Welcome Welcome to the festive seasonal edition of the Mount Juliet newsletter. Since the last edition we have enjoyed some fantastic success. Our first Michelin Star for Lady Helen was announced in September, which is a huge achievement for the team. I hope all our friends and guests will take the opportunity of booking in for the experience in the coming months. Executive Chef Cormac, Restaurant Manager Aga and the front of house team will be looking forward to welcoming you The Santa Train and Christmas Market started in earnest on 1st December, our 3rd season with the experience, which we hope will again entertain you and your families. I hope you enjoy some of the variety of memorable articles and photos, which show off the estate across what has been a very enjoyable year for us all. The summer weather has to be one of the abiding memories for everyone here on the estate, long may this continue for the future. As always, Aidan O’Hara and his team had the golf course in magnificent condition and we were all delighted to be recently awarded Best Parkland Course in Ireland for the third successive occasion by Backspin magazine.

Letter from the Captains Dear Members, As our year in office draws to a close, we would like to thank all of you for your support throughout 2013. We have both thoroughly enjoyed the experience of being Captain and Lady Captain of Mount Juliet and have stored up many very happy memories. We had a very busy year of golf with many members taking part in the various competitions. The Men’s Invitation Days had record numbers playing this year which resulted in a Grand Final in October which was won by Dermot Fennelly. There were 7 Ladies Invitation Days throughout the summer. The last was a “Pink Ribbon Day” which was very successful and contributed €4,300 to the Marie Keating Foundation. Thank you to all who took part and who worked so hard to bring this about. The winning team consisted of Cathy Hoyne, Catherine Keane and Mary O’Dwyer with a great score of 100 pts. Cathy Hoyne also had a hole-in-one on the 14th! The Lady helen Awarded First Michelin Star You get out what you put in. It’s a mantra that goes just as well for the smallest side-dish as it does for the biggest banquet. The growing reputation of the Lady Helen restaurant over the past three years has been down to the effort, skill and detail that goes into every plate that leaves the kitchen and 2013 has been the year when everything has come to fruition. The Lady Helen already had three AA rosettes to her name and earlier this year it was judged to be the Best Hotel Restaurant in the country at the Restaurant Association of Ireland awards. On top of which, Mount Juliet swept the boards at the Good Food Ireland awards in November, taking the Supreme Award for, in the judges’ words, “excelling in every aspect, delivering the very best of Ireland’s culinary culture and bringing people together through food”. But undoubtedly the crowning achievement came in September when the Lady Helen was awarded a Michelin star, the industry’s highest accolade. For the kitchen team, led by Cormac Rowe, Ken Harker and John Kelly, it was the culmination of years of work, skill and dedication.

