(January 31, 2022) Average gasoline prices in Texas are unchanged in the last week, averaging $2.99/g t o d a y, a c c o r d i n g t o GasBuddy's survey of 13,114 stations in Texas. Prices in Texas are 11.3 cents per gallon higher than a month ago and stand 87.5 cents per gallon higher than a year ago. According to GasBuddy price reports, the cheapest station in Texas was priced at $2.34/g yesterday while the most expensive was $3.79/g, a difference of $1.45/g. The lowest price in the state yesterday was $2.34/g while the highest was $3.79/g, a difference of $1.45/g. The national average price of gasoline has risen 2.9 cents per gallon in the last week, averaging $3.34/g today. The national average is up 6.8 cents per gallon from a month ago and stands 92.8 cents per gallon higher than a year ago, according to GasBuddy data compiled from more than 11 million weekly price reports covering over 150,000 gas stations across the country. Neighboring areas and their current gas prices: Midland Odessa- $3.08/g, down 5.7 cents per gallon from last week's $3.13/g. San Antonio- $2.94/g, up 3.2 cents per gallon from last week's $2.90/g. Austin- $2.98/g, up 6.0 cents per gallon from last week's $2.92/g. “The price of oil pushed into territory unseen in over seven years as WTI crude hit $88 per barrel, which continues to drag gasoline prices higher. With continued concerns over geopolitical tensions and crude oil supply, the small yet noticeable increases are likely to continue," said Patrick De Haan, head of petroleum analysis at GasBuddy. "The only factor keeping gas prices from rising more substantially is that gasoline demand remains low as winter storms keep motorists closer to home. Once the weather starts to turn and warm gradually, we'll lose the only restraint to larger price increases." Here’s an easy dinner worthy recipe to kick off February. It’s satisfying during the coldest month of winter and is oddly a salad. It’s salty, sweet, and sour with a hint of spice, the traditional flavors that round out a Thai dish. It’s easy to pull together and will have more flavor than any bagged Thai salad you’ll find at the supermarket. It uses a flank steak, and this can easily be a leftover. Just don’t slice the part you intend for the salad until time for its preparation. Notice how little oil the salad dressing uses.

Steak Quesadillas Serves 4 * 1 medium yellow onion * 1 medium red bell pepper, preferably red, orange, or yellow * 16 ounces Monterey Jack or mild cheddar cheese, or a combination * 1 pound flank or skirt steak * 1 1/4 teaspoons kosher salt, divided * 1 teaspoon ground cumin * 1/4 teaspoon freshly ground black pepper, plus more for seasoning * 2 tablespoons vegetable or canola oil, divided, plus more for the pan * 4 (10-inch) flour tortillas (burrito-sized) For Serving * Sour cream or plain Greek yogurt * Tomato salsa * Guacamole Thinly slice the onion. Core, seed, and thinly slice the bell pepper. Grate the cheese on the large holes of a box grater (about 5 cups). Pat the steak dry with paper towels, then season all over with 1 teaspoon of the kosher salt, the ground cumin, and black pepper. Cut the skirt steak crosswise into 2 to 3 pieces to fit in the skillet if needed. Heat 1 tablespoon of the vegetable oil in a 12inch cast-iron skillet or heavy frying pan over medium-high heat until just starting to smoke. Working in 2 batches if needed, place the steak in the pan and cook undisturbed for 1 minute. Flip and continue to cook, flipping every minute, until both sides have a nice char, and the steak registers 130 degrees F for medium-rare, about 4 minutes total, or 140 degrees F for medium, about 6 to 8 minutes total. Transfer the steak to a

clean cutting board, loosely cover with aluminum foil, and let rest while you cook the peppers and onions. Reduce the heat to medium and add the remaining 1 tablespoon vegetable oil to the skillet. Add the onion, the remaining 1/4 teaspoon kosher salt, and a few grinds black pepper. Cook, stirring o c c a s i o n a l l y, u n t i l softened and lightly charred around the edges, about 5 minutes. Transfer the onions and peppers to a bowl. Wipe the skillet clean. Thinly slice the steak across the grain or dice. Place the cooked flour tortillas on a work surface. Sprinkle 1/2 cup of the shredded cheese onto one half of each tortilla, leaving a 1/2inch border from the edge. Divide the steak, peppers, and onions over the cheese. Sprinkle the remaining cheese over the steak and vegetables. Fold each tortilla in half over the filling and gently press down.

Brush the skillet with a thin layer of vegetable oil. Add 2 quesadillas to the pan and cook over medium-low heat until the cheese is mostly melted, and the bottoms are browned, 1 to 2 minutes. Flip with a thin metal spatula and cook until the cheese is melted, and the second side is browned. Transfer the quesadillas to a cutting board. Brush the skillet with more oil and repeat cooking the remaining quesadillas. Cut the quesadillas into wedges. Serve with sour cream, salsa, and guacamole if desired. Recipe Notes The steak, peppers, and onions can be cooked up to one day in advance and refrigerated in separate airtight containers. When ready to prepare the quesadillas, thinly slice the steak and let sit at room temperature for 10 minutes. Refrigerate leftovers in an airtight container for up to four days.

