Lukas Runggaldier, gardenese di nascita, è un ex sportivo di livello mondiale. Quando era in attività, cercava un hobby per distrarsi dalle gare: così ha scoperto la fotografia. Era spesso in viaggio, si allenava anche nelle Dolomiti e, andando per monti e per valli, ne ha imparato a conoscere quasi ogni angolo. Lukas desidera condividere con la famiglia l’entusiasmo per l’arte di disegnare con la luce.
Lukas Runggaldier, gebürtiger Grödner, ist ein ehemaliger Weltklassesportler. Während seiner Zeit als aktiver Elitesportler war er auf der Suche nach einem Hobby, das ihn vom Wettkampfsport ablenkte. So hat er das Fotografieren für sich entdeckt. Da er als Sportler viel unterwegs war, unter anderem in unseren Dolomiten, kennt er nahezu jeden heimischen „Stock und Stein“. Lukas wünscht sich, diese Begeisterung für die Fotografie mit seiner Familie zu teilen.
Lukas Runggaldier was born in Val Gardena and is a former elite skier. During his racing days, he used to search for a hobby which could help him wind down from the highs of his races. Photography was the solution. He knows his home region like the back of his hand as he always travelled and trained in the Dolomites and “its mountains and valleys”. Lukas has a passion for ‘painting with light’ and wants to share it with his family.

Avvolte nella nebbia, svettanti nel cielo azzurro o coperte da nuvole tempestose – le Dolomiti sono uno spettacolo a cui nessun occhio riuscirà mai ad abituarsi. La roccia che la luce rende ogni volta meravigliosamente diversa, l’imponenza dei massicci e le formazioni frastagliate colpiscono l’immaginazione incutendo anche un po’ di timore. Al cospetto di questo Patrimonio naturale dell’Unesco si devono riformulare i concetti di spazio, tempo e dimensioni. Vicino a loro l’essere umano diventa piccolo e umile come una formica. In alcuni punti affiorano strati di roccia che raccontano la storia delle Dolomiti: 30 milioni di anni fa queste gigantesche masse di calcare emersero da un caldo mare tropicale e, da allora, sono i giganti dell’eternità.

THE DOLOMITES, A UNESCO WORLD HERITAGE SITE
The magic which the Dolomites cast is a lot simpler than you think. It’s a simple, yet effective spell, one you find yourself not resisting – the fact that seeing them never grows old. Be the first thing in the morning, when gossamer-thin fog wraps itself around their base or during the day, when you have to shield your eyes from their stark, sheer brilliance as the sun reflects off their white and grey walls offset by the clear, blue skies, or even when their summits are concealed behind the cover of an impenetrable wall of clouds. Nature’s chameleon, changing on a whim and according to the time of day and weather, the incomprehensible magnitude and scraggy summits evoke one word, and one word only: majestic. And, well, even slightly fearsome at times. Indeed, when contemplating this UNESCO World Heritage Site, you feel as though you’ve taken a step outside of time and space and entered a different world. People are at loss for words, shrink before their magnificence. We are but small, humble creature before their colossal silhouettes, like an ant lowering its head before a giant. A giant which, in some spots, is easy to read, revealing telltale signs about its origin. These limestone behemoths rose from a tropical sea 30 million years ago, old as time themselves. How can you not be humbled by the thought they will long outlive us, their beauty a thing of ethereal grace?

Le cappelle della Val Gardena accolgono i viandanti come piccoli rifugi, si ergono intrepide al centro del vasto paesaggio tra le pareti a picco delle montagne e sui prati alpini, e invitano a fare una sosta sul bordo dei sentieri. Questi punti di riferimento nel cuore della natura esprimono la tradizione religiosa della valle e dei suoi abitanti, la loro umiltà al cospetto della creazione e della bellezza che li circonda. Sono luoghi votati al silenzio e al raccoglimento, come la piccola Cappella di San Silvestro nella famosa Vallunga, dedicata al patrono del bestiame e decorata da affreschi risalenti a oltre 300 anni fa. Merita una visita anche la Cappella Santa Croce a Resciesa di Fuori, edificata nel 1755 a oltre 2.200 metri di altezza e restaurata nell’estate del 2012. A due passi dal cielo: questo potrebbe essere il motto delle cappelle di montagna, che a volte risalgono a centinaia di anni fa.

