"With Independence Day a w e e k a w a y, g a s p r i c e s h a v e continued to fall for the second straight week as the price of oil has faltered, ushering in the drop we're seeing. The good news is we could also see a third straight week of decline," said Patrick De Haan, head of petroleum analysis at GasBuddy. "While prices will be at their highest July 4th level ever, they'll have fallen close to 20 cents since our peak in early June. Motorists should be wary that while the decline could continue for the week ahead, any sudden jolts to supply could quickly cause a turnaround, and risk remains that when the peak of hurricane season arrives, we could see a super spike at the pump." Suggestions for Mindful Eating: The Power of Okra
Food for Thought Diana Anderson
DianaCAnderson@ gmail.com
This summer vegetable is like the Rodney Dangerfield of the garden – It gets no respect. Many people get sour expressions when it is mentioned and others spend far too much time trying to figure out how to keep it from doing what it does naturally. Yes, it is slippery. The trick to cooking this vegetable is to understand that the more it is sliced and diced the more it exudes its slipperiness. So, if you don’t like the slime the solution is easy: Cut it as little as possible or leave it intact. The young pods can also be eaten raw or simply blanched like string beans. You can even cook them whole in the oven or grill them as in the following recipe. Why bother though? Does okra have anything special to demand extra attention in the kitchen? The most abundant vitamin in okra is vitamin K. This vitamin helps strengthen bones and promotes clotting of blood. It is also very high in a nutritious mucilaginous fiber commonly known as okra slime. Ethiopian in origin, Abelmoschus esculentus or Hibiscus esculentus is known by many names around the world – okra, okro, lady’s finger (England), gumbo (U.S.), guino-gombo (Spain), guibeiro (Portugal), Kacang bendi (Malaysia), and bhindi, gombo, and bendakai (India). The fact that it even has that many names suggest its global popularity and widespread cultivation.
Okra water has been used as a traditional remedy for years in the management of blood glucose levels. Okra water is made by putting okra pods in water and soaking them overnight. Soaking the pods allows valuable nutrients from the skin, seeds, and pods to be absorbed into the water. Okra Water Ingredients * 4-5 okra pods * 1 cup of water * Salt & pepper – optional Instructions * Take 4-5 mediumsized okra pods and wash them thoroughly. * Cut both ends of the pods and slice them in half. You can also use a knife and pierce each side of the pods. * Now, take a cup filled with water and immerse the pods in it * Soak the pods overnight for 8 – 12 hours. * Squeeze the leftover sap into the water from the okra pods by squeezing them. Once you have squeezed out the sap throw the pods away. * Your drink is now ready! Season with salt and pepper if you find the taste of the plain okra too bland. Grilled Okra

When preparing, it's important to thoroughly wash and dry okra before cooking to further decrease the slime quotient. The smaller the okra pod, the less slime you will encounter. Cutting the okra in half lengthwise can also cut down on slime. Plan to use your pods within two to three days of picking them up at the market. Until you use them, place them in a plastic or paper bag in the fridge. This simple roasted recipe is delicious, and just takes a short amount of hands-on prep time. For this recipe, you’ll want slightly longer okra pods than n you’d typically seek out. You do not want woody, overgrown, tough pods—so avoid any that look pale or that feel dried out. If they are fresh and vibrantly green, they should still be tender even at 4 to 5 inches in length. Regular, not thick-cut, bacon is also best here because it will wrap easily around the pods. Because the poppers are cooked quickly on a grill, they maintain a pleasantly crisp texture and pick up a little smoky char from the grill.

