Gas Prices (October 18, 2021) - Texas gas prices have risen 2.9 cents per gallon in the past week, averaging $2.95/g today, according to GasBuddy's daily survey of 13,114 stations in Texas. Gas prices in Texas are 13.1 cents per gallon higher than a month ago and stand $1.09/g higher than a year ago. According to GasBuddy price reports, the cheapest station in Texas is priced at $2.55/g today while the most expensive is $3.69/g, a difference of $1.14/g. The lowest price in the state today is $2.55/g while the highest is $3.69/g, a difference of $1.14/g. The national average price of gasoline has risen 2.9 cents per gallon in the last week, averaging $3.30/g today. The national average is up 11.1 cents per gallon from a month ago and stands $1.15/g higher than a year ago. Neighboring areas and their current gas prices: Midland Odessa- $3.02/g, down 2.2 cents per gallon from last week's $3.04/g. San Antonio- $2.88/g, up 6.8 cents per gallon from last week's $2.81/g. Austin- $2.89/g, up 2.8 cents per gallon from last week's $2.86/g. "The national average closed the week by climbing to yet another fresh seven year high, as the price of oil continues to drag gas prices along for the wild ride, leaving motorists on empty," said Patrick De Haan, head of petroleum analysis for GasBuddy. "With OPEC holding back oil production and strong global oil demand, the situation will no doubt pave the road with even higher gas prices in the weeks ahead. Until several bottlenecks ease, including supply chains and low global inventories of oil, natural gas and coal, we'll be stuck feeling the pinch of rising oil and gasoline prices. The bad news is that for now, all I see is the upward trend at the pump continuing into the weeks ahead with no sign of relief just yet." Indianapolis, Indiana: The Houston Texans took on their division rivals on the road and fell short again losing 31-3 against the Indianapolis Colts. As a consultant, I can quickly evaluate the glaring problems; however, as a sport writer my job is to share with the fans the highlights, stats with some insights. Suggestions for Mindful Eating: Chicken Pot Pie Food for Thought Diana Anderson

One of the most quintessential comfort foods chicken pot pie is a huge family pleaser. It’s truly a one dish meal you can feel good about serving. Pot pie is the North American term for a type of meat pie with a top pie crust consisting of flaky pastry. The term is used in North America. Pot pies may be made with a variety of fillings including poultry, beef, seafood, or plant-based meat substitute fillings, and may also differ in the types of crust. Meat from one 2- to 3pound chicken boiled and deboned. Of course, you could use rotisserie chicken and that is super convenient but boiling has some advantages. Boiling produces very moist, tender and flavorful meat plus yield the broth you need in this recipe. When boiling a chicken for the meat place the chicken in your pot and sprinkle with

You can add some fresh herbs like parsley, sage, rosemary and thyme. Simmer the chicken for 1 1/2 hours total then check to see how tender it is. The meat should separate easily from the bone. Chicken Pot Pie: 3 celery stalks 3 medium carrots, peeled 1 large yellow onion 4 tablespoons (1/2 stick) butter 1/4 cup all-purpose flour 2 cups low-sodium chicken broth or stock 1 chicken bouillon cube 1/4 cup white wine, optional 1/2 cup frozen peas 1 cup heavy cream 2 sprigs fresh thyme or 1 t. ground thyme 1 teaspoon kosher salt, or more as needed

Black pepper 1. When you're ready to use the pie crust remove from refrigerator and let sit on the counter about 20 minutes. Preheat the oven to 400 degrees F. 2. Begin by finely dicing the vegetables. Slice the celery stalks into narrow strips, then slice in the other direction to create a fine dice. Repeat this process with the carrots, and the onion. 3. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots and celery. Sauté until the vegetables start to turn translucent, a couple of minutes. 4. Add 2 cups of the shredded chicken and stir to combine. Sprinkle the flour evenly over the vegetables and chicken and stir to combine. Cook for a couple of minutes, stirring gently. 5. Pour in the chicken broth, stirring constantly. Stir in the bouillon cube and wine if using. The flour will combine with the chicken to create a delicious gravy. Next, add the peas. 6. Pour in the cream and stir. Allow the mixture to cook over low heat,

Pour the chicken mixture into a deep pie pan or small casserole dish. 8. Roll out the pastry so that it's 1 inch larger than the pan. Place the crust on top of the chicken mixture and cut small slits in the top. Press the crust gently into the sides of the dish to seal. I don't worry about making a perfect edge on my chicken pot pie because a) it looks more rustic and b) I'm lazy, hungry and I want to eat. 9. Bake until the crust is golden brown, and the filling is bubbly, about 30 minutes. Cool for 10 minutes before serving.

