Dear Friends, The stretch from early fall through the new year is a time of great celebration. First, we celebrate another successful summer with our guests, thanks to the hard work of our team of managers and associates. Then we celebrate the richness of fall colors and the traditions that come with autumn, followed by the joyous festivities of the Christmas season. In this issue of the magazine, we’re pleased to offer a behind-the-scenes look at how we prepare for our spectacular Twelve Days of Christmas and Season by the Sea programming at Ocean House and Weekapaug Inn, from our themes, décor, special event planning and more. We also take a look at and celebrate new experiences that will take us well into 2020 and beyond, like the expansion of the Fondue Express gondola private dining experience into an exciting Fondue Village, and the expansion of the Ocean House Management Collection to include the Inn at Hastings Park, the Boston area’s only Relais & Châteaux property, just minutes from the city. Resident Curator and Director of Art Education, Ocean House What art projects are you working on at Ocean House? I just created a self-guided art tour. It’s a 30-minute tour, enlightening guests about our collection of over 250 original paintings and illustrations throughout Ocean House. I also run our Artisan in Residence programs, where people can view artists in action. Every four months, we change out and rehang a new show in the hotel living room and hallway, and I assist with the show as well as sales of these paintings. In addition, I teach Cork and Canvas painting events for guests. Where's a unique destination to see art? Key West, Florida. It’s funky, fun and colorful—like the people. Ideal place to set up an easel and paint? Under a palm tree. That means I am far, far away.
Favorite Relais & Châteaux property? Huka Lodge, New Zealand. The Queen of England likes it there, too! It’s absolutely stunning. Any tips for managing jet lag? Change your watch to the time of your destination and start living that time on the plane. Go to bed early or stay up late to start off on the local schedule. Do you prefer to visit tourist destinations or out-ofthe-way, local haunts? Out of the way all day. The thrill of finding secret pathways to local cuisine is like finding a hidden treasure. Most interesting place you’ve discovered by chance? Serafina—a private farm and restaurant perched on a cliff on the Amalfi Coast, Italy. It is run and owned by a single family. They make their own olive oil, dried meats, cheese,

Who’s your favorite travel companion? My husband Mark Szaro. I drag him off to destinations he would not choose, but he always ends up thanking me— except for descending 1,600 stairs to the beach in Amalfi. (Yes, we counted!) We took the taxi home. Most unexpected place you found great art? In the mountains of Belize. There was a family creating jewelry out of a tree nut. I bought a nut ring.

Best non-tropical vacation? Saas-Fee in Switzerland was amazing. I went with a group of fellow ski instructors for a week. We laughed and skied and danced with very little sleep. That was my 50th birthday present to myself. When were you a ski instructor? From 2007 to 2015. I taught skiing, because I had to drive my son there. He quit after two years, but I kept on going. It’s great exercise and nice to get fresh air in the winter! Do you have any go-to travel apps? Hopper for flights, WhatsApp for free messaging, TripIt for sharing itineraries, Zomato for dining and Free WiFi Finder for just that. A sensational travel experience always includes… Good friends and good wine. It sounds boring, but it’s true!

Do you have any go-to travel apps? None. I usually ask locals for advice instead of my phone. Would you rather relax or be active on a trip? I’ve been accused of not knowing how to relax. To me, a vacation is an opportunity to discover, experience and explore in an effort to become better at my job.

Executive Chef, Ocean House Ideal travel destination for wonderful food and wine? This is a difficult one. If I have to pick one, I’m going to say France. All of it. Other favorites include Spain, Italy, New York City and Chicago.
Favorite Relais & Châteaux property? Ocean House, of course. I would like to visit L’Auberge Carmel, play golf at Pebble Beach and drive Laguna Seca racing track.
As Executive Chef, what are your responsibilities? Simply put, I lead the culinary team of Ocean House. Menu development, operational logistics, staffing and training are all within my purview.
What destination tops your travel bucket list? Japan. I have a strong appreciation for the Japanese sense of pride that permeates every aspect of the culture. From cuisine to craftsmanship and engineering, I bet I could spend weeks there and never get bored. They also like to have fun.
Most interesting place you’ve discovered by chance? I took a road trip from Marseille to Lyon, while avoiding the highway. The route led through some beautiful French countryside, and I stumbled upon a marketplace in a small village called Apt. The cheese, sausage, woodwork and clothing were all special and made for a very memorable afternoon.
As a child, what sparked your interest in cooking? I know this sounds awful, but my mother was not a good cook. The kitchen was this mysterious place with lots of cool things to experiment with and make. It was the first place for me to build things from scratch.
Best places you’ve gone on vacation? South Korea in 1994 and France in 2000. I reflect on those two trips often, because they were taken before the smartphone put the world at our fingertips. My sense of genuine “discovery” on vacations hasn’t been the same since. Memorable Midwestern dish? Growing up in Delavan, Wisconsin, we would hunt pheasants. One of my favorite preparations was to make sausage with the legs, stuff it in the breast and then wrap that with bacon. Served with wild rice and vegetables, it was a family favorite! A sensational travel experience always includes… A MotoGP (motorcycle Grand Prix) race and at least two outstanding dining experiences. Noteworthy gourmet meals? Guilty pleasure food? Dining at Paul Bocuse, Joël Robuchon, The French Laundry and Alinea have provided me snapshots of excellence expressed by generations of chefs. While each experience is remarkably different, they're all tangible expressions of artistry and teamwork. I also love Big Macs.

