Pumpkin Spice Muffins
Low Carb, Sugar Free, Dairy Free Original Recipe based from: Low Carb So Simple
Pumpkin Spice Muffins Super easy breakfast swap & a quick fix to Pumpkin Spice cravings! Ingredients: •
1 & 1/2 cup of almond flour
•
Cinnamon and Pumpkin Spice – add a few dashes of each as much as you want (recipe originally calls for a tablespoon of pumpkin spice but I found that to be too much)
•
2/3 cup of ethrynol or your preferred sweetener
•
1/2 tbsp of Vanilla 2/3 cup of canned pumpkin
•
4 eggs What to do:
•
Combine almond flour, spices and sweetener in a large bowl ensuring there are no lumps.
•
Add to dry mixture in vanilla, then pumpkin and eggs with electric beater.
•
Cook Time: Depends on the size of your muffins. Recommended recipe time: 30-40 minutes. Something to be super aware of is that undercooked is worse than overcooked. I don’t mind having them be more firm opposed to the alternative of a more soft eggy muffiny texture.

Cheesecake in a cup
No Bake, Low Carb, Sugar Free,
Cheesecake in a cup Perfect sweet treat & is an easy swap for normal cheesecake!
Ingredients: •
Mini mason jars or small ceramic bowls
•
Cheesecake Pudding Mix
•
Milk (can use Almond but regular milk is preferred)
•
Your preferred dark/sugar free chocolate What to do:
•
Combine mix & milk
•
Put mixture in mason jars
•
Let set in fridge & crush chocolate to sprinkle on top

Mocha Latte Pops

Mocha Latte Pops Super simple & caffeinated take on a childhood favorite!
Ingredients: •
Ice Pop Maker – The Dollar Store has them!
•
Protein Shake – I love the Atkins Mocha Latte Shakes, you can use whatever one you’d like What to do:
•
Put the shake in the pop molds & fill to the very tip top so that it’s almost overflowing.
•
Put the cap on - make sure it overflows a little bit
•
Freeze for 2-3 days

Brownie in a Mug
Low Carb, Sugar Free,
Brownie in a Mug Ingredients: •
2 Tbsp butter – I used grass fed which is better for women with PCOS
•
3 Tbsp almond flour & 1 tsp coconut flour
•
1½ Tbsp granulated sugar substitute – I used Swerve
•
¼ tsp vanilla
•
pinch of salt
•
1 egg
•
1 Tbsp unsweetened cocoa powder
•
½ tsp baking powder
•
1 handful of sugar free chocolate chips What to do:
•
Melt the butter in a small microwave safe bowl (about 30 seconds, be careful not to overcook).
•
Add the remaining ingredients and stir until combined.
•
Pour batter into 2 small greased mugs or ramekins.
•
Microwave for 1 minute. (add another 30 seconds if necessary).
•
Serve with whipped cream

Chilled Coffee – 1 cup
•
3tbsp of Half & Half (can be whatever preferred dairy substitute)
•
3-4 Ice cubes
•

Combine in a blender & mix!

Almond Milk (you can use regular milk but almond milk is my preference)

Sugar Free Pumpkin Spice Syrup – I love Torani’s sugar free syrups or Jordan’s Skinny Syrups

Pumpkin Pie Spice What to do:

Brew coffee
•
Add as much milk as you’d like
•
Add some of the syrup – CAUTION add little bit by little bit, it is strong
•
Dash some spice to the top - Enjoy!

Shamrock Shake Before I began eating low carb & sugar free, I used to LOVE McDonald’s Shamrock Shakes. So I made a protein shake version which is super filling! Ingredients: • •
1/2 scoop of vanilla protein powder 1 cup of vanilla greek yogurt

Handful of ice cubes
•
1 cup of almond milk
•
few drops of mint extract
•
few drops of green food coloring What to do:
