Mountain Xpress food editor Hanna Rachel Raskin has a voracious appetite and a keen palate. It’s her job to sample the best eats and drinks in the Asheville area; for this guide, we asked her to pick 20 essential local dishes and 20 don’t-miss drinks. “This isn’t an attempt to rank the best bars and restaurants in Asheville; rather, these are the places that have concocted the drinks and dishes that make us say ‘more,’” Raskin explains. “Also, please note that we opted not to list any establishment twice, so that restaurants singled out for their eats were not eligible to be listed for their drinks — and vice versa. Finally, creativity counted: Food and beverages that reflect the region’s unique culinary sensibilities were given greater consideration.”

NINE MILE

This snug Caribbean pasta joint has quickly emerged as a favorite neighborhood eatery — even among folks who don’t live anywhere near the Montford neighborhood. The warm, laid-back vibe that emanates from the bar (well-stocked with local brews) and the stereo system (always tuned to reggae), doesn’t penetrate the kitchen, which evinces utter seriousness in its commitment to fresh, precisely rendered and consistently delicious noodle dishes. Insiders swear by the Concrete Jungle (pictured above), a clean-tasting arrangement of shellfish, squash and zesty fireroasted tomatoes, sauced with garlic butter and served over linguine.

Asheville has become a veritable noodle battleground, with heavy hitters like Doc Chey’s Noodle House and The Noodle Shop throwing fearsome lo mein jabs and pad thai uppercuts. Some of the city’s best noodle dishes belong to Heiwa Shokudo, the funky little Japanese joint on Lexington Avenue, where the tea is green and the rice is brown. The fish-rich Medicine Man noodle soup, featuring a sumptuous crab and sweet corn combo, is indeed just what the doctor ordered.

12 BONES SMOKEHOUSE

An enterprising food historian might make the argument that 12 Bones Smokehouse’s blueberry chipotle ribs represent the pinnacle of Appalachian cuisine, an edible meet-up of the mountains’ most important food groups: sweet bramble berries and swine. (The slightly bohemian chipotle is, of course, a distinctly Asheville addition.) Still, fans of the dish — including Good Morning America, which anointed it the nation’s best bite — don’t need to get too scholastic to savor the intensely flavorful pork, which is shot through with just the right amount of smoke.

PA PA S A N D B E E R

Western North Carolina’s ever-expanding bastion of Cali/Mex cuisine, Papas and Beer, now boasts two locations in Buncombe County. On a menu stacked with stand-outs, the shrimp Caesar salad, which we sampled at the restaurant’s Brevard Road location in Asheville, is a marvel. While the salad itself, made with exceptionally fresh romaine and a tangy dressing that’s more Green Goddess than Caesar, is terrific, it’s the plump, garlicky grilled shrimp that elevate this dish to must-have status.

R O S E T TA’ S K I T C H E N

Since its opening, this comfy hippie nook has been putting the id back in vegetarianism, ushering meat-free souls toward a more indulgent diet. If a commune opened a sports bar, its menu would probably look something like Rosetta’s: Think all-vegan chili-cheese fries, tempeh wings and veggie burgers topped with avocado and smeared with veganaise. Perhaps the best wholesome-yet-fattening concoction is The Mountain (pictured above), a bowlful of brown basmati rice, fried tempeh and toothsome sautéed kale, all slathered with a zippy tahini barbecue sauce.

FIG BISTRO

Yes, Fig is a French restaurant. But what could be more Gallic, more defiant, more bof than excelling at a dish associated with Italy? The super-sophisticated eatery, which has also assembled one of Asheville’s very best wine lists, creates a remarkable farfalle Bolognese, a heap of pinched noodles dressed with a rich meat sauce that somehow manages to be both robust and delicate. It’s comfort food for the culinary-savvy set, equally pleasing to Italian and French palates.

Going local’s easy when you’re serving salads. The task becomes a mite harder when you’re practicing a Mesoamerican craft and using ingredients grown south of the equator. But the talented folks at French Broad, a veritable studio for high-end chocolate art, have earned their locavore badges, using locally sourced herbs, eggs, milk and honey to gussy up their ridiculously decadent truffles and pastries. The delectably tart local strawberry balsamic truffle (pictured above), dusted with cocoa powder, is an especially lovely Appalachians-meets-Andes treat.