Wie kleine Zufluchtsorte begrüßen sie die Wanderer allenthalben, mitten in der weiten Landschaft stehen sie anmutig zwischen den steilen Bergwänden, auf Almwiesen und am Wegesrand laden die Kapellen von Gröden zum Verweilen ein. Als Anker mitten in der Natur verkörpern sie die religiöse Tradition des Tals und seiner Bewohner, ihre Demut vor der Schöpfung und der Schönheit, von der sie umgeben sind. Orte der Stille und Einkehr, wie die kleine Silvesterkapelle im berühmten Langental, die dem Schutzpatron des Viehs geweiht und von über 300 Jahre alten Fresken geschmückt ist. Auch die Heilig-Kreuz-Kapelle auf Außerraschötz auf über 2200 Metern Höhe ist einen Besuch wert, sie stammt von 1755. Im Sommer 2012 wurde sie restauriert. Dem Himmel ganz nah: So könnte das Motto der teils vor Jahrhunderten von Jahren erbauten Bergkapellen lauten.

These buildings pepper the rolling hills of Val Gardena against the backdrop of the mountains, dotting the pastures and paths in the valley. The ideal pitstops to take in the surrounding beauty. Humble buildings which embody the inhabitants’ beliefs, an homage to the beauty of nature. Here, peace, quiet and contemplation are key. Visit the San Silvestro chapel in the famous Vallunga, dedicated to the saint protector of cattle and decorated with 300-year-old frescoes, or the Cappella Santa Croce in Resciesa di Fuori (over 2,200 m asl), which was built in 1755 and renovated in the summer of 2012. Feel closer to the heavens – an apt description as the chapels skim the clouds and have withstood the test of time for centuries.

Più viaggio e più mi rendo conto che la Val Gardena è uno dei luoghi più belli al mondo”. Quando ritorna a casa, la pattinatrice si gode il tempo libero con la famiglia e gli amici. “Amo le nostre montagne e la natura. Mi piace pedalare sull’Alpe di Siusi e sciare sul Seceda, ma anche andare in slittino sul Resciesa o raggiungere a piedi il Sassopiatto. Mi manca solo una cosa: la vetta del Sassolungo, vorrei proprio arrivarci!”

“Il senso di libertà che provavo quando il movimento, la creatività, la musica e il gesto atletico diventavano tutt’uno. È come se il ghiaccio mi avesse scelto e non il contrario”.

Aber ihr Herz hängt an Gröden, wo sie aufgewachsen ist. „Heimat ist der Ort, zu dem man eine besondere Verbindung hat. Je mehr ich reise, desto mehr wird mir bewusst, dass Gröden einer der schönsten Orte der Welt ist.“ Wenn sie nachhause kommt, genießt sie die freie Zeit mit Familie und Freunden. „Ich liebe unsere Berge und die Natur. Sei es mit dem Fahrrad auf die Seiser Alm zu fahren und mit Skiern auf Seceda, mit dem Schlitten auf Raschötz oder zu Fuß bis auf den Plattkofel zu wandern. Eines fehlt mir: Die Langkofelspitze, da möchte ich gerne hin!“ Was zog sie aufs Eis? „Die Freiheit, die ich fühlte durch die Verbindung von Bewegung, Kreativität, Musik und Athletik. Es ist, als ob das Eis mich gewählt hat und nicht andersrum.“

Five-time European champion and World Champion Carolina Kostner travels a lot. Yet she never forgets her home: Val Gardena. “Home is where your heart is and, the more I travel, the more I realise Val Gardena is one of the most beautiful places in the world.” Friends and family are her priority when home.
“I love our mountains and exploring nature – cycling on the Seiser Alm or skiing on the Seceda, sleighing on the Resciesa or hiking to the Sassopiatto summit. I still haven’t hiked to the Sassolungo, but I’ll get there, eventually!” Why skating, out of all the sports the locals practice?
“I think skating chose me. But if I’d have to put it into words, I’d say I enjoy the freedom it gives me as I move and can tap into creativity and music, while also being demanding on my body.”

