Preheat your oven to 190°C/fan 170°C. Remove and de-bone the legs, stuff the neck and legs, season the turkey and cover with a layer of foil. Finally, push 8tsp of mincemeat under the skin. The sweet flavours merge and the suet bastes it.
With the turkey in the oven (allow 20 min per pound), braise the legs separately in fresh stock. Make sure you use all the gorgeous juices collecting in the pan to baste the bird regularly so it stays moist and tender. To make the turkey beautifully crispy, uncover for the last 30-40 mins and turn up to Gas 6/ 200°C/fan 190°C.

To test if your masterpiece is cooked, insert a skewer into the thickest part of the
bird. If the juices run clear, the turkey is done. Remove from the oven and tray, covering with foil and a tea towel for 45 mins-1hr. This makes the bird moist, tender and easy to carve.

Now make the perfect gravy. Drain off the fat from the tray, add onions, leeks, celery and carrots and cook
briefly on the hob. Add the wings, parson’s nose and drumstick tips and fry for a few more minutes. Pour in a generous amount of white wine and the resting juices from the turkey, add thyme and bay, and then reduce by half. Finally, add 500ml of stock, return to the boil, and simmer for 15 mins. Strain before serving.
