What a year filled with challenges and dealing with the conundrum of reinventing oneself to deal with changes in the market place We've seen a real tightening of the economy and with our lodges and resorts still suffering from the harsh negative press of a few years back, it's been a real tough battle. And with the Rand getting a hammering, it's in turn made it tough for our South African visitors. Fortunately the Rand has pulled back now and we are seeing many resorts full for this festive season. Long may it continue. A FASCINATING DESTINATION FOR INVESTMENT IN THE TOURISM SECTOR
M
ozaico do Indigo, SA, a para-estatal company dedicated to the development of tourist destinations in Mozambique, in an integrated tourism development perspective. With this new approach the Government of Mozambique aims to enhance and promote the emergence of new tourist centers throughout the country that includes the planning of new hotels and resorts, golf courses, casinos, residential areas for tourism, shopping areas and business centers of both sports and leisure and even health, etc.
Mozaico is very excited about this new partnership with MozMag. This partnership will allow the strengthening of Mozambique magazine content with the inclusion of local issues, promotion and dissemination of investment projects and new tourism initiatives, increase the distribution of the magazine in Mozambique and also the publication of tourist products to increase attractiveness of the country. Mozambique has an area of 799.380Km2 of which 2.515km of coastline, beautiful beaches, some pristine and lapped by the warm Indian Ocean waters. The climate is predominantly tropical with an average temperature of 24 ° C, but with variations in the interior regions of the country. It is a country rich in natural resources, including marine biodiversity, flora and fauna much appreciated. Also noteworthy is the cultural diversity of its population, languages, architecture, gastronomy and artistic expressions resulting from passing, crossing and establishment in the territory of several people, mainly African, Indo-Arab and European. These factors of natural and cultural environment, coupled with political stability and economic growth (located in the region of 8%) for over 15 years, explains the attractiveness of the country for foreign direct investment (FDI), (about 20 billion USD between 2009 and 2014), reflected in the implementation of major industrial projects and rapid improvement of the business environment. Nevertheless, the Government of Mozambique, recognizing that economic growth related to the mega investment projects, capital intensive, still does not absorb much of the national hand labor, has wagered and encouraged the rapid development of the tourism sector as one of its development pillars, given the potential for involvement of the population and generation of aggregated added value that implies the improvement of people's lives.

Along the journey the breath taking scenery of natural lakes, estuaries, wetlands and forests are just the beginning of what more is in store. Turn off towards the coastline and you will find hundreds of pristine beaches where every curve of the coast forms small coves and long stretches of unique pristine empty beaches that will quite simply take your breath away. 2 : The Culture and History – Long before the Portuguese discovered Inhambane more than 500 years ago the coastline of Inhambane was used by Arab and Chinese traders. They left behind their influence on the architecture and their history of the ivory, spice and slave trade route. Inhambane has been recognised as a World Heritage Site due to this. The beautiful old buildings and mystic dhows sailing off the coast remain as a tribute to this history. Inhambane is also renowned for its richness in music, art, fashion, theatre and traditional culture, recently hosting the largest cultural festival in Africa. 4: Natural Diversity and related Activities – Inhambane has the highest concentration of natural reserves giving us the advantage of having one of the biggest draw cards for all nature and adventure lovers. From the magnificent azure of the Bazarutu Achipelego a unique ecosystem home to the dugong amongst many other rare and protected species, through to the vast clusters of boababs, wetlands and forests where you can find the Olive Headed Weaver only found in the Panda forest or the Green Tinkerbird last seen in 1958 and recently spotted in Inhambane. The province is also home to the largest whale shark population in the world and is fast becoming a destination to appreciate the huge pods of Southern Right whales as they play off our coastline during their yearly migrations. The long coastline is also the nesting ground for many turtle species. We also have Manta Reef now recognised as one of the top 10 dive sites in the world due to the large manta population which frequents the reef. Let us not forget our fish. The size, quantities and variety of fish have always been a huge draw card with massive marlins and sailfish amongst many. Because of this Inhambane has become recognised as a top destination where you can experience nature at its best, with many operators offering fishing charters, world class diving, catamaran trips, quad bike tours, experienced guided birding safaris, kayaking, horse safaris, cultural tours and you can even participate in one of the many environmental researches currently running at some of the beaches. Mozambique The Inhambane coastline, in southern Mozambique, has the rare quality of being very remote yet easily accessible by air. LAM flies daily from both Johannesburg and Maputo to the provincial capital’s airport, where Captain Etienne can meet you and take you by boat to his isolated Silver Fish Lodge located 17 kilometres outside the bustling town of Maxixe. s I was thrown around the 18 foot catamaran boat, with my eyes stinging from the warm Indian Ocean spray, I pondered on the truth the sometimes we need to put in that extra effort to achieve something special. My guide, Captain Etienne Vercueil, had just explained that often the best time to fish is when the waves are choppy and the weather cooler. And he was right – we just kept on landing excellent fish until we ran out of bait. The Inhambane coastline, in southern Mozambique, has the rare quality of being very remote yet easily accessible by air. LAM flies daily from both Johannesburg and Maputo to the provincial capital’s airport, where Captain Etienne can meet you and take you by boat to his isolated Silver Fish Lodge located 17 kilometres outside the bustling town of Maxixe. The place is so isolated that local women form an orderly queue on the beach early in the morning as they wait for the dhow taxi to sail them to town. And when you next look, they are but a dot in the distance as the wind blows them on their way. The lodge is completely off the grid. When the generator is switched off at night the only lights are the moon and stars, the fireflies in the coconut trees and the beacon on the top of the cell phone mast across the bay. The captain has been fishing these waters for almost twenty years, and argues that “people should come to Mozambique because the fishing is good, and there is always the chance of catching a trophy fish, which could be Sailfish, Black Marlin, Blue Marlin or Striped Marlin”. As we headed out to the best spot for Couta (King Mackerel), the captain searched the sky for signs of birds diving – a sure sign that fish are active on the surface.