I vagoni panoramici della funicolare di Ortisei vi porteranno direttamente al Resciesa, un dorso di montagna che offre una delle più fantastiche viste sulle cime allineate all’orizzonte: Gruppo del Sella, Sassolungo e Sassopiatto, Sciliar, Marmolada e Gruppo delle Odle. In molte baite è possibile fare colazione con pane fresco, marmellate e torte casalinghe, speck, yogurt e formaggio di malga come vuole la tradizione contadina.

Chi fa un’escursione in primavera, scoprirà pascoli alpini ricoperti di fiori. Alcuni sono punteggiati dagli incantevoli crochi bianchi e lilla, che fanno a gara con il candore della neve sulle vette delle Dolomiti. Con un po’ di fortuna si potranno avvistare anche i camosci che, attirati dai teneri germogli dei rododendri, osano venire allo scoperto. Questa è anche la stagione dei mistici laghi di montagna come il Lech de Ciampedel formato dalle acque di fusione della neve. Per poche settimane all’anno mostra la sua luccicante superficie verde smeraldo nella Vallunga, prima di scomparire nuovamente.
ZARTE BLUMEN UND GEHEIMNISVOLLE SEEN Wer im Frühling eine Wanderung unternimmt, entdeckt mit Blütenteppichen bedeckte Almen. Manche sind übersäht von zauberhaft lila-weißen Krokussen, die mit den schneeweißen Gipfeln der Dolomiten wetteifern. Mit etwas Glück tauchen auch Gämse zwischen den Latschenkiefern auf, die von den jungen Trieben der Alpenrosen angelockt werden. Jetzt ist auch die Zeit der mystischen Bergseen, wie dem Schmelzwassersee Lech de Ciampedel. Für nur wenige Wochen entfaltet er im Langental sein schimmernd smaragdgrünes Antlitz, um bald darauf wieder zu verschwinden.
LEGENDARY LAKES AND THE SWEETEST OF FLOWERS Spring is in the air – but if you look around, you’ll find traces in other spots, too. A spring-time hike will surprise you for the stunning sight of meadows in bloom, the dainty flowers swaying in the wind to the sound of music only they can hear. Some meadows are awash with magical violet and white crocuses contending for attention with the snow-capped summits of the Dolomites. If you’re lucky enough, you may also catch a glimpse of chamois moving between the mountain pines, the young shoots of rhododendron tempting them out into the open. This is the ideal time to visit the legendary mountain lakes of Val Gardena, such as the famous meltwater Lech de Ciampedel. It forms in Vallunga and, after dazzling us with its emerald waters for a few weeks, it vanishes, leaving no trace in its wake.

UN MONDO RICCO DI VARIOPINTE TRADIZIONI
In Val Gardena modernità e tradizione non si pongono in contrasto: in un’area in cui i ladini crescono imparando tre lingue, apertura e spinta all’innovazione si toccano con mano. I gardenesi sono creativi e aperti al futuro, ma anche consapevoli della propria cultura e tradizione. Il ladino, che amano definire come la loro lingua segreta, è l’idioma più antico dell’area alpina: un lascito dell’età romana che è stato custodito fino ad oggi. In tutta la valle si tengono cortei in occasioni particolari e processioni per festività religiose importanti. In questi eventi, come la processione per il Corpus Domini, si indossano i costumi tradizionali.
Dalla cura per i dettagli fino alla complessa acconciatura, il costume tipico gardenese è assolutamente unico e straordinario anche oltre l’arco alpino. Tra le usanze tradizionali figura anche l’accensione del Fuoco del Sacro Cuore di Gesù sul Gruppo del Sella dopo Pentecoste.

