1 pkg yellow cake mix 1 20oz. can crushed pineapple in syrup, undrained 1 can cherry pie filling 1 c. chopped pecans 1 stick oleo or butter, cut into thin slices

Turn on oven to 350’ and grease a 13 x 9 cake pan. Dump undrained pineapple into the pan and spread evenly. Dump in cherry pie filling and spread evenly. Sprinkle cake mix over cherry layer evenly. Sprinkle pecans over cake mix layer evenly. Distribute butter slices evenly over top of pecans. Bake for 48-53 minutes.

Note: Would probably be good with other pie filling i.e. blueberry but have neverr tried it. Love, O’Ma

oliday traditions vary from family to family, but one component of the holidays that seems to be universally enjoyed is a good Christmas song. Music is piped throughout malls and stores to entertain shoppers, and favorite tunes may be on the radio or streamed through a digital music service as families decorate their homes. Many people may love Christmas songs and carols, but not everyone shares the same favorites. Thankfully, there’s no shortage of

material when it comes to Christmas songs, ensuring there’s something for everyone. In 2014, Time magazine researched records at the U.S. Copyright Office to determine the most popular and most recorded Christmas songs since 1978 when copyright registrations were digitized. The following are some of the more beloved holiday tunes and a bit of history about each song. • “Silent Night”: One of the most rerecorded songs in history (733 versions since 1978), “Silent Night,” was composed in 1818 by Franz Xaver Gruber and put to lyrics by Joseph Mohr. It was first performed on Christmas Eve at St. Nicholas parish church in Oberndorf, a village in Austria. Today’s version is a slow lullaby, but it’s believed the original was a dance-like tune in 6/8 time. • “O Holy Night”: This popular song was composed by Adolphe Adam in 1847 to a French poem titled, “Minuit, chrétiens (Midnight, Christians).” Many notable performers, including Perry Como, Céline Dion, Josh Groban, Michael Crawford, and Lea Michele, have performed “O Holy Night.” • “Silver Bells”: Now a Christmas classic, “Silver Bells” originally was written for the Bob Hope film, “The Lemon Drop Kid.” Songwriter Jay Livingston wanted to title the song “Tinkle Bell,” but his wife dissuaded him from using the word “tinkle.” • “White Christmas”: Irving Berlin believed his song “White Christmas” would be an instant hit. His prediction was correct, especially after singer Bing Crosby recorded it. • “Jingle Bells”: Although it has become one of the more popular Christmas songs, “Jingle Bells” really was written for Thanksgiving. It’s also one of the oldest holiday songs of American origin. James Lord Pierpont, the song’s author, was inspired by the famous sleigh races of Medford, Massachusetts. • “Do You Hear What I Hear”: Noel Regney wrote this song as a call to peace during the Cuban Missile Crisis. The original context has long been forgotten, and “Do You Hear What I Hear” is now a staple of holiday celebrations. • “Santa Claus is Coming to Town”: James Gillespie wrote this tune while riding a subway and reminiscing about his childhood with his brother. It became a hit after being performed at the famed Macy’s Thanksgiving Day Parade. • “The Christmas Song”: This classic

Christmas song was written in 1944 by Bob Wells and Mel Tormé. It’s usually subtitled “Chestnuts Roasting on an Open Fire.” The song was written during a heat wave as a way to think cool thoughts. It only took 40 minutes to write the music and some of the lyrics. Nat King Cole’s rendition of the song is among the more popular versions. Christmas songs are enjoyed and performed year after year. Popular songs continue to endure and attract new fans.

Notes: Most recipes for enchiladas recommend frying the tortillas in hot oil. While browsing through a magazine about famous Texas Mexican Restaurants, I found that they use cooking spray and a microwave for softening the tortillas. Sounded like a good idea to me, so I altered the two recipes until I got the taste I wanted. This is actually two recipes combined, one for enchilada sauce and one for cheese enchiladas.

