ilwaukee may not be as large as Chicago or New York, but it makes up for size with its big-city arts and entertainment scene, with nationally known establishments such as the Milwaukee Art Museum, Milwaukee Ballet, Summerfest and Brewers baseball. Local Landmarks The restaurant business can be brutal, but these local establishments have stood the test of time. By Thomas Connors

hen Chicago chef Charlie Trotter announced in January that he would be closing his world-renowned restaurant this fall, various fine-food fans noted that at 25 years, he’d had a good, long run. And while many Milwaukee restaurants seem to come and go, the city still possesses plenty of places that have been around for more than a quarter of a century. For starters, there’s Mader’s. At 110 years, this iconic eatery has seen it all, from Prohibition and the arrival of fast food to the seemingly universal popularity of sushi and the boundary-breaking creations of molecular gastronomy. Over the years, its Old World charm has been challenged by design-driven dining rooms, and the virtue of its classic fare has been tested by culinary trends of every stripe. Although the American palate has grown accustomed to sampling a world of tastes since German immigrant Charles Mader got into the hospitality game in 1902, this Downtown landmark continues to draw diners who Elsa’s on the Park Satisfying appetites since 1979.

appreciate the restaurant’s inimitable ambiance (stained glass, suits of armor, ironwork by Cyril Colnik) and authentic German dishes (sauerbraten, Wiener schnitzel, rouladen) that deliciously capture Milwaukee’s past while satisfying today’s appetites. Whitefish Bay was pretty much farmland when Jack Pandl’s Whitefish Bay Inn opened at Lake Drive and Henry Clay Street in 1915. Housed in a former tavern, the restaurant catered to locals as well as Milwaukeeans who came by train and steamer to recharge at the Pabst Whitefish Bay Resort that sat across the road. Now firmly ensconced in suburbia, the restaurant continues to attract diners from all over who are happy to relax amid the glow of lamps while enjoying broiled whitefish, pan-seared veal chops or a nice New York strip. Sitting in the shadow of the Basilica of St. Josaphat on the South Side, Old Town Serbian Gourmet House is one of those restaurants that gave Milwaukee a strong ethnic flavor long before people got hip to Thai, Vietnamese and Cuban cuisine. Of course, for plenty of its patrons, there was nothing “ethnic” about the fare; it was just good food with a distinctive pedigree. Now operated by Natalia Radicevich, whose parents founded the restaurant in 1971, Old Town Serbian serves up traditional favorites such as chicken paprikash, stuffed cabbage and moussaka, as well as vegetarian dishes and salads graced with such ingredients as sun-dried tomatoes, dried cherries and walnuts. Like all of the city’s long-established restaurants, it offers customers more than good food and attentive service: It exudes a welcoming sense of place. In the constellation of “newer” restaurants that have become classics, one of the brightest stars is Elsa’s on the Park, which frozen custard king Karl Kopp debuted on New Year’s Eve in 1979. Housed in a handsome brownstone structure built as the Arnold & Quistorf Tavern in the late 1800s, this Cathedral Square hot spot struck a decidedly contemporary note when it opened its doors. A crisp, loft-like space with an ever-changing art-inflected décor, Elsa’s offers a renewed sense of restaurants as theater. sandwich a whole new experience. Jimmy Carter was in the White House, “Call Me” by Blondie hit No. 1 on Billboard’s Hot 100, and The Empire Strikes Back rocked the big screen the year that Jim Marks launched the River Lane Inn in Brown Deer. It was 1980, and aside from fish fries, critters piscatorial didn’t figure prominently on many area menus. But once diners sampled the fare, they were hooked. By sourcing the freshest fish possible from every coast (posted on small chalkboard menus for flexibility), Marks proved that seafood could hold its own in a market where brats, chops and steaks dominated. Situated in a circa-1890 structure that had seen service as a hardware store, barbershop and tavern, the business has grown physically over the years, with four additions to the original building. Nonetheless, the restaurant retains the cozy atmosphere that has always been a part of its appeal. Not to mention the Cajun blackfish, cedar-plank salmon and such recent additions to the roster as Oregon Dover sole with macadamia and lemon butter. Fine dining got another boost a decade later when chef Sanford D’Amato opened his white-tablecloth room in what had been his family’s Jackson Street grocery store for 80 years. Simply named Sanford, the soon-to-be award-winning restaurant championed degustation, a menu of small plates that demonstrated the chef ’s technical mastery and an inventive way with top ingredients. Today, D’Amato and chef de cuisine Justin Aprahamian continue to delight diners with seasonally driven dishes (including a full menu of a la carte items) that range from char-grilled quail and seared foie gras with brown butter turnips and pickled huckleberries, to spiced wild king salmon with miso noodles, shiitake mushrooms and baby bok choy. The way restaurateur Joe Bartolotta keeps coming up with crowd-pleasing concepts, you might think he’s the new kid on the block. But his first triedand-true establishment – Ristorante Bartolotta, which he developed with his brother Paul – opened its doors in 1993. Still going strong, the Tosa favorite serves up soul-satisfying, rustic Italian dishes such as fried calamari marinated with mint, garlic and pecorino;