Keeping Data Collectors At Bay A weekly column by Kent Pendleton TECHNOLOGY AND INNOVATION Nowadays, our actions are tracked, digitized, commoditized and analyzed by the everpresent and arguably useful technology that has shaped the past three decades. The machines are always watching. It’s not intrusive and it’s almost never monitored by a person. Sometimes it’s convenient and many are unbothered by it, but it’s everywhere. For example: Smartphones are constantly tracking our locations; nearly everything you look at on the internet – shopping, news stories, social media – is saved, cross-referenced and shared; data collected by your fitness tracker could be used to infer facts about your health and private habits; and everpresent cameras are seemingly on every corner.

Some convenience store fridges even track your eyes. Realistically, perfect privacy isn’t possible unless you live off the grid, but even then, there are limits. There are things you can do, however, to lessen your exposure without having to completely withdraw from the modern world. Digital privacy starts with data security It bears repeating: Locking down your accounts is the most important thing you can do to keep your information away from prying eyes, preserving your privacy and your financial s e c u r i t y. B y u s i n g complex passwords and changing them regularly, you guard against targeted attacks and limit your exposure to broader attacks against data collectors. Security experts recommend you

use a password manager to keep this from becoming a chore. If you must write down passwords, keep them safe, not in the drawer next to your computer. You should also turn on multifactor authentication for all your accounts, where possible. That makes logging in require two or more forms of identification, like a code sent via text or email message, in addition to your username and password. Be mindful, and willing to buy The business model for most free services on the internet involves the collecting and selling of user information. Consider shifting your email to a paid provider. You can also switch to a web search engine whose ideas about your personal privacy align with yours. Trim your apps

Privacy activists recommend using companies’ websites instead of their apps on your mobile device to avoid giving away more personal information than you would prefer. Fortun a t e l y, m o s t n e w smartphones will now ask if you want a certain app to have access to things like your contact list, the microphone and the camera. Oatmeal raisin, shortbread or tracking? You may have noticed that websites are now regularly asking you about your cookie preferences. Clearly, this isn’t about chocolate chips. A cookie is a small file downloaded to your device that acts like a personal ID card. In some cases, it is used to remember the items in your shopping cart or whether you prefer to stay logged in. Cookies create a more

convenient and streamlined web experience. While a cookie can only be read by the website that created it, things like ads, social media commenting and other parts of the page are usually hosted on other sites than the page you are visiting, and they all may be collecting information from you. Some cookies are essential for the web to work in the ways we’ve become accustomed. Others are only used to track you. Though it can be a nuisance every time you visit a new website, you should adjust the settings to match your privacy expectations. To have those protections, you must opt out of being tracked. Pets Can Develop Cataracts As They Age, And Dogs Are Especially Prone

BRYAN-COLLEGE STATION, Jan. 28, 2022 — Just as humans may develop vision loss or impairments, our animal friends also can experience issues such as cataracts as they age. The term cataract refers to an opacity of the lens within the eye, causing both a discomfort and a loss of vision. While all species are susceptible to developing cataracts, Dr. Lucien Vallone, a clinical professor at the Texas A&M University College of Veterinary Medicine & Biomedical Sciences, says cataracts are most often found in dogs and horses and less frequently in cats. The most common and noticeable sign of cataracts is a cloudy, white pupil. Other warning signs of vision loss can include running into walls, clumsier movement, and

less spacial awareness. Because the severity of pet cataracts ranges from a small inconvenience that causes little or no vision issues to affecting the entire lens and resulting in b l i n d n e s s , Va l l o n e encourages pet owners to pursue evaluation with a veterinarian if there are any concerns of cataract or vision issues in their pet. “It can be difficult to predict whether a small cataract will progress to a large one,” Vallone said. “Veterinary ophthalmologists generally recommend periodic eye exams to identify if a cataract is present and to then track progression.” Cataract severity and treatment varies greatly from patient to patient. Some cases can be treated with topical therapies such as eyedrops. While this form of treatment will not reverse or repair damaged

vision, it can ease any discomfort or inflammation caused by the cataract. If cataracts progress too far, however, surgery can be done to restore lost vision in pets. The majority of c a t a r a c t s a r e c o n s equences of inherited genetic mutations. While many of these mutations have been found in certain breeds of dogs, they are not necessarily present in the entire population. Vallone said it is tough to accurately pinpoint which breeds develop cataracts, due to the major variations within a breed around the globe. Owners who acquire their dogs from breeders should ask the breeder if annual Orthopedic Foundation for Animals (OFA) exams have been performed within their breeding program. “The OFA organizes breeding soundness examinations with ophthalmologists that are intended to help responsible breeders avoid breeding dogs affected by cataracts,” Vallone said. “If breeding soundness steps were not taken prior to adoption, or a dog was adopted from a shelter, the best strategy an owner can take is to schedule regular (annual) evaluations with