Weekly Columns
May Market Review A weekly column by Kent Pendleton May’s equity markets continued the upward trend seen over the past few months, less exuberant perhaps given uncertainty surrounding the three I’s: immunity, inflation and infrastructure. The push and pull of backwardlooking economic data combined with forwardlooking projections led to some volatility. While vaccinations (immunity) are on pace and mask mandates are loosening, questions remain on the efficacy against variants, the
potential need for booster shots, and what may happen when the weather begins to cool. Inflation remains on investors’ minds as the Consumer Price Index (CPI) climbed 4.2% in April, its highest since 2008. Talks in D.C. around infrastructure – its definition and how to pay for it – remain at the f o r e f r o n t . T h e r e ’s n o clarity yet as bipartisan negotiations remain deadlocked, although a deal is likely by fall. In other news: * The outlook for economic growth remains strong, but labor market frictions are likely to be more intense than in a typical recovery. * Supply chain bottle-
necks and materials shortages are expected during economic recovery and should improve over time, but current issues could add to inflation expectations if not resolved quickly. * Pullbacks and volatility are to be expected in the normal course of investing, especially during times of economic recovery. Those ready to put cash to work may want to consider any weakness as an opportunity to add to strategic positions in areas exposed to recovery efforts.

Conquering Equine Colic A Texas A&M expert explains the steps owners should follow if their horse is experiencing abdominal pain. BRYAN-COLLEGE S TAT I O N – N o o n e enjoys the queasy feeling of a stomach-ache, which can turn eating into a chore, while leaving most of us slightly, if not extremely, irritable. A horse dealing with colic is no stranger to these feelings or symptoms. Because learning how to spot when a horse is experiencing colic and when to call the veterinarian are important lessons for every horse owner, Dr. Leslie Easterwood, a clinical assistant professor at the Texas A&M University College of Veterinary Medicine & Biomedical Sciences, offers some insight on recognizing the common signs of colic as well as the steps owners should take when their horse demonstrates those symptoms. Equine colic is simply the occurrence of abdominal pain. One of the first signs of colic owners may notice from their horse is an unwillingness to eat. To begin assessing whether the horse’s food aversion is the result of colic, owners can take their horse to a green, grassy area; if the horse manages to graze on the green grass without lying down, owners may be able to hold off on calling their veterinarian until more signs of distress or discomfort arise. A s a h o r s e ’s p a i n increases, they may paw
the ground with their front foot, turn their neck to look at their belly/flank area, or lie down and roll around. When it comes to a h o r s e ’s w e l l - b e i n g , Easterwood is an advocate for erring on the side of caution. “Colic is best resolved earlier rather than later,” she said. “At the first sign of abdominal discomfort, it is not a bad idea to get your veterinarian involved.” Conditions that can cause this level of pain in horses range from a mild impaction that dissipates over time to an intestinal twisting in need of surgical intervention. While colic is a large umbrella over a multitude of conditions that cause abdominal pain, there are a few preventative measures owners can take to better protect their horses. “Keeping horses on a regular feeding schedule, providing enough fiber/roughage in the diet, and providing green grass turnout are all considered
helpful to prevent colic,” she said. “Other factors, such as keeping their teeth in good shape and preventing them from getting into excessive amounts of grain, can also be essential.” Colic can be scary, and is a real, daily risk for horses. Well-managed feeding schedules and a nutrition plan can help to minimize the risk, but owners must remain diligent in observing for signs of abdominal pain and acting quickly when they see anything out of the ordinary. What does the Overturning of Roe vs Wade mean to our Culture? By: James M. Rankin It was predicated in the seventies by social commentors that Abortion would become the next Civil War. The Supreme Court with its new Justices, fresh eyes, and desire to interpret our sacred document, the United States Constitution, judiciary overturn the controversial law that legalized Abortion. It has been estimated that over thirty million unborn babies never saw the light of day over the past fifty
years. The concept of Abortion was not born in 1973; it has existed since the founding of our country. In fact, according to Professor Marvin Olasky, In the year 1648 located in Massachusetts a young unmarried girl by the name of Mary Martin aborted her child, confessed to authorities, and was executed for her crime. Our culture has changed dramatically when President Biden stated that it is a sad day for all Americans due to the

