Welcome to the third edition of Sleepover – the innovative networking event for the hotel industry. Following our previous expeditions to Berlin and Amsterdam, we are delighted to be in Copenhagen for another 24 hours of exploration, education and entertainment. As in previous years, our aim is to provide a platform for our guests to meet in a less formal environment than traditional hotel industry events. We have chosen Copenhagen as the setting for this year’s event in recognition of its status as a global design capital, and its emerging status as a world leader in gastronomy. A whole range of people have helped us cook up the ingredients which form the menu for Sleepover Copenhagen, so I would like to take this opportunity to thank our many sponsors, partners and collaborators who you will find listed in the Tasting Notes at the back of this booklet. MISE EN PLACE THE SETTING
Copenhagen is well established as a global capital of design excellence. The works of designers such as Hans Wegner, Verner Panton and Poul Henningsen have become iconic symbols of Danish design. Modernist icons like Arne Jacobsen, Jørn Utzon and Vilhelm Lauritzen have been succeeded by a new wave of Danish architects such as Bjarke Ingels, Henning Larsen and 3XN. The cityscape in the centre of the Danish capital is dominated by four to six-storey buildings rather than the typical glass and steel skyscrapers found in many other capital cities. However the city is far from an architectural standstill. Contemporary architectural additions to the city are shooting up everywhere and manage to blend in beautifully with the old historic buildings and palaces. Copenhagen is a city designed for old and young as well as for families with children. In the districts of Vesterbro, Ă˜sterbro and Nørrebro new urban spaces are being developed and planned to make the city even more liveable for those who wish to raise their kids in the city. A new metro system, set to be completed in 2018, and a number of bridges connecting the many islands in and around Copenhagen Harbour, seek to improve life further for Copenhageners and visitors alike.
Water, space, sustainability and light are the key elements in the recent architectural boom in maritime Copenhagen. The emergence of bold urban planning and world-class architecture is found in four key parts of the city, namely Ørestad, Nordhavn, city centre and not least along Copenhagen’s waterfront. The proximity to and reflection of the water in these new buildings are a common characteristic. Copenhagen has also become a world leader in gastronomy, thanks to the emergence of New Nordic cuisine, and the influence of restaurants such as Noma and Geranium – both of which hold two Michelin stars. Recent additions to the culinary scene include new restaurants from alumni of the Noma kitchens: Amass, Bror, and Relae. Copenhagen is the most liveable city on Earth, according to Monocle Magazine. Its inhabitants are apparently the happiest people on the planet. And it is well on the way to becoming the world’s first carbon neutral capital – an aim it hopes to achieve by 2025. In recent years, TV series such as Borgen, The Killing and The Bridge have attracted an international audience and critical acclaim. HÔTEL THE VENUE
Our host hotel for Sleepover Copenhagen is Hotel SP34 – a new luxury boutique property in the Latin Quarter of Copenhagen. We are honoured to be amongst the first guests staying at SP34 following its launch earlier this month. The hotel features 118 rooms, two restaurants, four bars, conference facilities and a private cinema with 25 seats. Its location places our guests in the heart of Copenhagen – 100 meters from the City Hall Square and the main pedestrian thoroughfare Strøget, but also in its own distinctive neighbourhood; a bohemian area of historic buidings, cool restaurants and bars, and vintage shops. The hotel is owned by Brøchner Hotels – a family owned group which runs three boutique hotels in the centre of Copenhagen: Hotel Danmark, Hotel Astoria and now SP34. A LA CARTE SUNDAY TOURS
Our Sunday afternoon tours are hosted by in-the-know locals, giving our guests an insider’s insight they would not get from a typical business or leisure trip. All tours are optional but subject to availability so if you have pre-booked but are unable to take part on the day, please inform a member of the Sleepover team so that someone else can take your place. Please note all tours include an outdoor element and will involve walking, so please dress appropriately!
‘VEGETABLES’ FORAGING TOUR
Our foraging tour is hosted by Nordic Food Lab – a nonprofit, open-source organisation whose aim is to investigate food diversity and deliciousness. Nordic Food Lab combines a scientific and cultural approach with culinary techniques from around the world to explore the edible potential of the Nordic region. Says Researcher and Project Manager Josh Evans: “Harvesting wild foods offers the opportunity to connect with the edible landscape and procure some unique and delicious ingredients. Yet often the biggest barrier to engaging with wild food systems is a lack of knowledge of local edible species.” This hosted tour with Nordic Food Lab will bring participants into contact with wild edible species in their context. “We will do some of our own foraging and use that as a starting point for informal discussions about plant species recognition, flavour qualities and culinary applications, working with seasonality, and sustainability and ecological stewardship,” continues Josh. “Participants will get the chance to learn hands-on about the role of wild foods in current cooking in Denmark and the wider Nordic region.” This tour will be visiting two different ecosystems in the Greater Copenhagen Area. Foraging equipment will be provided, but please be prepared with a rain jacket and appropriate shoes if the weather is wet. www.nordicfoodlab.org
‘FISH’
BOAT TOUR
Hosted by Wonderful Copenhagen our boat tour will take in the architecture along the harbours and canals of the city, as well as giving the opportunity to learn about the hospitality industry in Copenhagen, as viewed from the waterfront. Starting at Gammel Strand, the tour will visit new architectural areas of interest including the Royal Library, Opera House, the Harbour Baths, the canals of Christianshavn, and Nordatlantens Brygge – the waterfront warehouse where Noma is located. Wonderful Copenhagen Convention Director Jonas Wilstrup (former head of hotel and restaurant association HORESTA) will give insight into the hotel sector with reference to new hotels visible from the water such as CPH Living, STAY, Copenhagen Island Hotel and WakeUp Copenhagen. The boat will stop at Papirøen – the ‘Paper Island’ where Copenhagen’s press once stored their rolls of newspaper, now being redeveloped as a vibrant urban area. Guests will be introduced to Copenhagen Street Food – a brand new gathering place for food trucks and pop up dining experiences opened just a couple of weeks prior to Sleepover. The remainder of the tour will give an opportunity for relaxed sightseeing and networking with fellow passengers, as the boat passes traditional sights including the old Stock Exchange, Christiania, UN City, Little Mermaid, and more. www.copenhagenstreetfood.dk

