Happy birthday Minnesota State University, Mankato!

Event celebrates 151 years of achievements, bold ideas, and real-world thinking EMILY ERCK STAFF WRITER Minnesota State University, Mankato celebrated the 151-year anniversary of being an academic institution Monday in the Centennial Student Union with faculty, students, and refreshments served. The Maverick Machine started off the event with upbeat music and celebration that was appreciated by all who passed by. President Richard Davenport then gave a short, but impactful speech about the beginning of the University. He also spoke about many of the new buildings that are on campus and soon to be constructed. One of the buildings discussed included a laboratory for critical learning that includes the latest technology and resources. There was also the discussion of a new football stadium dome that is set

to get approved within the next six months. Lastly, the new Armstrong Hall building that is hoping to be built within the next year is set to

cost around $90 million, but will strongly compliment the building and learning environment. Through the celebration,

Food Insecurity a rising concern amongst MNSU students MARIA LY STAFF WRITER Almost two-thirds of Minnesota State University, Mankato students struggle getting food as a new epidemic called food insecurity plagues our University with many organizations helping resolve this major issue. Cher Vang, a student at MNSU said, “For me and my background I come from a low-income family, I grew up with it, it’s always a struggle to put food on the table, and at the same time trying to eat a healthy and balanced diet.” She continued, “Most of the times, it was actually really hard finding food. And a lot of my friends too, they’re also in the same boat, but the funny thing is people don’t know what that’s what it’s called. They don’t know how to get help for that.”

Many campus resources, such as the Campus Cupboard, are working hard to fight against food insecurity by providing students with a free food pantry. Laura Soland, a frequent volunteer at the Campus Cupboard, said, “We are the

most food insecure college campus in the nation, so that alone has been a huge motive for me to help out. I, myself, am not super rich, it’s nice to have this extra resource. I receive food from the campus cupboard as well. It’s nice to have that source and to know

that once a week I’ll have food in my pantry.” The Campus Cupboard, located in Crossroads Campus Ministry, has seen an increase in student attendance but raises a new issue of keeping their shelves stocked. Recently, the Campus

Cupboard has seen numbers of around 60 students every week since the beginning of the academic year compared
