Back in September, the crowds at Tribeca Kitchen & Bar were treated to a hotly anticipated gig by international superstar DJ and performer Sonique. The British musician, behind the hit tracks Spell On You and Feels So Good, wowed the audience with an upbeat live set, along with tunes by Tribeca’s resident DJs Jon Besant, Leon Knight, Natalie Brogan and CN Williams. Sonique also stayed at our award-winning JA Ocean View Hotel following the successful concert.

6 JA Manafaru in the Maldives was thrilled to take part in the International Coastal Cleanup in September. Last year saw more than 18 million pounds of waste collected by nearly 800,00 volunteers. To celebrate the 2016 worldwide ocean conservancy day and do our part to help keep the waters clear, our team took to the beach to remove waste from the shore while our divers cleaned reefs. The JA Manafaru team, along with 20 hotel guests, also visited a nearby deserted island named Molhadhoo where they were welcomed by the local community and served refreshing Kurumba (coconut juice) drinks.

PAR FOR THE COURSE Follow in the footsteps of greatness at the recently renovated JA Jebel Ali Golf Resort in Dubai Its emerald fairways and zippy greens have welcomed many of golf’s greatest – from Tiger Woods and Ernie Els to Nick Faldo and Greg Norman. And now JA Jebel Ali Golf Resort’s nine championship-standard holes are

yours to play, after a facelift its director James Williams says has made the course better than ever. JA Jebel Ali Golf Resort has been a fixture of the Middle East’s golfing scene since opening in 1998, thanks in no
small part to its backing onto the luxury JA Jebel Ali Beach Hotel. Back then it was designed to complement the hotel’s swathe of activities including a beach, marina, horse riding, shooting and football.

Today, JA Jebel Ali Golf Resort is a varied, variegated addition to Dubai’s golf roster. Its 3,299-yard, par 36 course has challenges for all golfers, especially those with soft hands. “I would describe it not as a sloggers course but suited more to the golfer with good course management skills, accuracy and good short game,” director James Williams told us. Williams and his team took the decision to close JA Jebel Ali Golf Resort’s greens this

summer to “put something back into the course”. It was conceived by renowned architect Peter Harradine, whose designs have been played everywhere from the Seychelles to Sudan – but Williams saw a chance to improve the course even more. Opened on September 7th , the new course includes a state-ofthe-art Toro irrigation system, which will ensure “more consistent and manicured fairways and roughs,” as well as a reduced impact on the environment. Its greens have also undergone a makeover with Dynasty paspalum grass. That will make putting even more of a challenge. “Regular guests will be very
pleasantly surprised by the improved size of the greens,” said Williams. “There’s more variety of pin placements, less wear and tear. It will really improve their experience and enjoyment of the course.” One golfer who can deal with the changes better than most is Spaniard Rafa Cabrera-Bello. The 32-year-old from Las Palmas, Gran Canaria (along with Ladies European Tour Rookie of the Year, Amy Boulden and Olivia Cowan), is sponsored by JA Resorts & Hotels and has achieved two wins on the prestigious European Tour. All three pros know the value of a tough course. Williams is sure that JA Jebel Ali Golf

Resort’s latest improvements have made it an even more enjoyable challenge, no matter a player’s ability levels. “The thought behind the design was all geared to providing a fair and achievable challenge to all levels of golfer,” he told us. “We have had many top world stars of golf play on the course but it truly is designed with the normal golfer in mind. Its average length is challenging in that fairways are quite narrow – accuracy is a premium.” Players, therefore, must keep their eye on the ball at all times. That’s easier said than done when you have the dramatic backdrop of the Dubai skyline, the JA Jebel Ali Golf Resort and an array of local fauna to look out upon. Arabian gazelle and peacocks are often seen roaming the rough, while a large lake

meanders through the middle of the course, coming into play on five of its holes.
Although it’s a nine-hole course, Williams said, which is ideal for those wanting to rejoin their

family after a two-hour golf break, there are several tee selections on each. That means that an 18-hole full round is well within reach. Electric carts are available, and walking is allowed. For those who just want to knock a few balls around, the course also boasts a large, floodlit driving range, practice putting green, and chipping and bunker area. “We also have an academy tee to the side of the range for private individual and group lessons,” Williams added. “A PGAqualified golf professional conducts the lessons.” For more golf learning there’s an indoor academy with the latest video analysis equipment.