REZAZ ENOTECA

Before pomegranate was a dish-soap scent, jelly-bean flavor and vodka variety, it was a proud Mediterranean fruit, so cherished by Fertile Crescent dwellers that it shows up in no fewer than 19 biblical verses. Rezaz Enoteca, the modest off-shoot of the giddily bold Rezaz, has restored pomegranates to their proper place with its irresistible walnut pomegranate dip, a sweet/savory spread with the consistency of peanut butter. Many scholars suspect the forbidden fruit was a pomegranate, and no wonder: There’s no telling what Eve might have sacrificed for this dish.

T O M AT O J A M C A F É

More restaurants should serve egg salad. But perhaps Asheville’s eateries have ceded the genre to Tomato Jam Café, the Biltmore Avenue luncheonette that adeptly conveys a vintage Southern charm without skittering into cutesy. Tomato Jam makes a marvelous egg salad that avoids the usual egg-salad traps: It’s fresh, flavorful and — thanks to the inclusion of good firm organic eggs — a model of egg-salad texture. For total eggsalad euphoria, follow the menu’s advice and add a few slices of applesmoked bacon.

BOUCHON

In an economy in which the term “bogo” has entered the national lexicon (that’s “buy one, get one,” Mr. Moneybags), Bouchon’s thrice-weekly mussels deal deserves commendation for pricing alone. But the all-youcan-eat bonanza, including a generous serving of fries — a steal at $14 — is further distinguished by quality: Although purists stick to white wine and garlic, there’s something delightfully Asheville about the sassy Parisian-Born Redneck preparation, featuring mussels steamed in Pabst Blue Ribbon beer with Dijon mustard and butter.

Although Asheville has been graced by two new steakhouses in the last year, it’s still not the sort of town where big business decisions get made over porterhouses. So it seems appropriate that one of the region’s best carnivorous choices is found at an unassuming Central American joint with the unbeatable arsenal of reliably good food, fair prices and housemade sangria. Tomato Cocina’s protein-packed bandeja paisa plate showcases the eatery’s signature grilled skirt steak, lovingly seasoned with oil and pepper.

SUGAR BEET CAFÉ

Such is the sad state of eggs benedict (pictured above) that its greasy fast-food spawn, the ubiquitous Egg McMuffin, is actually an improvement on most of the goopy, flaccid versions of the traditional rich man’s dish. But Sugar Beet Café, the well-scrubbed diner that recently took up residence in Fairview’s former Huddle House, does right by benedict, carefully stacking lightly sautéed spinach, thick slices of fresh tomatoes, avocado and two flawlessly cooked organic eggs upon a toasted English muffin, then adding a quick brushstroke of lemony hollandaise. Somewhere, Mr. Benedict is smiling.

CELEBRITY’S HOT DOGS

The rest of the country has caught on to NASCAR and bluegrass music, but slaw dogs apparently remain a mystery beyond the mountains. A scrawny dog stretched out on a plain white bun? Topped with beanless chili sauce and creamy coleslaw? Yup. And no one around here does it better than Celebrity’s, a workaday spot in West Asheville where the salty pork-and-beef links, lightly spiced chili and perfectly textured coleslaw harmonize in a gorgeous ode to Appalachian lunchtime traditions.

CIRCLE IN THE SQUARE

There’s often a notice pinned to Circle in the Square’s bulletin board inviting transplanted New Yorkers to the eatery for a weekly meeting. And indeed, anyone whose wallet has ever held a MetroCard is unlikely to be able to resist the lure of the no-frills pizza joint, where the pie is a doppelganger for the thin-crust slices served up at storefronts across the Big Apple, right down to the impeccably seasoned tomato sauce. There’s no need to fuss with toppings: The slightly charred, bubbly cheese pizza (pictured above) is perfect on its own.

