olokai was once known as “Molokai `Aina Momona,” or the abundant land, providing plentiful food for a population many times its current size. While there are still many farmers and crops on Molokai, the economics of farming are making it challenging to provide for the community the way ancient Hawaiians once did. Thus, many island farmers have turned to exporting to make the numbers work.

A recent study by nonprofit Sust`ainable Molokai has found that the economy of scale – or the cost advantage of producing larger amounts – plays a key role in the success of local farmers.

“It’s all about quantity and the ability for farmers to make money,” said Harmonee Williams, Sust`ainable Molokai project manager. “Smaller quantities on Molokai yield less profit for farmers.”

Molokai stores can purchase bulk produce from off-island distributors and sell it for a lower price than it would cost Molokai farmers to break even, explained Williams.

Unfortunately that makes it economically difficult for farmers to justify selling their produce locally, even though stores are supportive of selling Molokai-grown products, she said.

For many Molokai farmers, exports supplement the products they market on Molokai.

“I prefer to get the bulk of accounts from off-island so I can bring money back to this island,” said Molokai taro farmer Tubz Kalipi. “I try not to pick up the small markets. If you’re going to be out there in the field, you try not to pull 20 pounds. It’s [more cost effective] to pull 200 pounds.”

The Export Experience Kalipi started farming full-time about four years ago. He said he wanted to take advantage of his homestead land, but because former pineapple production had left toxins in the soil, he said he had to build up the nutrients in the ground first.

"You need to let the land heal itself," he explained. "It’s a challenge. You have to love this land, and the thing going produce fruits for you."

Kalipi said now he supplies about 1600 pounds of taro per month to Oahu and 900 pounds to Maui. His product goes to schools, hotels and markets. On Molokai, he sells taro leaf and about 240 pounds of poi weekly to regular customers.

“The takeaway is that for a population of 7,000, we have to have exports as our financial foundation, and then we can still provide services on Molokai,” said Williams, adding that many of Molokai’s successful, larger farms follow this principal, such as Kumu Farms, L&R Farm specializing in Molokai sweet potatoes, and others.

Sust`ainable Molokai’s Food Hub program was launched last year with the goal of supporting local farmers and serving as a connection between farmers and markets.

Those markets could be on or off-island and include stores, restaurants, schools and other venues. While economic realities have impacted the extent to which local food is available in Molokai stories, opportunities continue to open up for Friendly Isle produce off-island.

"They will take all the lilikoi and dragonfruit we can give them," said Williams, adding that if Molokai residents or farmers have those two fruits in excess, to contact Sustainable Molokai. "We’re hoping we can help farmers find these off-island markets so they can continue to grow here."

Farm to School While a focus on export makes economic sense for farmers, Sust`ainable Molokai is also trying to encourage local consumption of Molokai-grown food, and students are among those benefitting from that goal. Recently, several federal and state initiatives have been aimed at decreasing the restrictions to get locally grown produce into schools. Williams said this issue was part of the focus of the so-called Hawaii farm to school bill that was signed into law in July.

“Schools here want local, it’s just figuring out how to change the system,” she explained.

It’s difficult to become a local vendor under the National School Lunch Program and School Breakfast Program, which provides federally subsidized meals, said Williams. But she said there are few hoops to jump through under the national Fresh Fruit and Vegetable Program (FFVP), which provides healthy school snacks at schools with high percentages of students meeting free or reduced lunch qualification, for which all Molokai schools are eligible.

Williams said while unfortunately, most Molokai elementary schools missed the deadline to apply for FFVP this year, Sust`ainable Molokai will be a vendor under the program for Kaunakakai School, providing locally grown produce to supplement the snack program.

“I believe this program is a win-win situation for it benefits our children and adults by giving them the opportunity to eat fresh, homegrown, local fruits and vegetables rather than waiting for the barge to bring it over to us which may take over a week after harvesting,” said Kaunakakai Principal Janice Espiritu.

Espiritu said she also looks forward to field trips to the farms that provide their produce and bringing in guest speakers on healthy eating.

"Food Hub provides centralized service so schools don’t have to work with farmers individually," said Williams. “…

FFVP is so awesome because we can pay farmers a fair market value for produce, plus you don’t have to pay shipping [to bring in off-island food].”