pappardelle with duck ragu; and oakfired hand-cut filet of beef. Like every long-lived restaurant in Milwaukee, it survives not only on quality and service but also on intangibles – a magic mood that enhances the elemental pleasure of breaking bread and the deep desire to feast. While some local establishments have been in business for more than 100 years without interruption, Sheridan’s in Cudahy has recently made a welcome comeback. It all started in 1911, when Frank Sztukowski opened The Lakeview Inn. By 1920, he was ready to expand in the area, and he tore down the original building, replacing it with a newly minted Sheridan Hotel plus the Palm Gardens tavern. Almost 50 years later, Sztukowski’s youngest child, Norbert, re-established the family business as The Fountain Blue restaurant. But history doesn’t die easily. In 2007, new owners Lee Barczak and Jane Schilz carried out extensive renovations and – with a nod to the past – renamed their boutique hotel and American bistro, respectively, Sheridan House and Sheridan’s. The restaurant is now styled in fashionable art nouveau décor and offers lively entertainment in addition to excellent dining, including Date Nite on Thursdays and live music on Saturdays. With any luck, we’ll still be enjoying these one-of-a-kind Milwaukee landmarks for another century. ■

ork belly and prosciutto get plenty of play at chef-driven restaurants these days, but good ol’ ribs have never gone out of style. With a rich tradition – or rather, multiple traditions – barbecue ribs are one of those great, all-American dishes that even the most persnickety gourmand will pause to enjoy. And in metro Milwaukee, the options for getting a good rib fix are many. From Jerry’s Old Town Inn in Germantown to Ward’s House of Prime in the heart of Downtown, the righteous slab of ribs has pride of place on countless local menus. Like chili, a discussion on ribs could almost launch a family feud. Some folks swear by a dry rub, others mop on special sauces. Some will cook with a dry rub, then serve a sauce on the side. “Texans are big on meat,” notes Frank Hornick, co-owner of Silver Spur Texas Smokehouse BBQ in Elm Grove. “They figure if you are covering up the meat with sauce, you are hiding something.” Even if you can get two rib aficionados to agree there’s nothing wrong with a good sauce, there’s still room for dispute. Should it be sweet or tart? In the Carolinas, vinegar dominates; in Kansas City and Memphis, the sauces skew scarlet. And in what probably sends purists of either camp into conniptions is SFQ, a sauce from 10

