What is Luxury? At the V&A Luxury – we all strive to enjoy the finer things in life, but luxury has a long history of controversy. The latest release of The Balvenie 50 is the pinnacle of the rich tradition of hand-crafted whisky. Two European oak hogshead casks were selected by The Balvenie Malt Master, David Stewart. Both casks were filled on the same day in May 1963 and left to rest in Warehouse 24 at The Balvenie distillery for over fifty years. The casks have been bottled separately to create a magnificent pair of single cask expressions, offering connoisseurs the chance to explore the uniquely complex characteristics imparted by each cask. In keeping with the traditions of The Balvenie, the bottles are presented in stunning wooden cases comprising 49 layers of wood and a single brass layer, handcrafted by furniture designer, Sam Chinnery. SUUNTO AMBIT2 S Last year Suunto unveiled the second generation of Ambit outdoor GPS watches, creating a collection of Suunto GPS watches for every occasion — whether a multisport training session or a serious adventure. We were given the chance to use and review the Suunto Ambit2 S, so read on for the verdict.

Ambit2 S – The GPS watch for athletes The new Ambit2 S is a light and sleek GPS watch for multisport athletes that packs all the features needed for cycling, running, swimming and multisport training. The GPS provides accurate pace, route navigation and tracking, while the heart rate monitor lets you train within your ideal zone. Having already won Gold in the Men’s Running Awards, our hopes for the Ambit 2S were high and we weren’t left disappointed. Our resident Health & Fitness expert, Andrew Landells, a committed ultrarunner said of the watch, “It’s got a great finish and is soft and comfortable to wear, which is essential when you’re wearing it over long distances and time periods, there’s nothing worse than a watch that you’re aware of”. AN OLD CLASSIC In a world that’s always looking for the next big thing, it can be hard to keep up. So let the hipsters and the wannabes chase the trends, while you stick to something tried, tested and timeless. There’s a reason these five classic cuts have never fallen out of favour with the fashion crowd. The Buzz Cut: What can be said of this look? It’s low maintenance that’s for sure, but you do need to keep a regular appointment with your barber, (every 3-4 weeks) for this cut to stay looking sharp. It should be done with electric clippers and if you want to make it a bit more interesting, rather than just one-grade all over, you can ask for a fade on the back and sides.

The Slick Back: This cut has been sported by public figures, business moguls and Hollywood stars from the 1920s all the way through to present day. It suits most face shapes and ages so is versatile as well as stylish. Scissored all over, it's essentially a classic short back and sides with an accentuated side parting. Keep the top longer and style into a quiff.

This is a look synonymous with the 1950’s when being smart and presentable was the accepted norm. It’s a relatively low maintenance style which doesn’t require too much care post production. This one should be a completely scissored cut, with plenty of texture and choppiness, resting just above the ears.

This one’s great for those with a thick head of hair and for those who like to leave an extended break between trips to the barbers. Completely scissor cut, you want it left heavy on top but also soft and textured. For best results, ask for it slightly shorter on the crown and keep much longer on the front, so sweeping it back doesn't create an unwanted bump.

This works particularly well for older gents and for guys who don't want to spend too much time on their hair. Wear it two ways, smart and smooth for work, or tousled and messy on the weekend. The crop is fully scissor cut, and can feature a gradual taper on the back and sides to keep tight and close to the head.

Apply a paste into damp hair and blow-dry in with a brush or hands for hold and volume. Use a salt spray or hair powder to set it and to add a little extra texture and interest.

For a matt look add clay as this will enhance the choppy texture. Rub into dry hair with your hands and that’s it! Easy.

HOW TO STYLE IT? Well needless to say, there’s not much styling to be done here but keep an eye on your scalp, perhaps use a hair oil or light moisturiser to keep your head conditioned.

Apply a paste into wet hair and dry back with a wide tooth comb to achieve the line effects, and to smooth the areas on the back and sides. For a wet finish, apply an aqua-based pomade for shine and sleekness.

Keep this style looking tousled by adding paste to damp hair and scrunching to add volume and texture.

Tested by Coral “I was really impressed with my little bundle from Nip + Fab and already being a fan (but not usually getting on with hyaluronic acid products), I was eager to check out theirs. I combined use of the Glycolic Fix Cleanser and the Dragons Blood Fix Pads, which are also sold as a cleansing product, but I found them to be a little too small to be as effective on their own. The cleanser itself easily removes all traces of makeup and the pads do an excellent job of leaving the face enriched and fresh. Anything containing hyaluronic acid tends to leave my face feeling tight but combined with witch hazel not only moisturised but visibly reduced the crepe effect that seems to be trying to sneak up on my skin! During the summer, SPF12 – 15 simply isn’t enough to protect your face from everyday exposure to the sun. Dermatologists recommend using broad spectrum sun protection of at least SPF 30 under your makeup. Apply it after you’ve used your serum and then apply your makeup.

Don’t smother your skin in foundation. Wearing too much heavy makeup is bad at the best of times but factor in the warmth and you’re asking for a break out of epic proportions. Instead opt for a lighter, easy wearing BB Cream or tinted moisturiser.

In addition to drinking lots of water (remember to aim for 1.5 – 2ltrs a day) it’s important to keep skin hydrated externally too. the walled garden, visit the castle or meander along the streams, whatever you decide to do in Helmsley, its laid back sense will certainly leave you feeling refreshed.

It’s been established as a fine hostelry for over 500 years and takes its place firmly in the pages of its history books; which is as captivating as the town itself. There’s a real air of indulgent relaxation here helped along by the breathtaking countryside which is visible in every direction. The hotel makes the point of being dog friendly rather than dog tolerant; after all we are in the country. Everything is so immaculate, I’m not sure you’d even know if any of our four legged friends were staying over unless you saw them for yourself.

As if its surroundings aren’t bliss enough, the hotel itself is inviting in every sense with stylish furnishings; traditional touches and contemporary influences highlighting its many original features. Open fires and dark beams work beautifully alongside a warming colour palette of tweeds. There is a mix of clientele throughout the hotel conversing over coffee, reading the papers and indulging in afternoon tea. There is a quintessential tea room serving its own range of tea, The Cygnet Bar and a perfect English garden complete with hand crafted private dining facilities. It all just feels really, really welcoming.

There is an appealing air about Helmsley as we wander around shaking off the morning’s meetings. It’s time to get into weekend mode and this place certainly grabs you kicking and screaming. Browse through 50 independent shops, boutiques, galleries and cafÊs. Stroll through

Our room follows suit. One of 45 country chic style rooms, the extravagantly large bed, immaculately dressed with lots of pillows being the centrepiece. There’s a wonderful view of the square and the hills and valleys beyond and a window seat on which to relax and enjoy it. Yes, I can be happy here for sure; 56

whiling away an hour or so watching people come and go below. By the time we’re dressed for dinner (it’s rather more formal in The Gallery, but certainly don’t feel you won’t fit in here if you prefer a more casual approach) we are ready to eat having heard many good things about the food. There’s the internationally renowned, award winning Head Chef Patrick Bardoulet to thank for that. The Gallery boasts 3 AA rosettes and specialises in delicious seasonal fare which is presented beautifully; the plates matching the artworks which adorn the walls of this unique restaurant. As we’re shown to the table, each member of the waiting staff courteously acknowledge our presence as they seem to find the time to do with everyone who enters the restaurant. It’s a nice touch and is the start of a theme of attentiveness which continues throughout the meal. It’s the little things you notice here, the way each knows everything about every dish and are happy to divulge, and there’s always someone on hand to refresh the glasses.


The six course chefs’ tasting menu has been recommended and we go with that. Being encouraged to swap anything from the main menu (should we prefer) offers up a real ‘we want you to love it’ vibe. The running order to the tasting experience -and it is an experience, reads like a dream and once they start to arrive, each dish really is like a work of art. It may just have been too beautiful to eat had it not been for the aroma emanating from dish to nose. Sticking with the menu as it was created, turned out to be a good move as each dish complimented the next, taking taste buds on an exhilarating culinary journey. A particular highlight is the beetroot dish

Left embracing the after dinner wow factor, we opt to finish with a cheeseboard. Having already eaten dessert, this may be a little greed mixed with a little of not wanting to miss out on something else that was bound to meet the expectation of spectacular. It really doesn’t disappoint. Shocked over the sheer size of the cheese trolley topped gloriously with a grand glass dome, we begin ‘live tweeting’ it, where much love and some jealousy ensues. From Camembert to Comte, the cheese choice is immense and the waiter wants us to try a small piece of each as we ooh and aah over what we have room for. Needless to say we attempt and fail dramatically, but we go out smiling.

which given how the menu reads and taking my usual tastes into account, surprises me somewhat. I think it’s because the amount of flavour packed into something which was so delicate, so pretty, is a feast for the senses. The texture combinations work so well with a hop from the crunch of a brown bread tuile to an almost ‘not there’ goat’s cheese foam. This is the point at which I go from ‘this chef is seriously good’, to ‘I can absolutely see why he comes with such credentials!’ For my dining companion, the moment comes along in the form of ham hock with a foie gras centre served with perfectly pickled mushrooms and figs.

The next morning, the Yorkshire Breakfast is as good in its own right with local sausages and bacon and the tastiest black pudding in the land. Good coffee and good toast finishing the picture perfectly. When check out time comes we’re sad to say goodbye as we are handed a little paper bag which finishes the job nicely and is the epitome of the message The Black Swan upholds. Upon it is a branded sticker asking us to have a safe journey and inside it is water and a pair of crisp green apples for the ride. What a touch. The sticker also says ‘come back soon’ and rest assured, we will.

This ideal village pub with its traditional surroundings, excellent beers and friendly service has long held a reputation for delivering excellent food. Recently taken over by Lisa and Andrew, we were eager to see whether this gastro pub would continue to live up to its reputation. We all like to have a good local we can depend on. Somewhere we can watch the rugby with mates over a pint of locally produced ale, or somewhere to catch up with friends over a finely selected bottle of wine. For some it’s where we’ll spend each New Year or Boxing Day with our extended family made up of neighbours and friends and for others it’s somewhere we’ll drop in for a quick drink and a packet of crisps before we continue our rambling exploration of the beautiful surrounding area. For more and more of us however, the humble local is becoming a destination synonymous with hearty, good and thoroughly British food. The Angel Inn is exactly that. A place where foodies can dine on finely prepared meals without the pretention of an upscale restaurant. Where silver service is traded in for friendly service but where taste, presentation and quality is most certainly not compromised. Our experience of The Angel Inn was a most enjoyable one, the staff greeted us warmly and showed us to our table in the bright and airy conservatory which would later become quite a romantic setting as the light faded and the space was lit up by twinkling fairy lights. To start, we opted for the Antipasti Sharing Board which consisted of Italian meats, olives, stuffed peppers, liver

pate, balsamic onions, caramelised onion chutney and warm homemade bread. Firstly we must note the exceptional presentation of the dish. It was brightly coloured and beautifully arranged, making it all the more appetising. With a range of textures and contrasting tastes, from the crunch of the radishes and balsamic onions to the creamy and melting meats and fluffy warm bread, it really was a treat for the tastebuds. The bread was light and well baked and was enjoyed best when topped with the smooth liver pate and caramelised onion chutney. For my personal tastes, the chutney could have been a little sweeter and stickier but this is not to say it was not delicious.

whilst the black pudding bites added depth and richness of flavour. This was one of those plates where I wanted to get a little of everything on the fork because it all works so well as a dish but equally each component could be enjoyed by itself, preferably in large quantities. So having said all that how could my partner’s choice win? Well, the lamb was melt in your mouth good, it was succulent and perfectly cooked, the rosemary sauce was fragrant without being overwhelming and was creamy and full of flavour, whilst the potatoes broke easily and were similar in texture to that of crushed new potatoes. Quite simply it was flawless. Seeing as he stole my chips, I thought it only fair that I have a good portion of his dinner and I couldn’t help but wish we could reorder.

To follow, I enjoyed the Sirloin Steak served with Onion Rings and Vine Tomatoes whilst my dining partner chose the Roast Rump of Lamb with a Rosemary Sauce. I will say now, on this occasion he won, but I’ll come back to why later. I ordered my steak to be cooked medium rare and that it was, it was cooked accurately and generously portioned. For me this dish perfectly summed up great pub food, it was comforting and inviting. The homecooked chips that the dish came with were so good my partner stole too many for my liking, and the onion rings (which I refused to share with him because of the chip thievery) had a great crunchy batter

Mains thoroughly devoured, we chose to follow up with a Dark Chocolate Mousse and Salted Caramel Apple Pie. We were told to expect a surprise with the chocolate mousse and found hidden pieces of fruit within the rich and decadent pud which was served with a scoop of delicious and creamy ice cream. Usually not one to order chocolate desserts, my dinner guest was happy that whilst the pudding was indulgent and sweet it was not heavy. My own choice, of the Salted Caramel Apple Pie was again 59

comforting and stirred up memories of fondly remembered homemade pies. With such a sweet tooth, I would urge them to be bolder with the caramel flavouring of the dish but otherwise it was perfect and a fight even broke out between me and my partner over the custard! Whilst the new owners and chef appear to have simplified the menu as they find their feet, it is still strong and The Angel Inn has certainly lost none of its credibility as a fine dining pub. In fact, I expect over time as they grow in confidence and settle in, we can look forward to an even more impressive menu which will really be quite something.

Synonymous with sunshine and summer, the Margarita is a vintage cocktail that will never go out of style. Whilst nobody really knows the true origins of this much loved drink, (drinks historian Greg Boehm has traced it back to the 1930’s where it featured in the My New Cocktail Book, by G.F. Steele under the name Young Man’s Delight) its popularity has never waned. Throughout history many have claimed credit for inventing this wildly popular cocktail, from Dallas socialite Margaret ‘Margarita’ Sames to Mexican restaurateur Carlos ‘Danny’ Herrera. But whoever the true inventor may have been, let us take a moment to raise a margarita to them, because one thing that is for sure, it’s one fine drink... t 2 oz. Don Julio 100% Blue Agave Blanco Tequila t 1 oz. Cointreau (or Grand Mariner) t ¾ oz. fresh lime juice t ½ oz. Of simple syrup is optional but often necessary for many guests t Garnish with coarse salt & a wedge of lime Combine first three ingredients in a mixing glass with ice. Shake well and strain in to a chilled cocktail glass. To salt the rim: frost the edge of the cocktail glass by rubbing a lime wedge on the outside rim of the glass, then dip it into a saucer of coarse salt.

Naan Bread Pizza with Sweet Chilli Beetroot, Parsley, Capers, Pepperoni & Mozzarella Preparation time: 10 minutes Cooking time: 10-12 minutes Serves: 4 or 2 as a starter/light lunch

Try this quick alternative to a regular pizza, which uses naan bread as a base and sweet chilli infused beetroot for bags of taste. You’ll need: t 2 plain naan bread t 2 tsbp chopped flatleaf parsley t 1 tbsp capers, roughly chopped t 1 small garlic clove, finely chopped t 1 tbsp olive oil t 180g pack Sweet Chilli Beetroot, cut into wedges t 55g pepperoni t 1 x 125g ball mozzarella, torn into pieces t Freshly ground black pepper What to do: Preheat the oven to 220°C/200°C/ gas 7. Arrange the naan out onto a baking sheet. In a small bowl, mix together the parsley, capers, garlic and oil, then divide between the naan and spread all over with the back of a spoon. Top each naan evenly with the sweet chilli beetroot, pepperoni, and mozzarella. Grind over a little black pepper and bake in the hot oven for 10-12 minutes until the naan is crisp and the cheese melted. Serve immediately.

The Genting Club is a fairly recent addition to the Sheffield entertainment scene. A 24 hour casino boasting an expansive state of the art gaming floor, poker room, two restaurants, three bars and a late lounge with stage and dance floor over 35 000 square feet and two floors, there’s something for everyone. The casino isn’t the primary reason we’re here tonight, but from the moment we arrive, the lively and thrilling atmosphere meant we declared it, almost immediately, as an after dinner must. Nestled at the end of a sweeping balcony and overlooking the gaming floor is Fahrenheit Bar and Grill, a stylish retreat just far enough away from the excitement of the casino but close enough to still feel part of it.

A warm welcome awaits as we enter the contemporary curved bar area with a tasteful mix of furniture sets and booths making it perfect for intimate drinks or a gathering with family or friends. We opt for a booth and cocktails with some fresh artisan breads, roasted garlic and oils with olives with which to take in the menu. It’s worth a mention too that being somewhat of a Cosmopolitan connoisseur I’m impressed with the classic version served here; complete with burnt orange garnish which frustratingly, is so often missed. The choice of eats is varied and ranges from classics with a twist and seasonal dishes to what has garnered a reputation for being a real speciality; the Josper grill menu. The Josper is standing proud in the open kitchen and the smells emanating from it are too tempting not to order something which is cooked upon it; we take heed of our senses and do just that. To start we share a very generous portion of ribs which are tasty and tender and the rather more refined seared scallop dish. The scallop is served 66

with a crisp shard of bacon and a complimenting pea puree and although a lighter option than the ribs, is still a good sized plate. The Wagyu beef is rumoured to be exceptional and I’m pleased to say I agree. We asked for it cooked as the chef recommends, I always find that way they aren’t bound to anything except using their own senses. It’s cooked to perfection; Josper style. The lavish yet distinguished flavour and melt in the mouth texture are something to really applaud. Steaks here are from quality cuts and 35 days matured, add a serving of triple cooked sea salt chips and any meat lover should be going home happy. We also opted for the classic lamb rumb steak served with a mini shepherd’s pie. The meat had been rested, not rushed and the flavour it kept so well due to being cooked on the Josper was full bodied. I have to also congratulate the pie itself as it packed a well seasoned punch with a good layer of tender minced lamb and topped with a really great mash.


I wish I could say we had room for dessert, we didn’t; but we ordered anyway –isn’t that just always the case? Our waiter is passionate about describing the dessert menu and as he’s particularly taken with the chocolate frangelico fondant; who are we ignore such an obvious recommendation. All I can say is, even if you ‘think’ you have no room, do try, even if you have to share. I promise you it’s worth it! It’s a pleasure to sit for a while having eaten and enjoy a glass of wine whilst taking in all the fun of the gaming floor below us from the privacy of our booth. The waiter who’s been exceptionally attentive the whole way through our meal doesn’t rush us away and checks in on us from time to time. More wine? More water? Coffee? More dessert? It’s nice to know if we did need something, we wouldn’t have to play the ‘catch the waiter’s eye’ game here. Once our meal had settled, and we’d met snooker legend Steve Davis –who is a regular here apparently, we ventured down to the casino itself. Despite being busy, there was plenty of room at the tables and plenty of staff on hand to serve drinks, find people seats at their chosen game and help with understanding the rules. The main thing I noticed almost instantly about this casino was the feeling of being part of something exciting and feeling safe at the same time. The crowd here is a nice one, mixed in all manner of speaking; ages, genders and nationalities. Though some are more serious than others, all are here to enjoy the experience in one way or another.

The verdict We agree we will definitely come back here. There are many more things on the menu we need to try and many games yet to master. All in all the staff were fabulous, fun and attentive, the atmosphere is whatever you want it to be and the food faultless. It’s worth noting it’s over 18’s only even in the restaurant, so whilst not appropriate for families with young children, it’s the perfect escape.

From managing bars to winning MasterChef. American born Tim wowed Greg and John with his Japanese inspired cooking and has since had had stints at Le Gavroche and the Fat Duck. He’s also opened his own pop up restaurant, Nanban – specialising in Japanese food, and launched a cookbook of the same title. 68

Dhruv Baker After quitting his job in media to take part in the series, Mexican born, Indian-raised Dhruv went on to win and has since worked with Michel Roux Jr at Le Gavroche and at De Librije in Holland. He’s now co-owner of catering company Earlsfield Kitchen, the Jolly Gardeners pub in London and published his fist recipe book, Spice, in 2014.

Mat Follas New Zealander Mat won the 2009 title but struggled to find the financial backing to open his own restaurant, forcing him back into a career in IT. But hard work and perseverance paid off and he opened his first restaurant later in the year. Whilst it has now closed, he has since gone on to launch a new solo venture called Mat Follas at The Casterbridge.

In Season:

A S PA R A G U S Labour intensive to grow, asparagus are considered to be one of the delicacies of the vegetable world. With British asparagus enjoying an incredibly short ‘inseason’ period (usually running from the end of April ‘til mid June) now is the time to embrace this distinct and intensely savoury vegetable. This summer... think asparagus! Eaten in Ancient Egypt, Rome and Greece, where it was believed to possess medicinal properties, it is thought that the British asparagus we enjoy today came by way of the French in the 17th Century, during a time of ‘great vegetable improvement’. These days, foreign asparagus is available all year round, but British asparagus, hailed by many chefs as the best in the world, is only available for a few short months so we say eat as much of the super food as you can! Packed with nutrients (it contains more folic acid than any other vegetable), bursting with taste... and a surprising sexual punch, asparagus

is a truly versatile veg, delicious in all sorts of different dishes – for lunch, dinner and even breakfast! A veritable health cocktail, asparagus’ list of vitamins resembles the alphabet! Low in fat, full of fibre and nuts about nutrients, this wonder-veg is bursting with goodness and can be enjoyed in a multitude of ways, although served simply with a drizzle of olive oil, a twist of black pepper and perhaps a few shavings of Parmesan cheese is quite hard to beat. But if you’re looking to be a little more creative with your spears, here are two of our favourite recipes for you to try this asparagus season!

British Asparagus, Smoked Salmon with Ginger and Soy Dressing Preparation time: 10 minutes Cooking time: 8 minutes Serves: 4 You’ll need: t 1 tbsp fresh ginger grated

t 2 bundles British asparagus

t 2 cloves garlic crushed

t 200g smoked salmon slices

t Oil for frying

t Fresh coriander

t 50ml dry sherry

t 1 red chilli sliced

t 2 tbsp soy sauce

t 1 lime cut into wedges

What to do: Fry the ginger and garlic in a little oil for 2-3 minutes then add the sherry and soy. Once the mixture has reduced slightly leave to cool for a few minutes. Trim the ends of the asparagus and coat with a little oil, cook on a preheated griddle pan for 4-5 minutes 70

turning until cooked through but still retaining some bite. Cut the smoked salmon into 2 cm thick strips and wrap around the asparagus spears, drizzle over the soy dressing and garnish with some chilli and coriander leaves. Serve with a wedge of lime.


British Asparagus & Cheese Brunch Muffins

Top Tip: When it comes to selecting your veg, it’s worth being picky when choosing your asparagus. You want the tips to be tightly furled and perky, rather than limp, and the shoots should be straight and firm.

Preparation: 15 minutes Cooking time: 25-30 minutes Makes: 12 Muffins You’ll need: t 12 spears of British asparagus

t 150ml milk

t 400g self raising flour

t 100ml plain yogurt

t 200g Joseph Heler Cheshire cheese, cut into small cubes

t 1tsp Suffolk Mud English mustard

t 125g butter

t 2 eggs

t 1 small bunch chives, snipped into pieces

t Salt & freshly ground black pepper

What to do: Preheat the oven to 200°C/gas 6 and line a 12 hole muffin tin with cases.

Mix well until combined and season generously with salt & pepper.

Cut the asparagus stems into small pieces, about 1cm in length, leaving the tips a little longer and blanch in boiling water for a couple of minutes. Drain and refresh under cold running water, separating the tips from the pieces of stem.

Gently fold the wet ingredients into the flour & cheese, and stir through the asparagus stems. Be careful not to over mix and stop as soon as the mixture is combined.

In a large bowl, mix the flour with the cubes of cheese. Melt the butter and pour into a jug. Stir through the chives, milk, yogurt, Suffolk Mud mustard and eggs.

Spoon the mixture evenly between the muffin cases and push an asparagus tip into the middle of each. Bake in the oven for 25-30 minutes until golden. Best eaten hot out of the oven, spread with a little cold butter.

Ingredient Myth – Wine does not taste good with asparagus Truth – Asparagus is often thought of as being incompatible with wine, but if you choose carefully you can find a wine that will taste delicious and complement most asparagus dishes. Fruity wines tend not to go well with asparagus and can taste rather metallic. As a rule, rosés and wines with oaky or tannic elements are best avoided when choosing a wine to accompany an asparagus dish. Instead try to enjoy your asparagus with a wine that doesn’t conflict with its ‘green flavour’ - Sauvignon Blanc, Pinot Grigio, White Zinfandel, Beaujolais and Pinot Noir should all work very well.

The quality of the food at Le Manoir stems from the freshness and purity of its ingredients. There’s nothing quite like freshly cut, tender young spears of asparagus when it is in season. My favourite way of serving asparagus is when it is poached and served with freshly made mayonnaise. We at Le Manoir strongly believe that everyone should enjoy good food made from the very best ingredients and prepared with care and imagination. Trending Ingredients It’s not all about asparagus you know. Watercress, wild garlic and crab are all in season and should be taking pride of place on your plate this summer!

Watercress Soup

Crab, Avocado & Rocket Salad

Wild Garlic Pesto

Ingredients: t 1 onion, peeled and roughly chopped

t 250g potatoes, peeled and diced

t 450g crabmeat, (a mix of ²⁄³ white and ¹⁄³ brown)

t 600ml chicken stock

t crème fraîche

t 110g rocket, washed and dried

t Juice 1 lemon

t 3 tbsp olive oil

t 25g butter

t 170g bags of watercress, roughly chopped t 50ml cream (and a little milk if needed) t Salt and black pepper Method: To make this wonderful watercress soup take a large pan, cook the onion in the butter until soft but not browned. Add the potatoes and stock and cook until the potatoes are soft (approx 15-20 minutes). When potatoes are almost cooked, add the watercress (try to allow for no longer than 5 minutes cooking time for the watercress). Liquidise and add the cream. Use a little extra milk if the soup seems too thick. Season with salt and black pepper and serve hot.

t 12 cherry tomatoes t 1 large ripe avocado

Method: Put the white crabmeat in a glass or metal bowl. Check for any shards of shell. Tip the brown crabmeat into a small bowl and set aside. Stir in the crème fraîche and ½ the lemon juice until smooth. Lightly season, then set aside. Cut the tomatoes in half, or into quarters if large. Cut the avocado in half lengthways and remove the stone. Peel off the skin, then cut into thin slices. Put the rocket, tomatoes and avocado into a large bowl. Squeeze over the remaining lemon juice and the olive oil. Season, then toss until the salad is coated with the dressing. Arrange the salad onto serving plates. Scatter over the white crabmeat, drizzle with crème fraîche dressing and serve straight away.

Having made an impact with his television debut in 96’, James Martin has rarely been off our screens since. A regular face on Ready Steady Cook, he now hosts the wildly popular must-watch cooking show of the weekend, Saturday Kitchen. Author of 13 best selling cookbooks, Yorkshire born James most recently penned Home Comforts, a recipe book championing home grown and locally sourced produce, used to cook hearty British food. We caught up with the nation’s favourite chef to find out more about his love of cooking.

From a young age you helped out at Castle Howard where your father was the catering manager; did you always know you wanted to follow him into the food industry?

What’s an ingredient that you feel is underused or underappreciated? For home cooking, it’s seasoning. I think salt isn’t just salt. Table salt isn’t the same as seas salt and they both differ in taste to rock salt. So next time you put salt onto your food, taste it first, you will see what I mean.

Not really. I guess learning to cook with my mum and grandmother was the very start of it and I was interested in the cooking side of it, not the desk stuff. But it wasn’t until I got to college, where meeting someone like my old college tutor Ken Allinson, really helped change gear for me. I credit him with moving me on to the right path.

If there was one top tip you could share with people for cooking, what would it be? Seasonal ingredients are the key for great tasting dishes, you have to do so little with good ingredients, new season asparagus and English strawberries all taste the best when in season.

Your recent book ‘Home Comforts’ is all about using local produce, growing your own and cooking up hearty British meals. Why do you feel it’s so important for people to cook this way?

If you could host a dinner party and invite absolutely anyone, who would be on the guest list?

I watched every other chef over the years, travel the globe on food shows and I couldn’t understand why as a farmer’s kid we didn’t do stuff on the amazing products in the UK. Having said that, so many people in catering have recently done so much to change the perception of UK food around the globe and we can now be proud of the food we produce and serve here.

My late Grandmother, as she was and still is such an inspiration to me as a cook and moreover as a person.

You’re a busy man with a long list of achievements but are there any stand out highlights from your career? I’ve never been one to get awards but to receive the Chefs Special Award at the Craft Guild of Chefs Awards, which is nominated and voted for by your peers, is the one I will treasure.

You famously advocate British cooking (and rightly so!). But if you had to choose another world cuisine to cook, what would it be?

Finally, we can’t go without asking...what would be your idea of food heaven and food hell?

I love the way the Italians talk about their food and why the French have such a deep history with it.But the Spanish to me have some of the best produce I’ve tasted on my travels; from the oils to the hams and fish. The best thing though, is they are very humble with it. But the best in the world has to be Japan. I’ve heard so much about it and the food there, it’s next on my travel to-do list.

Ah... food heaven would have to be langoustines. But my food hell is horseradish, it’s the food of the devil.

Cook like James: Asparagus, Cured Ham, Poached Duck Egg and Hollandaise taken from Home Comforts

I love duck’s eggs. They are larger than hen’s eggs, so need a few more minutes to cook. Hollandaise is a simple sauce that can go wrong very easily, but it needn’t with just a few rules: melt the butter, cool it, then add it to the eggs slowly.

Serves 4 as a starter or light lunch

For the asparagus, ham and eggs:

t 2 tsp white wine vinegar

t Sea salt and freshly ground black pepper

t 2 large free-range (hen’s) egg yolks

t 1 tbsp white wine vinegar t 4 duck’s eggs t 16 asparagus stalks, stems peeled and trimmed t A little olive oil t 8 slices cured ham, ideally Pata Negra, or serrano or parma For the hollandaise: t 125g unsalted butter, melted t 2 tsp lemon juice

into a separate small pan and heat until just boiling. Place the egg yolks into a food processor with a pinch of salt and turn on. With the motor running, add the hot lemon and vinegar, then slowly add the melted butter – drip by drip at first – until it is all incorporated. Pour into a bowl, season to taste, then cover and keep warm in a bowl set over a pan of hot water.

First, poach the duck eggs. Bring a pan of salted water to the boil and add the vinegar. Whisk the water to create a whirlpool and crack an egg into the vortex. Simmer for three to four minutes, then carefully lift the egg out and place into a bowl of iced water. Repeat with the remaining eggs. Set aside the pan and its water.

the thickness of the asparagus, until tender when pierced with a knife. Drain and toss with a little olive oil, then season with salt and black pepper. Return the saucepan of egg-poaching water to the boil, return the eggs and heat through for 30 seconds, then drain on kitchen paper. Lay the asparagus between four plates, top each with an egg and slivers of the ham, then spoon over some warm hollandaise. Sprinkle everything with salt and pepper and serve.

t 1 tbsp olive oil

t 6 eggs, beaten

t 1 medium onion, finely diced

t a handful of parsley, finely chopped

t 1 orange or red (bell) pepper, chopped

t 100g smoked salmon, cut into thin strips

t 2 cloves garlic, crushed

t 115g cooked red quinoa

t 1 tsp fennel seeds (optional) t 75gwatercress or rocket (arugula), roughly chopped

t 50g grated strong cheese such as Emmenthal or Parmesan

t 30ml/2 tbsp crème fraîche

t salt and ground black pepper

METHOD:

2 Add the watercress or rocket and cook for a few more minutes until the leaves have wilted. 3 Meanwhile, whisk together the crème fraîche, beaten egg, herbs and seasoning in a small bowl. 4 Add the salmon and quinoa to the frying pan, mix well, then spread evenly over the base of the pan. 5 Pour the beaten egg mixture into the pan, lower

The full three-tier McLaren model range will be displayed publicly in the UK for the first time at the Wilton Classic and Supercar Show. The event, based at the Wilton House estate in Wiltshire takes place 6-7 June 2015, and will see models from the Super Series and Ultimate Series joined by the McLaren 570S Coupé; the first model in the recently launched Sports Series. The mid-engine sportscar features the lightweight carbon fibre MonoCell II chassis, and a highly efficient 3.8-litre twin turbo V8 engine generating 570PS (562bhp) and 600Nm (443lb) of torque. With a greater focus on day-to-day usability and refinement, this latest model is very much a pure McLaren, boasting a class-leading power-toweight ratio of 434PS per tonne, and electrifying performance. The 570S Coupé accelerates from 0 to 100km/h (62mph) in just 3.2 seconds, reaches 200km/h (124mph) in 9.5 seconds, and on to a top speed of 328km/h (204mph). The limited edition 675LT will make its UK debut as one of two Super Series models on display, alongside the award-winning and core model in the Super Series, the 650S Spider. The 675LT generates, as the name implies, 675PS (666bhp) and is the lightest and most track-focused, yet road legal, model in the Super Series with production of the coupé-only model strictly limited to 500 examples worldwide. Completing the line-up from McLaren at the annual event will be the McLaren P1™ GTR, representing the Ultimate Series – the most exclusive and definitive McLaren range.