Starting in October, Sust`ainable Molokai will be supplying the school 350 servings of local produce twice a week, and Williams said they are looking for farmers to help them source as much local fruits and vegetables as possible.

While the economic realities of farming can be difficult on Molokai, Williams said she has noted progress in the form of shifting attitudes to favor local produce, and Sust`ainable Molokai is continuing to assist in forming business links.

“Our goal is to connect people to markets so they’re able to be financially sustainable and keep a piece of it on Molokai,” she said.

You always heard that if you eat more calories than you burn, you will gain weight. Correct? Actually no, not exactly. Yes, it’s important how many calories you are consuming each day, but what’s so much more important than that is what type of food you are eating.

Here are three foods that may help you lose weight. Let’s start with the first meal of the day, breakfast!

Did you realize the word actually means to break, or end, your fasting (that you do every night)? When you eat your first meal of the day with high protein and low carbs, you will feel fuller longer, and most likely you will not crave high carbs for the rest of the day.

Eggs are the best breakfast food.

You can create your own recipes, or try one of my favorites: two whole eggs, three egg whites mixed with tomatoes and onions. You can also add herbs like mint, and of course, Molokai sea salt. It’s so delicious, and will make you fell full longer.

The second super food is avocado. It’s filled with heart-healthy fats, monounsaturated fatty acids, it’s high in fiber and vitamins B, K, C and E too.

Eating avocado may lower your cholesterol and triglyceride levels. Did I mention, now is the season, you can find them everywhere on Molokai.

Try to add salads to your lunch, or if you have a sweet tooth, here’s an ice cream recipe for you: one large ripe avocado, three tablespoons raw cacao, a pinch of Molokai sea salt, Molokai honey or raw honey to sweeten and 1/2 can of coconut milk. Mix everything well and freeze for four to six hours. Delicious and healthy ice cream for you and your keiki!

My third tip is to eat foods that produce a thermogenesis effect — heating up the inside of your body.

This can an increase your weight loss process by almost 20 percent. These foods affect the brown fat cells in your body, which are normally activated by cold therapy or living in a cold climate, but luckily you can activate them with some foods too. I

n Hawaii, 85 percent of calves are shipped to the mainland, said Pu`u O Hoku Ranch General Manager Jann Roney. They’re raised and butchered, and the finished product is not always sent back to the islands.

However, like others around the state in recent years, Molokai ranches and businesses are working to keep the full cattle operation at home.

Molokai Ranch Last August, Molokai Ranch launched its 100 percent grass-fed beef in an effort to establish its new pillars of animal husbandry and sustainability, said Operations Manager Dathan Bicoy.

About 1,800 cattle graze 30,000 acres of pasture in Maunaloa. Over the last two years, the ranch has been introducing Wagyu cattle DNA into their herd. They now have a small herd of 28 purebred Wagyu and 17 half-breed Angus and Wagyu, said Bicoy.

“Wagyu is supposedly a lot more tender and marbled, and it’s just really one of your highest quality beef,” explained Ranch Project Coordinator Malia Kino.

The cattle are sent to Molokai Livestock Cooperative, the island’s only slaughterhouse, as well as to Wong’s Market on Oahu for specific cuts of meat.

Since they’re trying to grow their small herd, it will be a few years before the ranch can produce Wagyu beef. However, Angus is available at the ranch’s Maunaloa office Monday through Friday, 10 a.m.-4 p.m. Molokai residents get a 10 percent discount, and Molokai businesses get 20 percent off the resident price. A top sirloin steak, for example, sells off island at $9.99/lb. Molokai residents pay $8.99 and businesses pay $7.19. Kino said the ranch’s local vendors include Kualapuu Cookhouse, Paddler ’s Inn and Hometown Kitchen.

and operated ranch expanded its calf and cow operations to “help reverse the exporting of Hawaiian grown cattle to the mainland,” said Roney.

Instead of shipping calves out of state, the ranch keeps them on Molokai and raises them as “feeders,” which can range from 400-800 pounds.

They’re then sent to Pu`u O Hokuowned land on Oahu to be “finished,” growing from 800-1200 pounds before being butchered on Oahu.