food-centric San Francisco that includes chocolate, coffee and red wine vinegar. Jerry’s Old Town Inn – which claims to go through tons of ribs a year – offers proprietary sauces such as Cajun, honey barbecue and habanero. Whether or not a restaurant specializes in barbecue, if there are ribs on the menu, they sell. At Molly Cool’s Seafood Tavern – where signature dishes include Parmesan-crusted tilapia and blackened swordfish – barbecue ribs, served with coleslaw and your choice of french fries, chips or garlic-chive mashed potatoes, give carnivores something satisfying to chew on. And at The Knick, which serves everything from risotto to steak frites, the baby back ribs are a popular item, according to head chef Mike Robbins. “I do a dry rub and char them on the grill, then put them in the oven with a beer braise for about 3 1/2 hours at 350.” Before braising, he brushes them with a sweet bourbon sauce that includes ketchup, kosher salt, brown sugar, dried spices, chili powder, garlic, onion and sugar. Although baby back ribs (lean, tender and mildly flavored) seem to be the most popular type, at Maxie’s Southern Comfort, owners Dan Sidner and Joe Muench opt for a St. Louis cut. “People covet baby back ribs, but we don’t use them because we feel they are too easily overcooked,” notes Sidner. Since Maxie’s specializes in Southern-style, slow-smoked barbecue, the pork cut must be able to withstand heat for longer periods. “St. Louis-cut spareribs come from the lower section of the animal and are cut straight, so that eliminates any additional cartilage. It is a little larger rib, so you get a little more meat to the bone than a baby back. Plus, we can smoke it a little longer and get more smoke flavor on it,” he says. Some who dabble in ribs may consider meat that falls off the bone acceptable, Sidner sees this as something to be avoided. “When you talk to purists at any competition around the country, people who really know barbecue, one of the first things they’ll say is that ‘falling off the bone’ is bad barbecue,” he says. “What you want is just a little bit of tug off the bone.” Smoked for as long as 12 hours, the ribs at Maxie’s are brushed with a sauce composed of tomato, a touch of mustard, seasonings, and a lot of maple and molasses. Like Sidner and Muench, Hornick chooses a St. Louis cut for his customers at Silver Spur. The ribs are given a dry rub and smoked from four to six hours at 200 degrees over an oak and hickory fire. True to the Texas style, the ribs don’t come near a sauce when they’re cooking, but Hornick offers it at the table for those who just cannot resist. Of course, half the enjoyment of a good rack of ribs is all that goes along with them. At Mason Street Grill, that means coleslaw and french fries. At Harry’s Bar & Grill, there are wasabi mashed potatoes and vegetables. Silver Spur sides include creamy dill potato salad, ranch beans, coleslaw, french fries and pasta salad. Pork ribs may be incredibly popular in the metro Milwaukee area, but they aren’t the only ribs in town. The Capital Grille, nationally known for its dry-aged steaks, serves char-broiled doublecut lamb rib chops as one of its main courses. Simply seasoned, these flavorful chops are served with a mostarda spun of whole cherries, sugar, red pepper, mustard powder and other seasonings. iding the burgeoning interest in all sorts of cuisine and the festive spirit that goes hand in hand with food and drink, a number of organizations have developed events that offer Wisconsinites ample opportunity to chow down. Here are a few to whet your appetite. Now in its seventh year, Milwaukee’s Downtown Dining Week (June 7-14) is an inexpensive way to try out Downtown restaurants. The fourth annual Taste of Wisconsin, organized by the Kiwanis Club of Western Kenosha, will be held July 27-29 at Kenosha’s harbor. Since its inception, the event has grown from a collection of local businesses to include vendors from all over the state. The event boasts culinary demonstrations, workshops, dozens of musical acts and a KidZone with entertainment tailored just for young visitors. A pioneer in this palate-pleasing business is the Milwaukee County Zoo, which got into the game in 1985. Its event, the Milwaukee Journal Sentinel a la Carte, takes place Aug. 16-19 and includes representatives from more than 25 area restaurants, in addition to six entertainment stages featuring everything from major headliners to acts for the little ones. Last year’s headliners included some local favorites, The BoDeans. A la Carte, the zoo’s largest event of the year, drew more than 80,000 attendees in 2011. They sampled fare from such eateries as Aladdin – Tastes of the East, Pedrano’s Restaurante, Thunder Bay Grille, Machine Shed, Pacific Orient Express, West Bank Cafe and Water Street Brewery. With “food villages” scattered across the zoo grounds, the event encourages visitors to not only grab a bite but also get better acquainted with some of the local residents. When was the last time you encountered a two-toed sloth or a red panda? Once the summer is over, it’s time for the Kohler Food & Wine Experience (Oct. 18-21). With past sponsors like Bon Appétit magazine, this nationally known event showcases some of the country’s top chefs and local stars. Recent guests include Christopher Kimball, founder, publisher and editor of Cook’s Illustrated magazine and host of the PBS series “America’s Test Kitchen.” Held at The American Club Resort, the Kohler Food & Wine Experience draws a range of visitors, from Food Network fans to budding oenophiles. Signature events include the Feast of Talent, a seated dinner spun around a menu created by celebrity chefs who also dine with their guests, and Taste of the Vine, where wine lovers can sample some of the finest bottlings from today’s leading vintners. Chock full of cooking demonstrations and seminars, this top-flight experience includes beer, wine and cheese tastings; a gourmet marketplace; the Kohler Chefs’ Challenge, in which the resort’s pros exercise their competitive natures; and a number of convivial gatherings, from an Oktoberfest celebration to a Champagne brunch. n