MO DADDY’S

Patrons who go to Mo Daddy’s for the top-notch music should take care not to miss the club’s real draw: The sliders. Mini-burgers were everywhere in the waning years of the Bush administration, but few restaurants did as much to justify the trend as Mo Daddy’s, which proved that really good food comes in every size. With its brilliantly juicy, fat-endowed sliders — crowned with carmelized onions and blanketed with locally made Lusty Monk mustard — Mo Daddy’s joined the growing ranks of Asheville bars where edible output doesn’t belong in the “grub” category.

CUCINA 24

Some of the winter-weary among us watch for robins, sure that their return heralds the coming of spring. The more culinary-inclined keep their eyes on the seasonal menu at Cucina 24, where the annual arrival of cacio e pepe means a thaw is close at hand. The devastatingly good dish, featuring ribbons of house-made pasta flecked with pepper and tossed with an elegant black-truffle butter, is — like every dish on the urbane eatery’s smartly edited menu — understated but powerful. Winter? What winter?

U LT I M AT E I C E C R E A M C O .

It’s a testament to the exceptionalism of Ultimate Ice Cream that its fans’ favorite flavor is usually whichever one was most recently invented. At press time, Ultimate had just unveiled its bacon maplesugar ice cream, a dairy expression of such guilty pleasures as eating the rind off a glazed ham or letting pancake syrup pool around your breakfast bacon. Made with tidbits of candied bacon, the rich and salty ice cream is phenomenal.

THE MARKET PLACE

No offense to The Market Place’s enormously talented kitchen crew, but the cheese plate remains one of the dishes to order at this Asheville institution, which embraced local foods and seasonality decades before every amateur with an apron jumped on the bandwagon. Many chefs can cook, but not every chef can curate: The high-quality cheeses chosen for The Market Place’s plate pay homage to the restaurant’s underlying French sensibilities and honor the region’s burgeoning goat-cheese scene. Gorgeously garnished with fresh herbs and fruits, this plate’s too good to save for dessert.

SUNNY POINT CAFÉ

Let’s address the semantic issue first: There’s nothing recognizably rancheros about this popular West Asheville eatery’s huevos. According to the definitive Food Lover’s Companion, huevos rancheros consists of “fried corn tortillas topped with fried eggs” and smothered with warm salsa. But when you’re this good — and have one of the city’s best brunch patios — you get to improvise: Sunny Point’s huevos rancheros is an immensely satisfying plate of fat black-bean cakes, chorizo sausage, tangy feta, roasted tomatillo sauce and red-potato wedges, finished with two eggs and crema.

THE ADMIRAL

The Admiral, west Asheville’s dimly lit hipster gastropub, doesn’t seek glory — which hasn’t stopped fans from reaching for a laurel crown. “Have you been there?” they ask. “Everything is so good.” And, indeed, The Admiral has made a point of offering what seems like everything on its ever-changing menu, from General Tso’s livers to wild-boar bangers and mash. A lusciously tender chicken-fried deer, which appeared earlier this year, was an amazing feat of meatiness and flavor. While that hunting-camp favorite may have disappeared for the time being, the devotees are right: It’s all good.

MELA

This popular Lexington Avenue eatery, distinguished by its gorgeous wood-paneled décor and a wide selection of well-executed pan-Indian favorites, reminds cocktailing patrons of India’s coastline with its beachy Mango Coconut Flip (pictured above), a Creamsicle-colored tropical drink that gently crushes the heat of even the spiciest vindaloo. While many stateside Indian restaurants lay off the alcohol — many Muslims and Hindus abstain from drinking, and alcohol consumption is officially banned throughout the country — Mela’s attitude toward drink is terrifically playful, with an adulterated lassi rounding out the bar menu.

LIMONES

No term is bandied about bars more promiscuously than “martini,” which has lately been used to describe anything served in a wide-mouthed glass. The word “margarita” is often similarly misapplied, but Limones, the supremely sophisticated Cali/Mex eatery on Eagle Street, is singlehandedly upholding the classic cocktail’s integrity with a terrific menu of tequila, lime juice and Triple Sec-based drinks. Limones takes only the most welcome liberties with its traditional recipe: Try the refreshingly sweet and spicy Margarita Caliente, emboldened by orange juice and wild-berry habanero hot sauce.