Im Grödental sind Moderne und Tradition kein Widerspruch – die Ladiner wachsen dreisprachig auf, Aufbruch und Innovation sind spürbar. So kreativ und zukunftsgewandt, so traditions- und kulturbewusst geben sich die Grödner. Mit dem Ladinischen, das sie liebevoll ihre Geheimsprache nennen, sprechen sie die älteste Sprache des Alpenraums. Ein Erbe aus der Römerzeit, das bis heute bewahrt wird. Zu besonderen Anlässen und an hohen religiösen Festtagen finden im ganzen Tal Umzüge statt. Zu diesen Festen wie bei der großen Fronleichnamsprozession werden die traditionellen Trachten präsentiert. In ihrer Detailverliebtheit bis zum aufwendigen Kopfschmuck gilt die Grödner Tracht weit über den Alpenraum hinaus als außergewöhnlich. Zum Brauchtum gehört auch das Lodern des Herz-Jesu-Feuers am Sellastock nach Pfingsten.

A WORLD FULL OF COLOURUL TRADITIONS
Val Gardena is where traditions and innovation coexist in harmony. This becomes obvious when speaking with the gardenesi, known for their creativity, openness to the future and their attachment to local culture. They grow up trilingual and still speak Ladin, the Alps’ oldest language –their ‘secret language’, a heritage from the ancient Roman settlements. Processions abound in the valley on special occasions – the perfect excuse for locals to wear traditional attire. All traditional clothing may look the same, but Val Gardena’s is unique in the Alps due to its attention to detail and lavish headpiece. Another tradition is to light bonfires on the Sella group after Whit Sunday.
Caratteristici della Val Gardena sono anche i costumi tradizionali riccamente lavorati, che vengono tuttora indossati nelle principali festività religiose, ma anche nei cortei organizzati per gli ospiti della valle come nella grande festa “Val Gardena in costume” in agosto. Charakteristisch für Gröden sind auch die aufwendig gefertigten Trachten. Sie werden heute zu Prozessionen an hohen kirchlichen Feiertagen, aber auch bei Umzügen für die Gäste im Tal getragen, wie beim großen Fest „Gröden in Tracht“ im August.

Quando la natura si risveglia in Val Gardena, sui “Monti pallidi” esplode la fioritura di crochi, violette e soldanelle. Le temperature più miti riportano in attività molti animali, che lasciano le tane invernali per godersi i prati rigogliosi. Attratte dal sole, le più graziose abitanti delle Dolomiti escono dall’ombra delle rocce: sono le curiose marmotte dal tipico fischio. Si possono ammirare anche altri animali selvatici come caprioli e camosci con i loro piccoli, ma anche il gallo cedrone nero. Da tempo immemore le aquile reali volano intorno alle cime delle montagne: le regine delle Alpi meridionali sono il grande orgoglio della regione. In escursioni guidate gli esperti osservatori di animali selvatici vi mostreranno lo straordinario spettacolo di flora e fauna.

Abseits der Pisten stapft man mit Skiern und Fellen durch verschneite Wälder und unberührte Schneelandschaften und wird mit einzigartigen Ausblicken belohnt. An der Seite ortskundiger Bergführer erklimmt man steile Gipfel, um am Ende den Tag mit einer Abfahrt durch stäubenden Pulverschnee und glitzernden Firn zu krönen. Wer einmal mit Vollgas durch einen schneckenförmigen Schneetunnel rast, über Wellen gleitet, durch Steilkurven carvt und über Hindernisse wie ein Auto springt – der will nur eins: es sofort wieder tun. Un paesaggio fiabesco scorre davanti agli occhi e gli sci seguono la pista senza quasi far rumore: siamo in Vallunga, a Selva di Val Gardena, dove il Parco naturale Puez-Odle accoglie gli amanti dello sci di fondo in uno scenario naturale incontaminato e silenzioso. Al termine della Val Gardena, i romantici percorsi attraversano foreste innevate e ampi tratti pianeggianti. Le piste di fondo s’inoltrano per 18 km nella valle plasmata dai ghiacciai, in un selvaggio panorama di alta montagna. Anche l’Alpe di Siusi è famosa per i suoi oltre 40 km di eccellenti piste per lo sci di fondo. Chi si sente ben sicuro sugli sci, può allenarsi sul Monte Pana dove si disputa anche la Coppa Europea: lo attendono ripide salite e velocissime discese. Un consiglio da insider: provate la pista Val Scura lunga 7,5 km.

