennie came into the world, Ester in 1889, Carla in 1900, Otto in 1905, Frederick (Fritzi) in 1907 and in 1908 Dora was born but died in infancy and on March 31, 1910 I was born. Of necessity a larger home was built on about 360 acres of land on which wheat and alfalfa were grown to feed the cattle and hogs, But the blow came when the house burned down to the ground in 1919 and everything was gone. Using the insurance money, a meager $2,500, he purchased eighty acres of adjoining and paid $12,000 for the land. Of course it did have a house on it and I supposed he thought that that was the best thing. In 1941 my parents moved to Spokane. They lived with my husband, myself and our daughter for six months until the found a nice little house for themselves. The very first day as my mother was busy getting things in order , she suffered a paralysis from her waist down. Sadly the home they purchased had to be sold . Finally they found an apartment on the ground floor of a building near grocery and other stores. They got along quite well for several years until 1951 when she became very ill ( it was diagnosed as cancer) and passed away on Christmas morning, 1951 at age seventy-seven. It was just two months later that Dad had a stroke and on June 23, 1952 joined her at age eighty-nine.
