Wow – 20 years! Time flies when you are having fun and we have enjoyed bringing you a growing array of tasting programs and educational events since 1994. It all started with Tasteday Thursdays, a free tasting held every Thursday night with six wines, a formal presentation and a few cheeses to nibble on. Fast forward 20 years and our kitchen team dazzles event participants every week with perfectly paired foods to accompany spectacular presentations by our Trusted Experts. Our fun and informative talks on everything from mead to sake, to high end wine and whisky, continue to provide an evening or afternoon of first class entertainment. Our tasting program has developed into Canada’s most comprehensive and diverse wine, beer and spirits educational offering. We look forward to the next decade, as our young team takes on more and more of the responsibilities. The passion and vision of this committed group promises an exciting future for Willow Park Wines & Spirits. March 3 The Finest of Masion Louis Latour | 5:30pm $75 Tonight, we are pleased to welcome Marc Allen, Fine Wine Export Director, as our special host for an enchanting tasting of both library and current vintages of some of Masion Louis Latours finest wines. With wine making traditions dating back to the 17th century the Latour family’s wines will showcase the philosophies of tradition and innovation in the glass that will be a true treat to fans of the wines of Burgundy. Michael and Gerry bring over 50+ collective years in the wine industry to this class, so they have lots of fun tales and stories that you’re sure to enjoy while you’re learning throughout. March 9 Maison Champy Tasting | 4pm $40 Our good friend, Alain Douver, of Maison Champy is coming to town to help us celebrate 20 years in the wine business. An expert in Burgundy wines and vineyards, it was Alain who helped create our excellent Burgundian selection in the 1990’s. Please join us on March 9th for a special Sunday matinee to taste through a range of the excellent wines from Maison Champy back to the 2004 vintage. March 21 Sassicaia Vertical | 5:30pm $120 In the 1920’s, Marchese Mario Incisa della Rocchetta had a dream of creating a “thoroughbred” wine. From this vision, Sassicaia was born; a wine that broke the Tuscany’s winemaking traditions and became known as the world’s first Super Tuscan. Since its release, this wine has wowed both critics and fans alike plus inspired winemakers around the world. Please join us as we look back at this wine during this six year vertical tasting. April 6 WSET 3 | 10am - 5pm 8 Sunday Classes $1349 The Level 3 Award gives comprehensive coverage of wines & spirits with an increased focus on tasting technique and on the application of the knowledge gained. This ultimately provides core knowledge of the wide range of wines and spirits around the world. It will equip those in a supervisory capacity with the authority and confidence to make informed decisions in a wide variety of trade situations.
Popcorn recipes Tropical Popcorn 4 Cups air popped Popcorn 1 Cup white Chocolate Chips 1 Cups dried Apricots diced into small pieces 1 Cup toasted Coconut Melt half of the white chocolate chips. Popcorn and drizzle white chocolate on in layers and shake through. Add in the rest of the chocolate chips, dried apricot pieces and toasted coconut, while popcorn is still hot. Shake or stir well divide into smaller bowls and serve. Bacon, Truffle and Parmesan Popcorn 4 Cups air popped Popcorn 6 Slices cooked Bacon, crumbled 1.5 Cup shredded Parmesan Cheese Drizzle of Truffle Oil Cook bacon, cool and crumble into small pieces. Add bacon, cheese and truffle oil in layers into hot popcorn. Shake well and serve.

April 7 WSET 1 | 2 Monday Classes 5:30pm - 9:30pm $349 This one-day Level 1 Foundation Certificate in Wines is entry level and offers a straight forward introduction to wine. This will enable students to meet workplace wine service standards and deal with basic customer inquiries. This highly interactive program introduces the student to many different aspects of the wine world including wine types & styles, wine tasting, major grape varieties and food & wine matching.

May 5 Salsa Challenge and Margarita Maddness | 7pm $25 We’re celebrating Cinco de Mayo with a special event highlighting some of the most classic flavours of Mexico. We’ll be showcasing an exciting lineup of salsas and pairing them up with an assortment of margarita styles featuring the bartending talents from Don Julio Tequila to create some thrilling pairing creations. May 6 Woman and Wine – the Magic of the South of France | 7pm $45 Enjoy an evening with special guest Frederick Chaudiere, from Chateau Pesquie in the Rhone Valley, in the South of France. Chateau Pesquie, is a family owned winery that sits on the southern slopes of Mount Ventoux which is known as the “Giant of Provence” and creates a unique microclimate for the vineyards that brings these wines to life in the glass. This will be a fascinating evening of great wine, stories and delicious French cuisine. history of the Caesar Cocktail In 1969, bartender Walter Chell at the Westin hotel in Calgary, Alberta was asked to create a signature drink for the opening of a new restaurant named Marco’s in the hotel. Walter’s new drink was twist on the popular Bloody Mary as he blended hand-mashed clams, tomato juice, vodka, Worchester sauce and salt and pepper then garnished it with a celery stick and named it after the Roman Emperor Caesar. Walter later went on to assist the Mott’s company in creating “clamato juice” which is now used in over 350 million Bloody Caesar cocktails a year. Way to go Walter! Bloody Caesar Cocktail 1oz Vodka 1 Dash Worcestershire Sauce 1 Dash Tabasco Sauce Salt and Pepper Clamato Juice Rim tall glass with celery salt, fill with ice. F
resh herbs are an excellent way to put a personal spin on traditional cocktails. You can play with everything from mint to rosemary when making cocktails and knowing how to properly muddle fresh herbs can make all the difference between serving a drink that people say is great and one that has them saying WOW! How to Muddle Fresh Herbs • • • •
When buying herbs look for bright leaves with no bruising or tears. If cutting fresh try to cut in the morning when the plants are cooler and the aromatics are fresher. Place herbs in a dry cup/glass/shaker free of ice. Use the muddler tool to push down on the herbs and turn half a turn on each depression