Und auch die Seiser Alm ist für ihre über 40 ausgezeichneten Loipenkilometer berühmt. Wer es besonders sportlich angehen will und schon sicher auf den schmalen Brettern steht, der trainiert auf dem Monte Pana, wo auch der Europacup ausgetragen wird: Hier warten steile Anstiege und rasante Abfahrten. Könner-Tipp: die 7,5 Kilometer lange Val Scura Loipe.

Here cross-country skiers enjoy unspoilt nature and peace and quiet. These romantic tracks cross snow-covered forests and spacious meadows – there are over 18 km in the valley crossing Ice Age glaciers and wild, alpine landscape. The Seiser Alm is also known for its 40 km of outstanding cross-country tracks. If you really want to go the extra mile and train, then head to Monte Pana, the stage of the European Cup. Le arrampicate sono riservate solo a professionisti o a intrepidi freeclimber? Assolutamente no! Certo, le gambe dovrebbero già essere ben allenate ma, sulle Dolomiti gardenesi, anche gli scalatori occasionali e gli escursionisti senza eccessive ambizioni possono divertirsi, arrivare in quota con stupefacente rapidità, vivere momenti da brivido sulla roccia e abbracciare con grande orgoglio la croce di vetta. Tutto ciò è possibile grazie alle numerose vie ferrate della Val Gardena, realizzate alla perfezione senza nulla perdere dell’effetto naturale. Indicano il percorso da seguire, sono sicure ma anche ricche di variazioni: per questo sono così affascinanti. Nella foto ci troviamo sul Sass Rigais che, con i suoi 3025 metri, è il monte più alto del gruppo Puez-Odle. Dopo circa due ore di arrampicata, da qui si apre una vista spettacolare sulle vette del Cir in lontananza.
HIMMLISCHE LICHTSPIELE
Klettern – das ist nur was für Profis oder todesmutige Freeclimber? Ganz und gar nicht: Gut zu Fuß sollte man schon sein, aber auch Gelegenheits-Bergsteiger und Wanderer mit gemäßigten Ambitionen kommen in den Grödner Dolomiten in den Genuss, erstaunlich schnell Höhe zu machen, Gänsehaut-Momente am Fels zu erleben und voller Stolz ein Gipfelkreuz zu umarmen. Grund dafür sind die zahlreichen, perfekt ausgebauten und dennoch naturbelassenen Klettersteige Grödens. Klettersteige haben den Reiz, dass die Wege vorgegeben, dadurch sicher sind und trotzdem abwechslungsreich. Auf dem Bild befinden wir uns auf dem höchsten Berg der Puez Geisler Gruppe auf 3025 Metern, dem Sass Rigais. Nach etwa zwei Stunden bietet sich von hier oben eine spektakuläre Sicht auf die Cirspitzen in der Ferne.

Thanks to the countless, perfectly equipped via ferratas. Safe and without damaging the mountains, to boot. They’re so enticing because they’re safe, easy to navigate, and no two are the same. Una cosa vi promettiamo: la regione offre un’amplissima gamma di sentieri che vale la pena di percorrere, anche dal punto di vista della sicurezza. Questo perché, nonostante i percorsi siano ben segnalati, spesso capita che i sentieri stretti conducano a punti panoramici in forte pendenza.
E di panorami mozzafiato ce ne sono molti in Val Gardena. Sia con bambini grandi che piccoli, le famiglie troveranno qui percorsi adatti a tutte le età e i livelli di fitness. Ogni percorso offre incontri unici con il magico paesaggio montano della Val Gardena e i suoi bizzarri picchi. E al momento giusto, una baita accogliente aspetta sempre di essere scoperta dagli escursionisti affamati.