Almost as soon as the first line was set up and thrown into the water the rod shook with the impact of a seven kilogramme Couta grabbing the bait. By the time that I had reeled in the first of the day, the other five rods were ready to go, and we resumed trolling. Before long we went through a school of Eastern Little Tuna, and plucked three from the emerald sea. These fish fight so ferociously that once killed it is best to bleed them to remove the adrenalin racing through their bodies to improve the taste. The Eastern Little Tuna is considered by some not to be the best tuna for eating. But for me, with its darker flesh and stronger flavour, it was far superior to any tuna I have ever had before.We then moved further offshore where we changed bait and began drift fishing. This method often attracts bigger tuna and mackerel. In theory, it is more relaxing. But within minutes we were in with a large Couta followed by another couple of tuna in quick succession. When we finally ran out of bait we returned to the lodge. But on the way back we were privileged to see a dugong (manatee) swimming near the Linga Linga peninsula. Whilst this is a rare treat, it is more common to see Dolphins or Humpback and Southern Right Whales. The waters off the coast of Inhambane still have good stocks of fish, including Giant Trevally, Queenfish, Queen Mackerel, Yellow Fin Tuna, Bonito and Skipjack Tuna, Dorado, Wahoo, Amberjack, Cobia, Barracuda, Sailfish and Marlin. However, there is no doubt that overfishing is taking its toll. Fish is a major part of the Mozambican diet, with every citizen eating an average of ten kilogrammes per year (about half of all animal protein consumed). However, ninety per cent of the sector is composed of artisanal fishermen, often using homemade dugout canoes. Many of these fishermen are highly skilled, targeting good sized fish, squid, prawns, lobsters or crabs for the local markets. But far too many

