Healthy Eats at Fiesta Market Place By Catherine Cluett Pactol | Editor

F

or Marcy and Zhander Fiesta, hard work has made a dream come true in the form of newlyopened Fiesta Market Place, where Outpost Natural Foods was formerly located. They've completed a renovation impossible mission, revamped a locally-focused menu and are building an eco-friendly business they hope will grow into the future. With a lunch counter offering options for both vegetarian and meat-eaters, as well as smoothies, health food retail products, local produce and frozen desserts, Fiesta Market Place is off to a running start since the couple acquired the business in January. "The menu that we have in our kitchen right now, it's pretty much 100 percent local, from the seasoning, from the shrimp to the steak to the salad," said Zhander. "That's what we want to emphasize. That makes us different from the rest. The priority is local, if we can get Molokai products, we get it. So far, it's been tremendously successful." In addition to a Molokai grass-fed beef and Keawa Nui shrimp plate, veggie burgers made on Maui and topped with probiotic, Maui-created dressings are a staple on the menu, along with spinach spicy veggie crumble wrap. The Fiestas said more daily specials as well as Filipino cuisine will be coming soon. With each meal cooked homestyle and made to order, they suggest calling ahead to order if you're in a rush. Sorbetto -- a frozen fruit-based, dairy- and gluten-free dessert -- is available in a myriad of refreshing flavors. Bright pink dragon fruit, tangy sweet lilikoi, honeydew, lychee and strawberry lemonade are just a few. Gelato, a frozen Italian dessert, is also served in a variety of flavors. Made to order smoothies are customizable, blended with up to four fresh fruits and a splash of water. Jar 'n Salad is an eco-friendly option made from local produce in a grab and go glass jar. Return the empty jar afterward and get $1 off your next purchase. After a visit to the landfill to learn that it's already filled up, they've turned to biodegradable options for eating utensils and are offering reusable containers like jars that won't get thrown away. "We know it costs more but ... it's good for the aina ... [we want to] be mindful," said Zhander. Both growing up in hard-working, business-minded families -- Zhander on Maui and Marcy (Kanemitsu) on Molokai, they're raising their eight children -- ages 2 to 15 -- to also learn the importance of going the extra mile. Both Zhander and Marcy previously worked in sales, marketing and

management. Zhander worked as a sous-chef at the Hyatt Regency Resort on Maui. When they moved to Molokai in 2013, people told them they were crazy because "there're no jobs there," they said. "But we wanted to create a job." With a growing family and a healthconscious lifestyle, they said they found it hard to always find reliable produce on Molokai. Zhander's family had a farmer's market business on Maui; so, starting with a small table of produce at the Kaunakakai Saturday market, they laid the groundwork of what would become Fiesta Market Place. Using connections statewide, they brought in fruits and vegetables as well as Molokai-grown produce. "We were approached about the former Outpost and took the opportunity," said Zhander of the shift early this year. "It was a big investment and commitment ... but you can call it a dream for us." The Fiestas said they wanted to continue what Outpost had established, but with their own twist. One thing they wanted to keep was the friendly vibe and passion to go above and beyond for customers. "The most rewarding feeling is helping someone," said Zhander. "We have customers come in and say, 'I need help, I don't know what to do.' [People say] 'my doctor told me to come here.' We help them with their health, based on their doctor's recommendations. If we don't have it in here, we can get it." Bringing healthy meals to Molokai has been an arduous journey. With updated health codes and an aging building, the Fiestas had to bring in new kitchen equipment, update plumbing and electrical, and do a general overhaul of the store interior. "Eight months of planning and renovations were squeezed into 19 days," recalled Zhander. "Family and friends worked day and night to help us meet [Department of Health] inspection deadlines." With a clean bill of health, the Fiestas said much more is yet to come. Making freshly made cold-pressed juices, expanding retail products, bringing on employees, and adding a covered seating area in the back with a dinner ambiance for future meal expansion are just a few of their plans. They already offer free WiFi, as well as catering services. "Anybody that puts in that amount of time, commitment and hard work into it, eventually it will prosper, with God's grace," said Zhander. Shopping local is not without its challenges, and Balbas said the key is to always have a plan B with her often having to think on her feet. “I try to head to the store at 4:30 everyday to shop for the next day," she said. "The menu is planned based on the store options; some days I’ll plan on serving one item and leave the store with something totally different". Despite the challenges, there have been some big rewards, with Balbas saying her favorite is people's reactions to eating her food and complimenting on the quality and taste of it. “There are county workers that have been coming since my mom ran Cody’s and are still eating the same thing all of these years later with Cory’s," Balbas said. "They call regularly to order their shoyu chicken and oxtail soup." Looking ahead and what’s in store for Cory’s, Balbas said she has plans to continue with their nightly dinner options and hopes to incorporate more salads and desserts to the daily menu. For those who have yet to try Cory’s Lunchwagon, they serve the community on Monday, Tuesday, Thursday and Friday from 10:30 a.m. until food is pau -- which is typically around 1 p.m. -- and Wednesday night dinner beginning at 4:30 p.m. to pau.