Don’t worry – thanks to the different hiking paths across the region, you’ll still get your fill of stunning sights, while also guaranteeing your safety. Mit dem goldenen Licht legt sich eine magische Ruhe über die Dolomiten und ihre Täler. Eine warme Herzlichkeit, wie der Mantel aus Gelb, Orange und Rot, in den sich Wälder und Wiesen kleiden. Der Ansturm auf Hotspots und Wege hat sich gelegt, fast gehört einem die stille Bergwelt nun ganz allein. Hinzu kommt die Gemütlichkeit mit all ihren Düften, die sich in den Almhütten ausbreitet: Alles, was die Bauern über den Sommer angebaut und hergestellt haben, landet frisch zubereitet auf den Tellern. Dazu gibt’s ein Glas vom Nuie, dem jungen Wein. Zin Wouhl sein!

The honey-dewed light of autumn casts everything in a magical blanket of peace and quiet in the Dolomites and its valleys. A warm embrace, mirroring the warmth of the yellow, orange, and red foliage of the trees and meadows. The assault on tourist highlights and paths has stopped – if you hike during this period, you’ll feel as though the mountains are your own little secret, untouched by anyone else. A sense of serenity is compounded by the autumnal scents which waft from the mountain huts – everything the farmers have planted and produced during the summer can now be served in the form of mouthwatering meals. And to round off this incredible experience, tradition calls for a toast with a glass of new wine, what the locals call nuie. Cheers!

LE VETTE DELLE DELIZIE
Sotto il sole d’autunno, i giganti dai colori delicati si trasformano in un rosso mare di calcare fiammeggiante e le pallide pareti rocciose si tingono improvvisamente di rosso carminio. Le Dolomiti sembrano bruciare dall’interno. Eppure non è solo lo spettacolo naturale delle Burning Dolomites ad attrarre viaggiatori e abitanti del luogo come un incantesimo. È il momento in cui nei menu delle cucine ladine arrivano i prodotti freschi locali. A dire il vero, per tutto l’anno i ladini non si fanno mancare nulla dei grandi piaceri culinari, ma è in autunno che arriva sulla tavola tutta l’abbondanza dell’ultimo raccolto: ad es. mele, castagne e funghi profumati. Sarà forse per l’aria pura e aromatica, ma qui i crafuncins (ravioli a mezzaluna), le sfoglie di patate con erbe aromatiche e la frittata dolce di mele hanno un sapore assolutamente unico.

In der Herbstsonne verwandeln sich die sanften Riesen in ein rotes Meer aus glühendem Kalkstein, bleiche Felswände leuchten plötzlich kaminrot. Die Dolomiten scheinen von innen heraus zu brennen. Aber nicht nur das Naturspektakel der Burning Dolomites zieht Reisende wie Einheimische in ihren Bann. In den ladinischen Küchen kommen jetzt die frischen lokalen Produkte auf die Speisekarte. Zwar sparen die Ladiner das ganze Jahr über nicht an kulinarischen Hochgenüssen, aber der Herbst tischt mit aromatischen Kastanien, Pilzen und Äpfeln die ganze Fülle der vergangenen Ernte auf. Vielleicht liegt es an der klaren, würzigen Luft, dass die Crafuncins (Schlutzkrapfen), Kartoffelblattlen mit Kraut und der Apfelschmarrn so einmalig schmecken.
THE PEAK OF CULINARY DELIGHTS
The Pale Mountains transform under the autumnal sun into a sea of fiery limestone, their white and grey façade lighting up the valley in red hues. The Burning Dolomites: a sight to behold for tourists and locals. And what about the local food? The season enhances the meals, the flavours an explosion of umami, with chestnuts, mushrooms, apples and the Ladin harvest taking centre stage. The crisp, bracing mountain air is also a fundamental ingredient. Why else would the crafuncins (ravioli), herb-flavoured potato pasties or a deconstructed apple pancake (it tastes better than it sounds, don’t worry!) taste so good?

ORZOTTO, MELA E SPECK
INGREDIENTI:
150 g orzo
500 ml brodo vegetale o di carne
100 ml succo di mela
10 g burro
50 g Trentingrana

50 g panna con siero di latte
70 g speck
1/2 mela altoatesina
PREPARAZIONE:
Tostare l’orzo assieme allo speck come in un risotto, sfumare con succo di mela, coprire a filo con il brodo e cuocere. Aggiungere le mele tagliate a dadini, panna con siero di latte, burro e formaggio di malga, aromatizzare con caffè di topinambur e polvere di speck.