I Enjoy This Time of The Year! Weekly Column by Doyle Driver doyledriver@yahoo.com Ye a r s a g o w h e n autumn days began with brisk n’ nippy mornings—it was the kind of weather I enjoyed! Boots and I thought it was better when morning walks, were taken in cooler weather. I often wish one of these beautiful days could be cloned, and replicated for the next 364 days. I suppose if I did, the days would become boring, and I’d complain about them! It somehow seems when weather is perfect, as it has been these last few days; my sense of smell is keener. Either that, or perhaps fragrances are more pronounced. Take for instance, those early morning walks Boots and I used to take; the delectable aroma of fresh coffee accompanied by a hint of smoky bacon wafting across the park, causes us to quicken our steps—with a definite purpose in mind. The faster we get home, the quicker a steaming cup of coffee, along with bacon and eggs will quell my appetite! Occasionally I’ll share a piece of crisp bacon with Boots. On those evening promenades’ an entirely different set of fragrances filled the air. Smoke curling from open charcoal grills incites visions of a crusty, marbled, sizzling, rare rib eye; served with baked potato drowned in melted butter, slathered with sour cream. That thought alone made me wish I’d prepared coals before beginning our stroll.

As I zipped my coat higher, staving off cold north winds, I pictured neighbors mesmerized by the flames of the oak fire warming their hacienda. Hurrying home I recalled days on the farm. Daddy milked cows as I hauled bundle-feed in from our field to feed them. Mother would be making cornbread, pinto beans and potatoes’ fried with onions she’d grown in her garden. I knew morning would bring a heavy frost, killing any remaining cotton leaves in the field. A couple of days later, fields would be white as snow, ready for harvesting with mechanical cotton pickers. Cotton and other leaves, killed by the frost, would give off a pungent odor for the next few mornings. The first heavy frost marked the end of a life cycle for cotton and other leafed plants in the county. Today, farmers don’t wait on frost to kill leaves so harvesting cotton can begin. From time to time Daddy would break pieces off the stick, so we could enjoy. I don’t know how long a large stick lasted, but it was at least through Christmas, and into the New Year. With the chill of winter setting in, aromas of new leather jackets, cowboy boots and winter clothes removed from cedar chests, closets and family trunks filled the air with overwhelming tangs of mothball, and cedar! Even today, a scent of mothballs causes memories of home in winter, and early days of Navy boot camp in San Diego. Boots and no longer stroll for we’ve both aged considerably! So, Derek or my granddaughter accompany him on strolls, while I wander down memory lane. Memories of the farm and younger, happy years mean a great deal, as I grow older. Looking back on my varied career of long boring flights, remote locations and lonely hotel rooms, I sometimes wonder why I didn’t choose farming as a career—I could haven chosen far worse vocation you know!

Dan Patrick and Speaker Dade Phelan issued this joint statement today following an agreement on American Rescue Plan Act (ARPA) funding: "The Texas House and Senate have come to an agreement on a bold financial package using both ARPA and state dollars to address health issues related to COVID-19, and the financial impact on homeowners, businesses and education. We are also announcing a bold plan to create endowments in the 2023 Texas budget to preserve historic buildings, sites and our state parks for future generations. These endowments will help with maintenance and repair so that our wonderful parks and historic sites remain world-class. "Features of this agreement are the following: * $7.2 billion to

restore our unemployment insurance which was depleted during 2020. * $2 billion for COVID-19-related nursing surge. * Hundreds of millions of dollars for new hospitals and mental health services across Texas. * $500 million for broadband infrastructure. * $300 million for a new state operations emergency center. * $349 million for COVID-19 public safety salary compensation. * $286 million for the Teacher Retirement System of Texas (TRS) so that our retired teachers do not see an increase in their health insurance premiums. * $325 million to fund over $3 billion in higher education, health, science and other projects. * $95 million for Texas food banks. * $75 million for rural hospitals.

Property Tax Relief Will Save Homeowners Thousands Over the Lifetime of Their Home. "Both the Senate and House offered up separate proposals for one-time property tax relief through either compression of tax rates or checks sent directly to homeowners. After further discussion, the two bodies agreed to create perpetual savings by increasing the homestead exemption from $25,000 to $40,000 for every homeowner, in perpetuity (In 2015, the legislature increased the homestead exemption from $15,000 to $25,000 for the first time in

decades). The increase in the homestead exemption will save every homeowner $175 per year over the lifetime of their home, which will total in the thousands in tax savings. "In addition, $3 billion of ARPA funds will be held for future tax relief that the legislature will study before the 88th Legislative Session. This $3 billion being held in reserve is in addition to the legislature leaving $6 billion in general revenue and projected $12 billion in our rainy day fund. "We would like to thank Sen. Paul Bettencourt, RHouston, and Rep. Morgan Meyer, R-Dallas, for their diligent work on Senate Bill 1 and Sen. Jane Nelson, R-Flower Mound, and Rep. Several days ago, we watched on T.V., quite an experience of a very small “space shot” that broke through our atmosphere for a quick trip – up there and back down to earth. I viewed it as a tiny “space b u s . ” W h e n Wi l l i a m Shatner rode with a few others, up and back down, he seemed to be speechless. There were no words to describe how he felt or what he saw. However, I found this Psalm to

partially describe what he haltingly mentioned when interviewed; only he couldn’t find the right words, and he even spoke about there being a darkness at one point. This scripture is what he might have felt but couldn’t say about his experience: “Even before there is a word on my tongue, behold O LORD, You know it all. You have enclosed me behind and before, and laid Your hand upon me. Such knowledge is too wonderful for me; it is too high, I cannot contain to it…Even the darkness is n o t d a r k t o

