If you’re looking for the ‘real’ Amsterdam and want to avoid the tourist traps, then look no further. Here are our top ten tips for dining from insider’s Amsterdam.

1 GRACELAND BAR-B-Q Jan van Galenstraat 8 Serving traditional American smoky cuisine coupled with classic sides and dessert. Graceland Bar-B-Q can smoke meat, fish, cheese, oysters, veggies and a whole lot more. All breads, desserts, pickles, sauces and sides are made daily in house.

2 CHINA SI CHUAN KITCHEN Warmoesstraat 17 Each Chinese province has its own recipes. The following Chinese proverb sounds promising: ‘China is the land of food and Sichuan is the country of flavor’. This restaurant is famous for its spicy cuisine, starring Sichuan pepper in the lead. The extensive menu is a wonderful expedition through the Chinese culinary heritage.

3 DUM DUM PALACE Zeedijk 37 Succulent chicken, beef stew over fries with a crazy good sauce, spicy pork that just tastes excellent, crispy shrimp, and a delicious whiskey sour. All the cooks and waiters are very friendly. This restaurant feels like a family place.

4 BO-NAM Lange Leidsedwarsstraat 53-59 Authentic Vietnamese cuisine with matching wines. The shrimps are great and we also recommend the sashimi, the pulled chicken sandwich or the desserts. Nice vibe, lovely decor, and great staff.

5 HET WARENHUIS Haarlemmerstraat 65 French international cuisine for all tastes and styles. A selection of colorful small dishes, salads and sandwiches is served. We recommend to share your bites together. And if you don’t like to share: order a pulled lamb burger with fries for yourself.

6 HAPPYHAPPYJOYJOY Oostelijke Handelskade 4 At this place you will find everything that makes you happy in Asia. This restaurant is a cheerful collection of colors and typical Asian flavors. The playful, organized eclectic chaos is inspired by the typical Asian local markets and busy streets and it will make you feel like you’re right in the middle of it all.

7 LUCKY HOUSE Willemsstraat 22 One of the best Chinese food places in town. Top notch food and very busy with locals queuing up for take away. Very fresh ingredients and unlike so many Chinese food restaurants that serve meals with sauces that are too heavy, Lucky House keeps flavors fresh and light so that the seasonings enhance the taste of your food.

Meet

Vincent

Step into Van Gogh’s world! Discover the world’s largest collection of works by Vincent van Gogh at Amsterdam’s Van Gogh Museum. Avoid queuing, book your tickets online in advance: tickets.vangoghmuseum.com.

Van Gogh viewed The Potato Eaters as his masterpiece. He selected a difficult composition in order to demonstrate that he was well on his way to becoming an accomplished figure artist. He wanted the painting to reflect the tough reality of peasant life. In May 1888, Van Gogh rented four rooms in this yellow building on the corner of a street in Arles. He planned to create an artists’ house, where like-minded painters could live and work together. We know this work as The Yellow House, but Vincent actually named it The Street.

39 of Vincent van Gogh’s self-portraits have stood the test of time, both paintings and drawings. He created the majority of these works in Paris, where he practiced using new, lighter colours and alternative painting techniques. Self-portrait as a Painter was the last work that Van Gogh completed in Paris.

The Bedroom depicts Vincent’s bedroom in The Yellow House. He furnished the room himself, using simple furniture and hanging his own work on the wall. The rear wall appears to be slanted, although this was not a mistake on Van Gogh’s part. Vincent painted Almond Blossom for his newly-born nephew, Vincent Willem. It was one of his favourite subjects: large blossoming branches against a blue sky. Almond trees come into flower early in spring, making them a symbol of new life.

Van Gogh’s Sunflowers are amongst his most renowned paintings. He painted a total of five large canvases of sunflowers in a vase, using three shades of yellow ‘and nothing else’. With these works, Vincent demonstrated that it was possible to create an image using numerous shades of a single colour without losing expressiveness.

AMSTERDAM ART

Hidden treasures

The best hidden art and culture gems in Amsterdam? We selected the city’s best finds for an inspirational rush.

1 SELF-PORTRAIT

Even as an inexperienced young artist, Rembrandt did not shy away from experimenting. Here the light glances along his right cheek, while the rest of his face is veiled in shadow. It takes a while to realize that the artist is gazing intently out at us. Using the butt end of his brush, Rembrandt made scratches in the still wet paint to accentuate the curls of his tousled hair. Artist: Rembrandt van Rijn Where to see: Rijksmuseum

2 SELF-PORTRAIT

To make this small bust – it is half life-size – the sculptor had to resort to all kinds of tricks with a mirror. Van der Schardt did not portray himself frontally, but with his head turned sideways, as if to avoid looking at the viewer. The nude upper torso alludes to sculpture from Classical antiquity. Artist: Johan Gregor van der Schardt Where to see: Rijksmuseum