500 ml Gemüse- oder Fleischbrühe
100 ml Apfelsaft
10 g Butter
50 g Trentingrana
50 g Molke
70 g Speck 1/2 Südtiroler Apfel
ZUBEREITUNG:
Die Gerste wie ein Risotto zusammen mit dem Speck rösten, mit Apfelsaft ablöschen, bündig mit Brühe bedecken und kochen. Die gewürfelten Äpfel, Sahne mit Molke, Butter und Malga-Käse dazugeben, mit Topinambur-Kaffee und Speckpulver würzen.

INGREDIENTS:
150 g barley
500 ml vegetable or meat stock
100 ml apple juice
10 g butter
50 g Trentingrana
50 g cream with whey
70 g Speck
1/2 South Tyrolean apple
INSTRUCTIONS:
Roast the barley as though you were preparing a risotto together with the Speck. Then deglaze with apple juice, cover with the stock and cook. Add the diced apples, cream with whey, mountain butter and cheese, and flavour with Jerusalem artichoke coffee and Speck powder.

“UNA SERATA DA NOI DEVE ESSERE UN’ESPERIENZA PARTICOLARE”
Dopo diverse tappe come capocuoco, lo chef italiano ha trovato il suo luogo di elezione nel Costamula: qui può esprimere pienamente la sua creatività. Da due anni Noce è il responsabile dell’alta cucina in questo locale. “Per il menu utilizzo esclusivamente prodotti che provengono dalle montagne: questa è la nostra filosofia”. Ciò significa anche che non è previsto l’uso di olio di oliva, limoni o cioccolato. Tanti piatti nascono da pochi ingredienti. È lo chef a realizzare direttamente speck, salumi e prosciutto e a stagionare il formaggio in una cantina a volta in cui sporge una parete di roccia. Mentre a ora di pranzo l’atmosfera in terrazza è piuttosto rilassata, di sera uno dei rifugi più antichi della Val Gardena si trasforma in un ristorante gourmet che punta su variazioni ed effetti sorpresa.

Nach verschiedenen Stationen als Chefkoch hat der Italiener in der Costamula seinen Bestimmungsort gefunden: Hier kann er seine Kreativität voll entfalten. Seit zwei Jahren zeichnet Noce für die gehobene Küche hier verantwortlich. „Für unser Menü verwende ich ausschließlich Produkte, die aus den Bergen kommen, das ist unsere Philosophie“. Das bedeutet auch, es gibt kein Olivenöl, keine Zitronen oder Schokolade. Viele Gerichte entstehen mit wenigen Zutaten. Dafür stellt er seinen Speck, Salami und Schinken selbst her, und im Gewölbekeller, in den eine Felswand hineinragt, reift der Käse.
Während es mittags auf der Terrasse lockerer zugeht, verwandelt sich eine der ältesten Hütten Grödens abends in ein Edelrestaurant, das auf Überraschung und Abwechslung setzt. „Ein Abend bei uns soll ein besonderes Erlebnis sein.“

After years working as a chef in different establishments, Matteo Noce has found his home at the Costamula, where he is allowed to tap into his wellspring of creativity. Over the last two years, this Italian chef has overseen the gourmet cuisine of the venue.
“Our philosophy is to only use ingredients we can source from the mountains.” Yes, that means that the chef doesn’t use olive oil, lemons or chocolate, and many of his dishes contain just a few ingredients. He makes his own Speck, sausages, and ham, and he places the cheese to mature in the vaulted cellar featuring a rock face. Enjoy a leisurely lunch on the terrace of one of Val Gardena’s oldest huts. In the evening, it transforms into a fine dining venue which never fails to surprise and where variety takes centre stage. “An evening with us? An experience you’ll never forget.”

