Texas Rebel Joan Of ARC Chapter Weekly Honored The Birthday Of Gas Prices President Jefferson Finis Davis (June 13, 2022) - Average gasoline prices in Texas have risen 9.2 cents per gallon in the last week, averaging $4.65/g today, according to GasBuddy's survey of 13,114 stations in Texas. Prices in Texas are 54.2 cents per gallon higher than a month ago and stand $1.89/g higher than a year ago. The price of diesel has fallen 4.0 cents nationally in the past week and stands at $5.50 per gallon. According to GasBuddy price reports, the cheapest station in Texas was priced at $4.00/g yesterday while the most expensive was $5.68/g, a difference of $1.68/g. The lowest price in the state yesterday was $4.00/g while the highest was $5.68/g, a difference of $1.68/g. The national average price of gasoline has risen 15.7 cents per gallon in the last week, averaging $5.01/g today. The national average is up 57.1 cents per gallon from a month ago and stands $1.94/g higher than a year ago, according to GasBuddy data compiled from more than 11 million weekly price reports covering over 150,000 gas stations across the country. Suggestions for Mindful Eating: Food for Thought Diana Anderson

South Carolina, G e o r g i a , a n d Te x a s continually face off over which state has the best peaches. You can go a step further if you’re lucky enough to live in the Lone Star state and continue the debate comparing Fredericksburg over Fairfield. Petty rivalries aside, real battles over fruit science, soil mineral content and the optimum degree of sweetness abound. The ideal peach is j u i c y, s w e e t , f r e e o f bruises, and at peak ripeness. It should be fragrant but not too fragrant or its going to rot and neither rock-hard nor soft enough for your thumb to make an imprint. When choosing a peach here are a few things to keep in mind. Look First things first: how do the peaches look? Ripe peaches come in shades of golden yellow, red, and blush pink. The skin near the stem tells you more: a golden hue indicates a ripe peach, while pale yellow to pale green suggests that the peach still needs time to ripen. Avoid those with shriveled skin, bruises, dents, or olive-colored spots. Touch Gently press into each peach to determine its ripeness. If a peach feels somewhat soft and gives where your fingers grip it, it's ripe. If its skin doesn't show signs of damage or rot, the softer peach, the sooner you should eat it. If a peach feels firm, it needs more time to ripen. You can, however, use these harder, tarter peaches in dishes like peach c o l e s l a w, c a p r e s e , and Spinach Salad with Peaches and Pecans. Choose the peaches that will be ripe when you're ready to eat them. Smell Peaches should smell sweet and fragrant. If a peach lacks a scent, it also lacks flavor. The good news is all it needs is time to ripen. How to Store Peaches When you get your peaches home, do a little inspection. Separate out the ones that are ripe and