These are wonderful served with pinto beans, Mexican rice and Guacamole. Cooked, seasoned ground beef can be added to this recipe, if you prefer.

1 14-oz pkg corn tortillas non-stick cooking spray (or olive oil) 3 cups Monterey jack cheese -- shredded 1 bunch green onion -- thinly sliced 1/3 cup vegetable oil 1 clove garlic -- crushed or minced 3 tablespoons flour 2 tablespoons chili powder 1 1/2 cups hot water -- divided 1/2 teaspoon salt

1. Preheat oven to 350 degrees. 2. Enchilada sauce: Combine vegetable oil, garlic & flour in medium saucepan, cook over low heat, stirring constantly, until mixture is lightly browned. Dissolve chili powder in 1/4 cup hot water; stir into flour mixture. Add remaining 1 1/4 cups hot water, stirring constantly. Stir in salt. Cook sauce over low heat for 5 minutes, stirring often. Makes 1 3/4 cups enchilada sauce. 3. Spray 3 or 4 tortillas at a time with cooking spray (or olive oil), wrap with wet paper towel & microwave on a saucer or small plate until hot and softened. 4. In center of each tortilla, sprinkle cheese, then green onion, and roll up, placing bottom down in a baking dish. Continue to do so until all are used up. Sprinkle enchiladas with cheese and pour enchilada sauce over top. 5. Garnish with the rest of the green onion. Bake at 350 for 15 minutes.

The perfect gift for seniors Things to consider for the one in your life that ‘has everything’

very holiday shopper ends up with at least one loved one on their shopping list who they can’t seem to find anything for. Some people seem to have it all, while others may be less than forthcoming with regard to items they may need or want. Many seniors tend to fall into the latter category. Shopping for holiday gifts for seniors can be difficult if shoppers don’t know what seniors want. But the following are a handful of gift ideas that might make this holiday season that much more special for seniors. Books A 2015 survey from the Pew Research Center found that 69 percent of adults age 65 and over acknowledged reading at least one book in the previous 12 months. That makes books a good bet for shoppers who don’t know what to get their 65-andover loved ones this holiday season. But shoppers might want to opt for more traditional print books rather than e-books, as the survey found that only 15 percent of readers age 65 and over had read an e-book in the previous 12 months. Gym membership According to the Office of Disease Prevention and Health Promotion, more than 80 percent of adults do not meet the guidelines for aerobic and muscle-strengthening activities. That can be especially troubling for seniors, who are at greater risk for osteoporosis, a medical condition in which age-related tissue loss contributes to brittle, fragile bones. Physical activity, including muscle-strengthening activities like weight training, can help combat osteoporosis. Family members stuck on what to get aging loved ones may want to consider gifting a membership to a local gym.

Many gyms offer heavily discounted memberships to seniors, and such gyms may even offer senior fitness classes at no additional cost. Travel gifts Many retirees love to travel, but not every senior has the means to take off for parts unknown. A 2013 survey from the Transamerica Center for Retirement Studies® found that 25 percent of retirees admitted they wished they would have saved more for retirement

travel. Holiday shoppers can light up seniors’ smiles by gifting travel gifts this holiday season. One idea is to transfer airline miles to an elderly loved one so he or she can get a free or discounted flight. 1 cup rice -- cooked 2 cups mayonnaise 2 cups celery -- sliced 1 onion -- finely chopped 4 teaspoons prepared mustard

1/2 teaspoon salt 4 eggs -- hard-boiled 8 radishes -- sliced 1 cucumber -- pared and diced

Directions

1. Cook rice according to directions. Transfer to bowl, cover and chill. 2. Add mayonnaise, celery, onion, mustard and salt to chilled rice. Mix well, cover and chill. 3. Stir in remaining ingredients before serving. • Note from Granny: I like to chill the rice --then add - celery, onions, eggs, radishes and cucumber - mix well. Mix the mayonnaise and mustard and salt together --Pour over everything. Chill again. • Note from Kathy: This is a nice change from the usual side dish of potato salad. Granny used to make this for occasions such as family reunions, picnics and dinners at her house. We all loved it. After she passed away, it took eight years for us to find it, written in the back of her “Our Daily Bread” cookbook, in her handwriting. We don’t know where she got the recipe.

