VIEW FROM THE BLEAU SALES NEWSLETTER WINTER 2014
On behalf of the Sales Team, we would like to extend our gratitude to each and every one of you for an amazing 2013. It has been a pleasure to assist you throughout the year and we look forward to working with you for many years to come. We were delighted to see so many of you take advantage of the expert knowledge of our team and collaborate on your successful meeting. Fontainebleau truly is an exceptional place to be. 2013 brought Fontainebleau the opening of the sophisticated American bistro-lounge, Michael Mina 74, and Timeless, the hotel’s exclusive boutique for exceptional timepieces and fine jewelry. Our BleauLive stage was on fire with performances by Jewel, Carly Rae Jepsen, FUN, Austin Mahone, Robin Thicke & Pharrell Williams, The Band Perry, Adam Lambert, Gloria Gaynor, and the 2013 iHeartRADIO concert weekend featuring Pitbull, Afrojack, Icona Pop, Kesha, Krewella and Jason Derulo. We invested in the commercial fishing boat, BLEAUFISH and upgraded our pristine aquariums aptly called “Water World” to provide guests with the freshest catch daily, which you can read more about in the “News from Fontainebleau” section of this newsletter. 2014 will bring greater enhancements, which will continue to keep Fontainebleau relevantas a luxury hotel. We are laser focused on delivering you and your guests’ world-classservice and enhanced products to keep us right on top. We thank you for your continued support and look forward to seeing you soon!

THE NEW BLEAULIVE STAGE Since opening in 1954, Fontainebleau has been a destination with character, personality, history and culture invented by architect Morris Lapidus, who, through his architecture truly pioneered the term “the stage is yours.” Entertain where legends have left off. The new BleauLive Stage offers a select range of unique experiences and provides a stunning outdoor backdrop for your inspired day or evening events. Energize your corporate meetings. Bring impact and flair to receptions and entertainment functions. This beautiful outdoor venue can accommodate up to 500 guests or more. Ask your Sales Manager for details.
of food and the mystique of the ocean,” The BleauFish ships out each morning before dawn from Coconut Grove. Licensed to bring in snapper, grouper, wahoo, dolphin, kingfish, tuna, lobster and stone crab claws, the boat returns by mid-afternoon, when Connell’s staff picks up the catch and brings it to the resort. The Fontainebleau’s food-and-beverage outlets move through about 800 pounds of fish and seafood every day. BleauFish’s live and freshly iced contributions now make up about 40 percent of that. The rest mostly comes from Maine lobsters, mussels, oysters, scallops, octopus and other species not readily found here. “We’re literally going from ocean to table in a matter of hours,” Connell said. “People don’t realize the tight timeline that fish have in terms of freshness. That clock starts ticking the second it gets pulled from the water. With this setup, the fish tastes exactly how it’s supposed to: like the sea.”

With accolades pouring in, Fontainebleau is happy to announce we have asked Chef Mina to open a second concept, a new steakhouse called Natzusteak, opening in the fall of 2014. Natsusteak is Chef Mina’s modern alternative to the classic steakhouse with Japanese inspiration and will create a new genre of steakhouse. “Introducing a new and distinct restaurant concept to the market is a thrill, but doing it in Miami Beach at Fontainebleau is a dream come true,” said Michael Mina. “Taking inspiration from my many travels to Japan and love of Japanese cuisine and culinary techniques, Natsusteak will give guests a steakhouse