WALKING TOUR
This walking tour will allow guests to enjoy a relaxing Sunday afternoon stroll around the streets, lakes and parks of Copenhagen. Our hosts BDP will escort participants to Jægersborggade – one of the most buzzing streets in Copenhagen. The street is located in the vibrant Nørrebro area and hosts around 40 independent shops, bars and restaurants including Michelinstarred Relae, and the more rustic, relaxed vibe of Manfreds – both run by ex-Noma chefs. Other highlights include micro roastery The Coffee Collective, a unique chocolate experience at Ro Chokolade and underground wine bar Terroiristen. From Jægersborggade, the group will cross the Assistens Kirkegård cemetery (where Hans Christian Andersen is buried), through the streets of Nørrebrogade – with their ethnic stores, cafés and art galleries – to a lakeside square. The tour will end with a tasting experience at Torvehallerne – the city’s new food market where over 60 vendors offer a wealth of organic, seasonal and gourmet produce. Torvehallerne is not just a foodie destination but also interesting from a design perspective. Architect Hans Peter Hagens conceived Torvehallerne with a layout inspired by both the Mezquita mosque and cathedral in Córdoba and the modernist buildings of the Bauhaus era. www.torvehallernekbh.dk

AT THE STANDARD
Our venue for dinner is The Standard – the new restaurant and jazz club from Noma co-founder and founding father of New Nordic cuisine Claus Meyer, working with co-owners Torsten Vildgaard and Søren Westh. The Standard comprises four different hospitality experiences – three restaurants and a jazz club. It is named in tribute to the history of the Art Deco building which Danish architect and Royal Building Inspector Kristoffer Nyrop Varming designed in 1937 in the midst of the golden age of timeless ‘standards’ composed by George Gershwin, Cole Porter and the likes. Dinner will take place on the ground floor – home to Almanak restaurant (to the right as you enter), designed by Christina Meyer Bengtsson and Ulrik Nordentoft, and Verandah (on the left) – a gastronomic Indian restaurant with interiors by Danish-Italian design team GamFratesi. Almanak chef Andreas Møller (previously head-chef at the Kanalen in Christianshavn) is creating a special menu for Sleepover to reflect the restaurant’s ethos of using Danish nature and the change of seasons as a principle for structuring the work in the kitchen. DIGESTIF AT NIMB
Guests who would like to enjoy a post-dinner drink will be transported to Nimb, a unique hospitality venue adjacent to Copenhagen’s famous Tivoli Gardens. The old-world charm of the hotel’s bar is the perfect place to feel a sense of ‘hygge’ over a crafted cocktail by the crackling open fireplace. Nimb was originally built in 1909 as an Arab fantasy castle by Tivoli head architect and director Knud Arne-Petersen. Since then, the establishment has undergone many transformations, until its relaunch as ‘a temple of good taste’ – home to various restaurants, meeting spaces, bars as well as a high-end luxury boutique hotel. The building underwent a total renovation in 2007 - not only externally, where the façade’s arabesques of low-grade materials were replaced with Italian marble stucco, but also internally, where the new solid Dinesen wooden floors and interior elements of Oland granite help give Nimb a modern, Nordic air with warm colours and natural materials. This Moorish food palace now carries on the Nimb family’s traditional name and spirit: good taste prevails everywhere to please the palate, mind and eye. www.nimb.dk
FOOD FOR THOUGHT TOMORROW’S HOTEL WORKSHOP
Arup’s Foresight + Research + Innovation team design, organise and deliver sector-based workshops and events to help a broad range of clients think about the medium to longterm drivers that could impact their business environment. Following Arup’s previous Hotels of the Future workshops, and inspired by the Tomorrow’s Hotel competition that has run as part of the European Hotel Design Awards for the past three years, this workshop will encourage participants to think about what Tomorrow’s Hotel might look like, with specific reference to food. Following an introduction from Dr Chris Luebkeman, Director for Global Foresight + Research + Innovation and Guy Dittrich, the workshop will kick off with brief presentations from three Copenhagen-based guest speakers:
Arup’s team of facilitators will then lead a series of groupbased exercises – around the themes of ‘Ingredients’, ‘Dishes’ and ‘Menu’ – to develop new hospitality concepts inspired by guests’ experiences in Copenhagen and global trends from Arup’s Inspire database. At the end of the workshop, the strongest of these concepts will be selected for presentation to the rest of the group.

SVEN ESELGROTH Our Sleepover photographer describes himself as a ‘Gun For Hire’, and was raised on a sailing boat as his Swedish parents completed an 18 year voyage around the world. He now has a career in fashion, music, and advertising photography.