The Proof is on the Plate

Cooking with spirits adds zest to many dishes. By Thomas Connors

racking open a bottle in the kitchen – with the intention of getting some of its contents into that pot on the stove – is par for the course for many experienced cooks. Think boeuf a la bourguignonne, coq au vin or salmon with pinot noir sauce. But while wine figures regularly in what we send forth from the kitchen, hard spirits often sit waiting until it’s time to dream up another house special for that Friday-night get-together. While the cocktail craze has seen all but the strictest teetotalers stock up on everything from bitters to schnapps, the true character of a spirit is often lost on us. And since we don’t know what a good rum tastes like without companion ingredients swirling around that little umbrella, we’d never think of splashing a bit in the skillet. It’s time to taste that rum, which, in its darker versions, makes a great marinade for red meat. And not just rum. “If you are sauteing a piece of meat, you can always hit the pan with a little bourbon or whiskey to deglaze, get all the fond out and make a quick sauce,” notes Andrew Ruiz, executive chef at The Rumpus Room on North Water Street. “That provides intensely rich flavor once it’s reduced down.” One of Ruiz’s more recent booze-kissed dishes is a bourbon and 28

onion demi-glace for steak. “We caramelize onions really well to get all the sweetness out of them,” he explains, “then add bourbon, reduce it down to extract the alcohol and then incorporate that with a rich demi-glace.” The alcohol is not flamed, just cooked over the heat. “You get a more caramelized flavor when you flambé,” says Ruiz, “whereas when you simply reduce it, you get the pure flavor of the spirit.” Vodka, too, has its place in the kitchen. “It really adds an element of roundness to shrimp scampi or an Alfredo sauce,” says Dan Whitmore, national sales manager for Crosby Lake Spirits Company, whose portfolio includes Opulent vodka, made from Iowa corn. “It enhances the flavor while cutting some of the oiliness or fat of the butter in a dish.” Jason Neu, sales manager at Milwaukee’s Great Lakes Distillery, even incorporates vodka into salad dressings. “I love using our Rehorst Citrus & Honey vodka in salad dressings. It adds a brightness. If you’re doing a lighter dressing, [by] just adding a little, you get a nice, bright, citrus flavor without adding more acid, like lemon, to it.” Great Lakes also produces an absinthe, based on anise, wormwood, fennel and a blend of selected botanicals. “It’s similar in flavor to Pernod, so anywhere a chef would use Pernod, absinthe will work,” says Neu. Think seafood: shrimp, scallops and mussels. “A dash over oysters is great,” he notes. Although using spirits in savory preparations may be new to some, anyone who has ever enjoyed bananas Foster or crêpes suzette knows that a touch of the good stuff adds real depth to a dessert. One of the simplest and most profoundly satisfying is a dish of good vanilla ice cream sprinkled with espresso powder and finished with a tablespoon of Scotch. “I am a big whiskey with dessert guy,” says Neu. “The reason it works well is because when you age whiskey in oak barrels, the barrels give you some caramelized wood sugars, some vanilla and spice. Our Kinnickinnic Whiskey is part Kentucky bourbon, part malt whiskey, almost an Americanized Scotch. They are blended together in the bottle so you get a sweetness and a roasted flavor.” At The Rumpus Room, Ruiz infuses unsweetened whipped cream with Buffalo Trace bourbon to serve atop bread pudding. “I wanted that raw bourbon flavor to counteract a really densely sweet bread pudding. I use it almost like you would an acid, like a vinegar or lemon juice, to counterbalance the flavor profile.” From England’s Gin Act of 1751 to our own Prohibition, gin has been the poster child for booze behaving badly. But that doesn’t stop Neu from tossing a bit over fresh berries with a little bit of sugar and some mint. “Our Rehorst Premium Milwaukee gin has a distinct juniper flavor, as all gins do. But it has a lot of other bold flavors ... orange and lemon peel, cardamom, coriander, anise, basil and Wisconsin ginseng.” But what really takes the cake when it comes to spirited desserts is Neu’s “Ginsicles.” He takes a melon baller to half a watermelon and soaks the little orbs overnight in two cups of gin, half a cup of raspberry liqueur and the zest of one lime. After a good rest in the fridge, he slips them on skewers with mint leaves, sets them on parchment paper and then pops them in the freezer for the night. Come morning, you won’t care what’s on the menu for dinner as long as these babies conclude the meal. n Photo by Adam Ryan Morris
