Dry Pasta – Foodservice
The ultimate air-dried, small-batch laminated pasta. Our fine and elegant pasta cooks in less than 3 minutes. Our pasta making technique was developed over many years. Essentially, it is founded on a traditional method, requiring the skilful hands of experienced artisans. The key quality factors of our pasta reside primarily in the ingredients we use and also in the unique way we make it.
Our Method For our pasta dough we use: 100% Australian Durum Wheat Semolina, free range eggs, a little virgin olive oil, (for that particular Italian taste) and only the finest natural flavourings. The pasta is then rolled and folded (laminated) in small controllable batches. Virtually all other brands of pasta are extruded: a highly mechanised industrial process that forces the dough through steel dyes at enormous pressure. Our manufacturing process produces a pasta that is more natural; harsh processing techniques are avoided. Thus, the wholesome goodness of our 100% natural ingredients is preserved. Passion Pasta, on the other hand, is far too delicate for the high pressure and heat typical of most extruders. So we instead mimic the old fashioned hand crank machine: each small batch is mixed, kneaded, and rolled into long sheets, then cut into our signature Angel Hair, Linguini, Fettuccine, Pappardelle and Lasagna widths. This method allows us to use a softer flour blend infused with fresh vegetables and other ingredients which couldn’t otherwise suffer the pressures of extrusion. The slow rolling and folding lamination process gently stretches the dough and gives the elastic portion of the flour (gluten) a chance to develop its resiliency. Each fold of the dough doubles the number of layers of the pasta sheet, structuring the pasta into thousands of very thin laminated disks. Each disk layer adds to the resiliency and flexibility of the pasta, providing a fine velvety texture and pleasing bite. It also locks in the flavouring particles (herbs, spices and vegetables), ensuring that the flavour does not wash out during cooking. Therefore, we are able to roll our pasta much thinner, to about 2mm in fact!

This enables us to produce not only the very finest and most elegant looking pasta on the market, but allows us to claim a record cooking time of less than 3 minutes; essential qualities for a busy “a la carte’ kitchen.” No more pre-cooking, simply cook to order !! Drying pasta is an art. In the large factories, high heat, microwaves and steam are often used to dry pasta and are suspected of altering the nutrient and vitamin value of the pasta. On the other hand, our method of slow air circulation allows the pasta to dry in the most natural way possible. After being cut to size, our pasta is hung to dry, then hand-harvested, packaged, and stored in a special climate-controlled warehouse until shipped.

Our Love To this day, the preparation of vegetables, cracking of eggs, measuring and combining of ingredients, transferring of dough between work stations, hanging, harvesting, and packaging of pasta are all still done by hand.

Roasted Duck & Wild Mushroom Agnolotti with cream sauce (featured)
Cook the pasta in a large pot of boiling water until al dente, drain. Pour 500ml of thickened cream into the frypan and simmer gently for 5 minutes stirring occasionally until the sauce has thickened.
Our ravioli consists of fresh meat & vegetable fillings, we don’t use ’fillers’ which are traditionally used to bulk out the filling and absorb moisture and flavour. Passion Pasta filled pastas are packed full of the freshest ingredients to ensure you get the freshest natural product with that fresh pasta taste.

At Passion Pasta we will never compromise on the authentic taste and texture of fresh pasta. We package our fresh pasta product using vacumm sealing techniques allowing our pasta a maximum 28 days life in the refrigerator - not 60 days like most supermarket brands.

Vegetable Penne with Roasted Tomatoes, Rocket & Goats Cheese Ingredients 250g Passion Pasta Gluten Free Vegetable penne 16 cherry tomatoes 4 tablespoons olive oil 2 tablespoons lemon juice 120g rocket, roughly chopped 2 tablespoons chopped flat leaf Italian parsley 35g grated parmesan cheese 100g goats cheese, crumbled 1 handful basil leaves (torn)
Method Cook pasta in a large pot of boiling water as per instructions on pack. Drain. Drizzle olive oil over tomatoes and roast in moderate oven for 20-30 minutes. Add roasted tomatoes, lemon juice, rocket, parsley and parmesan to pasta. Stir gently combine and serve topped with crumbed goat’s cheese and basil. Serves 4