CAFÉ AZALEA

Oh, poor rhubarb. No matter the occasion, the plant’s almost always paired with strawberries. Fortunately, the folks at east Asheville’s locavore haunt, Café Azalea, have found rhubarb a new partner, brilliantly matching its fresh juices with bourbon. The Rhubarb Sour is a brashly newfangled beverage with thoroughly old-fashioned roots, featuring the pie

plant in one of the original cocktail preparations described by pioneering mixologist Jerry Thomas back in 1862. The result is a timeless liquid gem: crisp, tart, springy and — yes — pink.

THE ROCKET CLUB

In a clear bid to make its west Asheville neighbors rethink their “only on Sunday mornings” Bloody Mary policies, The Rocket Club, a p.m.-only establishment, continues to mix what might be the region’s best Bloody Mary, featuring no fewer than 14 different ingredients, including Guinness, red wine and Jaegermeister. The recipe — developed when the bartender worked ritzy brunches in Chicago and realized he was doomed to endless mornings of making really awful Bloody Marys or making great ones — is so popular that the bar routinely runs out of tomato juice.

NEVER BLUE

There’s something charmingly chaotic about Never Blue, Hendersonville’s New World tapas joint, where the manic bar menu leaps from hysteria (describing a vodka cocktail made with Hypnotiq liqueur, the copy gushes in all-caps: “STIR IT UP ... IT TURNS GREEN!”) to hypersexuality (the “teacher’s pet martini” features “apple vodka, luscious red apple liqueur and three whacks with the ruler”). But no drink better captures the eatery’s unshakeable sunniness than the Hipshaker, a downright fun combo of rum, house-made passion-fruit sour mix, organic mint, lime juice and soda.

P I S G A H B R E W I N G C O M PA N Y

The Pisgah Pale Ale wears its certified-organic cred proudly, with every pint of the lightly filtered stuff swimming with feathery yeast residue. Like most of the popular Black Mountain brewery’s handcrafted beers, the signature pale is smooth, light and easy to drink. And in keeping with its green-leaning genesis, it has a slightly grassy, citrus flavor. It’s newly available in 22-ounce bottles, but the best way to enjoy a Pisgah pale is at the brewery’s taproom, which has become a rec room for local musicians and chefs.

FRANKIE BONES

It would be a break-the-bartender’s-kneecaps-level shame if this artfully retro south Asheville spaghetteria, which keeps Frank Sinatra on the stereo and Dean Martin’s picture on the wall, couldn’t make a mean martini. Fortunately for Frankie Bones’ bartenders and their many patrons, they’ve mastered the right gin-to-vermouth ratio (meaning the vermouth isn’t just a bit player) — and have the city’s best house-made blue-cheese olives on hand for garnish. There’s no better starter for a rare-steak dinner.

JACK OF THE WOOD

There are at least half-a-dozen ales on Jack of the Wood’s changing taps, but the beloved Celtic-style brewpub excels with its — appropriately enough — Irish Stout (pictured above), a toasty, light-bodied beer with a lovely coffee flavor. Served with a nitrogen-borne creamy head, a pint of the signature stout is the liquid last word in the perennial discussion of the impossibility of finding good Guinness outside Ireland: Lads and lassies, it’s time to stop fretting and drink the Green Man.

CORNER KITCHEN

A patriotic Fannie Farmer streak runs through this Biltmore Village bistro’s menu, which variously features such classically domestic dishes as corn-fried oysters and sweet-potato hash. Corner Kitchen’s bar, which meticulously squeezes its own fresh juices, takes a similarly American tack with its exceptional bourbon-and-ginger cocktail, utterly elevating the typical quick-mix drink. The house-made ginger ale, sturdy and peppery, provides the perfect counterbalance to the smooth corn whiskey and tickles the drinker’s nose (that’s a good thing).