To give or not to give Things to consider before giving pets as gifts this Christmas

T

he blissful image of a young child or a significant other receiving a pet as a holiday gift compels many shoppers to give pets as gifts come Christmas time. But pets are unlike any other holiday gift, as pets are living things that require food, shelter and attention. Because pets are unlike video games, diamond pendants and other popular holiday gifts, shoppers must consider a host of factors before deciding whether or not to give pets as gifts this holiday season. Living situation Shoppers who plan to give a

pet to someone they don’t live with, whether that person is a niece or nephew or a girlfriend or boyfriend, should first consider and/or confirm the recipients’ living situation. Landlords may forbid apartment dwellers from having pets, so it’s best to confirm with your loved one whether his or her lease allows pets before adopting or buying the animal. If you don’t want to spoil the surprise or you cannot confirm if a loved one’s living situation is pet-friendly, don’t adopt or buy the animal. Allergies Some people, including many who profess to love pets, cannot

have pets of their own because of allergies. According to the Asthma and Allergy Foundation of America, as many as three in 10 people in the United States have pet allergies. Cat allergies are twice as common as dog allergies, but gift givers who intend to give their loved ones a dog should still confirm if the recipient has a dog allergy before adopting or purchasing the animal. The AAFA also warns against looking for pets that are described as “hypo-allergenic.” While some people are more sensitive to certain breeds of cats and dogs than others, there is no guarantee that a particular breed of cat or dog will not cause an allergic reaction. Timing There are good times to give pets as gifts, while other times can be tough. Pets need time and routine to acclimate to their new environments, so avoid giving a new pet to a family about to embark on a lengthy holiday vacation. Families staying home for the holidays and taking time

off from school or work may be most capable of welcoming a furry new addition into their homes. If you want to give a loved one a pet for the holidays, delay giving the gift until things have returned to post-holiday normalcy. Finances Pets can be expensive, especially in the first year. According to the American Society for the Prevention of Cruelty to Animals, the first-year cost of owning a dog is nearly $1,300, while the first-year cost of cat ownership exceeds $1,000. These estimates include the cost of food, shelter and medical exams, among other things. Before giving a pet to a child, consult the child’s parents to determine if the family can afford adding a pet to the family. If parents need some financial help to afford the pet, include supplies like bowls, leashes and toys in your holiday gift. Pets can make for wonderful gifts. But such gifts should only be given after careful consideration of a host of factors.

Directions 1. Brown meat and onions, seasoning to taste with garlic and seasoned salts. 2. Mix cheese in and allow to melt (I put it all in an ovenproof bowl and put into 300’ oven until it melts. Cover it with foil.) 3. Put onto the rye bread and bake in 350’ oven for 15-20 minutes until toasted.

Note: This recipe feeds a crowd but you can halve this recipe easily or make it up ahead. Freeze the meat mix and use later or freeze on unbaked bread slices for about a month, then thaw and cook as described above.

Make-your-own holiday ornaments

H

oliday decorating is a big part of the holiday season. Bins are taken out of the attic or garage, and decorations are once again given their opportunity to shine for several weeks before being packed away again. Among the many decorations families use to deck the halls are ornaments that were made by hand. This year creating homemade ornaments can be a crafty project that helps families make new holiday memories. Christmas tree ornaments come in all shapes and sizes and often tell the stories of holiday traditions. There are several different ways to create personalized, do-it-yourself ornaments and leave the cheap, easily broken ornaments from the dollar stores behind. Photo ornaments Fun photo ornaments showcase how a family has changed and grown over the years. Experiment with different ways to

