Eat

like a local

If you’re looking for the ‘real’ Amsterdam and want to avoid the tourist traps, then look no further. Here are our top ten tips for dining from insider’s Amsterdam.

1 IN DE WAAG Nieuwmarkt 4 Restaurant In de Waag is located in the historic Waag building on Nieuwmarkt square. Dating from 1488, the Waag building is a magnificent location, its interior lit by some 300 candles. Excellent lunches and dinners are also served, and there’s even a wonderful outdoor patio.

2 VINCENT KAAS & VLEES Nieuwmarkt 6 Excellent choice of affordable sandwiches. Famous for their lunch specials, Vincent Kaas & Vlees offer and excellent choice of affordable sandwiches, including the sandwich mortadella, vitello tonato, or pastrami de luxe. You can pick another from the menu, or make your own sandwich. It’s a good place for cheese and meat too.

3 THAI BIRD Zeedijk 72-74 You can find Thai restaurant and Thai snackbar Bird almost facing each other in the heart of Amsterdam. It’s a great choice, wether you’re a Thai food lover or a price-conscious first-timer. Remember not to come to late - it’s really popular and you’ll probably have to queue for a table.

4 RAMEN-YA Oudezijds Voorburgwal 236 Ramen-Ya specialise in Hakata style ramen, with a rich and creamy thin noodle broth. They also serve lighter ramen options. The ramen is all fresh and hand-made, without any artificial additives or preservatives.

5 ISOLA BELLA Thorbeckeplein 7 Since 1960, Isola Bella has been offering the finest Italian cuisine in Central Amsterdam. The friendly staff are really welcoming and serve the best pizza and pasta dishes in town. The interior with Latin style pillars and stunning wall paintings make it feel like ancient Rome.

6 LANSKROON Singel 385 Just 5 minutes walk from the Flower Market, this is a wonderful cozy spot for breakfast or an afternoon treat. Delicious pastries (like apple turnover with muesli), beautiful cakes and pies abound and they still make stroopwafels (syrup pancakes) by hand - not those stamped out ones you usually find.

Amsterdammertje

Originally made with ox meat, Ossenworst is a raw beef sausage originating in Amsterdam. This specialty has its origins in the 17th century, when oxen were imported on a large-scale from Denmark and Germany. The spices in the sausage, such as pepper, cloves, mace and nutmeg, came from the Dutch East Indies. ‘Amsterdammertje’ is made according to an authentic and proven family recipe that goes back more than 80 years.

BORN & RAISED in Amsterdam

Eva Simons We asked Amsterdam raised, international singing star and Idols judge, Eva Simons (32) how to audition for a big TV talent show.

WHO IS EVA SIMONS? Eva Simons (born on March 17, 1984, in Amsterdam) is a Dutch electro-pop singer who made her solo recording debut in 2009 with the international hit Silly Boy. Both of her parents are musicians and as a teenager she studied music at the Amsterdam Conservatorium. Several more single hits kept her in the spotlight, including Take Over Control (with Afrojack), Best Night (with LMFAO) and will.i.am’s This Is Love. In 2013, Simons supported Beyoncé on her tour of The Netherlands and released the single, Chemistry, followed in 2015, by the dancehall-infused single Policeman. This year, she joined the judging panel for Idols, (the Dutch version of TV show American Idol). 10

Magazine

HOW CAN I PREPARE MYSELF? ’That’s easier said than done when you don’t have any experience. Maybe ask your family and friends what they think about your voice? Do not copy any artist. We are definitely not looking for a second Beyoncé or Justin Bieber!’ WHO SHOULD I LISTEN TO BEFORE THE AUDITION? ‘To yourself. Make some recordings and be prepared to review what you hear. You are going to hear some parts that are not so great. Try to improve those parts and always remember: if it just sounds okay, it’s not good enough...yet.’ WHAT DO I WEAR TO AN AUDITION? ‘Come in as the best version of yourself. Do not show up in leather pants if you normally wouldn’t wear them.’ WHAT IF I HAVE AN ACCENT? ‘I am from Amsterdam, and I think it’s very charming if someone with an accent comes in. It shouldn’t

be a problem, but I can imagine that it might make you feel a little insecure. If it does, there is only one thing to do: forget it. Just kick some ass and blow your audience away!’ WHAT IF I DON’T FEEL WELL ON THE AUDITION DAY? ‘Don’t worry too much. Only the worst singers use their flu’ as an excuse.’ WHAT KIND OF SONG DO I CHOOSE? ‘Choose a song that will let you show you are born for the big stage.’ WHAT CAN I DO IF I FORGET THE LYRICS OR IF I SING OUT OF TUNE? ‘The show must go on. You have to act like it isn’t a big deal. Do not stop or start over. Just keep going.’ WHAT IF THE JUDGES START LAUGHING? ‘That’s usually not a good sign. Just keep singing and look at the judges that are not laughing.’ WHAT IF I DO NOT AGREE WITH SOMEONE LIKE YOU, EVA? ‘No problem. Feel free to disagree with me. Stay positive. Even if you screwed it up, you can always break records next time.’