Roney explained that no chemicals are sprayed on their land. Both pasture and cattle—mainly Brangus mixed with Devon—are certified organic. The ranch sells its prime-grade grass-fed beef at its store, located at the 25-mile marker on the east end, from 9 a.m.-5 p.m. every day except for Sunday and Wednesday, as well as at the new Simply Natural store in town. Roney said the ranch produces approximately 45,000 pounds of finished beef yearly.

Molokai Livestock Cooperative Thanks to Molokai’s only slaughterhouse, ranchers can keep their products on island. Molokai Livestock Cooperative (MLC) purchases antibiotic- and hormone-free cattle from 10 local ranchers, then butchers and sells it, said General Manager Jack Spruance. They produce 12 to 15 head per week.

Located next to Hikiola, MLC sells beef as well as pasture-raised pork Monday through Friday from 7 a.m. to 3:30 p.m. Residents can call and order a cut or quantity ahead of time. MLC offers everything from marrow bones to porterhouse steak. One of its most popular products, stew meat, costs $4.65/lb, ground beef costs $4.25/lb and chuck roast $5.05/lb.

“We offer any cut that people want,” said Spruance. “We do custom work for people, so if they want their own meat cut up for them we provide [that service].”

rowing up on Molokai as the children of business owners, the Torres siblings wanted to be entrepreneurs from a young age.

“We made our own stores at home out of canned goods, empty cans, whatever we could find,” remembered Rosie Torres-Batara, one of seven sisters. “That’s how it all started.”

Years later, the seven sisters and one brother are still in business together, only now it’s more than a game of pretend. In a row of storefronts across from Kaunakakai’s Veterans Memorial Park, the family runs three businesses next to each other. Store House, a restaurant, opened in the location in 2013, followed by The Attic, a clothing boutique. Last month sisters Nora Espaniola and Marlene Sproat kick started their latest business venture, a health food store called Simply Natural.

Sproat, co-owner of Espresso Bar in Kualapu`u, said they wanted to bring more specialty health products to the island as Molokai’s only other health food store, Outpost Natural Foods, has struggled to maintain inventory.

“Nora is a health nut. She always wanted to open a health food store,” said Sproat. “We had an opportunity … and we see a need in the community.”

Simply Natural is packed with rows of organic salad dressings and syrups, energy bars, loaves of grainrich bread and packages of baby food.

The shelves are stocked with medicinal products, and the fridge holds vegetarian products like Tofurky. The store also has a small lunch menu that includes organic Thai curry and lentil soup.

Customer Colleen Bordeaux said she’s glad to see these products return to Molokai.

“These are the kinds of things that are needed here,” she said, holding up a jar of collagen for skin, hair and nails.

“Or else I’m gonna have to go Honolulu, which is $100 round trip. I can spend it on the island instead.”

Sproat said their father was a minister as well as a clothing shop owner, and now as business owners themselves, physical and spiritual wellness are central to their mission.

“We try to be the agent for health

and for peace,” said Espaniola. “One of our major goals is to always smile and to help people be in a joyful mood.”

Through their nonprofit Ohana Ministries, located behind the shops, the family helps people start their own businesses or find jobs. At the Store House, run by Torres-Batara, they have a “Marketplace Ministry” to meet people’s physical and emotional needs.

When it looks like a customer needs to talk, said Torres-Batara, workers will stop and offer conversation, prayers or the occasional free meal.

“Our parents used to take in people a lot. They would feed and clothe them until they were ready to go on their own,” said Sproat. “Sometimes they stayed for years. We witnessed all these things and I think our parents [instilled] that in us. … We enjoy giving service.”

Complementing Outpost Despite financial difficulties, Outpost owner Dennis Turner said he has no plans to close the store that’s been on island for more than 30 years. Over the past year, Outpost ran low on funding, and with a limited inventory, the store couldn’t generate enough sales to cover their expenses.

But Turner said he’s cutting costs and doing special orders for residents that allows the store to bring in a little extra inventory at the same time.

He described its status as “recovery mode,” and in the meantime, stocking locally grown produce. Outpost also has vitamins, supplements and select organic grains, and offers smoothies while searching for a cook to run the lunch counter.