USUAL SUSPECTS

The temperature in Asheville generally hovers right around freezing throughout January, which isn’t exactly daiquiri weather. Thankfully, north Asheville’s still-trendy Usual Suspects — which hasn’t allowed its popularity to trip up its commitment to serving high-quality food and drink — has devised an elegant antidote to the cold: Suspect Cider, a lightly spiced house-made cider spiked with bourbon, is served hot enough to combat the chilliest midwinter days. A second cup makes even snow seem bearable.

Here’s an existential question for west Asheville folks: If Lucky Otter served its giant, $3 margaritas in a dark and lonely room, would they still taste as good? Surely half the fun of drinking margaritas at this deliciously screwy burrito joint, where Thai peanut sauce and mashed wasabi sweet potatoes are considered standard fillings, is claiming a seat on the raffishly sociable patio fronting Haywood Road. It’s the perfect setting for darn-near-perfect margaritas, made with tangy key-lime juice. So what’s the answer to that cocktail-in-a-closet quandary? Put down one unequivocal yes.

Bartending is close kin to baking, with the best barkeeps working as precisely and carefully as someone minding a soufflé. So it’s no surprise that one of the region’s most rigorous cocktail menus was assembled by Nova, the new downtown spot dreamed up by Eric Backer — who made great artisanal bread the centerpiece of his first edible venture. The bar gets a back pat for making its own tonics and flavored syrups, which surface in such classic drinks as the delectable Aviation, a lavender-hued gin concoction that was the toast of the 1930s.

The golem that got away is a recurring theme in Jewish folklore, which warns of the danger an overgrown monster like the golem can pose. The Wedge’s Golem (pictured above), a Belgian-style golden ale, has a similarly dastardly way of sneaking up on folks, jackhammering drinkers with its steep 9 percent alcohol-by-volume. But, taken slow, the hoppy Golem isn’t the least bit threatening: It’s an eminently drinkable, slightly malty beer that makes for a lovely summer sipper.

Suppose your taste buds felt like slumming it. Burnt out on sophistication and balance, say the little receptors started craving something sweet and silly. Your best course of action is to march those overtaxed buds to Carmel’s, the trés moderne downtown eatery, for a majestically goofy Blueberry Mojito. The very pretty drink looks like a state-fair-bound jam jar and tastes like a grape lollipop, because cocktailing shouldn’t always challenge the cranium.

THE LOBSTER TRAP

When longtime bartender Billy Klingel built a brewery in the basement of this popular downtown seafood restaurant, his Moonstone Oyster Stout — a deep, dark brew that marinates with well-scrubbed mollusks — grabbed all the headlines. But the real showstopper is the crisp, subtly citrusy IPA: so delicious it could drive most IPA makers to cry uncle. The amber-colored beer, which has just a hint of honey, is a perfect foil for lobster rolls, steamed shrimp and oysters.

Beer aficionados may wail about the mild flavors of the Shiva IPA, but they’re missing the point: The Shiva isn’t meant to stand alone. It’s the perfect pizza beer, with just enough spiciness to enliven a generous helping of melted mozzarella and the right amount of carbonation to balance the heft of Asheville Brewing’s exemplary pies. The smooth, light-bodied Shiva is sold by the bottle, but is best enjoyed by the pitcher on Asheville Brewing’s outdoor patio.

FRENCH BROAD BREWERY

There aren’t any pirates plying the rough waters of the French Broad — yet — but the skull-and-crossbones logo slapped on every label of French Broad’s popular 13 Rebels ESB has become instantly recognizable throughout Western North Carolina. Like any good American ESB, the bronze-colored brew is hoppy, nutty and malty, creating a toastedmuffin taste. If buccaneers ever did find their way to Buncombe County, they’d surely swap their rum for this very likeable ale.

THE FROG BAR

The after-dinner drinks category is a sadly neglected one, with most folks opting to just keep drinking whatever they were sipping when the last plates were cleared. Rather than fuss with exotic ports, brandies or liqueurs, they pour themselves yet another glass of red wine. The reason for reform sits on the impressive shelf of house-infused liquors at The Frog Bar: Dirty Sanchez tequila (pictured above). Saturated with espresso, citrus and chocolate, the robustly flavorful drink is something better than dessert in a glass: It’s a proper after-dinner drink.
