PROBIOTIC SUMMER BERRIES YOGHURT
Yoghurt is made from fermented milk and rich in probiotics. It has multiple health benefits such as reducing the risk of type 2 diabetes, including vitamin B12, folic acid and biotin for shiny hair and glowy skin. Fermented milk that contains Lactobacillus has been associated with reduced muscle soreness, which is good news for the fitness fanatics out there. Whey has the same probiotics that yogurt does and has multiple benefits such as facilitating weight loss, boosting digestion and is a good calcium source.
PROBIOTIC SUMMER BERRIES YOGHURT
LIVING You will need:
2 cups of mixed berries 2 tablespoons of honey ½ teaspoon of packaged starter culture of fresh whey ¼ teaspoon of finely ground real salt Organic milk Yogurt starter culture
1. Pack the berries tightly into a jar with a wooden spoon. Add in a mx of culture starter or whey with a few tablespoons of water, sugar and salt then pour over the berries. 2. Leaving ½ inches of headspace, fill the rest of the jar with filtered water and press down the berries to make sure the water has filled the air pockets. 3. Put a lid on and leave at room temperature for 1-2 days. Store in refrigerator and use for 1-2 months 1. To pasteurize and kill any bacteria or yeast in the milk, heat to 180°F 2. Let the milk cool to around 100°F 3, Add in yogurt starter culture, stir well and cover. 4. Keep the mixture at around 110°F for at least 8 hours to ferment, (the closer to 24 hours the better to get most of the probiotics). Following the above recipe, you will have yourself homemade probiotic summer berries yogurt jar for breakfast on the go or a mid-day snack to break those foods down and keep your gut healthy.