Assistant General Manager/Director of Food and Beverage, Inn at Hastings Park What are your responsibilities at the Inn? The fun part about my job is that no day is the same. I do a lot of things not included in my job title. My day-to-day includes: making sure the guests are happy and have everything they need, overseeing all staff in the dining room and bar, and working closely with the Executive Chef. I also do office work, staff training, order all beverages items and update menus. First restaurant job? I started in the industry at 17 as a server in a small café, which was started in 1921. It is in my blood, and I have loved it ever since. Perfect meal? My grandma’s homemade spaghetti and meatballs. I would pair it with an Italian Montepulciano wine.

A sensational travel experience always includes… A day of getting “lost” in the culture with no plans attached. Favorite Relais & Châteaux property? Sonora Resort, British Columbia. When you travel, what’s your guilty pleasure? A 90-minute essential oil massage. What destination tops your travel bucket list? Hiking in the Dolomite Mountains in Italy. Some good friends recommended it to me. You hike through small villages and stay the night. It sounds like paradise to me!
Food you crave when traveling? Fresh green vegetables and a grilled cheese sandwich.

Where’s your hometown and the coolest thing to see there? Brigham City, UT. The Golden Spike National Historical Park. Most interesting place you’ve discovered by chance? Great Missenden, England was very memorable. It’s the hometown of Roald Dahl. I had no idea his books were created from experiences in this town. Best place you’ve gone on vacation? The Inca Trail tour with Inkaterra. My three friends and I were escorted by a group of 10 people that cooked and set up camp for us along the trail. The guides were very knowledgeable, and the food was amazing. The landscape changed around every corner. To top it off, they had wild llamas that you could pose with for selfies.

W
hen Daniel Hostettler dreams about vacations, he dreams about visiting hotels. And as president of Relais & Châteaux North America, responsible for 90 properties from the U.S. to the Caribbean, he has the ability to make those visions come true—even if they extend beyond his own area of influence. “What I dreamed of was seeing some of the best Austrian five-star, superluxury ski resorts in that
famous Austrian Alps ski range,” he says, “and getting my kids on skis for the very first time.” Hostettler used his travel connections to plan an ultimate vacation for his family, including his 13-year-old son and 9-year-old daughter. He wanted the trip to hearken back to the early days when Relais & Châteaux was founded. In 1954, when the fellowship of individually owned hotels and restaurants was created, there were far fewer than the 600 or so properties today. “Relais & Châteaux started as seven hotels that were on the road from Paris to the French Riviera, back when you got there by driving,” he says. “Each hotel had fine food in common, and each property would send their guests down
the line to the next hotel, and then you’d turn around and go back.” They called it “La Route de Bonheur,” which means “the route of happiness.” Today, Relais & Châteaux still offers routes in various countries, suggesting how vacationers can bounce from one place to the next. “I thought, what better way for me to do this?” Hostettler says, adding that drive time was a key factor in choosing the route. “I wanted to have the kids in the car for no more than three hours at a stretch, and I wanted to be in these iconic locations.”
Hotel Post Lech The first stop on the journey was the Hotel Post Lech in Arlberg—best known as “Post.” The Moosbrugger
family has been operating Post since 1937. Today’s proprietors are Sandra and Florian Moosbrugger, who personally greet every guest in the lobby. “Each hotel we visited is owned and managed by a family. You’re getting what everybody is looking for now: an authentic, sense-of-place experience,” Hostettler says. “These families are taking turns every night walking the dining room. It’s like bed-and-breakfasts at the upper, upper level of luxury. To meet the families that run these places, that was a lot of fun.” Post Lech was atop Hostettler’s list because it has stube, or parlors, used as individual dining rooms. There are about five tables in each room serving traditional Austrian cuisine. “Each room has a distinct feel,” he says. “They’re all serving the same menu, but one feels contemporary and modern. We ate in the one with wood walls and ceilings, which was very traditional. You can choose your ambience. We had lamb with raspberry sauce. It was a lot of fun.”