just fish to survive. And these are the ones who use small mesh nets, or even mosquito nets. They are only interested in providing food for their families. The government has outlawed the use of these nets, and in January it introduced a fishing ban along much of the Maxixe estuary to give stocks the chance to recover. Captain Etienne recognises that there are problems policing the new system, but acknowledges that it is an important step in the right direction. He stresses that “if we can protect the small fish, the bigger fish will recover. As the estuary is a breeding ground for fish, this is the first place we should protect”. -The signs are good – as you wade barefoot in the water, many small inquisitive fish come up to for a nibble of your toes. In recognition of his contribution to the local economy, Captain Etienne has been given an exemption that allows his clients to fish the estuary in kayaks with light tackle on a strict catch and release basis. This offers the chance to catch Yellowbelly Rockcod, Mangrove Snapper, Pickhandle Barracuda, Pompano, Grunter and River Gurnard. It is fairly technical and difficult to fish from a kayak with the competing attention of the wind and current. But I was rewarded with two Rockcod hooked simultaneously! However, whilst I was reeling in the first, the second headed for the rocks where he jammed himself in the hole in and refused to budge. After half an hour of paddling and reeling the hook finally appeared at the surface without its prey. Outside the estuary there are other initiatives to preserve the fishing stocks. At Linga Linga the owners of the luxury lodge Castelo do Mar have been dropping home-made concrete blocks into the sea to create an artificial reef. Alongside the scuppered Norwegian whaling boat dating back to the beginning of the twentieth century, the reef is shelter to smaller fish and offers protection from local fishermen. At sea, Etienne follows the grow-

ing trend of only keeping what is needed to feed the lodge, and is passionate about releasing the big game fish. To maintain the ecosystem he does not fish for resident species, nor does he practice bottom fishing. Instead, he targets the pelagic fish that migrate up and down the Mozambique Channel. For those looking for even more adventure, Silver Fish Lodge offers to take clients by “mothership” out to sea where they can board a kayak and try the challenging task of catching one of these predator fish on light tackle in the open sea. The Inhambane coast has a lot to offer: world class fishing, tranquillity and beautiful sub-tropical weather. The Portuguese
explorer Vasco da Gama called it Terra de Boa Gente (the Land of the Good People) and the locals are renowned for their kindness. Sitting on the decking outside my room, drinking a cold 2M beer, I reflect on the pleasure of being in such a remote, peaceful setting. It feels so safe and serene that I leave my door unlocked at night with my valuables lying on the table. Tomorrow I will return to the lively bustle of Maputo, but I will leave a part of me behind in Inhambane. F
Top tips * Captain Etienne uses six lines during trolling at about seven knots. * The furthest out at about 80 metres, are two lines using halfbeaks (also known as ballyhoo), in search of the big game fish. * At about 50 metres there are two lines with Carapoa for bait, also targeting big game fish. * At about 15 metres the lines use lures made by the Norwegian company Rapala, targeting tuna. * For drift fishing, Etienne uses two baited hooks on the surface and a further two weighted to drop to a depth of 15 to 20 metres. * Bait can be bought by the roadside, but it is important to freeze it as soon as possible to maintain its freshness.
Getting there * Inhambane is under two hours away by flight from either Johannesburg or Maputo. One can also fly to Vilanculos, the gateway to the stunning Bazaruto Islands. * Inhambane city and Maxixe are easily reached by car. The journey is under seven hours from Maputo on good roads with plenty of reputable gas stations. But be warned, every other village has police speed traps – so do keep your speed down. Most road accidents in Mozambique are caused by excessive speed. * If you are driving from South Africa, it might be a good idea to stop for the night in Mbombela (Nelspruit) and tackle the border and Maputo traffic the following day. I would highly recommend Chez Vincent Guest House which has a high quality restaurant on site - www.chezvincent.co.za * Roads out of Inhambane city and Maxixe do get worse, and deteriorate after heavy rain, so check with lodge owners whether a 4x4 is necessary. * A half hour drive from Inhambane city are the towns of Tofo and Barra which cater for those wishing to dive of snorkel among the reefs. * Some boat owners drive their boats to Maxixe for launching and sail to their chosen lodge. But most take advantage of the lodges’ boats and qualified captains. * The area has the big advantage that the estuary to Inhambane bay is always open no matter what the tide is doing. T
hird time is the charm and Chris has officially completed and set a South African and All African record, Stand Up Paddle Boarding 131.8km in 24hrs. Just to give you a small idea of how HUMUNGOUS this task actually was – more people have been to the moon than have completed a 24hr open ocean SUP record attempt…. that’s pretty huge!! We spoke to Chris briefly and he had the following to say: “I am so stoked to have finally completed this record, its feels like a large monkey/ small gorilla off my back after all of the previous
attempts this year. The conditions were far more extreme than we had originally thought, and early this morning with the winds constantly blowing me back towards the shore, I am just thrilled to have finished. All of our planning worked perfectly and I am amazed at how strong I feel at the finish! I just want to say a HUGE thank you to everyone who supported me, especially Farm Film Productions and Island Tribe, as well as my right hand man on the boat, Darren Robertson, for all of your help, support and encouragement over the 24hrs! OZmag: First of all Congrats on your new CD. We are so proud to have assisted you with shooting your new video in Mozambique. Why did you choose Mozambique to shoot your music video "Draai Op"? Ampie: Thanks so much. I was supposed to go on holiday but I knew I can’t sit still for too long. I had a new video due with the new cd release and decided that it would be a beautiful location and I am already there. So why not do it there instead of SA. Nobody has done it because it’s too expensive. MOZmag: We were fortunate to tour Mozambique with you, Kurt Darren and Arno Jordaan a few years back. It was wild; but fantastic!! How has your life changed since then? Ampie: Haha. Yes that was quite an experience. I think my profile has grown a lot, but I am still the same humble person as always. I don’t measure attitude with success. It's just a job as anyone else's but it’s just in the public eye.