3 ROSY-FINGERED DAWN AT LOUISE POINT

This work refers to one of Willem de Kooning’s favourite places in Long Island, New York. During his period in Long Island, De Kooning rode his bike daily to Louse Point where he observed the water. In this abstract portrayal of a landscape De Kooning was driven by intuition and memory. The artist’s use of pink is reminiscent of flesh and brings to mind his statement: ‘The landscape is in the Woman and there is Woman in the landscape’. This was De Kooning’s first painting to be acquired by a European museum. Artist: Willem de Kooning Where to see: Stedelijk Museum 10

4 SKULL OF A SKELETON WITH A BURNING CIGARETTE

Skull of a Skeleton with Burning Cigarette was probably painted in the winter of 1885–86 as a humorous comment on conservative academic practices, before painting live human models, the academic routine would have included studies of skeletons, to develop an understanding of human anatomy - an assumption based on the fact that Van Gogh was in Antwerp at that time, attending classes at the Royal Academy of Fine Arts, classes he would later say were boring and taught him nothing. Artist: Vincent van Gogh Where to see: Van Gogh Museum

5 WOODEN GIANT

Amsterdam’s world famous 350-year-old wooden giant. This statue was made around 1650, to a design by Albert Jansz. Vinckenbrinck. He can turn his head while his eyes are rolling. In 1862, the city of Amsterdam bought the statues of the sworn enemies. Since then, it draws the attention of young and old, locals and foreigners. Artist: Albert Jansz Vincenbrinck Where to see: Amsterdam Museum

Rembrandt’s First Paintings:

THE FOUR SENSES Rembrandt’s earliest known paintings, The Four Senses, a set of four small panels representing sight, hearing, touch and smell, can be seen in the Rembrandt House Museum from 1 December 2016 to 12 February 2017. REMBRANDT HOUSE | JODENBREESTRAAT 4 | REMBRANDTHUIS.NL

Rembrandt (1606-1669), The Spectacles Seller (Sight), c. 1624, oil on panel, 21 x 17.8 cm, Museum De Lakenhal, Leiden

Rembrandt very probably painted these works as part of a complete set of the five senses, but so far no trace has been found of Taste, the fifth sense. For a long time only three of the panels in the set were known, but the fourth – Smell – surfaced at a sale in New Jersey last year. The French art dealer who discovered it sold it on to the New York collector Thomas Kaplan. After restoration, this spectacular find was presented at last year’s TEFAF in Maastricht. It is the first

time the four small panels have been brought together in the Netherlands and – fittingly – in Rembrandt’s former home. The three works owned by Kaplan were shown for the first time last summer in The J. Paul Getty Museum in Los Angeles. At present the four senses can be seen at the Ashmolean Museum in Oxford. After the show in the Rembrandt House, the works will travel to Musée du Louvre in Paris.

RECIPE

Dutch

Kale hash

A very popular winter dish in The Netherlands: ‘stamppot boerenkool’, or mashed potatoes with kale and smoked sausage. It’s inexpensive and easy to make!

INGREDIENTS

✔ 500 tot 600 gram (8 1/2 to 10 cups)

chopped kale ✔ 1 kilo (2.2 lbs) potatoes ✔ 50 gram/3 tbsp. lard or butter ✔ 1 smoked sausage (or several Frankfurters) ✔ 2 onions ✔ 100 to 150 gram (1/2 to 2/3 cup) bacon,

chopped ✔ 1 meat stock cube ✔ freshly ground black pepper to taste ✔ salt (optional, lard, bacon and stock cube

also contain salt, so taste first) ✔ 2 tbsp. white vinegar

Peel the potatoes, cut large ones in half, so that all potatoes are about the same size. Put in a large pan and add as much water as needed to just submerge the potatoes. Add the stock cube. Put the kale on top of the potatoes, and the rookworst on top of the kale. Cover with a lid, bring to the boil and then lower the fire. Let simmer for about twenty minutes, Prick the potatoes with a fork to see if they’re done. As soon as the potatoes and kale are cooking,

start with the bacon and onions. Heat the bacon in a thick-bottomed skillet. You don’t need to add any fat, but a spoonful of lard of butter won’t hurt. When the bacon fat has melted, add the onions and lower the heat. Stir occasionally, and keep covered. Braise for fifteen minutes. The onions will caramelize, the bacon won’t burn. If you’d like to have browner onions and crispier bacon, remove the cover for the last minutes and raise the heat.

Amsterdam Essential

While working in the Middle East as a dialogue facilitator, Debra Barraud discovers the vital importance of dialogue and the power of story telling. After returning to Amsterdam Debra, inspired by Humans of New York and Humans of Tel Aviv, decides to create Humans of Amsterdam. After four years of hard work the blog counts over 400.000 loyal online fol- lowers world wide. The photographs are intimate and spontaneous portraits of men, women and children in the city of Amsterdam, humans in all their diversity. Some of them born and raised in Amsterdam, others merely visiting but in total they pay a warm tribute to an international city with an effervescent energy. Filled with so many photos and stories this book is an exceptional and warm portrait of Amsterdam. From cover to cover Humans of Amsterdam is beautiful, challenging and moving.