Next on Hostettler’s list was Top Hotel Hochgurgl, located at an altitude of more than 7,000 feet, at the summit of the Austrian Alps. “This is the most amazing place,” he says. “You are driving up and up and up, and that’s after you’ve started two hours up the mountain. This five-star hotel is in the middle of nowhere in these snowy mountains. Then you get all the way to the top, and it’s been there for decades. It’s a convenient ski-in, ski-out hotel, and that’s where the kids learned to ski.” Guests can walk out the

property’s front door, snap on their skis and take off down the slopes—some of which are challenging even for longtime fans of the sport. “Most people don’t think about teaching their kids to ski on this triple black diamond mountainside, but we hired an instructor, and they were great about it,” he says. “They put the kids’ skis on the back of a snowmobile and took them to a flat part, like a bunny slope. The kids were gone for three hours while we sat in the bar. They had the time of their lives.”

Spa Hotel Jagdhof The third and final hotel on the family’s “Route de Bonheur” was Spa Hotel Jagdhof, which is home to antique farmhouse furniture and historical photographs of the region. At this hotel, Hostettler didn’t just take it all in; he also figured out a way to bring some of it back home to the United States. “The draw for me was this very cool pop-up, where they took a ski gondola and turned it into a four-seat restaurant. You can have dinner in the gondola, sitting in the back of the hotel’s lawn,” he says. The experience so impressed him that he recreated it stateside. He and the Ocean House team found a four-person ski gondola that someone in Vermont was selling on eBay. They

bought it, gutted it, painted it, installed new windows, added heat, and put it on the front lawn next to the Ocean House Christmas tree, serving fondue inside three times a day. “It was the smallest Swiss restaurant in the smallest state in America,” he says. The idea was so successful in Rhode Island that during his trip to Austria, he decided to expand the concept. “We bought two more gondolas in Austria, and they each seat eight people,” he says. “They’re in the shop being outfitted right now. This winter, we’re going to put them around a firepit and call it Fondue Village.”

STUBAI VALLEY
Stubaital is a valley in Tyrol, Austria, situated within the Stubai Alps. There are four ski areas that offer everything from snowboarding to toboggans, and there’s the Stubai Glacier for visitors to experience. “It’s where we spent the most amount of time, because we wanted to explore the entire area,” Hostettler says. “We rode up to the top of the glacier. To get to the top, we had to change gondolas three times, at each station. You’d probably be an hour skiing down without having to stand in a lift line.” Hostettler finds the scenery in this part of Austria as breathtaking as any that he saw throughout the Austrian Alps. “The glacier was packed with snow still, because it was the end of March, and on the second night, it started snowing,” he says. “The hotel is in the valley at the bottom of the glacier, and it’s magical. It’s everything you think of as a quintessential Alpine experience: the chalet houses, the wood, the fireplaces burning, and yet every one of these hotels has a spectacular, modern spa and cuisine from Michelin-star chefs. It was absolutely amazing.”

utumn in Massachusetts is a fall foliage dreamscape, especially by car. As if exploring the Boston-area backroads isn’t scenic enough, Salem is a pleasant drive from the Inn at Hastings Park. Yes, that Salem. It’s about an hour each way, and totally worth it.
SIGHTS TO SEE Depending on “witch” route you take, guests may drive along I-95 or US-3 from the A Inn at Hasting Park, enjoying local landmarks— like the very hike-able B Middlesex Fells Reservation—en route to historic Salem.

Soon after leaving A Ocean House, you pass Ninigret Pond and B National Wildlife Refuge sprawling to the east. The unspoiled eye candy of coastal nature continues for miles until Newport comes into view from the Claiborne Pell Bridge, majestically crossing Narragansett Bay. Once in town traffic gets a bit cumbersome, so we recommend valet parking if you can’t find a metered spot fast.
Newport is known as “The Classic Coast” with world-famous Bellevue Avenue and its Belle Epoch manors. Visiting Mansion Row and beholding the opulence of C The Breakers, Chateausur-Mer or any of the mansions here makes for a fascinating winter afternoon.
This is a pedestrian’s paradise (Condé Nast Traveler has called Newport “America’s Best Walking City”), so whether it’s Long Wharf Mall or the adorable shops along Thames Street, you’ll find everything from luxury brands to local knickknacks. For those seeking more than just a stroll, there is D Cliff Walk, a lovely three-mile seaside path for sightseeing along the rocky shoreline.
As a one-time whaling center, Newport is distinctly nautical. Fall visitors can catch the Halloween Howl Regatta on Narragansett Bay in late October, and there are numerous water tours of this historic city year-round. Don’t depart without stopping for a snack (even better a meal) at cozy E Castle Hill Inn, a sister Relais & Châteaux property with the best of everything Newport.

he breezy jaunt from Weekapaug Inn to chic Mystic, Connecticut, is one of our favorite road trips. Too bad it isn’t further away, as the surrounding countryside makes for a spectacular scenic route.
SIGHTS TO SEE Savor the leisurely drive from A Weekapaug Inn to Mystic. A boater’s paradise from its vantage on the Mystic River near where it meets Fishers Island Sound, the historic town has reimagined itself as both a family and foodie destination. Mystic has become an epicenter for hyper-local, seed-to-table excellence. To find out what “hyper-local” tastes like, we suggest B Oyster Club, with its fierce authenticity and unforgettable signature dishes.
C Mystic Seaport is another brilliant way to spend part of a chilly afternoon. The Planetarium and Children’s Museum here are first-rate, and even grown-ups get a faraway look in their eyes upon boarding the 1841 whaleship Charles W. Morgan, docked as a permanent exhibit.