Ampie: It's primitive with friendly people and great food. Need I say more? In this rat race world it's the perfect holiday destination. MOZmag: We know you and AB De Villiers have been great friends for many years and even made a single together. What is it about AB that makes him such a phenomenal sportsman? Ampie: He is just a freak of nature. Some people gets born with it. Combine that with hard work and you get a superstar. His mindset is something you don’t easily come across. All people dream but he dreams differently...he makes them reality! MOZmag: You also wrote a song for Joost Van Der Westhuizen called ''Saamstaan''. Joost is suffering from a dehabilitating disease that changed his life. Isn't it amazing how quick things can change? Ampie: It's so true. I wrote the song with a good friend of mine Johan Oberholzer. Also a huge talent in my industry. Things change very quickly. That’s why I always say: “Don’t stress to much about money, don’t take yourself too serious and love the
people that love you”. It’s simple. Live life in abundance and try and laugh constantly. MOZmag: Ponta, Bilene and Inhambane offer an array of different holiday activities. Fishing, Diving and motorized water sports is world class in Mozambique. We hear you dive, where did you do your course? Ampie: I did my course in Inhambane at Guinjata Dive Centre. Ampie: I have been singing since a young age. My father always told me, if you want to sing, go do your degree and go work for a couple of years. After that if you want to sing. Go sing. I finished my degree in financial management from Tukkies, went and worked for a couple of years in payroll TAX. One day I decided to quit and do music. That was in 2007. MOZmag: Which musicians have influenced you? Ampie: Definitely Keith Urban, the country star and John Mayer. Both singer / songwriters and that's how I see myself. F

MOZambique Recipe Corner The Hirshon Mozambique Peri-Peri Sauce 1-10 African peri peri red chilis, roughly chopped (1-3 chillies for a mild sauce 4-6 chillies for a hot sauce 7-10 chillies for a very hot sauce) – you can buy seeds from Amazon here – http://www.amazon.com/gp/aw/d/B00B3CA30Q OR if unavailable, use Thai bird chilis 8 cloves garlic 1 ½ red bell pepper 125ml/½ cup freshly squeezed lemon juice 125ml/½ cup white-wine vinegar 1 tbsp light brown sugar 1 tbsp tomato paste 2 tsps red chili flakes 2 tsps dried oregano 2 tsps dried thyme ¾ cup chopped cilantro/coriander leaves or parsley (a combination of both herbs can also be used) 2 tsps salt 1 tsp paprika 1 tsp cayenne pepper 250ml/1 cup olive oil
Wash a glass bottle in hot soapy water and dry it in the oven at 150°C for 10 minutes. Place all the ingredients, except the olive oil, in a food processor and blitz until smooth and lump-free. Gradually pour in the olive oil and process until the oil has emulsified with the rest of the ingredients to form a sauce of pouring consistency. Bottle the sauce immediately in the clean, sterilised bottle. This will keep fresh in the fridge for up to one month. It can be used as a marinade, baste or condiment.