Sproat added Simply Natural is “not to take away” from Outpost, but to create “an extension” of what the business has done for the island’s health food industry.

“We said, ‘Let’s tap into the health food industry just to have something available here for Molokai,” said Espaniola. “… We always talk about eating better. But eating better is more than just eating a salad. It’s the stuff you put in [your food].”

Simply Natural’s tentative hours are Monday to Friday, 9 a.m.-5 p.m., and Saturdays 9 a.m.-3 p.m. Outpost’s hours are Monday to Friday, 10 a.m.-6 p.m. and Sundays 12-6 p.m.

Waves of Flickering Taro Leaves

Arakaki, County Extension Agent In 1895, Katherine Lee Bates wrote the famous words “for amber waves of grain” in the lyrics of “America the Beautiful.” I didn’t know what the words meant until my teacher pointed to the thousands of acres of sugarcane and I watched the countless wave-like action of leaves as the wind move across the field. In this live classroom, he concluded that the mainland kids would never identify with words “for green waves of sugarcane” if Katherine Bates had used them instead.

These same kinds of words were written in the journals of early sailors and missionaries arriving in Hawaii, to describe the fields of kalo or taro, ko (sugarcane), uala or sweet potato, and mai`a (banana) they observed as they sailed the coast and walked from one island district -- ahupua`a -- to the next throughout Hawaii. They called it “waves of flickering taro leaves.” The flickering comes from the twisting of the taro leaves in the wind to alternately display the darker colors of the upper surface then the lighter under sides. We can only imagine what early observers saw of Native Hawaiian “gardens” and “plantations” when they described the wind-wave movements of taro leaves, about 1000 years after the original Polynesian voyagers landed here.

By the time of western contact, Native Hawaiians had developed a sustainable production system that deliver 100 percent of their food supply -- about 2.1 million pounds of food everyday to feed their population. Today, we pro-

duce about 10 percent of our food supply, or pound for pound producing less than the periods of early western contact. With our recent close encounter with hurricanes, we all need to think about the “waves of flickering taro leaves” that were once seen on our still geographically isolated islands. Even after hurricanes, like Iniki in 1992, root crops like taro and sweet potato will survive and be harvestable.

Native Hawaiian’s keen understanding of plants can be seen in the 300 taro varieties developed to suit the many growing micro climates in Hawaii. Taro does not produce fertile seeds readily, thus their achievements in developing varieties are testament to their expertise. By 1939, there were less than 80 identifiable varieties. Today we have less than 70. We don’t know which varieties arrived with the first voyagers, but we do know that if someone didn’t replant and care for them each year they would not have survived nature’s contest in “survival of the fittest.”

On Saturday, Sept. 19, the Molokai Taro Variety Field Day will be held from 8:30 a.m. to 3 p.m. at the Molokai Demonstration Farm. You will learn from experts about the taro varieties and growing them, participate in taro tasting, The Queen Challenge, Kalo Cooking Contest, enjoy kupuna singing and cut your own taro varieties to help perpetuate them in your gardens. Cop on Top Mahalo Molokai new Area Director Josh Kamalo and I, along with Special Olympics Molokai athletes and volunteers, would to send out a big shout out and mahalo to our six awesome police officers who took to the scaffold in the hot sun. They called out their family and friends and anyone who would listen to them asking for donations to the Cop on Top fundraiser for Special Olympics Molokai.

This is the fourth year since brining this event home to Molokai. Our athletes as young as 8 years old, family members and volunteers were walking throughout town shaking their bucket asking for donation. We like to express our gratitude of appreciation to all of those who reached deep down into their wallet and or pocket dropping a dollar or more, and even their loose change into our buckets we say thank you. Many of you kept telling us you wish you could give more, but what you gave we counted as a blessing and that we say thank you. Yet many of you said this event should have been held in the beginning of the month, and trust us we will let the state office know. Molokai does not have all the perks and glamour that the other neighbor island has, but what we have we made up for many blessing that is bestowed upon because we have a wonderful community who support this wonderful program.