Signature Style OHM Design Group launches to bring resort ambience to local clients

hile some aspects of a great destination never change— beautiful location and a distinct culture of hospitality—regular updates are also part of the mix. Guests of the Ocean House and its sister properties often remark on the regularly refreshed furnishings and color palettes, facets of the enhanced level of comfort and beauty that is a signature element. Although not everyone realizes it, much of this transformation occurs thanks to in-house design expertise. In his travels to other Relais & Châteaux properties and five-star resorts worldwide, Ocean House Management Collection (OHM) President and Group Managing Director Daniel

Hostettler discovered years ago that many prestige destinations have in-house teams that function similarly to stand-alone design firms. As the collection of properties grew, the rationale for developing an OHM design arm became clear. “The idea of creating our new OHM Design Group began several years ago with a visit to Kiawah Island, where I met briefly with the in-house designer. His work included not only managing the redesign and refresh projects that were constantly in progress throughout the large resort, but also projects for private residences on the island,” Hostettler says. “Following this visit, I spent some time at Blackberry Farm, a Relais & Châteaux property in Tennessee, and discovered they also had full-time professionals on board. The team
there has developed their business to include projects throughout the country, inspired by the resort’s own unique design aesthetic.” As many aspects of hospitality management engage his personal love of architecture and design, Hostettler was intrigued by the idea of bringing these skills in-house at OHM. “We were being asked to design a couple of cottages in our collection, as well as some of the private residences,” he recalls. “This was about six years in, and I thought, I can do this with some help.” As it happened, the answer was no further than the front desk at Ocean House. Brittany Borghesi had been working at the Boston Design Center when she was offered a position as an interior designer for a Rhode Island construction firm. She pulled up stakes and moved, only to discover some alarming news.

“Just before I was scheduled to start, the owner contacted me and said they had to hold off on hiring an in-house designer,” recalls Borghesi. “Frantically, I applied to every design firm within a 50-mile radius. No one seemed to be hiring. Then, while driving around Watch Hill, I saw the Ocean House for the first time. My heart just fluttered; it was stunning. “I thought to myself, they must have a design team and I went in. The front desk agent smiled and said, ‘Are you here for the career fair?’ This was all happening inside, unbeknownst to me. I went through the interview process, discovering that Ocean House did not have a design team. Daniel Hostettler told me he wasn’t sure that someone with a design degree could move forward in a career here, but there was a guest relations position available. Without hesitation I said yes; it just felt right.” “Between her arrival and the incoming projects, I felt her design training was just what we needed to bring that function in-house,” says Hostettler. The front desk position did not last long, as he saw that his new employee was more than just a quick study in the art of hospitality. With her design training, she would be a perfect fit to help with the decorating and renovation projects in his in-box. “Following Brittany’s arrival and our completion of the cottages and private residences, it’s been constant new things ever since,” says Hostettler. “We’ve added public spaces: an ice cream and candy store at Ocean House, called Below Deck; pop-up venues for winter at Ocean House and summer at the Inn’s Pondhouse; and The Brasserie, a new year-round dining space at Weekapaug Inn. We’ve done touch-ups at Watch Hill Inn, then a complete renovation of all the Ocean House hotel rooms two years ago. We’ve renovated the cottages and carriage house suites at Blantyre, and a soft renovation is in progress at Inn at Hastings Park—our newest property. Over time as the company has grown, and as Brittany has learned the OHM look and feel, she’s taken the lead.” Borghesi, who holds ASID (American Society of Interior Designers) credentials, adds, “We do it all. One of my favorite projects was the Fondue Express at Ocean House, a vintage ski gondola that is used similarly to après-ski spaces in Europe. It provides an intimate and

To achieve a clear separation between side-by-side restaurants, OHM Design Group installed French doors and decorated The Brasserie with a casual, rustic feel. The room is completely unique, yet captures the resort's atmosphere of barefoot elegance.

RETAIL REVAMP Below Deck at Ocean House
The appropriately named Below Deck was once a locker room with outdoor showers. Today, the candy shop serves up sugary treats and carries luxury swimwear, reading materials and other beach necessities.