Cucumber Rosemary Gin and Tonic
1 English Cucumber 1 Lime 3 Rosemary Sprigs 2 oz Gin 4 oz Tonic Water Peel half the cucumber, and slice lime into thin rounds. In a highball glass, place three slices of cucumber, one sprig rosemary, juice from one lime round and gin into the glass. Muddle gently until all the ingredients are blended. Fill glass with ice and serve with lime round and rosemary sprig. (Cucumber flavoured gin can be used for a more intense flavoured drink).
Strawberry Basil Smash
1.5 oz. Vodka 6 Large Strawberries, stems removed 3 – 6 Large Basil leaves 1 Lemon Club Soda Dash of Honey or Sugar are optional In a mixing glass muddle strawberries and basil together. Add basil slowly and adjust flavour strength to personal preferences. Squeeze in lemon. Add sugar or honey if desired. Add vodka and stir gently. Fill tall cocktail glass with ice and pour mixture over it. Top glass up with club soda, stir gently and garnish with lemon round and strawberry.
Watermelon Bourbon Crush
1 Cup cubed Watermelon 5 – 10 Mint leaves 1 TBSP Sugar 1.5 oz. Bourbon Club Soda In mixing glass combine and muddle watermelon, mint leaves and sugar until well blended. Add bourbon and fill glass with ice. Shake well and strain into highball glass. Top up with club soda and serve with small watermelon wedge.

Drinks to help keep you cool on the patio this summer! Michael Biggatini’s Secret Bellini Recipe 2 Ripe peaches 1.5 oz White rum 1.5 oz Mango liqueur
Spiked Root Beer Float 1 Can root beer 1.5 oz Coffee liqueur Vanilla ice cream Fresh mint sprig
Add all ingredients together into a blender. Puree until silky smooth and pour into ice cube trays. Freeze and place one ice cube into glass and top with Prosecco. (For stronger fruit flavours more than one ice cubes can be used).
In a tall glass pour coffee liqueur into glass and then place one to two scoops of vanilla ice cream over top. Fill glass with root beer, add a fun straw and garnish with fresh mint.
Don’t be afraid to try other combinations of fruits and liqueurs to make your own signature cocktails this summer.
Sproppino al Limone A traditional chilled and frothy lemon cocktail served in Venice that is perfect to serve as dessert on a warm evening with some simple vanilla cookies or fresh fruit. 2 Cups lemon sorbert, softened. 2.5 oz Vodka Prosecco Zest of one lemon

Softly whisk lemon sorbert until smooth. Slowly mix in vodka. ½ of lemon zest and Prosecco until frothy, but not too liquid like. A firmer texture is best as it will liquefy as it melts in the glass; a texture where it can form soft peaks is best. Pour into flute glasses and serve with straw and/or tall spoon, sprinkle with lemon zest and serve.
Organic Beetroot Salad & Lady Jane Cheese Estate Mint, Blackberry, Sorbet Ingredients • 4 Large beets or 16 smaller ones • Balsamic vinegar • Star anise • Cinnamon stick • Fresh thyme • 1 pc Farm House Lady Jane Cheese • 12 Mint Leaves • 1 pt Blackberries • Good quality olive oil (XVOO) • Sea salt • Beet sorbet as below
*Yields 4 portions
Beet Sorbet Recipe Ingredients • 50% Beet puree – beets cooked as above, peeled and then pureed • 20% Sugar • 20% Water • 10% Sherry vinegar
Method • Cook the beets after washing in water with the sub listed ingredients. How much depends on your taste, I like a decent amount of vinegar (15% of the total liquid) for the acidity • Once cooked, remove from the liquid, peel the beets while hot • Cut as desired, let stand • Season with XVOO and salt as needed • Tear the mint leaves and add the blackberries • Combine with the beets • Portion the cheese as desired and serve with the salad • Add the sorbet to the top • Find that glass of Pinot Noir that you had in your hand……Enjoy!

Method: • Bring the water and sugar to a boil to dissolve the sugar, remove from the stove • Add the beet puree and vinegar • Taste, season as needed • Chill the base, then spin in an ice cream machine • Serve with roasted beets This dish is a perennial favorite for our menu at the Terrace Restaurant. The simplicity of the dish is the key. Clean flavours not complicated ones as the quality of the ingredients speak volumes on their own.