create these ornaments. You can glue a photo to a ceramic ornament and cover it with decoupage glaze to set it permanently. Try purchasing clear, glass ornaments, then remove the top of the ornament, which is usually spring-loaded, before slipping a photo inside and replacing the top. You also can laminate a photo, punch a hole in the top and affix a ribbon. Ceramic ornaments The popularity of paint-it-yourself pottery has led to an increase in ceramic and crafts shops across the country. During the holiday season such shops offer many holiday items that can be painted. Often the store will then fire the pieces after they are painted so that they are shiny and hardened for display. Those who want to do their painting at home can visit their local craft or hobby shop, where typically there are unfinished ceramic ornaments that can be painted with acrylic paints found right in the next aisle. A finishing coat of clear glaze will help protect the ornaments from year to year. Wood crafts Many of today’s craft centers have expanded to include sections devoted to unfinished

wood items. Everything from letters to animal cutouts to boxes and rocking horses can be purchased and finished. Turn keepsake boxes into painted and ribbon-adorned gift boxes. Stain a treasure chest that can be used to store reindeer snacks for Santa’s crew. Turn small decorative pieces into ornaments for the tree. Paint and affix wood initials onto stocking holders to identify to whom each stocking belongs. Crafty individuals also can turn plain wood plaques into signs with clever sayings, such as “Park your sleigh here.” Scavenge around the house Young children can use any medium for making ornaments. Garlands made of macaroni or popcorn are traditional. Fabric scraps can be sewn and stuffed with potpourri for homemade scent satchels. Hand-drawn pictures can be made and laminated and hung on the tree. The only obstacle with regard to DIY ornaments is a limited imagination. Homemade items can add whimsy and a personal touch to the holiday season.

2 1/4 cups cornbread mix (or make your own) 1 tablespoon sugar (optional) 1/2 cup vegetable oil or melted Crisco 3 eggs -- beaten 1 8-oz. can creamed corn 1 1/2 cups Longhorn cheese -- shredded 1 onion, large -- grated 2 jalapenos -- seeded and chopped

Directions

1. Set oven to 450 degrees. 2. Combine all ingredients, mixing well. Heat a well-greased 13x9x2” pan or large, heavy iron skillet, in oven for 1 minute or until very hot (keep close watch on this so it does not burn!). 3. Pour batter into hot pan and bake at 450 for 20 minutes or until golden brown. Cut into 2” squares or in wedges. Note: I use Velveeta cheese and a large chopped onion. The smaller the pieces, the quicker they get done. I bake mine in an iron skillet and cut into wedges for serving. (I do not use cornbread mix, I use 1 cup flour,1 cup cornmeal, 3 teaspoons baking powder and 1 teaspoon of salt.) This cornbread goes great with pinto beans!

2 cans Pillsbury crescent rolls 2 8-oz packages of cream cheese (room temperature) 1 ½ cups of sugar 1 tsp vanilla extract 1 tsp cinnamon 1 stick butter (real butter, not margarine)

Directions

1. Preheat oven to 350 degrees. 2. Spray 9x13 pan with cooking spray. Unroll and press 1 can crescent rolls into bottom of dish. 3. Blend cream cheese, vanilla and 1 cup sugar and spread over dough in casserole dish. Please second can of crescent rolls over batter. 4. Melt butter and pour over top of dish. Mix remaining sugar and 1 tsp cinnamon and sprinkle over the top of dish. 5. Bake for 30 minutes or until golden brown.