Fondue Express at Ocean House A ski gondola was retired from the slopes of Stratton, Vermont and transformed into a tiny Swiss-inspired fondue restaurant.

luxurious setting for dining and entertaining in winter. This was a brilliant idea from Mr. Hostettler, and we worked together to make the magic happen. Right now, we’re expanding the idea to a Fondue Village with two additional gondolas. Veuve Clicquot has partnered with us and it’s very special. “I am also redoing a two-bedroom suite that will be new to our rental pool. I’m excited about this project; the client has some whimsy and owns some beautiful antique pieces that will be repurposed in the suite.” Borghesi relishes the variety of projects and offers some of her go-to solutions for clients with specific needs. “Perennials is a fabric brand that I often use for upholstery in high-traffic areas; it’s beautiful, and great for rental projects— bulletproof, actually. We generally produce our custom furniture in North Carolina to meet a client’s specific requirements. We’ll often brainstorm furnishings, making a series of drawings so we can get the details just right.” Such small tweaks as built-in electric outlets for bedside tables, and dressers that double as mini-fridges are just two of the special orders she has handled. The constant reimagining of spaces and changes in décor has not gone unnoticed. “While we are contacted frequently by our own residence owners to make improvements and updates, we’ve recently noticed an increase in inquiries from Watch Hill residents and a number of our guests who admire our signature style,” says Hostettler. That interest from guests and members of the communities that surround OHM resorts has led to a more formal positioning of OHM Design Group. A website—www. ohmdesigngroup.com—was launched recently, to create a visual portfolio of completed projects that highlights the group’s capabilities. “We’re looking to the future with this introduction,” says Hostettler. “With Blackberry Farm as a model that precedes us, and now has six staff designers, we see the opportunity to incubate our in-house design creativity and versatility into a real business line for OHM.”

FONDUE EXPRESS Gondola dining concept expands to a Swiss-style village

he smallest restaurant in the smallest state is growing—and it’s now the smallest village. The Fondue Express, a ski gondola pop-up restaurant launched last winter, was so popular that two more gondolas have popped up on Ocean House’s North Lawn to create Fondue Village. Dining in a vintage ski gondola transformed into a cozy corner of Switzerland is a one-ofa-kind experience and culinary adventure. Painted glossy Veuve Clicquot yellow, the gondolas are set among evergreen trees decorated with little white lights. During the holidays, Ocean House’s beloved 35-foot Christmas tree makes it even more magical. The two larger ski gondolas once climbed the mountains of Austria. They seat four to six. The smaller one, which seats two to four, came from Vermont. They have been retrofit with intricate millwork lining the curved walls and ceilings. Each has a unique interior design and color scheme. Inside the smallest gondola, guests sit on a cozy cushioned banquet around a bistro table dressed in a red-and-white check tablecloth. Cheerful red curtains, hung from retrofit grab bars, frame views outside the large windows of festive evergreens. Blonde pine walls glow warmly, lit by a chandelier crafted from antler horns. A working cuckoo clock and painted wood cow add a lighthearted touch. Outside the gondolas, a fire pit is surrounded by Adirondack chairs and equipped with faux fur throws. Café lights are strung above. Fondue Village’s fixed menu was carefully devised by the culinary team with Daniel Hostettler, who serves as President and Group Managing Director for the Ocean House Management Collection. Hostettler’s Swiss heritage and travels inspired the venture. The seasonal menu is just what you want on a cold day—casual, homey and warming— executed and served to Ocean House’s five-star standards. Call it refined rustic.
To start, your personal server brings a snack of cured meats for the table to share. Slices of smoky Black Forest ham and air-dried beef known by its Italian name bresaola (bundnerfleish in Switzerland) are accompanied by pickled vegetables, sour-sweet carrots, cauliflower and pearl onions, and a bowl of cornichon. The first course is a choice of soup or salad. The hearty bowl of Swiss barley soup is smoky with bacon, and thick with exquisitely brunoised mirepoix of carrot, celery and onion. Potatoes are so precisely cut you could mistake them for the delightfully springy barley. The salad is mache, a winter green with a delicate flavor, dressed in champagne vinaigrette. Mache goes by many names, but none as cute as the Swiss “Nüsslisalat.” The main course offers three choices, and groups dining together must select the same one. It comes as no surprise that fondue is the favorite. The Ocean House chefs know the secret to making fondue’s smooth texture stay creamy throughout the course, as guests spear little boiled potatoes and cubes of farmhouse bread, and dip them into the luscious warm, melted blend of Swiss and Fontina cheeses, finished with a little kirsch. Raclette, which many guests might be unfamiliar with, is the other cheese choice. What’s raclette? Simply stated, it’s melted cheese. But not just any melted cheese. Raclette is a semi-soft cheese made from cow’s milk, and aged three to four months. Although the scent is pungent (which cheese-lovers take pleasure in), the flavor is mild, nutty and fruity. You can’t help but sigh when the waiter scrapes the