Photo: William Rutten

FIRST OF ALL: IF IN DOUBT, DO OR DON’T AUDITION? ‘If you think you shouldn’t, you are already in doubt about your own talent. But if you feel music in your heart and you’re always trying to be better, then give it a chance.’

DIRECTIONS Heat the ragout and soak the gelatine for 5 minutes in cold water. Squeeze out and dissolve into the ragout. Add the mustard, then ladle the mixture into a roasting pan. Let it cool for 1 hour at room temperature. Cover and leave for 3 hours in the refrigerator. Preheat the oven to 100°C. Crisp the bread for 20 minutes in the oven. Let cool and chop into

coarse bread crumbs in a food processor. Cut the thickened ragout mixture into 40 pieces and roll into balls. Roll the balls successively through the flour, egg and breadcrumbs. TIPS AND TRICKS

Sailing in Amsterdam

Photo Andrew Stripp

YOU ARE RIGHT Keep to the starboard (right) side as much as possible.

REDUCE SPEED Don’t go faster than 4-5 mph. This is between walking and cycling speed. DON’T MAKE WAVES Avoid making a big wave. KEEP CALM AND DON’T DRINK ALCOHOL Do not drink alcohol if you are the captain or helm. THINK OF THE RESIDENTS Never cause any unnecessary noise nuisance to the people who live on and around the water. A BRIDGE TOO FAR Don’t moor under a bridge or a bridge railing. HOW TO GIVE WAY Small boats (< 20 meters) always give way to big boats. Pleasure boating gives way to commercial, including canal boats.

Here’s our selection of favourite Indian restaurants in Amsterdam, from the very affordable to top of the bill!

KOH-I-NOOR Westermarkt 29 Rokin 18 Excellent Indian food. Tasty, good blend of spices, not too hot. Ask if you like it spicy as it normally comes mild.

GANESHA Geldersekade 5-HS Close to Amsterdam Central Station. The large portions are delicious and if the menu says mild, it’s really mild. The service is fast and friendly.

GANDHI Damrak 54 Located 7 minutes walk from Amsterdam Central Station. Gandhi restaurant specialises in tandoori, curry and vegetable dishes. Quality is good with plenty of fresh vegetables. The North Indian menu has a nice, rather traditional choice of dishes.

BALRAJ Haarlemmerdijk 28 The oldest Indian restaurant in Amsterdam, specialises in curries and also offers a wide selection of vegetarian mains. The dishes are served with Indian basmati and spicy lentils.

TANDOOR Lange Leidsedwarsstraat 56 A busy restaurant in one of the narrow lanes just off the Leidseplein. Enjoy the pleasant decor while you wait to be seated by the attentive staff. The food is very tasty and not overwhelmingly spicy.

SHIVA Reguliersdwarsstraat 72 Authentic, averagely-priced Indian food. Portions are good and the tandoori chicken wings are a must. If you like it spicy try the lamb vindaloo, and definitely give the tandoori lamb chops a try. Finish off with some special fruit and masala.

SHAHJAHAN Eerste Anjeliersdwarsstraat 18 Very authentic Indian restaurant. The owner cooks everything himself, the food is amazing and perfectly spiced. Try the samosa, chicken tikka masala or potato dishes.

NAMASKAR Haarlemmerstraat 47 The quality of Indian restaurants in Amsterdam is slowly improving and here’s another example. Pretty good food, and staff that actually listen, take note and sort out any requests you have. Try the veggie korma and paneer pakora.

BALTI HOUSE Albert Cuypstraat 41 This excellent Indian restaurant is near the Albert Cuyp Market in one of the trendiest parts of Amsterdam. Consistently high quality Indian cuisine, with friendly, polite staff and the service is pretty fast. Worth a visit!

It promaises to be a magical weekend! ‘This year, we tried to include something for everyone in the line-up,’ says organizer Marieke Samallo. ‘We’ve never focused on big names in previous editions but this year there are a number of artists present that we’re very proud of. Among others the Canadian electro goddess Peaches is really an asset.’ ROLLERDISCO During Milkshake there will be a nearly 2.000-square-meter roller disco, which makes the overall festival experience cozier and more intimate.
