The Greeks had already given dried grapes to sweeten their wines, and the wines sweetened with raisins were also known in the Middle Ages, but the history of Tokaj’s
sweet wines began differently. Here, on the long warm autumn days, the berries do not only ripen as a result of significant fog and mist, but also the Botrytis cinerea fungus on their surface shows up. This ‚noble’ or ‚noble rot’ produces unique flavoring substances that help the berries to ripen and gives the wine an inimitable taste.