The Veuve Clicquot Fondue Village is the winter expression of Ocean House’s Secret Garden. Ocean House sommelier Jonathan Feiler has created a pairing menu that explores the best of Veuve Clicquot’s Champagnes, including Classic Brut, Vintage Rosé and a “Rich” cocktail. No wonder most guests choose the pairing option! A seasonal cocktail crafted with Veuve Clicquot Rich, the brand’s Champagne that is created expressly for mixology, starts the evening. It’s likely there’ll be a VC Rich cocktail with cranberry and rosemary or star anise, cinnamon and local honey. Classic yellow label brut is poured with the first course. It’s fresh and crisp enough to stand up to the soup and not overpower the salad, whose champagne vinaigrette gets a splash of the Veuve Clicquot Brut Champagne. Veuve Clicquot’s Vintage Rosé is poured with the main course. The richer body and fuller flavors complement the main courses. The experience is capped off with Etter kirsh, a traditional digestif that is distilled from cherries. The kirsch is presented with the main course, and then a second glass is enjoyed with the dessert of plum tart. —EK

melted cheese over the potatoes. Veal bratwurst with onion sauce is the third choice, served with Swizterland’s greatest contribution to potatoes, rosti—a cake of shredded potatoes cooked until golden brown. Dessert is an open-faced plum tart. Red-purple plums are baked on top of golden almond custard. It’s a fresh and surprising light way to end the meal, especially when accompanied by Swiss schnapps (see sidebar). The plate of traditional Swiss Christmas cookies is irresistible. Guests leave with a parting gift, a little bag of Swiss milk chocolates. Outside the gondola, the fresh sea air is brisk, and the fire pit beckons.

FONDUE FACTS The Ocean House chefs know the secret to making fondue’s smooth texture stay creamy throughout the course.
Is It Cold? No! The gondolas are cozy and warm. The floors are heated, and there are space heaters. Guests can borrow a Columbia titanium coat, which is warm, stylish and very slim—an advantage in the snug space. Another option is to bundle up in one of the gondola’s blankets. That said, dress warmly. Save the sandals for summer. Book Ahead? Seating is limited and Fondue Village is popular. Lunch is served Thursdays through Sundays at noon. Dinner is served Wednesdays at 5 p.m. and 7:30 p.m., Fridays and Saturdays at 6 p.m. and 8:30 p.m. The season runs until March 31, 2020. A Good Cause Fondue Village donates a portion of its proceeds to Ocean House’s Fund for Charitable Giving.

rom Thanksgiving to New Year’s Eve, Ocean House and Weekapaug Inn are spectacularly outfitted in the spirit of the season. How does the holiday transformation happen? “The design aesthetic is pretty organic,” explains Lauren DiStefano, Group Meetings and Special Events Manager of the Ocean House Management Collection. “It’s typically an idea session between our President and Managing Director, ownership and myself,” she explains. After an initial list of ideas is generated, the final idea is selected—last year it was Dr. Seuss' How the Grinch Stole

With Ocean House or Weekapaug Inn as your festive destination, a magical holiday is guaranteed
Christmas!—and vetted with Broadview Florist and Garden Center in Westerly, Rhode Island. This year, the themes include: A Charlie Brown Christmas at Ocean House and The Nutcracker at Weekapaug Inn. Both resorts also host special events, such as the annual Santa Brunches, which start December 1. Santa arrives at 10 a.m. and mingles with guests until 2 p.m., and reservations can be made through each property’s restaurant. “Christmas is all about the children,” adds DiStefano, “so we keep them in mind throughout the entire holiday design process.”

It’s Christmas! Let the special memories begin…
On the Friday after Thanksgiving, Ocean House will be transformed into a winter wonderland. In keeping with this year’s Charlie Brown Christmas theme, “We’ll be looking to the movie and various comic strips to recreate some scenes of the classic story,” explains DiStefano. Different colored Christmas trees, themed music and cut-outs of the beloved characters are just some of the highlights. The Ocean House exterior will be adorned with a gorgeous oversized wreath, and the front drive balcony and railings wrapped with lush garland and holiday lights. One of the most special events is the tree lighting ceremony on the front lawn, which takes place the Saturday evening after Thanksgiving. “Our tree is always a few feet larger than the one at the White House,” notes DiStefano. Prior to the start of the tree lighting, a Christmas village is set up in the lower Ocean House parking lot where local vendors sell gifts like wreaths and garlands to outfit your home in the holiday spirit. Visitors can enjoy a cup of hot cocoa and a Christmas cookie, while listening to traditional carols performed by a local caroling group. The tree lighting ceremony coincides with Santa’s official arrival into Watch Hill, as he makes his grand entrance atop a firetruck and helps light the Christmas tree.