decision. Even Houston’s mayor Sylvester Turner official statement, “Today is a sad day across America. The U.S. Supreme Court’s ruling to overturn Roe v. Wade is a chilling and incomprehensible decision.” The facts be known, abortion was not eliminated, rather it has been delegated to the States just as the Constitution direct under Article 10, “The powers not delegated to the United States by the Constitution, nor prohibited by it to the States, are reserved to the States respectively, or to the people.”
Abortion has been defined as the termination of a pregnancy yet is so much than that. According to Conservative talk show star Rush Limbaugh, “Abortion cheapens the sanctity of Human life. We are now making decisions on who lives or who dies on the basis of whether it is convenience for the living. That is dangerous.” Missouri was the first State to ban abortion followed by the State of Texas. It will become quite apparent which States will fashion legislation to accommodate this procedure and those States
that will protect the Unborn. Planned Parenthood is poised to sue States that impede abortions with taxpayers’ funds. The advocates of abortion took to the streets to verbalize their opposition to the decision. The argument rings hollow with the notion that it is a Woman’s body to do as she wants, yet during the COVID crisis government demanded that everyone get vaccinated; professional athletes are forbidden to consume steroids although it is their bodies. With the invention
in medical imaging, there is a precious unborn human being in the womb. It is my hope that with the decision, future Moms would think twice about such a weighty decision as bringing life into the world. As R.C. Sproul pointed o u t s o e l o q u e n t l y, “Women have a right to reproductive freedom, I hear it argued, and I agree: all women, even little girls yet unborn who have the right to be free to grow to the age when they in their turn can make love and have babies.

Devotional Spreading the Word
By Gail J. Box Gailbox@consolidated.net
If we are to teach our children well, we would make “love” the first lesson they learn. As a teacher of many years, I loved every single first, second, and third grader I taught. This is what God says about them: “Behold, children are a gift of the LORD…Like arrows in the hands of a warrior, so are the children of one’s youth.” Psalm 127: 3a and 4. It simply means if a well-trained child is brought up to love and respect others, then that child will be equipped to give out and receive back love and honor in order to be able to raise his children well, also. Our
LOVE, RESPECT, AND HONOR OF GOD AND COUNTRY society needs both in order to bring others that same message of respect. Love has to start in the home. It then extends to neighbors, friends, school, and all who work for us and are around us. As we have been shown love, then we can be loving toward others. As love comes to us, then it multiplies in friends and family. If we learn lessons of love at home, then at church, then with good neighbors, it becomes the basis of the next most important word in life: Respect. The one who is prone to love people will be one who respects others – in home and out. If we show love

to all people, then that love fits into who God wants us to be: “a respecter of all people through Him.’’ The word “honor” certainly begins at home between child and parents. We, as parents, are the ones who teach our children to respect others and listen to directions from them. The more we read our Bible, the more we respect God’s directions for us. I like calling God, “Our Father…” He actually is, because in Ephesians, Chapter 4, it says: “There is one body and one Spirit, just as also you were called in one hope of your calling;
one Lord, one faith, one baptism, one God and Father of all who is over all and through all and in all.” Ephesians 4: 4-6. God, our heavenly Father, gives us an earthly father to teach the children he has, about how to love and respect the LORD, their heavenly Father. Then there are others in the family deserving respect, also. Some, who may join the military, are then taught to respect their commanders, as well as their fellow soldiers. Taking direct orders may save their life and even the lives of others as they f o l l o w t h e i r c o mmander’s instructions in times of war. And it is

important for us at home to bring honor to those living and those who may have died in battle. Their sacrifices may have saved many lives in order to keep this country free. In a few days, the U.S.A. will have our annual celebration of July Fourth, all over our country. We take that day to honor all our military and fallen heroes who gave their lives to keep our country free from all war and oppression. With much respect and deep honor, we thank those men and women who kept our country safe in the past, and those also in the
present days…the upcoming national holiday of July Fourth, 2022. As I was looking for a song or poem to end this week’s offering, I found this in a book of kindest poems in many walks of life….FOUR THINGS Four things in any land must dwell, if it endures and prospers well: One is manhood true and good; One is noble womanhood; One is child life, clean and bright; And one an altar kept alight.