Ingredients: 2, 1-pound venison tenderloins, or beef tenderloin if you can't get venison Marinade Ingredients: 1 head of garlic 1-2 tbs. sea salt to taste 1/2 cup rosemary needles 6-8 dry bay leaves, crumbled 3-4 tsp. dried Mediterranean herbs, such as oregano, basil, and thyme 2 tbs. make a paste out of the marinade ingredients, garlic, sea salt, rosemary, bay leaves, oregano, basil, thyme, soy sauce, olive oil, and black pepper in a mortar, blender, or food processor. Pour the sauce into a large zipper-top plastic freezer bag and let rest for at least 2 hours or overnight in the refrigerator. Turn the bag once or twice during this time to distribute the marinade.

Bring the tenderloins to room temperature for 20 - 30 minutes before cooking.

Prepare your charcoal grill.

Once the coals have cooked down a little to medium high, and have a nice grey dust on them, put the tenderloins, directly over the coals, and grill for about 6-8 minutes of cooking per inch of thickness for the tenderloins. Keep turning the tenderloins, then check the internal temperature with a meat thermometer. It should read 125˚F for rare, 130˚F for medium rare, any higher and the venison will get tough. If you don't have a thermometer, you will have to make a small cut into the meat to check for doneness.

Remove the tenderloins to a warm platter and cover with foil for a few minutes. This allows the juices to stay in the meat, not on your cutting board. Keep everything warm in a 200˚F oven, covered with foil, until ready to serve, then cut the tenderloins into 1 inch rounds, or cut them on an angle. Makes 4 servings.

Between Food and Climate Change

By Glenn I. Teves, UH CTAHR County Extension Agent Characteristics of climate change include weather extremes -- very hot and very cold -- as well as violent storms. We’ve seen it this year with one of the coldest winters in decades, record high summer temperatures, and more than our share of threatening storms.

One of the positive aspects of a cold winter was a bumper crop of lychee, a native to South China.

Most of the older lychee varieties, including Kwai Mi, Hak Ip, and No Mai Tze require colder weather to flower than is normally found in Hawaii, while the newer ones such as Kaimana and Groff require less of a cold snap to trigger flowering.

The summer heat, on the other hand, has had a negative impact on many crops. Plants are affected by heat stress much like us, and warm nights can also cause problems when plants are unable to rest and recover from a hot day. Lettuce prefers a warm day with cool nights, and under high temperatures in the 90s, plants “hyperventilate” and cannot take up sufficient water and nutrients to supply its needs. Sensing they’re about to die, they will flower prematurely or “bolt.”

Important nutrients such as calcium require water to move to the growing tips of plants, so when a water shortage occurs, they will sacrifice the youngest parts of the plant to save the rest. The result is tip burn of the youngest leaves. Occationally we see imported romaine lettuce in the market with early tip burn along leaf edges.

A similar condition occurs on tomatoes in which flowers and young fruits will drop off. Under extreme conditions, the bottom of maturing fruits will turn black, referred to as blossom-end rot, ren-

dering them unsaleable. Plants are growing so fast and cannot take up sufficient water and nutrients to supply it demand, especially calcium. In order to save the plant, it will sacrifice the youngest fruits.

Under heavy rains and hot humid conditions, plants will take up water quickly, causing fruits to crack, and render them unsalable.

Taro prefers tropical conditions found in cool wet valleys. Under high temperature conditions, plants cannot take up sufficient water and nutrients while growing rapidly, and will rely on stored starches or carbohydrates from corms to survive. The result is a depletion of starches and gums resulting in poor quality taro, and a reversion of starches to sugar in a condition called “loliloli.” Poi made from this taro will be watery, sweet, and will sometimes rot instead of fermenting or souring properly, especially when grown under dryland conditions.

Some plant species can be conditioned to perform better in extreme conditions, this starts by selecting the right variety. Having varieties with large scavenging root systems helps, for example, but how you manage a crop is important. You can either give plants all they need and baby them, or condition them to get ready for hard times early in their life so they can survive.

Giving them too much of everything is called “luxury consumption,” so in lean times many of them cannot adjust. Utilizing these tendencies to benefit plants starts with tough love. These are some of the challenges of climate change, and some states are in the midst of these dilemmas. Are we ready for the challenge?