A relaxed holiday vibe sets the tone f or the season “In years past, the Christmas décor at the Weekapaug Inn has been one of barefoot elegance, which is in keeping with the ambience of the resort,” explains DiStefano. The peaceful and comfortable setting of the Inn makes it a special place to celebrate the holidays. This year, the Christmas décor will be
inspired by The Nutcracker. Public spaces of the Inn will be transformed into a holiday haven that reflect various scenes of the beloved Christmas ballet. Ornaments on Christmas trees, garlands, wreaths and other festive décor will be curated by Broadview Florist and Garden Center.

SANTA BEHIND THE SCENES One of the most exciting holiday offerings is visiting Santa’s guest room at the Ocean House. During December, families can reserve a 15-minute time slot to visit Santa in his private quarters. “We design Santa’s guest room as if he’s on a working vacation and getting his schedule ready so kids can see Christmas in
progress,” explains DiStefano. Mr. Claus’ room is decorated with Santa-themed pillows and blankets, a closet full of Santa suits, a workstation with maps, milk and cookies, and jars of carrots and oats for the reindeer. Learning Experience Fall and winter programs at the Ocean House and Weekapaug Inn aim to inspire and rejuvenate everything from the skin to the soul
A
utumn brings refreshing temperatures and a change of pace to the Ocean House and Weekapaug Inn, where culinary, wine, spa, art and outdoor offerings adapt to the calendar along with nature. “Late September and October are my two favorite times of the year,” says Mark Bullinger, resident Naturalist and Director of Recreation at Weekapaug Inn. “It’s absolutely beautiful here: sunny days with low humidity, the water is still warm so you can swim, temperatures might be in the low 60s and 70s, and the crowds are thinner. It’s just a great time of year.” Weekapaug Inn and Ocean House offer boat tours through October, with the occasional whale sighting off the coastline. Seals start to arrive in mid-October and stay through April, while birdwatchers can spot ducks and loons. “The thing I love about wintertime is that even when we do get pasted with a big snowstorm, the lower part of the beach is free of snow,” Bullinger says. “We can have guests skiing across the top of the beach, while others
are walking along the lower part of the beach, and they can talk to each other as they go. The sun is bouncing off the water, you’re taking layers off as you get going, and you’re having a great time.” Timothy Meyers, Director of Culinary Education and Food Forager, updates all the menus with seasonal ingredients as the weather changes, and he’s launched a series of 11 private classes that range from making sourdough pizza to tasting olive oils. His favorite is the modern crudo class, which instructs how to serve raw fish that’s not sushi. “You use hyper-seasonal ingredients and innovative plating designs,” he says. “They’re tartares and carpaccios, but with fish.” Another class he tailors for the changing seasons is his “Date Night Crash Course,” for preparing a meal that will impress any special dining companion. “I find that risotto is easy to cook, it’s romantic, and it doesn’t take all day in the kitchen,” he says. “The food is very seasonal, just like the food at the Ocean House—for

summer, I’d do a clam risotto, then maybe a corn risotto, and in the winter, maybe a celery and truffle risotto—but it’s all about how to make the broth and how to really cook the rice.” Pairing food with fine wine is on the agenda for fall and winter as well, according to Jonathan Feiler, Group Wine Director and Director of Wine Education. He arranges events with guests who can impart wisdom not only about the wines, but also about wine and food culture. “We’re focusing on women winemakers and women principals at wineries,” Feiler says. “On September 5, we had a wine dinner with Barbara Lynch, one of the most amazing female chefs of our generation in the region. She’s the chef and owner of Menton in Boston, as well as No. 9 Park and Sportello. We connected her with a winery called La Sirena, owned by Heidi Barrett, who used to co-own and make wine at Screaming Eagle—one of the top California cabernets.” Excited about the visiting luminaries, Feiler

90-minute treatment that includes exfoliation, a mineral-rich body wrap, and ginger oil to soothe aching muscles, followed by a massage with amber-infused oils to ease tension. “Starting in the fall, we always do our Wellness Wednesdays,” she says. “That includes a 60-minute restoration massage— with magnesium and arnica to massage target areas—and a 60-minute facial. We also have a workout workshop that day, and it can be anything from a core class to a demo to stretches. It really depends on the participants.” And for those whose minds are relaxed and open, Lisa Szaro, Resident Curator and Director of Art Education, has organized a series of Artisan in Residence programs from September through April. These artists offer workshops on Saturdays, teaching everything from harp building to wood carving to bookmaking. “Beginning in September, we have a jewelry artisan,” Szaro says. “She will be crafting sterling silver with gemstones to create pendants and earrings for our groups—it’s limited seating, only seven people. They learn how to create their own piece of jewelry. They participate with a hammer and an anvil.” During October, Szaro will change out the artwork in the lobby of the Ocean House, bringing in a mixture of marine and contemporary art from the J. Russell Jinishian Gallery in Fairfield, Connecticut. She’s also helping introduce an art audio tour, similar to the self-guided versions patrons can take at museums or botanical gardens. “You can give yourself a tour with over 250 pieces of original art from more than 20 different artists,” Szaro says. “We had Mrs. Royce, an owner of the Ocean House, record her own take on her art collection, why she and her husband chose each piece and invested in this collection. This is their private collection, and the recording really gives it a special touch.”