When the game is over, though, the fun doesn’t end: JA Resorts & Hotels has been the official hotel sponsor and caterer for the famed Omega Dubai Desert Classic and the Dubai Ladies Masters since 1989. ART BUS The UAE’s shuttle to the arts, the ArtBus, provides guided tours of the city’s prominent galleries, studios, art centres, alternative art spaces and art fairs during Art Week in March. Set to become one of the city’s biggest tourist destinations, Dubai Parks & Resorts is a thrilling new theme park recently opened in October. successful motion picture studios, this park promises thrills and spills aplenty. Tour the Factory Zone, which hosts the Middle East’s largest Lego store, race Lego cars, build your own robotic creatures in the Imagination Zone, or ride the
exhilarating Dragon Coaster in the Lego Kingdoms. If you need to cool off, you can also hop over to Legoland Water Park next door. Here you can create your own Lego raft on the park’s lazy river, ride the waves in the giant wave pool and race down body slides. A TASTE OF THE TROPICS We caught up with Chef Francois Faure of JA’s Enchanted Island Resort for a tête-à-tête on the culinary scene in the Seychelles Stefan Muller and renowned chef Dominique Guebert. From there I worked in several other restaurants across Cape Town and also the Caribbean islands.

My mother and grandmother were both amazing cooks, and we also had a family friend who was a professional chef, Stephan Drees. Growing up, one of my favourite childhood memories has to be my mother’s Lancashire hot pot and my grandmothers Sunday roasts.
After the Caribbean, I joined the Regent Seven Seas cruises as a sous chef where I stayed on for several years. This was a major turning point for me as there were huge production lines and very strict rules and regulations. That being said it was an awesome experience. I returned to Cape Town to join another restaurant and 18 months later I got the role at JA Resorts & Hotels.

EGGNOG SHOOTERS INGREDIENTS • 4 egg yolks • 4 egg whites • 95gm sugar • 220ml fresh cream • 5ml vanilla beans • 5gm nutmeg powder • 100ml fresh cream for whipping
METHOD 1 Using the bowl of a stand mixer, beat the egg yolks until they lighten in colour. Gradually add in the sugar and continue to beat until it is completely dissolved. 2 In a medium saucepan, over high heat, combine the heavy cream and nutmeg and bring to a boil, stirring occasionally. Remove from the heat and gradually temper the hot mixture into the egg yolk and sugar mixture. 3 Return everything to the pot and cook until the mixture reaches 85c. Remove from the heat, pour into a medium mixing bowl and set in the refrigerator to chill. 4 In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running gradually, add the sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture. 5 To serve, dip shooter cups in vanilla extract followed by dipping each rim of cup into pistachio powder. Pour eggnog into each cup leaving 1inch space below the rim for whipped cream. Add a swirl of whipped cream on top of each shooter.
CHRISTMAS PUDDING INGREDIENTS MIX FRUIT • 150gm mix candied fruit • 150gm raisins • 150gm roughly chopped prunes • 100gm almond whole • 175gm red candied cherries • 2 medium cooking apples (peeled and cut into small cubs) • 2tb honey • 10ml vanilla extracts • Grated zest of 1 lemon and 1 orange
PUDDING MIX • 100gm plain flour • 125gm fresh sponge crumbs • 150gm dark brown sugar • 6gm ground cinnamon • 2gm ginger powder • 2gm ground cloves • 8gm baking powder • 4 large eggs
METHOD 1 First, prepare the fruit. In a large mixing bowl, combine the dried fruit, cherry, raisins, prunes, almonds and apple with the orange juice and zest. Cover with cling film and leave overnight 2 Cook the fruit mixture with butter in heavy bottom pan until translucent with a dark orange color. 3 To make the pudding, grease a 1.5-litre pudding basin, before scattering over the two tablespoons of sugar. In a large bowl, combine the dry ingredients flour, sponge crumbs, sugar, cloves powder, ginger powder, baking powder and a pinch of salt. Coarsely grate the butter, and fold into the fruit with the dry ingredients, followed by the eggs. 4 To cook the pudding, heat the oven to 135c. Grease a 1.2l pudding basin with butter. Stir in the mixture again and spoon in into the basin, leveling the top. Cover with the buttered greaseproof paper which contains a few small pleats, then cover the top of the basin with pleated foil and secure with string. 5 Place the pudding in a deep baking tray and pour boiling water into the tray to a depth of 2½cm. Cook for 1 to 2 hours.