“We are all delighted at the Lady Helen and Mount Juliet to be awarded the star for our restaurant,” said Executive Chef Rowe. “To receive this industry recognition is the ultimate accolade and it's a proud moment for us and for Kilkenny. “You don’t know when the judges are here, or how many times they called. At the start of the year a representative comes, tells you what will be judged and you don’t know how many times they come and go. “Sure, you’d have your suspicions but you can never be certain. We always start with having our food taste good and look good, every night. We also want to present good food and at affordable prices.” For the team involved in the Lady Helen, waiting on the Michelin felt like waiting on Christmas. “The guide is released online at seven o’clock in the morning,” explained Head Chef Ken Harker. “For the weeks running up to the announcement, it was all we talked about. None of us could really sleep that night because we were hoping but we didn’t want to get our hopes up too high.
“We had a few inspections and there was a great buzz around the place. It wasn’t that we had a feeling it was going to happen but it was just that it was a whole year’s work leading up to this one thing and if it happened it would be a massive boost for all of us. And then when it did, it was just unbelievable.
“If they come back and see no change, then it looks like maybe complacency has set in. But at the same time, if you change too much you might get away from what got you there in the first place. You have to keep pushing on but be smart with your changes.”
“It was a strange day to be at work. You still had to go in, you still had to do the vegetables and the meat and the fish and everything still had to be done the proper way. The phone was going all day – text messages, tweets, calls. A crazy day.”
On The Menu...
Crazy maybe, but fulfilling overall. This isn’t a star that just falls from the sky. The Michelin inspectors don’t tell you what to do, they don’t hand out guidelines or give you tips on how to improve. Instead you have to work away diligently and improve as you go. That’s been the hallmark of the Lady Helen team throughout the past number of years. “It’s been a long time coming,” says Harker. “The team we have now, we’ve had for about three years. They’re all pushing and striving and trying to make it better. It’s a massive team effort and a lot of hard work.
“The newest dish we have is Cod with Smoked Eel, potato, lemon, parsley and hazelnut (see below). We take a fresh cod fillet and trim it right down. We salt it for an hour then we put it in cold water for another hour before rolling it into a tight cylinder. Then we leave it for 24 hours. “The following day, we slice it and pan fry it. The salt has made it slightly cured by this stage so you don’t have to cook it for too long. Without overcooking it, it becomes nice and flaky. “For the sauce, we take one-third fish stock, one-third mussel stock and one-third veal stock. It makes a meaty base with fishy elements to it. We serve that with smoked eel, grapes, hazelnuts, shallot and flat-leaf parsley. We toss that through the sauce and make it a light dressing for the fish. “We serve it with mashed potato. We take cream and milk and make a very loose mash. It’s very light when we put it onto the plate. Then we take strings of potato and wrap it around a steel pipe before putting into the fryer to create a perfect potato cylinder which we serve as well. And we finish off the dish with a parsley gel and a lemon puree. ”

“But the thing is, now is when the hard work really gets going. People have a different expectation now every time they come to the restaurant. They used to come just expecting a good meal but now they come expecting that little bit extra just because you have a star. “Before, we had the element of surprise. People didn’t really know how good we were so they would come and eat the food and be blown away because they didn’t come in with any expectations. But now they’re coming with preconceptions of the level of food they’re expecting to get and we have to meet them.” And they’re not the only ones. Getting a Michelin star is no guarantee of keeping one. The inspectors will be back for next year’s guide and making sure the Lady Helen appears in it will drive the staff on to keep their standards high.