Last month, the Texas Workforce Commission announced $10.3 million in Jobs and Education for Texans grants that went to Community, Technical, and State Colleges and Independent School Districts across the state. Of that, $1.45 million was awarded to East Texas institutions. Five ISDs, including Burkeville ISD, Center ISD, ColdspringOakhurst ISD, Elkhart ISD, and West Sabine ISD, received between $189,000 and $328,000 grants to help purchase and install equipment to provide training in the occupations of welder, cutter, solder, and brazer. Deputy Laci Seaton Received “CIT Deputy Of The Quarter” Award

On Tuesday, January 25, 2022, in Montgomery County Commissioners Court, Precinct One Mental Health Deputy Laci Seaton received “CIT Deputy of the Quarter” Award from the National Alliance on Mental Illness (NAMI). Dr. Brenda LaVar, President of the Board of Directors for the Greater Houston Area, presented Deputy Seaton with the award stemming from an incident in June of 2021. Deputy Seaton responded to a citizen with suicidal thoughts and behaviors in the Willis area who was barricaded inside a bathroom with weapons. Deputy Seaton utilized her specialized training in Mental Health and Deescalation tech-

niques to connect with the female and was able to get her to respond to deputies on scene. The dedication of Deputy Seaton ultimately lead to the successful resolution of the incident without any force used. Deputy Seaton is a member of the Precinct One Mental Health and Crisis Intervention Team lead by Lieutenant Brian Luly, which the Montgomery County Commissioners Court unanimously voted to increase to 24 full time Deputy positions. This division is tasked by the Court to provide mental health services to those in crisis throughout all of Montgomery County.

Everyone’s life is a story. Even reading our Bible, we find many, many stories that have happened over thousands of years or more. I am so grateful that God wanted a history of “His-story written down for all people to know how He loves us and longs to be with us one day. I like the way this familiar scripture is put in “The Message” Bible: “This is how much God loved the world: He gave His Son, His one and only Son. And this is why: so that no one need be destroyed: by

We were born into a family picked out just for our life. Several years ago, my grandson saw a book in my bookcase called, “Grandmother’s Journal.” He told me then that I should write “my Story” in the journal so he could remember all the fun times we had. on your phone that might keep those special stories alive and tell them. There is one thing you can be mindful of as you write (or talk). God knows you, loves you, and through His daily words for you, His encouragement is to share your good thoughts with everyone. It would be a very sad world if we didn’t have those faithful scribes, many years ago, who hadn’t had a means to write down God’s and Jesus’ words as they performed miracles for us to know who they really were and what they accomplished for all of us. On one of our

trips to Israel, many years ago, we stopped first in Cairo, Egypt, and were privileged to go to a small factory where they still made paper out of Papyrus leaves. It’s an ancient practice still used for artwork and writing by scribes. And as far as paper goes, it’s much more lasting than what we use today. God knew that, of course! In each one of us, God writes His-Story. Every life is different. Everyone has had different experiences to share with others. And it’s never too late to write a book with your thoughts on paper, on computer, or in cell phone form. Just

I want to be sure to encourage more of God’s people to write down some of the special things that God has and will place in your thoughts and heart, to consider writing your own book or devotional, and many other experiences of your life with Jesus….lived out as you grow in Him. Community Conroe Chapter of the United Daughters of the Confederacy Attended the Texas Division Forum in Bryan, Texas On Saturday, January 29, 2022, six members of the Thomas Jefferson Stubbs 2523, Conroe chapter of the United D a u g h t e r s o f the Confederacy attended the Texas Division Forum in Bryan, Texas. There were 135 ladies from all over the great state of Texas attending this Forum. This years guest s p e a k e r w a s Te r e s a Roane, of Richmond, Virginia. Her talk was titled HISTORY 101...The real c a u s e o f t h e Wa r Between the States. After many years of study and research, she gives many details and facts surrounding the truisms of the War Between the States. Ms. Roane spoke with such enthusiasm and knowledge on the subject, that at the conclusion of her talk, she was given a standing ovation. The Texas Division members had a project

which was collecting socks for soldiers. The count for the socks donated came to 3,100 pairs, and one of the objectives of the UDC is benevolent. We send packages to soldiers on a regular basis. The Children of the Confederacy were also at Forum, many different fund raisers were held that day. A little of $2,300.00 was given to the CoC for their scholarship fund and convention fees. There were also short informative sessions held during the day, so that members can ask questions, receive paperwork, etc., concerning the different offices of the UDC. The objectives of the UDC are...Historical, Educational. Benevolent, Memorial and Patriotic.