Peach Cobbler Submitted by Tawna Allen

Ingredients • • • • • • • •

1 stick of butter 1 ½ cups sugar 1 cup flour 1 ½ tsp baking powder ¾ cups milk 1 can (30 oz) sliced peaches in syrup 1 tsp cinnamon 1/3 tsp nutmeg

Directions

1. Preheat oven to 350 degrees. Melt butter in 9x13 casserole dish. 2. Combine ½ cup of sugar, nutmeg & cinnamon, set aside. Separate peaches from syrup. 3. Mix remaining sugar, flour and baking powder in a bowl. Stir in milk and syrup from peaches. 4. Put peaches in casserole dish with melted butter. Pour batter over the top of the peaches. 5. Sprinkle sugar, cinnamon & nutmeg mixture over the top of batter. 6. Bake for 45 minutes to 1 hour or until top crust is golden brown.

Easy Cream Puffs Submitted by Marina Mullenax

Ingredients

• 1 cup water • 1 cup all-purpose flour • ½ tsp salt

• ½ cup (1 stick) butter • 4 eggs

Directions

1. Preheat oven to 400 degrees. Prepare baking sheet with nonstick spray and set aside. 2. Put the water, butter, and salt in a medium saucepan and bring to a boil over medium-low heat. Remove from heat. Add the flour all at once and stir well until the flour is completely mixed in. 3. Return the saucepan to medium heat and cook, stirring constantly for 2 minutes. Scrape the dough into a large bowl. 4. With a wooden spoon, beat in the eggs one at a time until all four eggs are in. 5. Spoon the dough into piping bag and squeeze out bite size drops. Bake for 40 minutes, and let cool for 30 minutes before filling. 6. Once cream puffs are cool- fill the center with pudding or whipping cream. Dust with powdered sugar.

• ½ onion, chopped • 3 stalks celery, chopped • 4 slices jalapeno, no seeds • 3 bay leaves

• Gumbo Mix • 1 can Creole Okra Gumbo • ½ tsp garlic • 2lbs shrimp

• 1 cup salsa • 2 dashes tabasco • 2 gumbo crabs

Boil onions and celery until tender. Add bay leaves. Add Gumbo mix and boil on low for 20 minutes. Add garlic, okra, salsa and tabasco. Cut 1 pound shrimp and crabs in half and add both pounds to mix. Add jalapeno and simmer.

Holiday Traditions Celebrating Midnight Mass

any families have their own unique holiday traditions, but one tradition that unites millions of Christians all over the world is the celebration of Midnight Mass. In many parishes, Midnight Mass is the first celebration of Christmas Mass. The origins of Midnight Mass are not exactly known. However, certain monks and nuns attended liturgical services at midnight every day in ancient times, and the Christmas Midnight Mass very well may have been adopted from these practices. Regardless of the basis behind the celebration, it can be a breathtaking and emotional service thanks to the memorable passages read and the inclusion of church choirs. Many Midnight Mass celebrants feel the Mass serves as an impressive reminder as to the true meaning of Christmas.

Cinnamon Coffee Cake Submitted by Linda Jonas Walton

Ingredients

• 1 (18.5 ounce) package yellow cake mix (not butter mix) • 1 (3.5 ounce) package instant vanilla pudding mix • 1 (3.5 ounce) package instant butterscotch pudding mix

4 eggs 1 cup water 1 cup vegetable oil 1 cup packed brown sugar • 1 tablespoon ground cinnamon • 1 cup chopped walnuts or pecans

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan, or a 10 inch Bundt cake pan. Sprinkle raw sugar lightly over the greased area.(Optional) 2. In a medium mixing bowl, stir together the cake mix, vanilla pudding mix, and butterscotch pudding mix. Add the eggs, oil and water, mix until well blended. In another bowl, stir together the brown sugar, cinnamon and nuts. Pour half of the batter into the pan, spread evenly. Sprinkle with half of the nut mixture. Cover with the rest of the batter, and sprinkle with the rest of the nut mixture. 3. Bake for 20 minutes in the preheated oven, then turn the oven down to 325 degrees g F (165 degrees g C) and bake for f an additional 40-45 minutes. 4 Test T for doneness by b inserting cake tester or toothpick t midway through m the t cake.