Run Mount Juliet 2014 No event last year was a greater innovation or a bigger success than the inaugural Run Mount Juliet. Just over 1,300 runners came to the estate at the end of February, Gardaí closed off the roads around the estate and the village of Stoneyford to ease their passage. There were three races – a half marathon, a 10km and a 3km. Predictably, the half marathon drew only about a quarter of the field – 300 runners as against the 1,000 or so who took part in the 10km event and 3km.
The half marathon was won by Tom Harty with an excellent finishing time of one hour, 10 minutes, 38 seconds. In the 10km, Declan Power took the honours in a time of 34 minutes, 57 seconds. On the women’s side, Martina Power from the Carrick On Suir club won the half-marathon in one hour, 25 minutes and 21 seconds and the 10km title went to Barbera Sanchez in a time of 36 minutes 15 seconds.
Mount Juliet Primrose Primroses have been bred in Ireland for centuries, usually as a hobby. It was hugely prevalent in the Ireland of early 19th century to mid 20th century but died out over time. One man who has kept the faith though is Stoneyford native Pat Fitzgerald. Or ‘Primrose Pat’ as he is better known. Pat has been growing primroses for as far back as he can recall and next spring will see the flowering of a new breed created by him, the Mount Juliet Primrose. With a delicate cream/yellow petal, the Mount Juliet Primrose will grow on the estate after which it is named. “The Mount Juliet Primrose comes from a heritage form of primrose first known to gardeners during Elizabethan times,” said Pat. “The term hose-in-hose was applied to an evolution in Primrose form with what appears as two flowers one inside the other. The bottom flower is in fact a calyx which has evolved to look exactly like the flower it holds. “These Primroses were very popular planted in cottage gardens, gentry estates and woodland gardens of Page 6 Mount Juliet Estate Christmas 2013
Afterwards, the runners were unanimous in their praise for the course and for the organisation of the event. The hills on the estate had their say, testing the runners’ resolve as much as their reserves of fitness. All in all, it was the perfect way to come out of the winter and proceeds from the day went to the Cois Nore Cancer Support Centre. It returns in 2014 and is sure to be just as well subscribed. The starter this time around will be Kilkenny’s very own Olympic athlete Joanne Cuddihy. The race takes place on Saturday, 15 February and anyone who feels the stirring in their feet can register to take part at www.runmountjuliet.ie. Staff members at both Mount Juliet and Ballylinch Stud have nominated three Kilkenny charities, one of which will be the proud recipient of a 2014 Toyota Yaris. The charities are Cois Nore Cancer Support Centre, GROW mental health awareness and St Patrick’s School for special needs. The car will be awarded to the charity that receives the most public votes through the Run Mount Juliet website. The keys to the 2014 Toyota Yaris will be presented to the charity on the day of the race. Anyone can participate so get voting and help your chosen charity benefit from the use of a brand new car. the time and like the Mount Juliet Primrose tend to be heavily scented. Primroses are cross pollinated by taking pollen from the male part of the plant known as the thrum and placing it on the female part known as the pin. “Primrose was one of the first plants explored by Charles Darwin in his many botanical explanations of how plants evolve and is often used as a perfect example of the ingenuity of plants in their adaptation of insect and animal pollination and spreading of their progeny. To develop the Mount Juliet Primrose pollen from native forms of Primrose were crossed with known hose-in-hose varieties which resulted in this charmingly coloured and scented hose in hose variety.” The Mount Juliet primrose will flower from early March to the end of May. They can be found in the rockery area near Mount Juliet House.

Golf Notes PINK DAY AT MOUNT JULIET
Captain and Lady Captain’s Drive In
On 9th October, the last Invitation Ladies’ Day, a competition was held and the proceeds raised were donated to the Marie Keating Foundation for Breast Cancer. October was Breast Cancer Awareness month.
Incoming Captains’ Finbarr O’Neill and Rebecca Nixon will officially drive-in on Saturday 4th January. Full details on the event will follow shortly.
The weather was beautiful and everyone responded to the occasion with great enthusiasm. The course was awash with ladies bedecked with pink! All the staff joined in with their support and sported pink ribbons on their lapels. Prizes were awarded for the best dressed “pink” golfers and the winners were Ruth Mulholland, Myra Phelan and Moira Leahy. Dinner was served after golf in Kendals and the golf prizes were distributed. These included a pink Bubba Watson Driver kindly donated by Mount Juliet. Participants for this had to enter a separate competition which involved reaching the 11th green with their drive. All those successful in achieving this then went into a draw. The successful candidate was Ruth Mulholland, to her great delight! There were also prizes for the best dressed ladies in the evening and the winners were Marie Costello and Clodagh Davis. Kendals was resplendent with pink accessories such as balloons, petals and butterflies supplied by Sheila MacDonald and the chef supplied us with a delicious dinner ending with bright pink raspberry cheesecake! A raffle was also held and the final total made came to €4,300 for the charity – a very successful outcome! We sincerely thank all those who helped and supported the event!

Triangular Tournament Recently a triangular competition between teams of 13 players each from Fota Island, Carton House and Mount Juliet took place. This competition was the dream of the past captains of Fota Island and Mount Juliet, Tom Hennessey and Alan Hoyne. The format was a singles stableford with 3 points awarded to the best score in each three ball, 2 points to the second place and 1 point to third place. Each team consisted of the President, Captain, Past Captain and Vice Captain of each club together with 9 other members with a total of 39 players partaking in this unique competition.

Carton House won the trophy by a single point from Mount Juliet with Fota Island in third place. Best score of the day was returned by Mount Juliet’s Paul Madigan who had shot an impressive 42 points off 3 handicap.