CHRISTMAS YULE LOG INGREDIENTS FOR SPONGE • 250gm whole eggs • 250gm sugar • 180gm flour • 50gm coco powder • 5gm baking powder FOR ICING AND FILLING • 400gm dark chocolate • 50gm butter • 500gm cream
METHOD SPONGE
ICING AND FILLING
Heat oven to 180C. Grease and line a 60x40cm Swiss roll tin with baking parchment. Beat the eggs and sugar together with an electric whisk for about 8 minutes until thick and creamy. 2 Mix the flour, cocoa and baking powder together before sifting onto the egg mixture. Fold in very carefully and pour into the tin. Now tip the tin from side to side to spread the mixture into the corners and bake for 8 minutes. 3 Lay a sheet of baking parchment on the work surface. When the cake is ready, tip it onto the parchment, peel off the lining paper, then roll the cake up from its longest edge with the paper inside. Leave to cool.
1 Melt the butter and chocolate together in a bowl over a pan of hot water. Remove from the heat and stir in the cream. 2 Roll out the sponge and spread the cream over the top, sprinkle with crushed mints (if you want to use this ingredient) and carefully roll up again into a log. 3 Cut a thick diagonal slice from one end of the log. PROSCIUTTO PEAR, ROCKET AND BLUE CHEESE WITH CARAMELIZED WALNUTS INGREDIENTS • • • • • •
600gm prosciutto ham 400gm baby pear 200gm walnuts 400gm sugar for caramel 30gm thyme 300gm blue cheese [Stilton/Roquefort] • 100gm baby rocket leaves • 2 French baguettes
METHOD 1 Slice the prosciutto as fine as possible but leaving it long in length. 2 Remove the skin on the pear and cut in to wedges. Caramelize in a pan with a sprig of thyme along with the roasted walnuts. 3 Prepare small slices of blue cheese and finely shop the crispy baby rocket leaves.

CHESTNUT STUFFING (SERVES 12) INGREDIENTS • 500gm chestnut
• 20gm dried rosemary
• 200gm butter
• 20gm dried marjoram

• 1 litre crème
• 250gm minced celery
• 5 nos egg yolk
• 1kg dried white toast
• 5 nos egg white whipped hard
breadcrumbs • 20gm dried thyme • 20gm dried savory

1 Steam roast the turkey at 145c for 50 minutes to one hour. 2 Increase the temperature to 175c until crispy with a golden colour. The core of the turkey needs to reach 75c.
METHOD 1 Sauté all the vegetables, chestnuts and herbs with butter in a heavy bottom pan until cooked. 2 Add the orange juice and reduce, pour in the cream and reduce the fire. 3 Mix in the egg yolk and cook slowly on slow fire for a minute. 4 Soak in the dried breadcrumbs in the liquid mixture and turn off the fire. 5 Fold in the beaten egg white to the mixture and finish with the seasoning. 6 Transfer the mixture to baking dish and bake at 140c for 20 minutes.

Winter is a season of plenty in the Bio Garden at JA Jebel Ali Golf Resort. From October onwards, plants and trees bloom into life, providing hand-reared organic herbs and vegetables to the hotel’s kitchens. Mint, sage, parsley, chilli, eggplants, wheatgrass and strawberries are among the fresh ingredients that flourish here, nurtured by ecofriendly growing methods that preserve the natural flavour and nutritional value of the produce. Recently expanded, the Bio Garden has become a model for sustainable cooking practices at JA Hotels & Resorts. In addition to prioritising organic produce, the group uses humanely reared meat and poultry, while ingredients like Foie Gras, tuna and Caviar are purchased from suppliers with World Wildlife Fund Humanitarian Certification.