or those who relish the savory eats you find at Cory’s Lunchwagon, you may not know the long history behind this local eatery. Launched in 1996 by Melody Alcon, it originated as Cody’s Lunchwagon. Kapua Balbas, current owner and operator of Cory’s, reflected on her time assisting her mother with the family owned lunch wagon up until she moved to Arizona after completing high school. “Once I graduated and moved to the mainland, I was hungry for local style food, [such as] spare ribs, hamburger steak and shoyu chicken, so I’d call home and get recipes from my mom," she said "All of the recipes were taught over the phone and I’d recreate them for my friends." She tried to keep the recipes as authentic as possible, however living out of state she often had to improvise. “Spare ribs calls for brisket bone but they didn’t always have that, so I’d substitute with pork butt," she recalled. "My friends didn’t know the difference but I could tell; It just wasn’t the same." Balbas returned to Molokai after completing her time in Arizona and launched Cory’s Lunchwagon -- located between Bobo’s Auto Service and Kamoi’s Ice Cream Shop on Kamoi St -- in 2003. She acquired the wagon from her mother and continued to serve the community until 2008 when she became pregnant. After the closing of the Molokai Drive Inn in 2015, Balbas saw an opportunity to relaunch Cory’s and was inspired to take action. After an eight-year absence, Cory’s officially re-opened in January 2016 with their unique grab and go style lunch menu. She said she realizes her clientele often come during lunch breaks so food is precooked and ready to serve as soon as they open for business. Military food

By Jesse Church Aloha all my fellow veterans and residents of Molokai, old Jesse here with all the veterans news and upcoming events. Today, in keeping with the theme of this week’s Dispatch, I will be talking about military food, especially how troops in harm’s way are fed. Troops that served in World War II and Korean War were fed with “Combat Rations” (C-Rats). They contained a can of a meat, and one of pudding or fruit, though no way to heat the meat. They also had some chewing gum, and a pack of three cigarettes with a book of matches. If you were in cold weather area the food would freeze and you really had a problem, so in WW II and Korea they tried to truck hot food to the men on the front lines. The C-Rats were used throughout the Vietnam War and finally replaced in 1978, but I ate my share of C-rats in 'Nam. Today, the replacement meal is called Meals Ready To Eat, or MREs for short, and is a greatly improved product, and got a thumbs up by the troops. The MREs contain two packages of wheat snack bread, cheese spread, beverage powder, soup, and imitation meal, and a dessert all in sealed airless packages not cans. The big thing is it comes with a water activated bag, so you add water to your meal and in about 10 minutes, you have hot meal. When I was in Vietnam, I was in the 1st Marine Air Wing stationed at Marble Mountain, which is about five miles south of Danag right on the South China

Sea and we always had plenty of seafood and I will tell you how we fished. One of our helicopters flew until they spotted a school of fish or shrimp, then they would fly low to the water, but not so low as to spook the fish. Then the crew chief would drop a couple of hand grenades and when the fish came floating to the surface, crew in our boat would scoop them up with nets, and whenever we flew resupply missions, we always gave the troops in the field fresh seafood. We called our fishing method a DuPont Lure. Here are some other slang terms we used: Airwing Alpo was a variety of field rations including corned beef hash, meatballs with barbecue sauce and pork, get your gut right was eating. They also have what they call a lurp, a special ration of food packaged for those on long range patrol, but the one I like best is, today’s troops also used MRE meaning Meals Refusing to Exit. Since WW II, our troops have invented numerous recipes to spice up the C-Rats and MREs and passed down generations to generation. The one that I like the best is called Ranger Pudding which has been around since WW II, and here is the recipe. Combine cocoa beverage mix, coffee creamer, and water mixed to the consistency of pudding, all ingredients are found in the meal package, and Ranger Pudding when made with less water can also be baked into a brownie. tarting a business on Molokai has its share of challenges but when Leah-che and Ross Takashima chose to leave a stable career in order to see their business dream come to fruition, it required faith. The Planter Box, in the location of the former Simply Natural in Kaunakakai, is a new business on the block featuring custom coffee, local produce and natural products. “We prayed a lot," the couple said of the big step. "We prayed about this opportunity, we prayed when making any kind of decisions.” When Ross chose to leave the stability of his job in order to fully help in the business they admit it was scary. But when the opportunity to purchase Simply Natural became a reality in February of this year, they couldn't say no Once they made the decision to purchase, the Takashimas saw this as a way to make a change and give back to the community that they grew up in. Both born and raised on Molokai, they said they know how important it is to provide options as well as offering a variety of unique items in order to set their business apart. For The Planter Box, it's their cus-tom roast premium coffee. They work exclusively with a custom roaster who prepares their coffee beans to their unique specifications, and each coffee comes with its own unique story. After graduating from Molokai High School in 2002 and 2003, Leahche and Ross married and moved to Portland, Oregon, where they enjoyed hanging out at the local coffee shops. “We learned so much about coffee while living on the mainland and wanted to bring some of that knowledge and that atmosphere back home," said Ross. While their coffee is unique, healthy food alternatives is their primary focus. Recognizing that local supply and demand often changes, they welcome feedback, suggestions or requests and try to meet every shoppers needs.

“We try to be sensitive to those that have specific dietary restrictions or those that are choosing to live a healthier lifestyle," they said. "It’s also educating us in the process as far as what organic really means, and what specifically to look for when we are placing orders.” Partnering with Sustainable Molokai and Barking Deer farms, they bring in organic produce that is sourced right here on Molokai. They work with Molokai Livestock Cooperative to offer different cuts of meat that are not always available at local grocers. They also have a supplement supply that continues to grow, as well as an organic beauty line. “We really only have space for what people want and want to make sure we are catering to that," said Ross. "Feedback is key and helps us in our ordering process." Learning about different food options from their customers often comes full circle with their young chil-dren also benefitting from their healthy eating alternatives that they provide. Networking with people who share their vision and also want to better the community by sharing the gift of health and providing Molo-kai people with Molokai products, they say, is also rewarding. “We are providing for our community and giving back in the best way we know how," the couple said. They said they are hoping to renovate their space by making it more contemporary while seeing their lo-cal produce expand, using their faith as a guide.