explains how it’s a family affair for the Napa Valley winemakers. “Heidi Barrett’s daughter, Remi, joined us. They’re kind of Napa Valley royalty, if you will. And Heidi is married to Bo Barrett, the owner of Chateau Montelena Winery. Chris Pine played him in the movie Bottle Shock. It was an epic evening.” Feiler organizes tastings that highlight wines in tune with the changing seasons, including a class about New York wines during harvest time in October. In November, he leads Wine Camp Weekend for about eight guests that runs Friday through Sunday. “We do a wine tasting on the property with some cheese and charcuterie, and then dinner is on their own,” he says. “Starting Saturday, they have breakfast and then we take them to a winery in Stonington, Connecticut, called Jonathan Edwards. We do a tour and then go into the vineyard and taste the various wines. The owner comes out and digs a big hole in the ground, so we can look at the soil component and how far down you go before the roots stop and spread. He talks about vineyard management and how the vine grows. Then we go back into the winery and talk about how wine is made on another amazing tour.” The Ocean House chef sends lunch for everyone to eat at the vineyard, and the group makes wine together. “Everybody gets to make their own,” Feiler says. “Once you have your blend, the winery will produce 13 bottles for the group. Twelve of them get labeled, and the 13th one, we number. At dinner that night at the Ocean House, we do a blind tasting with a group, and everybody gets to vote on what their favorite wine is. Boston Luxe Inn at Hastings Park joins OHM Collection
R
adical things are known to happen in leafy Lexington, Massachusetts. The first shots fired in the American Revolution rang out on famous Lexington Battle Green, changing the world forever. Fast-forward 240 years, and a family-run hotel staged a more upscale uprising with its own rendition of “revolutionary hospitality.” That’s the story of hotel owner Trisha Pérez Kennealy and her beguiling Inn at Hastings Park, the first and only Relais & Châteaux hotel in greater Boston. In early 2019 the Inn joined the Ocean House Management (OHM) Collection in a masterstroke that still has the industry buzzing. Today, Lexington Battle Green is placid greenspace in tony exurbia. About 400 yards away sits Inn at Hastings Park, in a handsome New England setting. That proximity isn’t lost on the owners, who visualized it long before the award-winning creation became real. “Lexington played such a vibrant part in American history, and we’ve always loved the town,” says Pérez Kennealy. “I thought it only fitting for there to be a luxury inn here.” She submitted the winning proposal to renovate three historic structures built in the 1880s and bordered by a protected wetland. Zoning squabbles sent her back to the drawing board, but it was meant to be. Inn at Hastings Park took form, and what a form: it’s a vast Victorian compound with 22 gorgeous guest rooms and suites, all

Restored woodwork gleams throughout; tile fireplaces and ingenious design make it cozy; and a sun-kissed wraparound porch radiates New England charm. The OHM alliance has brought new perspectives, from inspired minibar curations that celebrate the region to a rethinking of common areas and dining. In this property where frequent guests don’t want things changed at all, even purists will be pleased by the new developments.

Upon opening in 2014, the Inn’s restaurant, Artistry on the Green, garnered rave reviews from guests and the food press for its seasonal menus and flawless ambience. It has been so successful, in fact, that Inn at Hastings Park is doubling down on dining. The generous dining room space formerly occupied by Artistry is a new bistro concept called Town Meeting. “I’ve always loved the idea that an inn is a place where people come together,” says Pérez Kennealy. “Town Meeting caters to that sense of community in dining.” Saturday afternoon tea and Sunday brunch in the space has become a favorite among guests and Bostonians alike. Now located in the Inn’s beautiful Living Room space, the reimagined Artistry on the Green offers a gourmet tasting menu. Greater Boston is asserting itself as a dining destination again, and Pérez Kennealy and OHM are clearly a big part of that. “People are looking for food experiences,” says Pérez Kennealy, “whether it be casual, everyday dining or higher forms of gastronomy.” Inn at Hastings Park participates in the regional food conversation in other impressive ways. Pérez Kennealy chairs the board of advisors for the Friedman School of Nutrition Science and Policy at Tufts University. She also celebrates local cuisine, spotlighting the bounty of nearby farms at frequently sold-out Farm + Vine dinners at the Inn. Recent dinners featured Lexington’s own Wilson Farm as well as Codman Community Farms in Lincoln, Massachusetts.