Looking after our guests is as essential to us as looking after the environment and especially the community they enter and experience,” says David Thomson, chief operating officer at JA Resorts & Hotels. Recently, the group has joined a recycling initiative that aims at reducing the impact of glass waste on Dubai’s landfill sites. Launched by TSSC Dubai, a company producing refrigeration units, the new pilot scheme hopes to bring down glass bottle bulk by 80 per cent and divert huge amounts of recyclable glass waste away from the city’s dump sites. JA Jebel Ali Golf Resort was one of 19 hotels in Dubai to be provided with a glass-crushing machine, which transforms waste bottles into cullets, a valuable raw material that can be sold and recycled into new glass products. JA Jebel Ali Golf Resort is now recycling four 140-litre bins of glass each week, which amounts to around 90 per cent of the hotel’s total glass consumption. “We were delighted when TSSC approached us with this scheme,” says Piyush Verma, cluster health and safety manager at JA Hotels & Resorts. “We are saving on disposal charges while a significant amount of landfill waste has been diverted from the Dubai Municipality dump yard.” “It’s a win-win situation for us, Dubai Municipality and the collection company,” Verma adds, pointing to other recycling schemes underway at JA Jebel Ali Golf Resort that have a similar structure. plastic, aluminium and kitchen waste oil collected by Union Paper mill for recycling, while metal waste is sold to local bidders for re-use. The next step is to start processing food waste with plans to purchase a food composting machine in the near future. Sustainable practise has been woven into daily life at JA Jebel Ali Golf Resort. Walking through the grounds, guests encounter its famous peacocks, but there are also camels, goats, a falcon, a turtle, horses and ducks. Information around the resort offers an insight into the bird and animal species present here, with eco-friendly activities at The Children’s Club targeting younger guests. Meanwhile, fishing remains a favourite pastime among guests at JA Jebel Ali Golf Resort, which operates a strict ‘catch and release’ policy across the portfolio. This is part of an increased drive to preserve the natural ecosystems surrounding JA Resorts & Hotels around the world. “At JA Resorts & Hotels we place a premium on the sustainability and enhancement of the environment we inhabit; taking care to foster cleanliness, awareness and care for the marina and beaches on our properties,” said Jorg Dittrich, Director Sports & Leisure at JA Resorts. RAFA CABRERA BELLO After finishing inside the top ten on 8-under par at the Rio Olympics and with the DP World Tour Championship on the horizon, we catch up with JA Resorts & Hotel’s ambassador and golfer, Spaniard Rafa Cabrera Bello, to see how the land lies ahead THIS PART OF THE WORLD IS NOT NEW TO YOU. YOU’VE WON THE OMEGA DUBAI DESERT CLASSIC IN 2012, YOU CAME SO CLOSE TO WINNING THE DP WORLD TOUR CHAMPIONSHIP IN 2014 – IS THE LAST QUARTER OF 2016 GOING TO BE YOUR VICTORY MOMENT? Dubai has been a region I really enjoy visiting over the years. I have developed many friendships and love playing on its wonderful golf courses. Playing in Dubai reminds me of where I grew up in the Canary Islands with palm trees and great weather. Winning the Dubai Desert Classic has been my highlight and losing the DP World Tour Championship in 2014 was my biggest disappointment – having led that great Championship by a few shots with a couple of holes to go. However, that is what makes sport so exciting, emotional and unpredictable. I will certainly be ready to give it my best to win the DP World Tour Championship this year.
CAN YOU TELL US ABOUT YOUR 2016 SEASON SO FAR? My season so far has been very special I came to Dubai having finished 2nd in
Qatar and was so close to winning the Dubai Desert Classic before Danny Willett holed a great putt on the final green! I then finished 11th in Cadillac World Golf Championship (WGC) in Miami; WGC Match Play Championship in Austin, Texas beating Rory McIIroy in the play-off for 3rd place; followed by 4th in Shell Houston and playing in my first Masters and finishing 17th. My targets for the rest of the season is to win and to improve my position on The Race To Dubai as I’m currently in fourth place. I will proudly represent Spain again in the World Cup in Melbourne following the DP World Cup, of course that would be a great championship to win front of all my good friends here and after coming so close in 2014.
HOW DO THE COURSES IN DUBAI DIFFER FROM THOSE ELSEWHERE? The quality golf courses and facilities in Dubai are world class. I train at the European Tour Performance Institute (ETPI) when I am in Dubai. I really enjoy a social game and practice with friends when I am in Dubai at JA Jebel Ali Golf Course.

