Sustainability Through Tea Outwoken Tea

Outwoken Tea was founded on the summit of a mountain of trash. Aureal Ojeda was working as a construction worker at the landfill when her truck got stuck in the mud. While she waited for help, Aureal found herself knee-deep in trash, watching seagulls foraging for food and choking on bottle caps. “Inspiration struck me, literally,” Aureal said. “As I watched animals and our earth suffer, a plastic bag crashed into my face. This motivated me to create a zero-waste company that could eliminate the need for plastics and improve our presence in this world.” Aureal decided that her business would do everything in its power to support families, improve the environment, and promote green ideals. She launched Outwoken Tea in June of 2020, sourcing a niche selection of tea from small farms in developing countries, creating circular economic growth. Her packaging is home compostable, plantable, high post-consumer use, and uses algae ink. Additionally, for every purchase of tea from Outwoken Tea, one tree is planted to help with reforestation. In 2020, homes in Milwaukee sold in only nine days, on average. Swallow credits Carthage faculty, staff and students for constantly looking ahead to the next curve. This ongoing evolution is punctuated by big strides. In 2019, the college lowered tuition by 30% and launched The Aspire Program for all students, which connects their interests and values to career paths. When the Milwaukee Symphony Orchestra opened its new hall, the Bradley Symphony Center in the renovated, former Warner Grand Theater, the organization wanted to add an exclusive, upscale catering service. They turned to Levy Restaurants, and the collaboration led to the creation of Resonance Food Co., a brand new catering service at the Bradley Symphony Center. Chef David Zakroczymski, formerly the executive chef at Fiserv Forum, focuses on upscale Midwestern classics, from braised beef short ribs to New York strip steaks. But Resonance’s offerings are shaped by the events it caters. Resonance incorporates world cuisines and specialties to reflect the event. For private catering

events, like weddings, galas and corporate luncheons, Resonance also offers themed buffet-style tables, such as Wisconsin Supper Club, Little Italy and Southern Hospitality to add variety to an event. “We have comfort food favorites with an upscale twist and upscale presentation,” says Amanda Ridout, Resonance’s director of sales. “With David as executive chef, and the backdrop of the Bradley Symphony Center, we’re able to create truly one-of-a-kind events.” Resonance Food Co.
