This ancient process gives a silky texture and involves double rising with the use of natural yeasts which assures ideal moisture and a long shelf life of the product, with no chemical additives or preservatives, while retaining its characteristic softness, digestibility and fragrance.

Bauli collaborates with the certified laboratories of the best Italian universities and has achieved a Certificate of Excellence, thanks to its adoption of the highest quality, environmental and work safety standards (ISO 14001, ISO 18001, ISO 9001, SA8000, IFS & BRC).