SWINGING SUCCESS Meet the rising stars of sport and JA Resorts & Hotel’s sponsored players, Amy Boulden and Olivia Cowan AMY BOULDEN Following in her pro golfing father’s footsteps, Amy Boulden first teed off at the tender age of five, spending weekends and any free time on the greens honing her skills. Taking her passion for the sport to a professional level, Amy began playing in amateur competitions representing her home country of Wales and helping her team to win the Home Internationals. Making her debut as a pro in 2013, the young player enjoyed a winning streak in the UK and took home Rookie of the Year at the Ladies European Tour in 2014. Last year, Amy finished tenth on the Ladies European Tour Money List and finished seventh and was the leading European at the British Open.
OLIVIA COWAN Also born to a golf pro father, German player Olivia Cowan is one to watch on the global golf scene. The young professional first made her mark after securing fourth place in the individual tournament at the 2014 Youth Olympics in China, the best result for a European player. Most recently, Cowan won the order of merit on the 2015 LET Access Tour qualifying as an LET rookie for 2016. Known for her fearless approach to the greens, Cowan is no stranger to the courses in the UAE after competing in the Omega Dubai Ladies Masters last year. The talented young golfer is expected return for this year’s tournament.

Meet Risper Caroline Alieno Gwela, a Guest Service Agent at JA Oasis Beach Tower in Dubai After arriving in the UAE six years ago to join JA Resorts & Hotels in the housekeeping department, Kenyan-born Risper quickly rose up the ranks and now sits front of house at beachside stay, JA Oasis Beach Tower. Here, she reveals exactly what it takes to work in one of Dubai’s top hotels.
CAN YOU TELL US HOW YOU INITIALLY GOT THE JOB WITH JA RESORTS & HOTELS? I first started working at JA Oasis Beach Tower in 2010 as a housekeeper. I was looking for a job in Dubai and needed something quickly as I was on a visit visa. I got the role at JA Resorts & Hotels and worked in housekeeping for just over two years. From there, I moved to telephone operator before becoming a Guest Service Agent, a job I have been in for the last one-and-a-half years.
WHAT DOES YOUR ROLE WITHIN THE HOTEL ENTAIL? In the front office we are almost ambassadors of the hotel as we’re the very first people to meet and talk with our guests, communicating with them on behalf of the company.
HOW DO YOU USUALLY SPEND YOUR DAY AT WORK? The mornings are one of my favourite times of the day. I love what I do and my job is very
important to me so I’m always early to work. As soon as our guests arrive, I check them in at reception, acknowledge the bookings and take their details. Often I will escort the guests to their room and share information on the property and facilities.
AS FRONT OF HOUSE AT JA OASIS BEACH TOWER YOU MUST MEET LOTS OF DIFFERENT PEOPLE. WHO HAVE BEEN SOME OF THE MOST MEMORABLE GUESTS YOU’VE MET? I have met a lot of people from all walks of life! From when I was in housekeeping to now in my role on the front desk, I always make a good connection with our guests. They become members of my family while they are staying with us. I believe I’m there to represent the company which is why I always do everything I can to make sure our guests are happy during their stay.
WHERE ARE SOME OF YOUR FAVOURITE PLACES IN THE CITY TO RECOMMEND TO HOTEL GUESTS VISITING DUBAI? There are so many great places in the city. When I first meet our guests, I welcome them and then ask if it’s their first time to Dubai. Perhaps they’re celebrating an occasion and if so we will help make a reservation. It could be a trip to the Burj Khalifa – we actually have a shuttle bus to transport them to and from the hotel – there is also the option
of swimming with dolphins at Atlantis or a special dinner at the famous Burj Al Arab.
WHAT DOES IT MEAN TO YOU TO BE AWARDED THE ‘I MADE HEARTFELT HOSPITALITY AWARD’? Throughout my time at JA Resorts & Hotels, I always had a brilliant relationship with our guests, so it means a lot to me to be recognised with this award – it motivates me to continue offering the best service. I feel like the hotel has become a home for me now.
IN YOUR OPINION, WHAT DO YOU THINK SETS JA RESORTS & HOTELS APART FROM OTHER COMPANIES IN THE REGION? We are a casual luxury company, we appeal to everyone and we’re not restricted when it comes to talking with the guests. The first impression is always the last, so we are always professional, but at JA Resorts & Hotels we are also allowed to talk with the guests, mingle with them and ask questions
CAN YOU SHARE YOUR ADVICE FOR OTHERS HOPING TO LAND A JOB IN THE HOTEL/ HOSPITALITY INDUSTRY? Working in a hotel is a great opportunity, so my biggest piece of advice is to not let your service be exaggerated or forced, have a natural, genuine smile and always be you.