Ingredients • 10 cups flour (approximately 5 pounds) • 2 packages active dry yeast • ¼ cup margarine • 1½ teaspoons shortening • 1 Tablespoon salt • 1 Tablespoon sugar • 3½ to 4 cups lukewarm water Procedure 1. Dissolve the yeast in ½ cup of the water with ½ teaspoon sugar added. Let stand for 5 minutes, or until bubbly. 2. Place in a large bowl and add enough flour to make a batter. 3. Cover the bowl with a cloth and blanket and let stand until it forms bubbles and looks lumpy. 4. Add the remaining ingredients and mix well, kneading well until smooth, about 10 minutes. Add more flour if dough is too soft. 5. Cover again with cloth and blanket and let stand in a warm place until doubled in size. 6. On a floured board, using about ⅓ cup dough for each bread roll, shape into round balls and let rest on a cloth dusted with flour. 7. After all rolls are shaped, beginning with rolls that were shaped first, flatten each with palm of hand, making an indent in the middle with the side of your hand, then fold in half. 8. Lay each roll on the cloth with open side down. 9. Let rolls rest for 5 minutes. While rolls are resting, preheat oven to 500°F. 10. Place rolls on baking sheet with open side up and lightly brush with milk. 11. Bake in oven for 10 to 15 minutes. Makes about 24 rolls.

Bilene Triathlon
A
n Idea was created by Individuals involved in the Tourism Industry in Mozambique to host a Sports tournament in the Bilene area round the Ubenje during July 2015. This area is easy accessible, a paradise for water enthusiast and blessed with excellent accommodation in and around the area. The intention of the event was to have the involvement of the local community and businesses to advertise Bilene and Mozambique at large. The event took the form of a Triathlon which includes, cycling, swimming and running. A triathlon is a multiplestage competition involving the completion of three continuous and sequential endurance disciplines. A dedicated route was marked in conjunction with Bilene Municipality and Authorities to incorporate the abovementioned sporting categories.

The triathlon was a first and the intention to lead to future activities once the established the “ground rules” for future activities such as water sport, music and general holiday activities. The town of Xai-Xai, situated on the Limpopo River, is a sprawling settlement of houses, markets and shops. Tourists generally only stop off for supplies in Xai-Xai: it is on the main coastal road between Maputo and the more popular beaches of Inhambane. There is, however, a great beach about 10 kilometres to the east. The bay has a coral reef running about one kilometre offshore which offers protected waters for swimming and snorkelling. Being so close to the banks of the Limpopo River, Xai-Xai was hit particularly hard by the 2000 floods, with some buildings finding themselves 3 metres deep. But the town was open for business almost as soon as the waters receded. You can stay at the Xai-Xai Beach Resort or you can camp at a beach campsite. It is a bustling town with markets, shops, restaurants, bars, petrol stations banks and a post office. An open air furniture factory situated under a grove of cashew trees a few blocks from central market is worth a visit. Praia do Xai Xai is approximately 12km from the main town. It has long sweeping beaches with safe swimming. Xai Xai beach has been a popular tourist destination since the heyday of Mozambican tourism. A reef running parallel to the shore offers good snorkeling. There are a number of fresh water lakes within half an hour’s drive where kayaking, paddle skiing and windsurfing can be enjoyed and bird watching enthusiasts might get some sightings. Wenela Tidal Pool, two kilometres south, is a fascinating natural treasure. having a natural tunnel and blow hole linking the pool to the sea. The little town of Inhambane has a distict Afro-Portuguese-Arabic flavor about it and has a number of interesting buildings dating back to the era's explained above. The town is very clean and safe and much investment / construction is currently happening to enhance Inhambane as a tourist attraction. Most of the shops are still owned by descendants of those first Arabic traders. Their town is small enough to see all the attractions in a day, including a quaint but very interesting museum, the local Mercado (Municipal market) and the many restaurants and bistro's where you can enjoy the local cuisine. There is also the opportunity to sail accross the bay in a Dhow sailing boat, still built according to the ancient arabic design. You can either hop on a dhow ferrying locals between Inhambane and Maxixe or you can rent one for your own use at very affordable rates. You may even choose to visit a little island for the day. Part of the Inhambane experience is also to travel through the coconut palm forests to visit the nearby coastal holiday destinations, Tofu Bay and the famous Barra Reef. Both offer many lodging opportunities ranging from hotel and backpacker accommodation at Tofu, as well as good 3 to 5 star lodgings at Tofu and the Barra Reef.