ready to eat from the ones that need more time. (You could even line them up according to how ripe you think they are, so you eat them as they're ready.) Anything that's unripe and needs more time, place it shoulder (stem) side down on a counter or shelf and leave it at room temperature to ripen. Check them daily to see which ones are ready to be eaten. If any of the fruit is already ripe but you're not ready to eat it, you can store the peaches in the refrigerator for two to three more days. However, don't wait too long. The peaches will start to dry out, which can greatly impact the flavor and texture. Even though I’d love to do a taste test comparison between the 3 top peach states, the closest I can come is examining the top recipes that each locale promotes. F a m i l y owned McLeod Farms in McBee, South Carolina, has grown peaches since 1916 and even has its own cookbook. This Peach Pound Cake packs a double dose of peaches, with cubed fruit both baked into the pound cake and stewed into a shiny, peach-hued glaze. The peaches keep the cake moist and add nice pops of fruity flavor. Cornstarch helps to thicken the glaze, which is not too sweet and coats the cake beautifully. This double-peach pound cake would be great served at teatime or as a brunch finale. It's all topped off with a simple custard made from sour cream and egg yolks, baked until just set. This sour cream peach kuchen would make a lovely dessert or side dish on a brunch spread. Whisk together flour, salt, baking powder, and ¼ cup of the sugar in a large bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles fine crumbs. Transfer to a lightly greased (9- x 9- x 2inch) baking pan, and press crumbs firmly against bottom and 1-inch up sides of pan. * Step 2 Arrange peach slices evenly over crust. Stir together cinnamon and remaining ½ cup sugar, and sprinkle over peach slices. Bake in preheated oven until most of the sugar is melted, about 15 minutes. * Step 3 Meanwhile, beat sour cream and egg yolks in a medium bowl until smooth. Correcting Your Retirement Course Plan B can turn into something beautiful A weekly column by Kent Pendleton On the road to retirement, having spent decades working, saving and planning for your desired lifestyle, imagine approaching the one sign you didn’t see coming: Detour ahead. Suddenly, your journey looks to be taking you out of the workforce years before you expected. Thankfully you’re not alone. According to the Employee Benefit Research Institute’s 2021 Retirement Confidence Survey, nearly half of American workers retire earlier than planned. The reasons include job loss, health issues and other circumstances. Being in the same boat as others may not exactly be comforting, but knowing there are steps to take and adjustments to be made could help. The retirement transition can be stressful for those who feel unprepared. It’s important to pause and take stock before making rash decisions. Consider these steps: Breathe. Don’t panic and do something you might regret, like immediately taking Social Security or putting everything on credit, if you can avoid it. Both could jeopardize your future financial security. It may even help to reframe your situation as a fresh start. Get health insurance. If you’re under 65 when you leave your job, you’re likely not yet eligible for Medicare. You may be able

Constable Hayden Hosts “East Montgomery County Criminal Interdiction Event” On 6/8/2022, Constable Kenneth “Rowdy” Hayden hosted an East Montgomery County Criminal Interdiction event and invited all Constable Offices from Montgomery County to participate. Almost 70 deputies attended from Precinct 1, 2, 3, 4 and 5. Constable Hayden opened with a rollcall for all deputies, also attended by Judge Jason Dunn and Constable Cash, in the JP4 courtroom and laid out the plan of action. From 6p to after 2am Deputies worked the streets of East Montgomery County, stopping more than 300 vehicles, issuing almost 80 citations and 239 warnings. The combined totals for arrests were 39, including everything from warrant arrests, misdemeanor and felony narcotics arrests as

well as arrests for driving while intoxicated. Reserve Deputies from C o n s t a b l e H a y d e n ’s Office also worked the street as well as worked inside the office processing the arrestees; the Montgomery County Sheriff ’s Office dispatched 4 transport vans to assist in taking the arrestees to the county jail, freeing up Deputies to hit the streets instead of having to travel to Conroe to drop off the subjects. Constable Hayden is continually doing everything he can to keep you and your family safe, by inviting other Deputies to the area, working with all local and county wide law enforcement and sending a message to those who refuse to follow the law. Thinking of this soon coming Sunday as we celebrate Father’s Day, I chose to reassess several fathers we read about in the Bible. Not only did these particular fathers love God throughout their whole lives, but God b l e s s e d t h e m g e n e rously…each one. Because they knew God and knew His directions, and then for more generations following, God blessed them. The first role model for fathers of faith of today is Joseph, Jesus’ earthly father. Joseph was a strong, yet a sensitive and compassionate man to be the earthly father of Jesus and to care for the Son of God. Joseph had to

Jesus grew, Joseph taught Him to work as a carpenter by trade. That reminded me of this later scripture Jesus told His disciples: “Do not let your heart be troubled; believe in God, believe also in Me. Joseph not only taught Jesus a “trade,” but also he made sure Jesus learned the scriptures well, as they faithfully attended their Synagogue in Nazareth. Now we skip some years past to friends of God before Jesus came to the world. Adam was the

first man who fathered many children to populate the world. Then came Enoch, who lived 365 years. The Bible says of faithful Enoch: “Enoch walked with God and he was not, for God took him.” Next was Noah, who led he and his family, a c c o r d i n g t o G o d ’s meticulous directions, through a world-wide flood. God gives Noah this blessing after the flood: “When the bow (rainbow) is in the cloud, then I will look upon it to remember the everlasting covenant between God and every living creature of all flesh that is on the earth.” Genesis 9:16.