And to also build bigger, better, and more powerful telescopes, allowing us to get visuals of outer space plus other galaxies. There’s no doubt that the farther we explore space, our knowledge will expand. And like Mr. Shatner tried to verbalize, we may not have the vocabulary to explain what our eyes have seen or what will come next. There is still so

much to explore about our earth in the many avenues of space, that it would take lifetimes of observation to learn their origins. And so, heavens await. God has done much in the writing of the Bible, to introduce us to Jesus and the Holy Spirit for many more guidelines to a better life. NOTICE OF RATE CHANGE REQUEST On October 5, 2021, Entergy Texas, Inc. (“ETI”) filed an application to amend its Transmission Cost Recovery Factor (“TCRF”) with the Public Utility Commission of Texas (“Commission” or “PUC”). The application was assigned PUC Docket No. 52624. The proposed TCRF is requested in accordance with the Public Utility Regulatory Act § 36.209 and 16 TAC § 25.239. A TCRF allows a utility to recover its reasonable and necessary costs that have occurred since the end of the test year in the utility's last base rate case for transmission infrastructure improvement and changes in wholesale transmission charges to the electric utility under a tariff approved by a federal regulatory authority. In its requested amendment, ETI is seeking recovery of costs for transmission capital investments it incurred from September 1, 2020 through July 31, 2021. ETI also seeks to recover approved transmission charges that are not otherwise being recovered through rates. The proposed TCRF as amended would result in total TCRF retail revenues of approximately $66.1 million, which is $15.1 million in incremental annual TCRF revenue beyond ETI's currently effective TCRF. This $15.1 million amount would be a 1.57% increase in ETI's annualized non-fuel revenue requirement as compared to revenues approved in Docket No. 48371, ETI's most recent base rate case, and a 1.01% increase in ETI's overall annualized revenue requirement including fuel costs as compared to such revenues. The impact of the rate change on various customer classes will vary from the overall impact described in this notice. The effective date of the proposed rate change would be the date that a Commission order adopting the proposed TCRF is issued. Community The 125th Annual Texas Division Convention ofthe United Daughters of the Confederacy The 125th Annual Texas Division Convention of the United Daughters of the Confederacy was held Sept. 30 thru Oct. 3, 2021 in Shenandoah, Texas. The local Thomas Jefferson Stubbs 2523, Conroe chapter had eleven members to attend. The chapter was pleased they received ten awards at

convention this year. Members who attended the convention were: Katherine Jones, Nelda McGuire, Joyce Tabor, Eva Rains, Iva Gilliam, Schelle Taylor, Linda Brill, Naschelle Taylor, Beckie Endebrock, Carolyn Jamail and Rae Montgomery. The objectives of the United Daughters of the

MONARCHS ARE ON THE MOVE By Cheryl Conley The most amazing event happens every year at this time. It’s the migration of monarch butterflies. There are two populations of monarchs in the United States. One is the Eastern North American population that migrates to Mexico. The other is the Western North American population that overwinters in California along the Pacific coast near Santa Cruz and San Diego. Migration takes eight to ten weeks and depending on the starting point, some butterflies travel over 3,000 miles. Can you imagine this delicate insect traveling through high winds, rain, hail and heavily traveled roads to

reach its destination? The Eastern North American population of monarch butterflies are of special interest to those of us in Texas. The monarchs fly south using several flyaways. When they reach central Texas, they merge into a single flyaway until they reach their overwintering grounds in the Oyamel forests in Central Mexico. The forests provide an almost ideal microclimate with temperatures ranging from 32 degrees to 59 degrees Fahrenheit. At night, in order to stay warm, the butterflies cluster together. It’s not uncommon to have thousands of butterflies in

one tree. So how do they know where to go? Scientists believe they use the position of the sun as well as an internal magnetic compass that directs them south towards the equator. As they near their final destination they are able to smell and pickup on social cues to guide them. So what happens when they reach Mexico? They hibernate until February and March. Great Pumpkin Shoot Feeds Seniors Conroe, TX – Meals on Wheels Montgomery County (MOWMC) is preparing for their largest fundraiser of the year, the sixth annual “The Great Pumpkin Shoot” sporting clays tournament on October 29, 8:00am-1:00pm at the Blackwood Gun Club in Conroe, TX, to benefit the homebound elderly of Montgomery County. Every donation matters!” Each $125 dollars donated feeds a senior for an entire month.