Il nome della famiglia Wolkenstein e del suo castello, da cui deriva il toponimo tedesco, suona come una promessa: a Selva il cielo è così vicino che la roccia (Stein) si erge tra le nuvole (Wolken). La località più alta della Val Gardena è situata alle pendici del Gruppo del Sella e del Sassolungo a una quota di oltre 1500 metri. Da qui parte la famosa “Sellaronda”, un circuito sciistico che permette di scoprire l’intero massiccio del Sella in una giornata. Grazie ai molti impianti di risalita, Selva Val Gardena costituisce un crocevia per i comprensori sciistici della valle. Quando la neve si scioglie in primavera, la località si trasforma in un paradiso naturale per passeggiate, escursioni e giri in mountain-bike.

Der Name klingt wie ein Versprechen – in Wolkenstein ist der Himmel sehr nah. Der höchst gelegene Ort Grödens liegt zu Füßen der Sellagruppe und des Langkofels auf über 1500 Metern. Hier startet die berühmte „Sellaronda“, eine Skitour, auf der sich das gesamte Sellamassiv an einem Tag umfahren lässt. Mit seinen vielen Liftanlagen bildet Wolkenstein einen Knotenpunkt für die Skigebiete des Tals. Wenn der Schnee im Frühjahr schmilzt, verwandelt sich der Ort in ein Naturparadies für Spaziergänger, Wanderer und Mountainbiker.

“La montagna ci chiama!”, esclamava mio padre quando apriva le tende e svegliava noi bambini al mattino presto per portarci a sciare. Poi abbassava il tono e sussurrava il mio nome, allungando le vocali in modo innaturale. Era quello l’ultimo momento prima di saltare giù dal letto. In Val Gardena ho dovuto ricominciare a pensare che qui, ogni mattina, ricevo il saluto del Sassolungo. Può darsi che, come nelle favole, alcune donne si siano realmente innamorate dei giganti di pietra. Le capisco bene. Del resto, la “Montagna Lunga” è sempre ai primi posti nelle classifiche dei picchi più belli in assoluto. Ed è anche in buona compagnia – S. Cristina, Ortisei e Selva Val Gardena sono circondate da famose “rock star” – dalle vette del Seceda fino alle ripide guglie del Massiccio del Sella. Mistiche formazioni rocciose, che assumono un aspetto ogni volta diverso a seconda della luce: per esempio al mattino, quando si colorano di arancio e di rosso come fiamme ardenti. Per fortuna che nel mio cuore c’è posto per più di una montagna, altrimenti non saprei davvero quale scegliere.

„Der Berg ruft!“, tönte mein Vater, wenn er uns Kinder früher zum Skifahren weckte. Er verstellte in der nächsten Weckstufe die Stimme und raunte meinen Namen, indem er die Vokale unnatürlich lang zog. Spätestens jetzt sprang ich aus den Federn. Im Grödental musste ich wieder daran denken, denn hier begrüßt mich jeden Morgen der Langkofel. Es soll ja Frauen geben, die sich in den steinernen Riesen verliebt haben. Ich kann sie gut verstehen. Schließlich belegt der „Lange Berg“ in den Rankings der schönsten Berge immer wieder Spitzenplätze. Doch er ist nicht allein – um St. Christina, St. Ulrich und Wolkenstein versammeln sich gleich mehrere „Rock Stars“. Mystische Berggestalten, die bei jedem Licht anders aussehen. Am Nachmittag glühen sie oft orangerot. Zum Glück hat in meinem Herzen nicht nur ein Berg Platz, denn ich könnte mich nur schwer für einen entscheiden.

My father would wake us up by saying: “The mountains are calling!” Our personal ski alarm. As my siblings and I mumbled, he’d whisper my name and draw out the vowels until I shook from my slumber. The view of Val Gardena’s Sassolungo as I awake rekindled this memory. Legend says some women fell in love with this stone giant and who can blame them? It’s always voted one of most beautiful mountains. There are also other ‘rock stars’ known for their beauty around S. Cristina, Ortisei, and Selva Val Gardena – from the Seceda peaks to the Sella massif’s steep towers. Their silhouettes never look the same as, for example, they often come to life in an orangey-red hue in the afternoon. I’d be hard pushed to choose a favourite. Luckily enough, there’s space for more than one in my heart.
